Consumption Pattern of Korean Traditional Soy Sauce and Consumer Sensory Evaluation (재래식 조선 간장의 소비 실태 및 소비자 관능 검사)

  • The survey on consumption pattern of consumer for Korean traditional soy sauce and sensory evaluation of seaweed soups cooked with soy sauce were summarized as follows:1) 83.5% of the subjects used Korean traditional soy sauce to cook at home and the old subjects used it more than the young. 60.5% of soy sauce users made it at home and the old users showed the trend making it at home more than the young. 19.1% of the users were given it by relatives and 18.4% of the users bought it at the market and purchasing rate is higher in the young. 88.0% of the users consumed Korean traditional soysauce for the reason of umami taste and flavor. 27.5% and 27.5% of the users purchased it for the reasons of convenience and confidence respectively. 2) The most important characteristics of the Korean traditional soy sauce were responded to umami taste and flavor. The food having highest frequency to use Korean traditional soy sauce was seaweed soup (84.5%). 3) According to consumer sensory evaluation test of the seaweed soups cooked with soy sauce, preference was somewhat different with the age. It seemed that the old consumers prefered the seaweed soup cooked with Korean traditional soy sauce more than the young.

A Comparative Study on the Clothing Wearing Conditions and Fit for Middle-aged women in their 40s and 50s (40대와 50대 중년 여성의 의복 착용 실태 및 맞음새 비교 연구)

  • The purpose of this study is to analyze the general status of wearing clothes and clothing purchase of middle-aged women in the 40's to 50's, the patterns and colors of clothes they prefer, clothing preference related with fitting or such, and also complaints. And this paper also divides the middle-aged women into those in the 40's and 50's to analyze how they differ in terms of the apparel brands and fitting they prefer and also the status of wearing clothes. For the research, a survey was performed to 350 women, and the survey data went through x2 and t-test analysis by using SPSS 20.0 to examine significant difference. The results of this study are as follows: the women in the 40's included as the subjects showed a high frequency of clothing purchase from casual brands or SPA brands and regarded design to be important at the clothing purchase. Meanwhile, the women in the 50's indicated a higher frequency of clothing purchase of middle-aged women's apparel brands, outdoor brands, madam clothes, or designer brands and thought activity to be crucial at the clothing purchase. As the women in the 40's and 50's showed difference in the brands they preferred, particularly the fitting indicated difference in terms of dissatisfaction. While those in the 40's preferring and buying young casual showed particularly more fitting problems in the arm-hole girth, upper arm circumference, bust size, and thigh or hip area, those in the 50's indicated fitting problems in the hip circumference or waist measurement. It is expected that this study will be used as foundational data to set up the target age by related apparel companies or develop clothes with great size fitting and design satisfaction.

Comparison of Knitwear Preferences and Purchase Behavior of University Students by Sex (대학생의 성별에 따른 니트웨어 선호도 및 구매행동 비교)

  • The purpose of this study was to compare knitwear design preferences and purchase behaviors of university students by sex. The subjects were 493 university students in Daejeon and Gongju provinces. The research method was a survey and measurement instruments were 16 stimuli which were manipulated of knitwear shape and self-administrated questionnaire (knitwear design preference items, knitwear favorite image items, purchase behavior items and subject' demographic attributions). Data were analyzed by factor analysis, frequency analysis, t-test, Cronbach' ${\alpha}$ using SPSS program. The results of the study were as follows. First, as for pullover designs according to pullover shape factors, male preferred classic design with normal round neck, set-in sleeves and normal length, whereas female preferred various designs with normal round, normal V or deep V neck, set-in sleeves and normal or long length. Second, there was significant difference by sex in knitwear patterns and materials. Male preferred geometric patterns and 100% cotton, whereas female preferred natural patterns and blended cotton. Third, 4 factors were emerged on knitwear favorite images(casual image, modem classic image, active image and characteristic image). Especially, there was significant difference by sex in active image. Male preferred active image, whereas female did not. Fourth, as for knitwear purchases, male considered fitting as important purchase criteria, whereas female considered design or style. Male used department stores for purchasing, whereas female used Bosejeom for independent fashion. Male preferred high quality knitwear to female.

  • Real-time accessibility and agility are required in u-commerce under ubiquitous computing environment. Most of the existing recommendation techniques adopt the method of evaluation based on personal profile, which has been identified with difficulties in accurately analyzing the customers' level of interest and tendencies, as well as the problems of cost, consequently leaving customers unsatisfied. Researches have been conducted to improve the accuracy of information such as the level of interest and tendencies of the customers. However, the problem lies not in the preconstructed database, but in generating new and diverse profiles that are used for the evaluation of the existing data. Also it is difficult to use the unique recommendation method with hierarchy of each customer who has various characteristics in the existing recommendation techniques. Accordingly, this dissertation used the implicit method without onerous question and answer to the users based on the data from purchasing, unlike the other evaluation techniques. We applied FRAT technique which can analyze the tendency of the various personalization and the exact customer.

Beef Usage and Dietitians' Perceptions of Beef Quality in Institutional Foodservice (단체급식소 쇠고기 이용 실태 및 영양사의 쇠고기 품질에 대한 인식)

  • The purpose of this study was to compare the usage of beef and foodservice managers' perceptions of beef quality by foodservice type. A survey was conducted on 546 dietitians, and 499 acceptable responses were used for data analysis. By weight, pork was the most used meat in foodservice institutions, followed by poultry and beef. More than half of the foodservices selected meat suppliers by competitive bidding. Approximately 85.8% of the respondents used Hanwoo beef, followed by Australian beef and Youku beef. Beef type differed significantly by foodservice type (P<0.001): most of the schools and social welfare facilities used Hanwoo beef, whereas most hospitals and business/industry operations used Australian beef. When purchasing beef, safety of beef was rated the most important, while eco-friendliness was rated the least important. Most of the dietitians understood that marbling is one of the determinants of the beef quality, but were not aware of other components. Dietitians that selected Hanwoo and Youku beef were more satisfied with quality, taste, nutrition, freshness, country of origin, package, customer, preference, and availability for various menus than those who used imported beef. Dietitians who used Hanwoo beef were the most satisfied with country of origin, whereas the others were the most satisfied with safety. Since the dietitians are in charge of planning menus and selecting meat suppliers at foodservice institutions, they should make knowledgeable decisions by understanding meat supply systems and quality of beef.

  • Recently, the interesting of customers in online auto insurance is rapidly increasing. The one of major reasons is economical benefit. offline auto insurance products as a service formed high price. However, online auto insurance relatively formed low price. Thanks to these characteristics of online auto insurance has gained great popularity. Therefore, in purchasing online auto insurance, consumers carefully buy products of auto insurance. In this study, we classified the $2{\times}2$ matrix (online preference group, economic pursuit group, convenience oriented group, and carefulness approach group) in online auto insurance consumers focusing on the perceived benefits and price acceptance. From an economic point of view of consumers around the perceived benefits and price acceptance, we analyzed the relationships among easy of use, usefulness, attitude, and purchase intention in automobile e-shopping mall. The results of this study will provide the useful implications for the planing CRM(customer relationship management) strategy for improving purchase intention of customers to online insurance companies.

  • The purpose of this study is to provide the fundamental data needed in analyzing customer needs and understanding products in developing designs, to help designers to have better understanding of digital camera products, and to support the setting of concepts in developing designs, by understanding the specific properties of products that have specific purposes. In this study, homogeneity analysis was performed to the collected products launched from 2000 until now and representative products were selected to extract the questions on the adjectives and preferences felt form such products. Based on the questions, basic questionnaire survey and subject image analysis was performed in relation to the elements of images preferred by customers through the regression analysis of dependent variables and preferences and the regression analysis of purchasing power. When we design for digital camera, we must consider about the elements of digital cameras and the terms convenient, sensitive, functional, and grace. In terms of whole trend of shape, the shape highlighting grips and the digital cameras having grips, large LCD, dark colors, and manual buttons were preferred.

Influence of Anhedonia and Self-Esteem on Daily-Life Decision-Making in Patients with Schizophrenia (조현병 환자들의 일상적 의사결정 과정에서 무쾌감증 및 자아존중감의 영향)

  • Objectives Decision-making in patients with schizophrenia has been known to be inefficient in both cognitive and affective aspects. The purpose of this study was to investigate the influence of anhedonia and self-esteem on the decision-making process in schizophrenia. Methods Twenty patients with schizophrenia and 21 healthy controls performed the 'apparel purchase decision-making task', during which they were asked to respond to the preference, fitness, and price suitability, before making the final purchase decision. Generalized estimating equation and correlation analysis were conducted to explore for the difference of decision making patterns and influential factors between the two groups. Results The patients showed lower odds ratio (OR) of the fitness on the apparel purchase decision than the controls [OR 0.190 ; 95% confidence interval (CI) 0.047-0.762, p = 0.019). In the patient group, there was no correlation between the number of purchased trials and the severity of anhedonia, but the number of purchased trials was negatively correlated with the Rosenberg Self-Esteem Scale score at a trend level (R = -0.436, p = 0.055). Conclusions Patients with schizophrenia considered the fitness of clothes less than healthy controls on apparel purchasing decisions. Schizophrenia patients with lower self-esteem were intended to buy more clothes.

2. The Development of Pizza Prepared with Chungkukjang and Onion : Formulation and Assessments of Nutrients and Sensory Quality for Chungkukjang${\cdot}$ onion Pizza (청국장${\cdot}$양파 첨가 피자제조 : 2. 피자토핑재료 배합비 개발 및 피자의 영양적${\cdot}$관능적 품질평가)

  • This study was conducted to develop a topping formula for pizza containing Chungkukjang and onion as the main ingredients. The maximum amount of onion was limited to 10.5%, since the pizza crust and toppings would separate if too much water dispelled from the onion tissue during baking. The Chungkukjang was substituted for Bulgoggi, a meat topping. The sensory acceptability scores for the pizza topping decreased as the amount of Chungkukjang increased from 3.6% to 7.3%, due to its unpleasant odor, but scores increased when 1.6% Kimchi powder was added to the Chungkukjang without a significant difference from the control. Thus favorable sensory quality was obtained with a topping formula containing 8.7% Chungkukjang, 10.5% onion, and 1.6% Kimchi powder. The nutrient values of the final pizza products were assessed as follows. By adding the Chungkukjang and onion, crude protein, crude lipid, crude ash, and total dietary fiber contents increased. Moreover, the calorie level of the Chungkukjang-onion pizza was 3.8% higher than that of the control pizza. The amounts of compound amino acids including lysine increased. The free amino acids also increased from 143.3 to 188.6 mg/100 g. The ratio of saturated fatty acids to unsaturated fatty acids changed from 1:0.71 to 1:0.81. For the consumer test, the age groups of the participants were classified as 15-29 years old, 30-39 years old, and 40-62 years old. A positive result on acceptability of the developed pizza was obtained from most of the panelists in all age groups. Over 93% of the 119 responding subjects had purchasing intentions. An, especially, strong purchaging intention was shown in the younger age group of 15-29 year-olds, even though they had a lower preference for the Chungkukjang. Finally, an attribute of satisfaction was induced based on 'health' (79.5%) and 'flavor' (15.7%).

Market Segmentation of Musical Audience - Focused on University Students - (뮤지컬 관객의 시장세분화 연구 - 국내 대학생 관객을 중심으로 -)

  • This study tries to segment musical market to provide Korean musical marketers with marketing strategy implication. We focused university students who are known to form attractive market in the musical market through existing studies. For this research, we divided whole musical market using various variables such as musical audience' demographic, lifestyle and purchasing behavior variables. Using mixture model, we could divided as four significant segments : 'the type of musical mania', 'the type of musical preference', 'the type of musical medium' and the type of indifferent musical'. Each segment showed different musical purchase behaviors, lifestyle and demographical characteristics, also we suggested marketing strategy to each segment. Our research results can contribute to understand objectively musical market.
