불림 후 건조 조건에서 서리태와 백태의 이소플라본 함량 변화 (Changes of Isoflavone Contents in White and Black Soybean Powders Prepared under Drying Conditions after Soaking)

  • Isoflavones found in soybeans are present as glycosides and aglycones, which differ according to their chemical structure. The absorption rate and bioavailability of aglycones are greater than those of glycosides. It is known that aglycone isoflavones in soybean was converted from glycoside isoflavones by activating of endogenous β-glucosidase under drying (40~60℃) conditions after soaking. In this study, we compared and analyzed the proximate composition and isoflavone contents of soybean powders prepared under dried after soaking were analyzed. In the comparison of the proximate compositions, the moisture contents of white soybean powder dried after soaking (WSPDS) and black soybean powder dried after soaking (BSPDS) were decreased as compared with those of the control white soybean powder (CWSP) and control black soybean powder (CBSP). Whereas the contents of other proximate compositions were increased. The aglycone isoflavone contents were higher in WSPDS than in CWSP. Whereas the aglycone isoflavone contents of BSPDS had a similar content those of CBSP because of the component characteristics of black soybean. In conclusion, we believe that it is appropriate to identify and utilize the component characteristics of soybean varieties in order to induce an increase in the functional component content of soybeans under drying conditions after soaking.

국내탄의 석탄암석학적 특성 (Coal Petrological Characteristics of Korean Coal)

  • In order to make economic and geological evaluation of coal in Korea, proximate and ultimate analyses were carried out as well as coal petrological studies such as maceral analyses, vitrinite reflectance and sporinite fluorescence measurement. The coeffcient of correlation between each factor of both conventional utilization and coal petrological parameters were studied as in Table 5 and 6. Their conclusions were as follow: (1) for anthracite, the good parameters of coal rank are mean vitrinite reflectance, carbon content, hydrogen content and H/C atomic ratio: (2) for brown coal and sub-bituminous coal, the good parameters of coal rank are carbon content, calorific value, moisture content, hydrogen content, oxygen content and O/C atomic ratio as well as vitrinite reflectance and sporinite fluorescence. An attempt is made to infer the coalforming environment by utilization of coal petrological analyses and to make comparison of coal analyses with proximate and ultimate analyses throughout the island arc region including Japan, Philippine and Indonesia and continental region including USA, Canada and Australia. As a result, meceral composition of Paleozoic and Mesozoic anthracite are similar to that of the Paleozoic continental coals, which were formed under dry conditions or low water table, but the coalification degree suddenly increased during Daebo orogeny (middle Jurassic to lower Cretaceous). The Tertiary coal resembles those of Tertiary island arc region coal characterized by higher calorific value, volatile matter content and H/C atomic ratio and by the formation of coal under wet conditions or higher water table.

자연산(自然産)과 재배(栽培)더덕의 일반성분(一般成分) 및 아미노산(酸) 조성(組成) (Proximate and Amino Acid Composition of Wild and Cultivated Codonopsis lanceolata)

  • 자연산(自然産)의 산(山)더덕과 재배(栽培)한 밭더덕의 일반성분(一般成分), 칼슘, 철(鐵), 인(燐) 및 아미노산(酸)의 분석(分析) 결과(結果)는 다음과 같다. 일반비성분(一般粃成分)은 당질(糖質)을 제외한 모든 성분(成分)이 산(山)더덕이 높았다. 칼슘의 함량(含量)은 산(山)더덕이 밭더덕 보다 1.47배 높았다. 그러나 철(鐵)과 인(燐)의 함량(含量)은 밭더덕이 산(山)더덕 보다 각각 1.45배, 4.90배로 매우 높았다. 질소 1g당(當) 산(山)더덕의 아미노산(酸) 함량(含量)의 순위(順位)는 Arg>Glu>Ala>Asp>Lys>Leu였고, 밭더덕의 순위(順位)는 Arg>Glu>Asp>Leu>Lys>Val의 순위(順位)였다.

자소자의 아미노산 및 지방산 조성 (Amino Acid and Fatty Acid Compositions of Perillae semen)

  • Chemical components of Perillar semen and physico-chemical properties o Perillae semen oil were analyzed for the use as an edible oil. The proximate compositions of Perillae semen were 7.5% moisture, 33.2% crude fat, 16.3% crude protein, 2.8% crude ash, 6.5% crude fiber, and 33.7% nitrogen free extract. The major amino acids of Perillae semen were glutamic acid(66.9mg%), aspartic acid (32.5mg%), histidine(21.6mg%), and phenylaanine (20.1mg%). The ratio of essential/total amino acid was 41.3%. The physico-chemical properties of the seed oil were 0.915 specific gravity, 1.4808 refractive index, 3.6 acid value, 181.7 iodine value, and 194.0 saponification value. Composition of major lipid of the oil fractionated by silicic acid chromatography was 94.2% neutral lipids and 5.8% polar lioids. The major fatty acids of the oil were linolenic, linoleic and oleic acid. Neutral lipids consisted of 59.9% linolenic acid, 15.6% oleic acid, 6.6% palmitic acid, and 2.5% stearic acid. Polar lipids consisted of 58.5% linolenic acid, 18.1% linoleic acid, 12.7% oleic acid, 7.7% palmitic acid, and 3.0% stearic acid.

국내 주요 쌀 품종별 영양성분 및 주요 항영양인자 분석 (Analyses of Nutrients and Antinutrients of Rice Cultivars)

  • 본 연구에서는 일반계 5종(추청벼, 금오벼, 낙동벼, 오대벼, 화성벼)과 다수계 6종(동진 1호, 일미벼, 일품벼, 주남벼, 남평벼, 새추청벼)의 일반성분, 무기질 조성, 지방산 조성 및 항영양인자를 비교${\cdot}$분석하였다. 쌀의 일반성분에서 수분함량은 10.70${\sim}$15.88%, 열량은 341.26${\sim}$369.84 kcal/100 g, 조단백량은 5.03${\sim}$7.73%, 조지방량은 0.45${\sim}$l.33%, 탄수화물량은 74.56${\sim}$82.05%, 조섬유량은 0.30${\sim}$0.73%, 조회분량은 0.31${\sim}$0.91%로 나타났으며 다수계의 수분함량과 탄수화물이 일반계보다 유의적으로 높게 나타났으나 그 외 성분들은 유의차가 없었다. 포화지방산은 22.45${\sim}$25.99%, 단일불포화지방산은 36.50${\sim}$44.99%, 다가불포화지방산 32.01${\sim}$46.02%로 불포화지방산 함량이 높게 나타났으며 일반계와 다수계의 유의차는 없었다. 그러나 다수계인 일미벼, 남평벼는 oleic acid의 함량이 40%이상으로 높게 나타났으며, 다수계인 동진 1호, 일품벼, 주남벼, 새추청벼의 linoleic acid 함량이 37%이상으로 높게 나타났다. 무기질 함량은 K와 Mg가 각각 85.62%와 25.55%로 대부분을 차지했으며 나머지 무기질은 Ca는 3.42${\sim}$18.98%, Fe는 0.23${\sim}$4.97%, Mn은 ND${\sim}$l.28%, Na는 0.80${\sim}$4.65 %, Zn은 ND${\sim}$8.52%로 나타났다. 품종별로는 다수계의 Mg와 Fe함량이 일반계보다 유의적으로 낮은 값을 나타냈으며, Mn과 Na는 유의적으로 높은 값을 나타내었다. 모든 쌀 품종에서 lectin, phytic acid, trypsin inhibitor의 항영양인자는 검출되지 않았다.

국내 수집 표고 5품종의 일반성분, 유리당, 아미노산 및 무기성분 함량 (Content of proximate compositions, free sugars, amino acids, and minerals in five Lentinula edodes cultivars collected in Korea)

  • 이 연구는 국내에서 개발된 표고의 성분차이에 의한 특성을 분석하고자 5 품종을 수집하여 일반성분 및 유리당, 아미노산 및 무기성분 함량을 비교하였다. 일반성분 분석 결과, 조지방과 조섬유 함량은 품종간에 큰 차이를 나타내지 않았으나, 가용성 무질소물, 회분, 조단백질 함량은 시료구별로 유의적인 차이가 나타났다. 유리당 함량을 분석한 결과 총 3종의 유리당이 검출되었으며, glucose 함량은 시료별로 5.94~12.08%까지 큰 차이를 보였다. 구성아미노산은 총 16종이 검출되었으며, '산림 5호'가 13,768.33 mg%로 가장 높게 나타났고, 유리아미노산은 총 16종이 검출되었으며, '산림 4호'의 총 유리아미노산 함량이 6,790.57 mg%로 가장 높게 나타났다. 무기성분 함량을 분석한 결과 potassium, calcium, magnesium 및 sodium 4개의 미네랄이 검출되었으며, sodium의 함량은 567.16~2,356.09 mg%를 차지하여 가장 큰 함량을 보였고, magnesium의 함량은 9.79~20.88 mg%였으며, calcium은 3.85~7.42 mg%로 나타났고, sodium은 19.60~22.62 mg%로 품종간 유의적인 차이가 나타나지 않았다.

품종별 고추씨의 화학적 성분 분석 (Chemical Component Analysis of Red Pepper (Capsicum annuum L.) Seeds with Various Cultivars)

  • 국내산 고추씨 품종 20여종과 미국 New Mexico주에서 재배된 고추씨 4품종의 일반성분 및 캡사이신노이드 및 유기산 함량을 분석하였다. 일반성분의 경우 회분 함량은 $3.11{\sim}3.77%$의 범위로 시료 간 큰 차이가 없었고, 단백질 함량은 $13.25{\sim}16.53%$의 범위를 보였다. 반면에 지방 함량은 18%에서 30%까지의 조지방 분포도를 보였고, 총 식이섬유 함량은 품종에 따라 크게 $40{\sim}65%$의 범위로 비교적 넓은 분포도를 나타내었다. 또 품종별 고추씨의 capsaicin 함량은 $0.09{\sim}5.32\;mg%$, dihydrocapsaicin 함량은 $0.00{\sim}2.17\;mg%$로 capsaicin 함량이 dihydrocapsaicin 함량보다 높았다. 유기산 함량은 당찬, 조향, 혼합된 고추씨가 $1.6{\sim}1.9%$로 낮은 함량을 보였고, 5% 이상의 유기산 함량을 가진 고추씨 품종은 천하무적, 삼강, 강건, 왕대박, 천하일품, 대찬과 미국산 고추 품종인 New Mexico 6와 LB-25였다.

국내산 블루베리의 품종별 성분분석 및 반응표면분석법을 이용한 잼 제조 (Composition Analysis of Various Blueberries Produced in Korea and Manufacture of Blueberry Jam by Response Surface Methodology)

  • 본 실험은 기초자료 제공을 위하여 국내에서 재배된 20종의 블루베리에 대한 일반성분, 산도 및 당도 분석과 반응표면분석법을 이용한 블루베리 잼의 관능적 특성 최적화가 수행되었다. 전체 품종에 대한 일반성분의 경우 수분은 75~88%, 단백질은 0.32~0.62%, 지방은 0.12~0.39% 및 탄수화물은 10.18~23.80%의 분포를 나타냈으며 산도 및 당도를 측정한 결과 품종별로 각각 0.82~1.58%와 $7~12^{\circ}Brix$의 분포를 나타내었다. 잼을 가공하는데 있어서 중요한 인자로 작용하는 설탕(200~300 g), 펙틴(0~10 g) 및 구연산 분말(0.0~0.5 g)의 함량을 중심합성실험계획법에 의해 제조된 블루베리 잼의 관능평가를 실시하였으며 반응표면분석법을 이용하여 전반적 기호도에 대한 최적점을 평가한 결과 블루베리, 설탕, 펙틴 및 구연산 분말의 함량이 각각 200 g, 248 g, 4.8 g 및 0.26 g으로 제조되었을 때 가장 높은 기호도를 나타내는 것으로 예측되었다.

소리쟁이(Rumex crispus) 뿌리로부터 가용성 고형분의 추출특성 (Extraction Characteristics of Soluble Solid from Rumex crispus(Curled Dock) Roots)

  • In this study, the extraction characteristics of soluble solid from Rumex crispus(Curled dock) was studied from the investigation of the effects of experimental conditions on extraction rate; extraction ratio, composition of extractants, extraction time and pH of extractant, etc. The proximate composition of Rumex crispus was 2.58% crude lipid, 5.59% crude protein, 7.39% crude ash, 6.13% moisture and 78.31% carbohydrate, respectively. Turbidity of extract by distilled water was higher and increased with extraction time and extraction temperature, where as the turbidity didn't increase by ethanol and methanol in 20 folds of extraction ratio. Turbidity was inversely proportional to the extraction ratio for the three extractants at 25$^{\circ}C$ and 1 hour extraction. But turbidity of extract was highest by composition of 50% methanol-water extractant than any other compositions of extractants. Eighteen and fifteen free aminoacids were detected in extracts with distilled water, methanol and ethanol extractant, respectively, and it's contents were order of glutamic acid>proline>aminobutyric acid>alanine. The extraction rate of soluble solid from Rumex crispus was order of distilled water>methanol>ethanol within experimental extraction ratio. In extraction with distilled water, the contents of soluble solid was inversely proportional to the pH of extractant.

The effect of castration time on growth and carcass production of elk bulls

  • The effects of castration time on growth and carcass traits of elk bulls were investigated. Twelve bulls at 5 years old were raised and fed on concentrate with ad libitum hay. All animals were allocated randomly to each of four treatment groups (3 heads/group). Groups of each treatment were castrated surgically in March, April or June and managed together with non-castration (entire) treatment. All elk bulls in the trial were slaughtered at same time. Growth parameters, carcass yield and composition were recorded. The total gain and average daily gain was higher when castrated in April (p < 0.05). The entire elk produced heaviest and highest in saddle and brisket portions (p < 0.05). It is apparent that the castrate animals carried more total fat weight and percentages than the entire males (p < 0.05). It was found that loin muscles from non-castrated elk, in comparison with those from castrated one, had higher content of moisture and lower content of fat (p < 0.05). In this study, growth parameters, carcass yields and chemical composition were greatly affected by castration time.
