일부 도시 주부들의 수입농산물과 유기농산물에 대한 인식 및 소비실태 조사 (A Study on the Perception and Consumption of Imported and Organic Produce of Urban Housewives)

  • To investigate the perception and consumption of imported and organic produce, a survey was conducted using a questionnaire in Seoul, Taejon and Cheongju from February to March in 1995. The responses of 350 housewives were analyzed. Most of the subjects (96.8%) know an increase of imported produce, and 86.3% thought that imported produce was not safe. Ninety-two percent of the subjects preferred domestic produce to imported produce. The reasons were for the support of domestic farming (36.7%), hazardous chemicals in imported produce (25.0%), good taste (24.1%) and high quality of domestic produce (13.1%). Seventy-eight percent of the subjects had purchased imported produce. The reasons for purchase were cheap price (67.7%), high quality (16.2%), and good taste (5.4%). Imported produce were purchased in the following order ; fruits such as banana, kiwi, orange and grapefruit, seasonings such as garlic and sesame, vegetables such as onion, braken and green onion, and beans and grains such as soybean, red bean, and barley. Most of the subjects (94.3%) had been informed on organic produce. Among these, 45.2% obtained the information by TV or radio. However, son for purchase was low residual chemicals (64.6%). The reasons against purchase were inconvenience of purchase (42.3%), high price (25.4%), and disbelief of low residual chemicals (19.7%). Therefore, domestic produce should be good in quality and taste, and be safe without residual chemicals in order to compete with imported produce with cheap price. Informations on organic and imported produce should be provided to consumers, and the distribution system of organic produce should be improved for consumers convenience.

신선편의식품 포장기술 (Packaging technology of fresh-cut produce)

  • Processing steps such as washing and cutting, involved in preparing fresh-cut produce causes tissue damage, leading to rapid quality deterioration. Major defects of fresh-cut produce are discoloration, softening, off-odor development, and microbial growth. Packaging of fresh-cut produce has been changed to reduce these quality problems. Flexible packaging film is widely used to pack fresh-cut produce. Vacuum packaging was the popular packaging method in the beginning of fresh-cut industry in Korea. Vacuum packaging creates high $CO_2$ and low $O_2$ levels to control browning of fresh-cut produce. However, these conditions induce some visual defects and off-odor development. Discoloration problem was also found when fresh-cut produce was packaged with conventional packaging film or plastic tray. Modified atmosphere (MA) packaging is effective for prolonging shelf-life of fresh-cut produce by decreasing $O_2$ and increasing $CO_2$ concentration in the package. Retail MA packaging using different oxygen transmission rate (OTR) film and micro-perforated film has started to be applied to fresh-cut produce in Korea. Proper MA package design that provides optimum range of $O_2$ and $CO_2$ partial pressures is one of the major challenges in the industry. An initial package flushing with $N_2$ or an low $O_2$/high $CO_2$ atmosphere is also used to more rapidly establish steady-state MA condition. Film OTR and $O_2$ flushing affects the fermentative volatile production, off-odor development, electrolyte leakage, discoloration, $CO_2$ injury, microbial population of fresh-cut produce. There is also a demand for convenient packaging to attract consumers. Rigid fresh-cut produce container for retail market has increased since the packaging provides excellent protection from physical damage during transport. Rigid tray used as actual serving vessel for the consumer is increasing in Korea. The tray with flexible lid to wrap or seal fresh-cut produce is more and more gaining popularity. Further practical technology to control quality change and microbial growth for each fresh-cut product has been studied since various fresh-cut items were required. The fresh-cut industry also focuses on searching for more convenient and environmentally friendly packaging.

시설채소산물의 선도유지를 위한 한국산 약용식물추출물의 항균특성 (Antimicrobial Activities of Korean Medicinal Herb Extracts for Preserving Greenhouse Fresh Produce)

  • Korean medicinal herb extracts(KMHE) were applied to the preservation of greenhouse produce in order to prove their effectiveness. KMHE showed remarkable antimicrobial effects against Bacillus cereus, Peudomonas syringae, and Corynebacterium xerosis causing the postharvest decay of greenhouse produce. Among KMHE the extracts of Rheum palmatum L. and Coptis chinensis Franch most obviously inhibited the growth of microorganims causing the Postharvest decay of greenhouse produce, which destroyed to undetectable levels when treated with more than 500ppm of KMHE. The activities of KMHE were stable in the wide spectrum of pH and temperature. Direct visualization of microbial cells by using both transmission electron microscope and scanning electron microscope showed microbial cell membrane the function of which was destroyed by treating with the dilute solutions of KMHE. This change of cellular membrane permeability could be identified in the experiment that O-nitrophenyl-$\beta$-D-galactopyranoside(ONPG), the artificial substrate of $\beta$-galactosidase, was hydrolyzed in the presence of KMHE, indicating that the membrane was perturbed by KMHE.

  • The main feature of these total technologies is that we can constitute the optimum treatment scheme fitting to the property of wastes, amount of wastes and energy requirement. For high moisture content wastes or biomass resources, high pressure steam process (MMCS) for crush, dry and deodorize wastes to produce high quality fertilizer of fuel is most appropriate. For dry or semi-dry solid wastes, the STAR-MEET system can be applied to produce low-BTU gases for power generation using duel fueled diesel engines of Stirling engines, and the REPRES and HyPR-MEET systems can be applied to produce hydrogen rich medium-BTU gas. For waste plastics and oils, liquefaction technology is best fit to produce light oil or kerosene equivalent fuel oils. These total technologies are completely different from the existent waste treatment technologies based on land-filling or incineration, and are expected to disseminate all over the world in the near future.

Lead-lag Relationship between the Shipping Freight Rate and Agricultural Commodity Import Price in Korea

  • This study aims to investigate the lead-lag relationship between the agricultural produce import price in Korea and the corresponding shipping freight rate. Since the Korean economy has pursued an export-driven growth strategy, mainly based on the manufacturing sector, the country has to depend on the vast majority of its agricultural produce consumption after import from foreign countries. Moreover, compared with other high-value products, transportation cost occupies a substantial share of the agricultural commodity price, resulting in changes in the shipping freight rate being a pivotal determinant of agricultural produce import. In this respect, this study explores the possible association between agricultural produce import in Korea and shipping freight rate and the lead-lag relationship. Using a monthly dataset of agricultural produce import prices and freight rates for Handysize and Panamax dry-bulkers for the period between January 2010 and November 2020, this study determines that the shipping freight rate, in general, leads the agricultural commodity price.

Fresh Produce E-Commerce Supply Chain Coordination Considering Promotional and Freshness-Keeping Efforts

  • Supply chain coordination plays a critical role in improving the enterprise performance and the competitive advantage of fresh e-commerce. This study explores the coordination problem of a two-echelon fresh produce e-commerce supply chain comprising a fresh e-commerce enterprise and a fresh supplier in a novel framework. In this framework, the fresh e-commerce sells fresh produce and provides promotion effort; meanwhile, the fresh supplier deliveries fresh produce and provides freshness-keeping effort. Specifically, the optimal decisions under centralized and decentralized decision-making are compared, and it is found that centralized decision-making is more profitable. Based on this work, we created a cost-sharing and revenue-sharing combination contract. This study demonstrates that this contract effectively coordinates the supply chain and makes both parties achieve Pareto optimization when the parameters meet certain conditions. Finally, the feasibility and validity of the contract are presented through a numerical example.

생산지 수집 신선 유기농 농산물 미생물 분포도 분석 (Microbial Prevalence and Quality of Organic Farm Produce from Various Production Sites)

  • 신선편이식품 소재인 유기농산물의 미생물 분포와 품질을 평가하기 위해서 풋고추, 상추, 토마토, 사과, 배, 쌀 등의 농산물을 47개 지역에서 관행농 농산물과 동시에 현장에서 시료를 수집하였다. 일반 세균수로는 유기농 고추가 평균 4.07 log CFU/g, 관행농 고추는 3.71 log CFU/g 검출되었고 상추는 유기농, 관행농에서 6.76-6.90 log CFU/g로 분석되었다. 토마토와 사과는 2종류 시료에서 각각 2.08-2.92 log CFU/g, 0.70-0.82 log CFU/g로 검출되었다. 쌀도 유기농과 관행농 시료에서 2.92-2.98 log CFU/g 범위의 세균분포를 보여주었으나 유기농 배에서는 4.48 log CFU/g, 관행농 배는 2.84 log CFU/g의 분포도를 보여 주었다. 분석시료에 따라 미생물의 분포에 많은 차이를 보여 주었으며 유기농과 관행농산물의 미생물분포는 거의 차이가 없었다. 병원성 세균인 Cl. perfringens, E. coli O157:H7, L. monocytogenes, Salmonella, S. aureus은 전혀 검출되지 않았다. 그러나 유기농산물 2개(4%)와 관행농산물 3개(6%)에서 E. coil가 1.7 log CFU/g으로 검출되었고 B. cereus는 유기농 6개(13%)가 1.97 log CFU/g수준으로, 관행농 11개(23%)에서 1.04 log CFU/g 수준으로 검출되었다. 그러므로 유기농산물과 관행농산물에서의 일반세균과 병원성 세균의 오염정도는 차이가 거의 없고 이들 병원성 미생물의 오염수준도 비교적 낮아 안전한 것으로 판단된다.

유역 내에서의 산사태에 의한 토사발생특성 분석 2. 강우사상별 분석 (Analysis on Characteristics of Sediment Produce by Landslide in a Basin 2. Rainfall Event-based Analysis)

  • 본 연구에서는 강우에 기인하는 산사태에 의한 토사발생특성을 분석하였다. 이를 위해 1차원 불포화 지하수해석을 수행하여 강우에 따른 토양수분의 거동을 추정하였으며, 무한사면해석법을 이용하여 토양수분상태에 따른 유역단위 사면안정해석을 수행하였다. 이 때, 산사태의 발생 및 파괴깊이에 영향을 주는 토양심 및 여러 식생인자들을 고려하였다. 강우사상의 특성에 따른 토사발생특성 분석 결과, 산사태에 의한 토사의 발생에는 강우강도와 강우의 시간적 군집상태가 결정적인 영향을 미친다는 것을 알 수 있었다. 극치강우에 의한 유역 내 토사발생특성 분석결과, 태풍 '루사' 시의 잔여강우량이 다른 극치사상들에 비하여 매우 크게 나타났으며, 이러한 잔여강우량이 발생된 토사의 운송에 기여하였을 것으로 파악되었다. 아울러, 소수의 극치강우에 의하여 발생한 토사량이 유역 내 전체 토사발생량의 많은 부분을 차지함을 알 수 있었다.

신선편의 농산물 소비 현황 및 만족도 조사 (Consumption and Satisfaction with Fresh-Cut Produce in Korean Adults)

  • The purpose of this study was to assess consumption and satisfaction with fresh-cut produce in Korean adults. In this study, an online survey November 9~13, 2020 was conducted with 982 Korean adults age 19~64 (490 males and 492 females) with experience in purchasing fresh-cut produce in the past year. Among all respondents, the percentage with experience in buying 'washed or peeled vegetables' was the highest (71.18%), followed by those in buying 'packaged salads/sprouts/ssam vegetables' (64.15%), 'pre-cut fruits/fruit cups' (59.98%), 'pre-cut or minced vegetables' (56.01%), and 'washed or peeled fruits' (53.67%), respectively. Among the types of fresh-cut produce, 'packaged salads/sprouts/ssam vegetables' showed the highest satisfaction score at 3.73 pts, and the overall satisfaction score of fresh-cut produce consumption was also 3.73 pts. Compared to male respondents, female respondents showed a significantly higher percentage of respondents that purchased 'packaged salads/sprouts/ssam vegetables' (p=0.0409), significantly higher satisfaction scores (p=0.0124), and a higher percentage of respondents considering 'freshness' important when purchasing (p<0.0001). Additionally, the group with high household income comprised a significantly higher ratio of respondents considering 'eco-friendly or organic status' important. The study results may facilitate identify areas for improvement of fresh-cut produce in the future.

Efficacy of Sodium Hypochlorite and Acidified Sodium Chlorite in Preventing Browning and Microbial Growth on Fresh-Cut Produce

  • The use of suitable sanitizers can increase the quality of fresh-cut produce and reduce the risk of foodborne illnesses. The objective of this study was to compare the washing effects of 100 mg/L sodium hypochlorite (SH) and 500 mg/L acidified sodium chlorite (ASC) on the prevention of enzymatic browning and the growth of microbial populations, including aerobic plate counts, E. coli, and coliforms, throughout storage at $4^{\circ}C$ and $10^{\circ}C$. Fresh-cut zucchini, cucumbers, green bell peppers, and root vegetables such as potatoes, sweet potatoes, carrots, and radishes were used. Compared to SH washing, ASC washing significantly (p<0.05) reduced microbial contamination on the fresh-cut produce and prevented browning of fresh-cut potatoes and sweet potatoes during storage. More effective inhibition of aerobic plate counts and coliforms growth was observed on fresh-cut produce treated with ASC during storage at $10^{\circ}C$. Polyphenol oxidase (PPO) activity of fresh-cut potatoes and sweet potatoes was more effectively inhibited after washing with ASC. The use of 500 mg/L ASC can provide effective antimicrobial and anti-browning treatments of fresh-cut produce, including processed root vegetables.
