에스닉(Ethnic) 레스토랑 이용고객에 대한 주관적 인식유형 분석 연구 (A Study on Subjective Perception Types of Ethnic Restaurant Customers)

  • 본 연구는 에스닉 레스토랑 이용 고객에 대한 주관적 인식을 파악하고자 서울지역 이태원 중심의 에스닉 레스토랑 이용고객을 대상으로 Q방법론을 적용하여 분석하였다. 연구의 목적은 에스닉 레스토랑에 관한 주관적 구조를 유형화 하며, 유형들 간의 특성을 기술하고 분석하여 향후 시사점을 제시하고자 한다. 유형분석 결과, 총 5가지로 도출되었다. 제 1유형(N=4) : 에스닉 푸드 선호형 (Ethnic Food Preferred Type), 제 2유형(N=5) : 본토 맛 추구형(Mainland flavor Seeking Type), 제 3유형(N=3) : 식재료 위생 중점형(Food Material Sanitary Concentration), 제 4유형(N=6) : 레스토랑의 서비스 선호형(Restaurant Service preference Type), 제 5유형(N=2) : 분위기 감성 추구형(Mood sensibility Type)으로 각각의 유형마다 다양한 특징이 있는 것으로 분석되었다. 향후 에스닉 레스토랑에 관한 연구에서는 많은 문헌과 실증연구를 바탕으로 보다 세밀한 Q방법론적인 질문과 분석기법으로 수정 보완하여, 응답자들의 다양한 의견을 구체적이며 심층적으로 분석하고자 한다.

데리야끼 소스의 재료별 선호도와 소스 선택에 미치는 영향 (The Effect on Sauce Selection and Preference of Teriyaki Sauce by Material)

  • 본 연구는 4가지 종류의 데리야끼 소스를 만들어 소스 종류의 다양화와 향후 소스 개발에 대한 기초 자료를 제공하고자 하며, 그 결과는 다음과 같다. 연령, 요리 경력 및 집단에 있어 데려야끼 소스의 만족도에서는 몇 가지 항목에서 유의적인 차이가 나타났다. 조리과 교수 및 조리교사 집단에 대한 데리야끼 소스의 재료 선호도 분석 결과는 건강영양 선호에서 유의적인 차이가 나타났으며, 조리학원생에 대한 데리야끼 소스의 재료 선호도분석 결과는 지명도 선호, 건강영양 선호에서 유의적인 차이가 나타났다. 또, 조리과전문대생 집단에 대한 데리야끼 소스의 재료 선호도 분석 결과는 맛 선호, 지명도 선후 가격 순서, 건강 영양 선호에서 유의적인 차이가 나타났다. 마지막으로 전체 집단에 대한 데리야끼 소스의 재료 선호도 분석 결과는 지명도 선호, 가격 순서, 건강 영양 선호에서 유의적인 차이가 나타났다. 이상 아직까지 데리야끼 소스의 주재료가 장어뼈를 가지고 한다는 고정관념이 강하나, 게껍질로 만든 소스의 선호도도 높은 것으로 보아 해산물의 부산물들을 응용한 소스들에 대한 개발도 가능한 것으로 사료된다. 차후 연구를 함에 있어 해산물의 부산물을 가지고 데리야끼 소스를 만들어 비가식 부위이나 영양적인 가치는 높으며, 제조 단가가 낮아 경제적인 면에서 활용도가 높은 소스를 제조하는 연구가 이루어져야 할 것이다.

캐슈드레싱의 품질 및 관능특성 (The Quality and Sensory Characteristics of Cashew Dressing)

  • This study was conducted to find an efficient use for cashew. It presents fundamental data on the quality and sensory characteristics of dressings made with cashews. The color L, a value of the dressing significantly decreased with increased storage time. Color b value and viscosity of the dressing significantly increased with storage time. The acceptance of cashew dressings and foods was evaluated. The C45-3 sample received the highest score for overall preference in a sensory evaluation of the dressing. The foods received a relatively high acceptance rating. Chicken and fish cutlets received higher scores than other food. It is anticipated that cashew will be utilized as a new raw material for healthy dressing.

한국거주 외국인 채식주의자의 한국음식 선호도 및 한식선택속성 (Survey of Preferences and Choice in Korean Cuisine of Foreigners who are Vegetarian)

  • Korean food is being recognized for its excellence. This paper attempts to provide material for the popularization of Korean cuisine with respect to foreign nationals living in Korea who are vegetarian by studying their Korean cuisine knowledge and preferences. The results of an Importance-Performance Analysis showed that though the importance values of traditional spice use such as garlic and the consideration of ingredient price were high, their performance values were low. Thus, these were areas identified as needing major improvement. Repeated measured data analysis was performed to determine variations in the perception of major factors for the development of Korean cuisine. The results indicated that simplification of seasoning was the most important factor followed by diversification of food ingredients, resale of vegetables in small quantities, ease of obtaining Korean cuisine recipes, and popularization of herbal and temple food, in that order. The least important factor in developing Korean cuisine was determined to be the reduction in levels of salt. Conjoint analysis was performed on the choices affection the selection of Korean cuisine, and price was found to be the most important factor. It was also determined that the effectiveness in the combination of fusion style, health oriented, concurrently served, medium to low price Korean cuisine was highest in preference. The next highest preferred combination was traditional style, health oriented, concurrently served, medium to low price Korean cuisine. The most significant factor to keep in mind in developing Korean dishes for foreign vegetarians was determined to be price. Furthermore, it was important to not simply reduce caloric intake but to use healthy ingredients and cooking methods.

식문화 연구동향 분석 - 1986년부터 2020년까지 한국식생활문화학회지에 발표된 논문을 중심으로 - (A study on the Trend of Researches in Food and Culture - Focusing on published papers from 1986 to 2020 in the Journal of the Korean Society of Food Culture -)

  • This study examines the trend of research on food and culture in papers published in the Journal of The Korean Society of Food Culture from 1986 to 2020. The journals published a total of 329 papers, which we classified into 5 main categories and 13 middle categories. Of these, 204 articles were on "Korean traditional food culture." The most studied topic in the entire period was "Perception of Koreans towards traditional food, preference, satisfaction, and usage." A total of 76 studies related to "Korean contemporary food culture." The most advanced topic researched concerned "Recognition and attitude"; these studies were consistently carried out throughout the research period. The main classification of "World food culture" encompassed 32 studies, with major research focused on "World's Modern Food Culture" and the most advanced being "Comparison of Food Cultures of Foreign and Korean Food Cultures." All studies were consistently spaced out during the study period. These studies provide an integrated knowledge in the field of food and culture and can be used as a basic material for related research in the future.

중국 10대 월병 포장디자인의 소비자 선호도에 대한 연구 (Research on Consumer Preference of Top Ten Mooncake Packaging Design in China)

  • 월병은 아시아의 여러 나라들, 특히 중국 중추절의 중요한 전통 음식이다. 중국의 디자인이 발전하면서, 월병 포장 디자인에 대한 사람들의 관심도 높아지고 있다. CNPP 데이터에 따르면, 2018년 말, 86.17%의 사람들이 월병을 구매한 이유는 포장 디자인 때문이었다. 따라서 본 논문은 월병의 포장 디자인을 중심으로, 월병 포장 디자인에 대한 중국 소비자들의 선호를 분석하고, 월병 포장 디자인에 대해 방향성을 제안하는 것을 목적으로 한다. CNPP의 시장 보고서에 따른 중국 10대 인기 월병 브랜드를 대상으로 선행연구를 진행함으로써 브랜드 로고, 색채, 형태, 재질이라는 4가지 포장 디자인 요소를 도출하였으며 중국 소비자를 대상으로 선호도 설문조사를 진행하였다. 설문 결과에 따라, 월병 포장 디자인 4개 요소 중 소비자들이 가장 선호하는 디자인 유형을 분석해, 중국 월병 포장 디자인에 대한 디자인 방향을 제시했다. 본 논문이 소비자의 선호도를 높이는 월병 포장 디자인의 기초 자료가 되어, 앞으로 구체적인 포장 디자인 방안에 도움이 되기를 기대한다.

오디박 분말 첨가 초콜릿의 품질 특성 및 항산화성 (Quality Characteristics and Antioxidant Activities of Chocolate Added with Mulberry Pomace)

  • Mulberry pomace, a by-product obtained from mulberry juice, has not been utilized as a food material for food processing. In this study, the quality characteristics and antioxidant activities of chocolate to which mulberry pomace has been added were evaluated. Freeze-dried mulberry pomace was added to white chocolate at the level of 0, 0.5, 1.5 or 2.5%, and then the white chocolate ganache was put between two layers of dark chocolate. The moisture content and sweetness were not significantly different among treatments, but reducing sugar content was increased, according to the amount of mulberry pomace powder. The Hunter color L(lightness) and b(yellowness) values decreased, according to the mulberry pomace powder amount, whereas the a(redness) increased. The hardness increased according to the mulberry pomace powder amount. Total phenol and flavonoid contents increased, according to the mulberry pomace powder amount. Antioxidant activities(DPPH and hydroxyl radical scavenging activities) also increased, according to the mulberry pomace powder amount. The result of the sensory intensity test revealed that the scores of color, mulberry taste, hardness and chewiness were the highest in the 2.5% mulberry pomace powder added chocolate. Sensory preference test results showed that chocolate added with 1.5% mulberry pomace powder had the highest scores in color, flavor, taste, texture and overall preference. It is suggested that chocolate to which mulberry pomace powder has been added may be a functional chocolate, with high antioxidant activity.

서울지역 여성의 시판 김치 구입현황과 구매촉진에 관한 연구 (A Study on Purchasing Current Status and Promotion Facts for Commercial Kimchi of Women in Seoul Area)

  • This study was to investigate purchase of women for commercial kimchi. Survey was carried out by questionnaire method that is target on 322 female over 20 age in Seoul area. The results of the study was that the way they get kimchi of women answered that they make it by themselves(63.3%). The reason of purchasing is they do not have enough time to make it at their home(43.8%) and its good taste(56.8%) result in their purchase. In the degree of preference about package material, prefer polyethylene(39.6%). Also respondents prefer purchasing poggi kimchi(63.4%) among other different types of kimchi. The promotion facts of purchasing commercial kimchi shows a high score in cold chain system package and specific kimchi development.

방한 일본관광객의 한국음식에 대한 인식, 만족도 및 재방문의도에 관한 연구 (A Study on the Recognition, Satisfaction, and Revisit Intentions of Japanese Tourists based on Traditional Korean Foods)

  • This study investigated the impacts from the recognition and satisfaction of Korean foods on the revisit intentions of japanese tourists to Korea. The subjects of this study consisted of 365 Japanese tourists visiting Korea. The findings are summarized as follows: (1) the recognition of Korean food included 'the quality of food material is fresh and good'(3.99 pints), 'Korean food is nutritious and healthful food'(3.89 points), and 'Koran food consisted of grains and vegetables, and the cooking methods were developed specially'(3.88 points) in the order. (2) They were highly satisfied with the 'nutrition of the food,' 'taste of the food,' and 'quantity of the food,' in terms of the Korean food quality however, they were not satisfied with 'Japanese marks on ingredients,' 'sanitary,' 'smell,' and 'freshness.' (3) The most influential recognition variables to affect revisit intentions to Korea was 'health knowledge' followed by 'unique,' 'preference,' 'experience,' and 'interest.' (4) The most influential satisfaction variable to affect revisit intentions to Korea was 'food and menu' followed by 'translation and understanding,' and 'flavor and appearance.'
