Factors Influencing the Obesity of Senior Elementary Students (초등학교 고학년 아동의 비만에 영향을 미치는 요인)

  • Objectives: This study was to identify the food habits, dietary attitudes and exercise habits of senior elementary students and provide basic data for the development an obesity management program for these children. Methods: The survey participants were 626 fourth to sixth grade elementary students in G city. Data were analyzed by descriptive statistics, $\chi^2$-test, t-test, ANOVA and multiple logistic regression. Results: The prevalence of obesity was 9.1%. The score of food habits and dietary attitudes at normal-weight group was higher than that of obese group. The food habits of obese group were significantly different according to gender and consideration eating between meals too often as bad habits. The dietary attitudes were significantly different according to interest in obesity control and consideration eating fast and fat food preference as bad habits in obese group. The factors such as grade, intension in weight control and consideration eating fast, overeating, fat food preference and predilection for some food as bad habits were related to obesity. Conclusion: Food habits and dietary attitudes have relation with obesity of senior elementary students. Thus, to develop of obesity management program for senior elementary students, we considered the food habits and dietary attitudes of them.

A Comparison of the Food and Nutrient Intake of Adolescents between Urban Areas and Islands in South Kyungnam (경남지역 일부 도시와 어촌 중학생의 영양소 섭취 및 식습관 비교)

  • This study was performed to compare the anthropometric and the food and nutrient intake of the adolescents between urban areas and islands in south Kyungnam and to identify their nutritional problems. A questionnaire survey was distributed among 383 middle school students for the food and nutrient consumption and other nutritional attitudes including socioecomonic status. The height and weight of the students were measured as well. Socioeconomic status, such as income, educational level, and jobs of the urban students parents was better than that of the island students. There was no significant difference in height between the students of both areas, but the body weight of the urban male students was far heavier than that of the other group. It is very interesting to note that the energy intake of the urban male students was much lower than that of the island male students. The students of the two areas consumed more protein, Vit B$_1$, Vit B$_2$, niacin and Vit C than the recommended daily allowances(RDA) but the intake of Ca, Fe, Vit A was less. As to the sources of animal fat, the urban males consumed much more. Regarding the taste preference, the study shows that urban male students are more likely to choose sweet, salty and soft tastes than island male students. In the case of female students, although island students prefer a rather hot taste, urban students are more likely to prefer sweet and soft tastes. The favorite foods of urban students are meat products, fastfoods, chocolate, cheese and milkshakes, while foods like cooked rice with assorted vegetable are the favorite of the island students. In general, the preference degree for meat products and fruits rates higher than for vegetables. Conclusively the urban students had a tendency of being obese and the intake of all nutrients by the urban adolescents was much lower than that of the islanders. In this study, the cause can be found in significant differences in consuming animal fat, of taste preference and of choosing favorite food. Accordingly a nutritional intervention or educational program is required to adjust the imbalanced intake of some nutrients for the adolescents in this province.

Effect of Sex and Obese Index on Breakfast and Snack Intake in Elementary School Students (초등학생의 성별과 비만도가 아침 식사와 간식 섭취에 미치는 영향)

  • The survey was conducted in July first to 15th, among 463 elementary school students, 4th grade to 6th grade in Chonj. The subjects were 252 male and 211 female students. The mean age of the subjects was 9.8 year The percent of relative body weight of the subjects compared to Korean standard was 100.1%, it almost matched to Korean standard. The percent of relative body weight in male students was 100.4%, where as the female's was 99.7%. Thirty six percent of the subjects have breakfast irregularly. The reason skipping breakfast were 'no appetite' 50.5%, 'get up late' 35.8%,' no delicious food' 18.2%. The reason skipping breakfast was significantly different by sex and obese index. The frequency taking snack was significantly different by sex, 34.6% of female subjects took snack more than twice per day, while 16.7% of male subjects did it. The most frequently taking snack were fruits, the points was 4.0 of 5.0. Ramyun, Sundai were taking more frequently among males than females. Females took fruits more frequently than males. Hot dog, ice cream ,and chocolate intakes were significantly different by obese index. The most preference of snack were fruits and ice cream in all subjects. The preference of ramyun, hamburger, egg, chicken, dried squid, milk, peanut, and soft drink were higher in males than in females. Biscuit, ice cream, and chocolate preference were significantly different in obese index.

Feeding Preference, Nymphal Development Time, Bodyweight Increase, and Survival Rate of the Bean Bug, Riptortus clavatus (Thurnberg) (Hemiptera: Alydidae), on Soybean Varieties

  • The soybean varieties the bean bug preferred the least were Kwangankong, Namhaekong, Sunamkong, Sorogkong, and Anpyeongkong, and next to them was Pungsannamulkong, among 25 varieties examined. Myongjunamulkong and Eunhakong supported a good growth of the bug as the daily gains of weight of 3rd instar nymphs were 14,9 and 13.9 mg, respectively. On the other hand the bug on Punsannamulkong gained weight daily as little as 10.1 mg. On Pungsannamulkong the nymphal development of the bean bug took $24.5{\pm}2.1$ days, about three days longer than those on Myunjunamulkong and Eunhakong. The survival of the bean bug on Punsannamulkong was 83%, slightly lower than those on Myunjunarnulkong and Eunhakong. It seemed evident that Pungsannamulkong have a non-preference type resistance to the bean bug.

Development of a Multi-criteria Pedestrian Pathfinding Algorithm by Perceptron Learning

  • Pathfinding for pedestrians provided by various navigation programs is based on a shortest path search algorithm. There is no big difference in their guide results, which makes the path quality more important. Multiple criteria should be included in the search cost to calculate the path quality, which is called a multi-criteria pathfinding. In this paper we propose a user adaptive pathfinding algorithm in which the cost function for a multi-criteria pathfinding is defined as a weighted sum of multiple criteria and the weights are learned automatically by Perceptron learning. Weight learning is implemented in two ways: short-term weight learning that reflects weight changes in real time as the user moves and long-term weight learning that updates the weights by the average value of the entire path after completing the movement. We use the weight update method with momentum for long-term weight learning, so that learning speed is improved and the learned weight can be stabilized. The proposed method is implemented as an app and is applied to various movement situations. The results show that customized pathfinding based on user preference can be obtained.

Sensory Characteristics and Preference of Various Chinese Foods added Kochujang by Chinese Focus Group (고추장 첨가 중국 음식에 대한 중국인의 관능적 특성 및 기호도 분석)

  • The purpose of this study was to analyze the characteristics of Chinese foods in main ingredients, sauces, and cooking methods, and to assess the applicability of kochujang in Chinese foods. Twenty Chinese foods and commercial kochujang were selected by a Chinese head cook. The main ingredients were 24 kinds such as pork, chicken, shrimp, bok choy, bean curd, Chinese noodles etc., which were generally used in Korean foods. The main Chinese sauces were 11 kinds, and soy sauce was used in 12 foods, shang loo tau soy sauce in 2, wine in 8, oyster sauce in 7, rice wine in 6. The classification of cooking units in all Chinese foods was performed and the cooking frequency was deep frying>pan frying>boiling>stir frying>steaming>roasting. The proper amount of kochujang (weight ratio) was decided by pre-test of the Chinese head cook and Chinese food added kochujang was assessed by a Chinese focus group. The overall preference of Chinese food added kochujang was assessed highly and was related to the kinds of sauces, and to the kinds of main ingredients. The foods which used soy sauce or shang loa tau soy sauce were preferred. Sweetness by using kochujang wasn't preferred in several foods. Saltiness and aftertaste by using kochujang didn't affect the food preference, and the intensity of color and pungency were evaluated as a moderate level. An increased amount of kochujang would be possible in several foods. However, the increase in the amount of kochujang for intensive color and pungency in Chinese foods was directly related to the increase of sweetness, which had been discussed as the main problem in lowering the preference. Therefore, the screening of various Chinese foods harmonized with kochujang and the determination of the proper mixing ratio with Chinese sauces are very important. The results of this study could be used as basic data for the promotion of kochujang consumption in the Chinese market.

A Survey of Satisfaction and Preference for Military Meal Service and Food Behaviors and Food Habits of Some Military Personnel (일부 군인들의 식행동 및 식습관과 군대급식에 대한 만족도와 기호도 조사)

  • The purpose of this study was to investigate satisfaction and preference for current military meal service and food behaviors and food habits of some military personnel in Chunchen and Wonju of the Kwangwon area. The results are as follows. In the anthropometric survey, average height of the subjects was 175.03 $\pm$ 5.30 cm, average weight was 69.15 $\pm$ 7.74 kg. As a result of surveying satisfaction in the current food service, an item high in satisfaction was adequacy of serving hours, whereas an item of low satisfaction was diversity of menu. The item of food service improvement needs of the subjects were in order more variety of menu, nutrition, preference, sanitation, cooking method. As a result of surveying eating behavior of the subjects, most items were high medium response. They preferred soju and relish and also they liked the bokkum cooking method. As a result of surveying food habits of the subjects, items of good habits were regularity of meals, marginal meals, diversity of food intake, dairy and dairy products, avoiding too exciting meals and natural food diet; whereas, items of bad habits were fast food intake, alcohol, smoking, carbonated and caffeine beverages, skipping breakfast. snacks, fatty food intake, yellow or green vegetable intake and fruit and seaweed intake. Following is the result of a survey on the preference of meals by cooking method serving the current military meal service. They liked one-dish meals such as Bokkeumbap, Bibimbap, Tteokguk, whereas, they disliked curryrice, Jajangbap. In case of soup, they liked soup made from meat better than vegetable soup or soup made with fish. Also they liked pot stem better than soup. Generally they liked meals containing meat in most cooking methods. These results suggest that continuous and practical nutrition education to change food habits in military life are necessary to Prevent chronic disease with increasing age.

The Evaluation of Web Contents by User 'Likes' Count: An Usefulness of hT-index for Topic Preference Measurement

  • The purpose of this study is to suggest an appropriate index for evaluating preferences of Web contents by examining the h-index and its variants. It focuses on how successfully each index represents relative user preference towards topical subjects. Based on data obtained from a popular IT blog (engadget.com), subject values of the h-index and its variants were calculated using 53 subject categories, article counts and the 'Likes' counts aggregated in each category. These values were compared through critical analysis of the indices and Spearman rank correlation analysis. A PFNet (Pathfinder Network) of subjects weighted by $h_T$ values was drawn and cluster analysis was conducted. Based on the four criteria suggested for the evaluation of Web contents, we concluded that the $h_T$-index is a relatively appropriate tool for the Web contents preference evaluation. The $h_T$-index was applied to visually represent the relative weight (topic preference by user 'Likes' count) for each subject category of the real online contents after suggesting the relative appropriateness of the $h_T$-index. Applying scientometric indicators to Web information could provide new insights into, and potential methods for, Web contents evaluation. In addition, information on the focus of users' attention would help online informants to plan more effective content strategies. The study tries to expand the application area of the h-type indices to non-academic online environments. The research procedure enables examination of the appropriateness of the index and highlights considerations for applying the indicators to Web contents.

Choosing quality indicators for quality prediction of egg in circulation (계란의 유통 중 품질예측을 위한 품질지표 선정)

  • This study was conducted to identify quality indicators of the freshness of chicken eggs circulating in domestic markets. We first stored freshly-laid eggs at temperatures of 0, 10, 20, and $30^{\circ}C$, investigated their weight-loss rate, specific gravity, color, york index, albumen index, Haugh unit (HU), pH, and sensory evaluation, and finally analyzed the correlation between each quality characteristic and the sensory preference. At all the storage temperatures, the quality characteristics of the weight-loss rate, specific gravity, yolk index, albumen index, and HU showed significant correlations (p<0.05) with the preference. In particular, the temperature-dependent correlation between the quality characteristics and the sensory preference was significantly higher with increasing storage temperatures and weight-loss rates (r = -0.78; r = -0.93; r = -0.95; and r = -0.99), albumen index (r = 0.66; r = 0.89; r = 0.89; and r = 0.93), and HU values (r = 0.64; r = 0.92; r = 0.96; and r = 0.98) at 0, 10, 20, and $30^{\circ}C$, respectively (p<0.01). The Color and pH examinations yielded disparate results, and further research is needed to determine the methods of using the characteristics as quality indicators. We believe that the changes in the weight-loss rate, specific gravity, yolk index, albumen index, and HU are adequate quality indicators of the freshness of egg in circulation.

Characteristics of Sweet Pumpkin Yanggaeng with Stevia Leaf Powder as Partial Replacer of Sucrose (설탕량 감소를 위한 스테비아 잎 분말 적용 단호박 양갱)

  • Sweet pumpkin yanggaeng were produced with stevia leaf powder as a partial sugar replacer(0 to 20% sucrose weight) and antioxidant. Characteristics of the yanggaeng were compared in moisture, total soluble solids, pH, color, texture, antioxidant properties, and preference scores. Moisture and total soluble solids were proportionally increased with increasing addition of stevia leaf powder(p<0.001). pH of control (without stevia) and SLP20(with 20% replacement of sucrose) were 7.05 and 6.82, respectively. L-value, a-value, and b-value were decreased with increasing amount of stevia leaf powder (p<0.001). Antioxidant activities (total polyphenols and DPPH radical scavenging activity) were gradually increased as more stevia leaf powder included in the yanggaeng(p<0.001). SLP20 being significantly different from others (p<0.001) had the highest values of hardness and chewiness, but there was no significant difference between cohesiveness and adhesiveness among samples. SLP4 had the highest preference in appearance and texture, otherwise SLP8 did the highest scores in flavor, sweetness and overall preference. SLP8, in which 8% sucrose was replaced with stevia leaf powder, was considered to be the most desirable for production of sweet pumpkin yanggaeng.
