시판 축산물가공품의 보존료 사용에 관한 조사 (A study on the sorts and dosage of preservatives used in processed meat and milk products)

  • This study was carried out to investigate the sorts and the quantity of preservatives in 2,575 samples of 10 kind products which had been sold in the markets from 2004 to 2006. These analyses were done using HPLC. By the result of Investigation, the most frequently detected preservative was sorbic acid in 222 cases. Detection rate of sorbic acid was 8.62%. Dehydroacetic acid (DHA) was detected in 8 cases among 36 butter samples and one of 278 sausage samples. Detection rate of DHA was 0.0035%. In detail, the detection rate was 71.5% (88/123) in dried meat, 22.2% (8/36) in processed butter, 17.3% (48/278) in sausage, 10.4% (17/163) in canned meat etc., 7.9% (49/619) in ham, 7.48% (19/254) in processed cheese and 4% (2/49) in bacon, respectively. The content range of sorbic acid and its average in each of the processed meat and milk products are as follows: $ND{\sim}1.64 g/kg$, 0.26 g/kg in dried meat, $ND{\sim}1.34 g/kg$, 0.114g/kg in sausage, $ND{\sim}0.41g/kg$, 0.015 g/kg in canned meat etc., $ND{\sim}1.37 g/kg$, 0.038g/kg in ham, $ND{\sim}1.63g/kg$, 0.056 g/kg in processed cheese, $ND{\sim}0.57 g/kg$, 0.022 g/kg in bacon, respectively. Amount of detected DHA was less than 0.23 g/kg, and its average was 0.022 g/kg in processed butter.

Meat Consumption, Animal Products, and the Risk of Bladder Cancer: A Case-Control Study in Uruguayan Men

  • In the time period 1996-2004, all incident cases of bladder cancer were included in a case-control study in order to study the role of meat consumption and product animals in the etiology of urothelial cancer. The study included 225 cases and 1,510 hospitalized controls with non-neoplastic conditions, not related to smoking and alcohol drinking. Relative risks, approximated by the odds ratios, were calculated in order to clarify the effect of meat consumption in the etiology of urothelial cancer. Total meat consumption (OR 1.47, 95% CI 1.02-2.11), total processed meat (OR 1.57, 95% CI 1.08-2.27), frankfurters (hot dogs) (OR 2.03, 95% CI 1.28-3.21), ham (OR 1.79, 95% CI 1.21-2.67) and salted meat (OR 2.73, 95% CI 1.78-4.18) were positively associated with risk of bladder cancer. Animal products, like cheese, whole milk, and total eggs were also associated with bladder cancer risk (OR for eggs 4.05, 95% CI 2.68-6.12). In conclusion, total meat, processed meat, and eggs could play an important role in the etiology of bladder cancer in Uruguay.

대학생들의 건강 관심도에 따른 가공식품 관련 식행동과 식품표시 인식에 관한 비교 연구 (A Comparative Study on the Dietary Behavior and Recognition on Food Labelling of Processed Foods according to the Degree of Health Concern in University Students)

  • The purpose of this study was to analyze University student's dietary behavior for processed foods and recognition on food nutrition labelling according to the degree of health concern. For this study, 302 University students in Gyeonggi region was surveyed by questionnaire from May in 2016 and it included the questions about general matters, dietary behavior on processed foods, and the food nutrition label system. It was analysed by SPSS win 23.0 program. And the results are as follows. According to the result of the factor analysis, the preference of processed foods were showed 3.21~3.97. There were significant differences in milk and milk products preference according to health concern (p<0.05). Also frequency of processed foods was shown significant differences in milk and milk products, noodles, beverage, and fast food (p<0.05), whereas no significant differences were found in meat products, snack, bread and frozen food (p>0.05). Also, the processed food purchase consideration according to health concern was shown significant differences in nutrition, origin, manufacturing company (p<0.05), whereas no significant differences were found in taste, price, exterior, brand, and shelf life (p>0.05). Thus, it is necessary to do continuing public relations and to provide more opportunities for nutrition education so that the University students may obtain right dietary behavior on processed foods and the system of food nutrition indication be established properly.

우유의 진가와 한국인의 식생활 (The Value of Milk and Korean Dietary Life)

  • Milk and milk products, especially the cow's milk and cheese, have been used since the ancient time. Because they contains almost all kinds of nutrients that are necessary for human beings except for iron, n-3 fatty acid, and vitamin C. Milk is an excellent dietary source of protein, calcium and phosphorus. The biological value of milk protein is as high as those of red meat and eggs. So cheese, a food processed from concentrated milk protein, is highly recommended food for the patient of diabetes mellitus. Because the major form of milk lipids is n-6 fatty acid, milk and milk products may not be a good food for the patients of cardiovascular disease. But the nutritional quality of milk lipids cannot be inferior to those of margarine, fish oil, and vegetable oil. Milk has been produced commercially since 1936 in Korea. The most popular milk product is a drink milk now in Korea. But according to the change of dietary pattern the consumption of yoghurt and cheese has been enormously increased during the last 20 years. As the soy sauce, tofu, and soy been paste have been the fundamental seasoning and source of protein in Korea, milk and cheese have consisted the essential flavor of western cuisine. But the basic idea for the usage of protein, peptides, and amino acids are the same. We found that milk and milk products can be nicely added in many Korean dishes such as Juk, Mandoo, Jeon, and Bindeatuk for the diversity of traditional flavor.

도시주부의 가공식품 구매행동과 식품첨가물에 관한 인식 연구 -서울.경기지역 거주 주부를 대상으로- (A Study on the Purchase Action of Processed Foods and the Recognition for Food Additives of Urban Housewives)

  • This study was carried out to give some help for housewives recognizing the desirable purchase of processed foods and food additives. This results were abtained as follows; In case of purchase action for processed foods of housewives confirmation of manufacturing date was the highest point(4.62). When housewives bought processed foods they considered the taste of them as first, and frequencies of processed foods intake showed the ratio of 46.6%, also it was shown to be used once a week. The order for use of processed foods were milk, milk products(butter, cheese, yoghurt, lactic bacterium beverage) 40.2% >canned foods 22.6% >meat products(ham, sausage, bacon) 20.9% > jelled fish 16.3%. Most of housewives wanted to have the knowledge and information for food additives at the highest point(4.11). The interest about food additives of housewives was shown to the order of synthetic preservative 3.86 >chemical seasoning 3.74 >synthetic sweetener 3.59 >synthetic coloring agent 3.53. Also, it was shown to be thought that the hazard factors effected on food safety were agricultural chemical residue(30.9%), environmental pollution(25.2, food additives(23.0%), and microorganism contamination(20.9%).

국내 50가지 축산물 및 축산가공 식품의 섭취량 및 섭취빈도 조사 (Estimation of Amount and Frequency of Consumption of 50 Domestic Livestock and Processed Livestock Products)

  • 축산식품과 그 가공품의 소비량이 증가함에 따라 이로 인한 식중독 또한 꾸준히 발생하고 있어 다양한 축산식품과 그 가공품에 대한 안전관리가 필요하다. 본 연구는 50가지 축산식품과 그 가공품에 대해 대한민국의 성인을 대상으로 축산식품의 섭취실태를 조사하기 위해 전국의 성인 남녀 1,500명을 대상으로 설문조사를 진행하였다. 성별, 나이별, 지역 크기별, 직업별, 지역별로 섭취량 및 섭취빈도를 조사한 결과, 축산식품의 섭취량과 섭취빈도에 가장 영향을 미치는 것은 지역의 차이였다. 성별로는 남성이 여성보다 섭취량 및 섭취빈도가 높았으며, 나이별로는 20대에서 가장 높고 나이가 증가함에 따라 섭취량 및 섭취빈도가 감소하는 경향을 보였다. 지역크기별로는 식육 및 그 가공품의 경우 대도시, 우유 및 유가공품과 알류 및 알 가공품은 중소도시에서 섭취량 및 섭취빈도가 높았으며, 직업별로는 학생이 축산식품과 그 가공품에 대한 섭취량과 섭취빈도가 높았다. 지역별로는 서울과 인천/경기, 부산/울산/경북에서 섭취량과 섭취빈도가 높았다. 조사대상자 전체(1,500명)의 섭취빈도를 조사한 결과, 한 달에 가장 자주 섭취하는 식육과 그 부산물류에서는 돼지고기, 닭고기, 소고기 순이었고, 축산가공품에서는 햄, 양념된 돼지불고기, 소시지 순이었으며, 우유 및 유가공품에서는 우유, 액상 요구르트, 호상 요구르트 순이었고 알류 및 알 가공품에서는 계란말이, 계란찜, 삶은 계란 순으로 조사되었다. 결론적으로 인구집단에 따른 50가지 축산식품과 그 가공품의 섭취량과 섭취빈도를 조사한 결과, 인구집단에 따라 선호하는 축산식품의 종류가 다르며 섭취하는 양에도 차이를 보였다. 따라서 본 연구 결과는 안전한 축산식품 섭취 관련 식중독 교육에 활용할 수 있으며, 축산식품과 그 가공품의 병원성 식중독균에 대한 위해평가 과정에서 노출평가에 필요한 섭취량 데이터베이스 구축에 활용 가능할 것으로 사료된다.

말레이시아 농산물 수출입 동향 (The Export-import Trends of Agricultural Products in Malaysia)

  • To strengthen the competitiveness of agricultural sector of the Korea, the direction of market trends on agriculture of the Malaysia was reviewed. The most dominating agricultural area in value is palm oil products, and forest products, sea products poultry products and rubber products is in order. The cultivated area of highest two top plants, oil palm and rubber, was about 4.4 million hectares in 2005, but it is decreasing year by year. Comparatively, rice field, pine apple and fruits tree cultivating area is increasing in tendency by the year. Among all the agricultural products, those items such as pork meat, poultry, egg were self-sufficient, rice, fruits, vegetables and sea products were about 70 to 80% self-sufficient, and beef meat, goat meat and milk were below 20% self-sufficient. Most of the grains, such as wheat, rice, barley, corn etc. and their processed food were imported. Also, temperate fruits such as apple, pear, and water cultivated as well as sprouting vegetables are imported. Ornamental products as cutting flowers and orchids are exported to mainly to the Singapore, but high quality temperate fruits and vegetables are imported from Australia. Oil palm exportation covers the balance of the other items imported and obtaining the foreign money as well in Malaysia.

Effect of Consumption of Animal Products on the Gut Microbiome Composition and Gut Health

  • The gut microbiome is critical in human health, and various dietary factors influence its composition and function. Among these factors, animal products, such as meat, dairy, and eggs, represent crucial sources of essential nutrients for the gut microbiome. However, the correlation and characteristics of livestock consumption with the gut microbiome remain poorly understood. This review aimed to delineate the distinct effects of meat, dairy, and egg products on gut microbiome composition and function. Based on the previous reports, the impact of red meat, white meat, and processed meat consumption on the gut microbiome differs from that of milk, yogurt, cheese, or egg products. In particular, we have focused on animal-originated proteins, a significant nutrient in each livestock product, and revealed that the major proteins in each food elicit diverse effects on the gut microbiome. Collectively, this review highlights the need for further insights into the interactions and mechanisms underlying the impact of animal products on the gut microbiome. A deeper understanding of these interactions would be beneficial in elucidating the development of dietary interventions to prevent and treat diseases linked to the gut microbiome.

중학생의 가공식품에 대한 선호도와 식품${\cdot} $영양표시에 대한 인식도 (Processed Food Preferences and Food and Nutrition Labeling Perceptions of Mddle School Students)

  • The objectives of this study were to determine the preferences and consideration factors for selecting processed foods, in middle school students as well as their perceptions on food and nutrition labeling student. Middle school students in the Seoul area were surveyed from October to November, 2006. The results are summarized as follows: the preferred processed foods included 'drinks' (3.85), 'noodles' (3.81), 'biscuits and bread' (3.80), 'milk and dairy products' (3.71), and 'meat and meat products' (3.60). The most important consideration factors in selecting processed foods were 'expiration date' (4.45), 'taste' (4.34), and 'price' (4.08). The two main reasons for eating processed foods were 'delicious' (43.1%) and 'convenient' (33.9%). Food labels were identified 'sometimes' (34.5%), 'rarely' (31.2%), and 'almost never' (18.6%). The primary reason for examining a food label was 'to confirm the expiration date' (52.6%). The main reason for not reviewing a food's label was 'habitual purchase' (57.8%). Nutrition labels were identified 'rarely' (33.4%), 'almost never' (24.7%), and 'sometimes' (23.5%). The reasons for examining nutrition labels included 'to confirm a high proportion of nutritive substances' (26.5%), 'boredom' (24.2%), 'for weight control' (23.5%), and 'to improve health' (18.1%). The main reason for not examining a food's nutrition label was 'not interested' (56.5%).

청소년의 성별에 따른 식생활 태도 및 식품기호도 (A Study of the Dietary Behavior and Food Preference of Adolescents)

  • The purpose of this study was to provide the guidelines for the dietary lift by analyzing and studying the dietary behavior and food preference based on the gender. In the questions whether students' food preference is similar to their parents' or not, girls answered their food preferences were similar to them (M = 3.36), but boys not (M : 2.90). In the question if the knowledge learned in school has an effect on the choice of food, girls and boys answered it did not affect them, but there was a slight difference according to the gender; boys(M = 2.54) were under less influence than girls (M = 2.88). According to the gender, there was a meaningful difference in the food preference in meat, eggs, fish and shell, beans, milk and milk products, anchovies, fruits, fats and oils, beverage, and processed food. School education had a little influence on the habits of dietary life, only 8.0%. So more practical nutrition education was needed.
