충진율에 따른 포장 김치의 품질 변화 (Effect of Filling Ratio on the Quality Changes of Packaged Kimchi)

  • 충진율을 다르게 하여 포장한 김치를 $10^{\circ}C$에서 저장하면서 포장내 기체조성, pH, 산도, 김치여액의 색도, 젖산균수 및 기호도의 변화를 측정하므로서 충진율이 김치의 품질에 미치는 영향을 조사하였다. 포장내 기체 조성은 충진율이 증가할수록 $O_{2}$의 감소와 $CO_{2}$의 증가 크기가 더 커졌다. pH와 산도는 그다지 충진율의 영향을 받지 않았으며, 색도의 경우에도 충진율에 관계없이 L, b 값은 지수적으로 감소하였고 a 값은 거의 일정하였다. 젖산균수와 관능검사 결과 역시 충진율에 따라 유의적인 차이가 나타나지 않았다. 이상의 결과로부터 김치의 포장시 충진율의 조절은 포장내 기체조성을 제외하고는 김치의 품질에 별다른 영향을 미치지 않는 것으로 판단되었다.

IF 고강도 합금화 용융아연도금강판의 표면품질에 미치는 합금원소의 영향 (Effect of Alloy Elements on Galvannealed Coating Quality in IF High Strength Steels)

  • The effect of the alloy elements(Si/Mn) ratio on the coating quality including wettabilty with molten zinc, galvannealing kinetics and crater has been investigated in interstitial-free high strength steel(IFHSS) containing Si and Mn. When the Si/Mn ratio was below 0.75, IF-HSS exhibited a good wettability leading to a good galvannealed coating quality after annealing at $800^{\circ}C$ for 40s in $15%H_2-N_2$ mixed gas with dew point $-60^{\circ}C$. In contrast, the wettability and galvannealed coating quality were deteriorated in the Si/ Mn ratio above 0.75. It is shown that they have relevance to oxides forms by selective oxidation on the steel surface. The oxide particles dispersed on the steel surface with a surface coverage of below 40% resulted in good wettability and galvannealed coating quality. The oxide particle is mainly consisted of $Mn_2SiO_4$ with low contact angle in molten zinc. On the other hand, the continuous oxide layer on the steel surface, such as network- and film-type,caused to poor wettability and galvannealed coating quality. The coverage of oxide layer was above 80%, and its chemical species was $SiO_2$ with high contact angle in molten zinc. Consequently, the Si/Mn alloy ratio played an importance role in galvannealed coating quality of IF-HSS.

WASP7 모형을 이용한 임하호 수질모의에 관한 연구 (The Research about the Water Quality Prediction at Imha Reservoir Using a WASP7 Model)

  • This study intends to provide the necessary basic data needed for predicting the water quality and examining changes in water quality on the basis of the hydrological changes: an outflow or the character of a flow by investigating the interaction of the parameters through the estimation of optimal parameters need for predicting the water quality of the dam basin and the sensitivity among those estimated parameters. Im-Ha Dam in the upstream area of the Nakdong River was selected for analysis, and the water quality survey data necessary for parameter estimation was based on the monthly water quality data (water temperature, BOD, T-N and T-P) between December 1, $2005{\sim}$November 31, 2006. K1C(the saturated growth rate of plant plankton), K1RC (endogenous respiratory quotient of plankton), KDC(deoxidized ratio), K71C(minealized ratio of dissolved organic phosphorus), K83C(mineralized ratio of dissolved organic nitrogen) have been considered as the factors of the water quality performed in this water quality simulation, that is, the most effective parameters on BOD, T-N and T-P. In the result of the analysis of the sensitivity, KDC(deoxidized ratio) was the most sensitively reacted parameter on BOD and it was K71C(mineralized ratio of dissolved organic phosphorus) and K83C(mineralized ratio of dissolved organic nitrogen) on T-N and T-P. It is considered that it will be possible to apply the most optimal parameter to an analysis of the water quality simulation at Im-Ha Ho basin in the goal year by examining the interaction of the parameters through the parameters sampling which are able to applicable to prediction of the water quality and the analysis of the its sensitivity, in the future, also the analysis on the basis of the hydrological conditions: an outflow or the character of a flow will be needed.

  • Taguchi's parameter design is a method for quality improvement by making the performance fo a system robust to noise. Parameter design with dynamic characteristics has been recently the subject of much interest. This paper is concerned with a review and a generalization of the Signal-to-Noise (SN) ratio, a quality measure for parameter design with dynamic characteristics, proposed by Taguchi. We present a method for determination and analysis of the generalized SN ratio and illustrate its implementation by example.

  • 1. 원묘의 대소와 부위에 있어서 굵은 원묘가 가는 원묘에 비하여 활착 및 묘질이 좋았고 선단부와 기부사이에는 유의차는 없었으나, 선단부가 약간 활착과 묘질이 좋았다. 그리고 2아원묘와 3아원묘 사이에는 활착의 차가 없었다. 2. 원묘의 발근의 다소에 있어서는 발근량이 많은 것일수록 활착 및 묘질이 좋았다. 3. 원묘의 매복 심도에 있어서는 원묘의 선단에 파라핀을 도말하고 노출시킨 것이 가장 활착율이 높았으며 원묘의 선단에 파라핀을 도말하지 않더라도 그 선단을 노출시켜 매복하거나 또는 되도록 얕게 매복한 것이 깊게(6cm) 매복한 것보다 활착율이 높았다. 4. 원묘를 매복하는 방법에 있어서는 골의 중앙에 곧게 세운 것과 골의 한 쪽에 뉘어 세우고 매복한 것 사이에는 활착의 차는 없었으나 묘질은 곧게 세워 매복한 것이 비교적 양호하였다. 5. 육성포의 토성에 있어서는 사양토와 식양토간에 원묘의 활착의 차는 없었으나 묘질은 사양토에서 좋았다. 6. 각품종간(시평, 개량서반, 노상, 수원상4호 및 용천추우)에 있어서는 원묘의 활착에는 차가 없었으나 묘질은 용천추우가 가장 좋았다. 7. 생산비를 조사한 바 상묘 1본당 재육채묘는 1원 61전이었는데 비하여 접목은 2원 3전이었다.

공판되는 송이의 등급별 비율을 통한 향후 생산량 추이 예측 (Prediction of Pine-mushroom (Tricholoma matsutake) Production from the Ratio of Each Grade at the Joint Market)

  • 당해년도 송이 생산량 추이와 가격 예측을 위하여 수매되는 송이의 일자별 생산량과 품질등급의 관련성을 분석하였다. 2000년부터 2008년까지의 9년간 영덕군 산림조합의 수매자료를 분석한 결과, 송이 수매량 변화와 각 품질등급이 차지하는 비율은 극심한 가뭄과 이상기온 등 특이한 해를 제외하면, 고급품(1등급과 2등급) 송이는 초기에 50%를 넘는 비율을 차지하다가 점차 줄어드는 모습을 나타낸 반면, 저급품(개산품, 파손품 및 벌레 먹은 것 등)의 경우에는 수매량이 정점을 이룬 이후에 지속적으로 그 비율이 증가하는 것으로 나타났다. 송이 수매량이 정점에 도달하기 1~9일 전에 고급품의 비율과 저급품의 비율이 반전되었으며, 이를 통하여 고급품 송이에 비하여 개산품의 비율이 많아지면 조만간 송이 생산량이 줄어들게 됨을 예측할 수 있었다. 고급품 송이가 차지하는 비율은 전체 수매량의 패턴과 비슷하지만 3~4일 정도 앞서 나가는 모습을 보여주고 있었으며, 매일의 송이 수매량은 3~4일 전의 고급품 수매량과 0.5 이상(3일전의 상관계수는 0.51, 4일전은 0.54)의 상관관계를 나타내었다. 따라서 송이 수매품의 품질등급 분포 검토를 통해 예측하는 해당 시점 이후의 송이 생산량 추이(증가 또는 감소 여부)를 예측할 수 있다고 판단되었다. 또한, 고급품 송이 가격은 수매량과 반비례하는 관계가 뚜렷하게 나타난다. 따라서 송이 수매량 추이는 송이 가격변화를 예측할 수 있는 정보를 제공하게 되므로 송이 유통에서도 중요한 역할을 할 수 있음을 알 수 있었다.

일반 질 지표로서의 병원 표준화 사망비에 대한 고찰 (How Can We Use Hospital-Standardized Mortality Ratio as a Quality Indicator of Hospital Care in Korea?)

  • The hospital standardized mortality ratio (HSMR) is a widely used generic measure for assessing quality of hospital care in many countries. However, the validity of HSMR as a quality indicator is still controversial. We critically reviewed characteristics of HSMR and suggested how to use HSMR as a quality indicator in the Korean setting. The association between HSMR and other quality measures of hospital care is inconclusive. In addition current HSMR model has shortcomings in risk adjustment because of the lack of clinical data, accuracy of disease coding, coding variation among hospitals, end-of-life care issues, and so on. Therefore, HSMR should be used as an indicator for improvement, not for judgement such as public reporting and pay-for-performance. More efforts will be needed to tackle practical and methodological weaknesses of HSMR in the Korean setting.

한 도시 사업체 에너지 수급의 최적화 방안 연구 - 대기오염지수와 경제성 평가를 중심으로 - (A Study on the Pro-Environmental Energy Supply Program of Urban Enterprises on the concept of BAT(Best Available Technology): Application of Air Environmental Indices and Benefit-Cost Analysis Based)

  • The purpose of this study is to seek AEI(Air Environmental Indices), PSI(Pollutant Standard Index) and the urban air quality control goal(the best available alternative energy program) by assessing the best ratio of energy types used in urban enterprises, based on harmful health effect and air quality standard and costs. This study is focused on an urban area(Puchun), where area sourcees are associated with heavy traffic, large population, and its industrial sources with large emissions. In the first step, air modeling, estimation of AEI and PSI, and benefit-cost analysis were carried out. In the second step, we assessed that 660 scenarios about the ratio of B-C oil, light oil and LNG used in urban enterprises with regard to air quality and cost. In the third step, the best available alternative energy program was selected for the ratio of energy species(B-C oil, light oil and LNG) by using the lexicographic method. From the emission analysis, main source of $NO_2$ is identified as industries and air quality is evaluated according to the ratio of B-C oil, light oil and LNG used in urban enterprise. The modeling data of TSP, $SO_2$, $NO_2$, CO, $O_3$, by ISC3 and PBM are respectively $118{\mu}g/m^3$, 0.027ppm, 0.025ppm, 2.0ppm, 0.55ppm in indurstrial area. That data are close to Environmental Air Quality Standard. By means of sensitivity analysis, we obtained the difference in concentration between the areas(Nae-dong, Joong-dong) according to the ratio of B-C oil, light oil and LNG used in the industries. From the result of alternatives assessment the lowest AEI value and cost, the ratio of B-C oil, light oil and LNG are 2.5%, 20%, 77.5%, respectively.

Effect of Modified Casein to Whey Protein Ratio on Dispersion Stability, Protein Quality and Body Composition in Rats

  • The present study was designed to investigate the effects of protein formula with different casein (C) to whey protein (W) ratios on dispersion stability, protein quality and body composition in rats. Modification of the casein to whey protein (CW) ratio affected the extent of protein aggregation, and heated CW-2:8 showed a significantly increased larger particle (>100 ㎛) size distribution. The largest protein aggregates were formed by whey protein self-aggregation. There were no significant differences in protein aggregation when the CW ratios changed from 10:0 to 5:5. Based on the protein quality assessment (CW-10:0, CW-8:2, CW-5:5, and CW-2:8) for four weeks, CW-10:0 showed a significantly higher feed intake (p<0.05), but the high proportion of whey protein in the diet (CW-5:5 and CW-2:8) increased the feed efficiency ratio, protein efficiency ratio, and net protein ratio compared to other groups. Similarly, CW-2:8 showed greater true digestibility compared to other groups. No significant differences in fat mass and lean mass analyzed by dual-energy x-ray absorptiometry were observed. A significant difference was found in the bone mineral density between the CW-10:0 and CW-2:8 groups (p<0.05), but no difference was observed among the other groups. Based on the results, CW-5:5 improved protein quality without causing protein instability problems in the dispersion.

Comparison of the Quality Characteristics of the Rice yield Trial Lines in the Central Plain Region for Four Years

  • In order to developing high-quality rice varieties and processing varieties, systematic and stable evaluation of physicochemical properties is required for breeding lines. In this study, we compared the quality characteristics evaluation results of rice breeding lines for cooked rice, special rice, and whole crop silage rice adapted to central plain region (Suwon) in order to use as basic data for future rice variety development. Brown rice length/width ratio, head rice ratio, protein content, amylose content, alkali digestion value(ADV) and Toyo value were analyzed to evaluate the quality characteristics of yield trial lines cultivated in Suwon for four years (2017-2020). Brown rice length/width ratio, head rice ratio, protein content, ADV and Toyo values showed significant differences by year, but there was no significant difference in amylose content (p<0.05), which showed little environmental variation. The head rice ratio and Toyo value showed an increasing trend, while the protein content showed a decreasing trend. However, the protein content was the highest in 2020, which is thought to be owing to little sunlight hours due to heavy rainfall in 2020. The protein content of whole crop silage rice was 8.1%, which was significantly higher than that of other lines (p<0.05). Toyo value of medium-maturing and early-maturing lines were 67.6 and 73.7%, respectively, and the Toyo value of medium-maturing lines was higher than that of the early-maturing lines (p<0.05). In correlation analysis among the quality characteristics of the rice lines for cooked rice, significant positive correlations were detected between Toyo value and head rice ratio, amylose content, ADV, and a negative correlation was observed between Toyo value and protein content (p<0.05).
