  • The purpose of this study is to verify the relation between vegetarian diet and the risk factors of cardiovascular disease. The subjects of the study were 127 Buddhist nuns (age:23~79y) from Oonmoon Temple in Choungdo District Gyeongsang Bookdoo Province and 118 Buddhist nuns practicing Zen meditation at Soodeok Temple in Yeosan District Chongcheong namdoo Province. For control subjects, 235 healthy female adults (age:23~79y) were selected. They were the teachers, the nurses of the hospital of Gyeongsang National university and the housekeepers living in chinju Gyeongsang Namdoo Province. The period of this study was from October 1996 to February 1997. The contents were consisted of food consumption survey, anthropometric measurement, estimating amount of energy expenditure, physical activity and clinical examination. Results were summarized as follows: The mean ages of the subjects were 44.2y for vegetarians and 40.5y for non-vegetarians, respectively. average body mass index (BMI) of vegetarians and non-vegetarians were 22.47 adn 21.08, WHR 0.85 and 0.84, percentage of body fat 28.79 and 26.55 respectively. The average duration of vegetarian diet of the vegetarians was 13.16 years. Levels of total cholesterol, LDL-cholesterol, atherogenic index (AI), diastolic blood pressure, blood sugar and HDL-cholesterol of non-vegetarians were significantly higher (p<0.01) than those of vegetarians, but ration of HDLcholesterol/total-cholesterol was lower in non-vegetarians. In both of subjects, BMI, WHR, RBW, %BF had sig-nificant positive correlations with triglyceride, total cholesterol, LDL-cholesterol and AI. BMI, WHR had sig-nificant positive correlation with systolic blood pressure. BMI, WHR had significant negative correlation with HDL-cholesterol. In summary, vegetable diet can contribute to lowering serum lipid level, atherogenic index (AI),systolic blood pressure, blood sugar.

  • The variation of glucosinolates (GSLs) in Chinese cabbage ('Sinhongssam') (Brassica rapa L. spp. pekinensis) cultivated under lights to control plant growth conditions was evaluated at different development stages. Under experimental conditions in plant factory system, plant growth conditions including light, temperature, and nutrients were designed to enhance GSLs. The variation of glucosinolates (GSLs) in Chinese cabbage ('Sinhongssam') (Brassica rapa L. spp. pekinensis) cultivated under lights to control plant growth conditions was evaluated at different development stages. Under experimental conditions in plant factory system, plant growth conditions including light, temperature, and nutrients were designed to enhance GSLs. The contents of GSLs were quantified in Chinese cabbage according to different light sources (Red+White, RW; Red+Blue+White, RBW, Fluorescence lamp, FL) at development stages (28, 42, and 56 days after sowing, DAS) using HPLC. Nine GSLs including five aliphatic (progoitrin, sinigrin, glucoalyssin, gluconapin, and glucobrassicanapin) three indolyl (glucobrassicin, 4-methoxyglucobrassicin, and neoglucobrassicin), and one aromatic (gluconasturtiin) GSLs were identified based on peak retention time in previous results of our laboratory. GSL contents were higher in RBW (36.55) and lower in FL ($15.24{\mu}mol/g/\;DW$). Results revealed that GSL contents were higher under controlled photoperiods (20/4 h) ($58.35{\mu}mol/g\;DW$) and controlled light intensity ($160{\mu}mol/m^2/s$) ($34.02{\mu}mol/g\;DW$), respectively. Lower amount of progoitrin and comparatively higher amount of glucobrassicin and gluconasturtiin was noted in Chinese cabbage cultivated under FL light (2.38, 9.82, and 2.10) at 42 DAS, photoperiod 20/4 h (3.16, 2.52, and 1.30) at 28 DAS, and light intensity at $130{\mu}mol/m^2/s$ (2.28, 2.24, and $1.51{\mu}mol/g\;DW$) at 42 DAS. Therefore FL light, photoperiod (20/4 h), and light intensity ($130{\mu}mol/m^2/s$) were considered as most suitable for the enhancement of GSLs in Chinese cabbage.

  • This study was intended to investigate whether the computer use hours affect physical development, dietary habits, and nutritional status or not. One hundred and ninety elementary school students from Gyeonggi province and Seoul were selected and surveyed during December, 2006. Participants were divided into 2 groups: long-time computer user (${\geq}$ 2 hrs./day) and short-time computer user (<2hrs./day). The survey included the questionnaires and anthropometric measurement. A dietary survey was conducted by using 24-hour recall method. The most of long-time computer user accessed computer more often than those of short-time computer user weekly bases. The purpose of the computer use was for the computer game (p < 0.05). Most participants accessed computer after the school at night and at their home. The longer the computer use, the more the body weight and %RBW (p < 0.05). Dietary habits score of long-time computer user 34.5 points) was lower than that of short-time computer user (38.0 points) (p < 0.001). The long-time computer user consumed more fatty foods, instant foods, and sugary foods. In case of dietary habit changes incurred by computer use, the long-time computer user had inferior dietary habits: skipping meals, meal size, appetite, eating speed, weight, exercise, and sleeping trouble (p < 0.05). The long-time computer user consumed less calories than the short-time computer user (p < 0.05). Also, the long-time computer user tended to have lower intakes of vitamin C, Ca, and dietary fiber without significance. From the findings, the longer use of computer by the elementary school children negatively affects their physical development, dietary habits and nutritional status.

  • Daily energy expenditures (DEE) of 82 co-eds in a University were estimated simultaneously by use of calorie counter and 15-min check list diary for 3 days, including a weekend day. The results are summarized as follows. The mean values of DEE from 15-min check list diary and calorie counter were 1967kcal and 1649kcal, respectively. DEE obtained with 15-min check list diary seems to be consistent with the results made by others concerning DEE of college female in Korea, but DEE by calorie counter was lower than that. However, DEE by calorie counter show high correlations with anthropometric indices of subjects and DEE by 15-min check list diary. Therefore, DEE by 15-min check list diary was taken as standard and regression equation for predicting DEE of subjects were developed: DEE by 15-min check list diary =3.31186 + 1.18837 $\times$ DEE by calorie counter. This technique for measuring DEE permits us to have more accurate estimate of DEE and acceptable to the subjects. When the subjects classified as underweight, normal, overweight according to relative body weight(RBW), DEE and DEE per kg of body weight were significantly different from each other between three groups based on RBW. The frequency of 15-minute periods with a categorical value of 1 was significantly higher in overweight than underweight and normal groups and the frequency of a categorical value 3 was significantly lower in overweight than underweight group. From the results shown above, physical activity level of overweight group was lower than that of normal and underweight groups.

  • The purpose of this study was to compare the body compositions and food behaviors of middle aged men with different obesity indices. The subjects were 62 middle aged men who lived Gunsan city. Heights, body weights, soft/lean masses, fat masses, percentages of body fat, and fat distributions were measured. Food habits and health-related lifestyle habits were evaluated based on questionnaires. The subjects were assigned to one of the following groups based on their percentage of body fat ($\%$Fat) ; normal, overweight and obesity. The results were as follows: their heights, fat masses, percentages of body fat, WHR, RBW, BMI and fitness scores were significantly higher in the obese subjects when compared to the normal and overweight subjects. Self-perceptions of weight and desires of weight control were significantly related with their percents of Fat. The overweight and the obese groups skipped meals, ate supper out, ate snacks, smoked tobacco, and exercised less frequently than the normal group. There were no significant differences in the scores of the dietary habits and drinking of alcohol among the three groups. Therefore, proper nutritional education on regular meals and intervention is required if middle aged men want to be of normal weight and have healthy lifestyles.

  • 148 male and 153 female college students attitude toward weight control, diet behaviors and food habits were investigated by self questionnaire. Among the students, underweight students were 11.0$\%$, normal weight students were 63.5$\%$ and obese students were 25.6$\%$ by RBW standard, and underweight students were 16.0$\%$, nromal weight students were 70.4$\%$ and obese students were 13.6% by BMI standard. However, more than 10% of male and 38$\%$ of female students thought they were obese even thought their body weight were normal. Female students tended to overeat when they were stressed or in a bad mood and generally all participants had poor scores on the dietary attitudes test, however, male students had significantly higher scores than female students. Female students tended to choose food more for its taste. Collegestudents are in early stage of adult life and their dietary attitudes, food behaviors and life style will continue to their later life. Therefore college students need more good nutrition knowledge, positive dietary attitudes, modified life styles to prevent and treat collegestudents obesity. • This study was intended to collect the baseline information on dietary behavior of adults to develop nutrition education program in the context of health promotion at community level. Nutrients intake of 135 housewives were assessed by 24 hour recall methods. Also food habits, nutrition knowledge and attitude were investigated by self-administered questionnaires. Our results indicated dietary intake of calcium and vitamin $B_2$ were insufficient when they were compared to Korean recommended dietary allowances(RDA). Among five food groups, intakes of milk and dairy product was inadequate as compared to the recommended amount. When we compared the fatness indices to self-evaluated meal problems, overeating and speedy eating were significantly related to fatness indices. Fatness indices such as relative body weight(RBW) and body mass index(BMI) were significantly higher in the subjects who self-evaluated their unsound food behavior as overeating. However, there were no significant differences of food habit score and nutrition knowledge among groups classified by fatness or meal problem. Body fat ratio, frequencies of night snack and skipping meal significantly increased with age. Food habit score was positively related to health-concerned attitude and active attitude toward change. We concluded that nutrition education program for housewives should include detailed strategies to modify unsound food behaviors for healthy weight.
