Studies on Possible Utilization of Citrus Peel as a Feed Ingredient for Broilers I. Feeding Value of Dried Citrus Peel (부로일러사료에 있어서 밀감피의 이용방안에 관한 연구 I. 밀감피 건조분말의 사료적 가치)

  • A study was conducted to investigate possibility of utilizing dried citrus peel (DCP) as an ingridient of broiler diets. Fresh citrus peels were collected from a citrus processing plant, and were sun-dried and ground. Both chemical analyses and a feeding trial were carried out. DCP was analyzed for proximate nutrients, amino acids and some minerals. In the feeding trial, a total of 192 day-old female broiler chicks of Manor strain was divided into 16 groups of 12 birds each. Each group was fed one of the 4 different levels(0, 2, 4 and 6%) of DCP replacing an equivalent amount of wheat bran in the diet with 4 replications for 6 weeks. Body weight gain, feed intake and feed efficiency of broilers fed different levels of DCP showed no significant differences among treatments. Immediately after termination of the feeding trial, cach bird was examined for shank color using Roche's Egg Yolk Color Fan. Shank color index of birds increased consistently (P<0.05) as the level of DCP fed increased, indicating that DCP can be used as a source of pigments. It was concluded from the results that DCP could be used up to 6% in place of wheat bran in broiler diets without adverse effects.

  • This study was conducted to provide a guideline for laying hens breeding through comparing performance test results and domestic and foreign breeding processing for the purpose of succeeding in laying hen industry. The annual average egg numbers were 120 at 1930, 135 at 1940 and 175 at 1950 which was 146% increase during a decade. Heterosis was firstly introduced at 1924 and was applied to produce commercial stock since 1950. The theory of selection for quantitative traits was established by Lerner in 1951. In Europe and America, the annual average egg numbers in performance test were 175, 213, 219 and 277 in 1950, 1960, 1970 and 1985, respectively, and in Korea, those were 196, 226 and 265 in 1960, 1970 and 1980, respectively Laying hen breeding through simultaneous selection of numerous traits may provoke elevation of viability, improvement of feed efficiency, alongation of laying period and increase of disease resistance.

  • Processing of organic waste is converted to anaerobic digestion for environmental friendly and sustainable energy recovery and reduction of sludge. In this study, ECOPAD (ECOdays' Plug-flow Anaerobic Digster)design for a high solids content and high organic matter content were used to investigate an applicability and efficiency of food waste treatment and poultry wastewater treatment. Case-by-case analysis of treatment efficiency of ECOPAD using food waste of city "P" and city "S". Volatile Solids basis organic removal efficiency of city "P" and city "S" was 84% and 88% respectively. And, the content of methane (P City: 70%, S City: 71%) was measured similarly. In the case of poultry waste bio-gas production was measured to $1.6Nm^3/kg$-VSrem, and methane content was measured to 69%.

  • One of the biggest challenges for the animal feed industry in the coming years will be to meet the growing demand in animal protein in light of increased cost of feed ingredient as well as tougher restrictions on the use of antimicrobial growth promoters imposed by consumers and governments. A key focus area will be to maximise feed efficiency and minimise nutrient waste. It has been widely acknowledged that the composition of the intestinal microflora is closely related to intestinal health and performance of animals. Advanced microbial techniques have shown a close relationship between bacterial communities and their ability to modulate nutrient absorption and processing. In addition it has been recognised that modulating the immune response has significant impact on overall health as well as overall nutrient demand. Molecular techniques are a useful tool to gain an understanding of the impact of dietary interventions including the use of functional feed additives on specific changes in microbial communities or the immune system. Most these techniques however focus on the evaluation of large changes in bacterial compositions and often underestimate or neglect to recognise small changes in microbial diversity or behaviour changes without any measurable immune response. The key to understanding the relationship between specific nutritional intervention and the impact on health and performance lies in a deeper understanding of the impact of these nutrients on the expression of specific genes or specific metabolic pathways. The development of molecular tools as a result of developments in the field of Nutrigenomics has enabled researchers to study the effects of specific nutrients on the whole genome or in other words, the effect of thousands of genes simultaneously, and has opened a completely different avenue for nutritional research.

A Comparison of Meat Characteristics between Duck and Chicken Breast

  • Twenty four broilers (Ross) and 24 ducklings (Cherry berry) aged 45days were stunned and killed by conventional neck cut to evaluate the meat characteristics and fatty acid composition of breast meat. Breast meats were removed from each carcass at different post-mortem times. After complete processing, the breast meats were then placed in a polythene bag and kept in a cold storage room at $4^{\circ}C$ for 7 days. The pH of meat samples at different post-mortem times, and meat characteristics and fatty composition at different storage times were evaluated. No significant differences were found in pH at different post-mortem times except at 30 min postmortem, where duck breast showed significantly lower pH than chicken breast. As expected, duck breast meat had significantly higher redness (a*), but lower lightness (L*) value compared to chicken breast. During whole storage time, the a* value remained constant in duck breast. Cooking loss (%) was higher in duck breast compared to chicken breast during the whole storage time. Shear force decreased with increasing storage time in both chicken and duck breast meat, moreover, it decreased rapidly in duck breast compared to chicken breast. The TBARS values increased with increasing storage time in both duck breast and chicken breast meat and was significantly higher in duck breast. The fatty acids (%) C14:0, C16:0, C16:1, C18:2 and C18:3 were significantly higher while C18:0 was significantly lower in duck breast compared to chicken. SFA was increased, while USFA and MUSFA decreased only in duck breast during the 7 day storage time.

Studies on the Processing of Seasoned Product Containing Egg Yolk. (난황을 이용한 조미제품 제조에 관한 연구)

  • This experiment was conducted to determine yolk addition level for manufacturing the seasoned yolk Products. They were Prepared with 0, 10, 20, 40% yolk content in conduction with fish meat faste and spices. Yolk mixture was cooked at $90^{\circ}C$ for 1 hour and then dried with hot air at 5511 for 5 hours. The texture of non-dried seasoned product added with 10% yolk was remarkably increased as compared with any other treatment. For the drying process of seasoned yolk product, the more addition of egg yolk to the mure resulted in a slight difficulties on drying. As yolk level increased in dried seasoned product (egg jerky), moisture and fat content increased whereas protein and total amino acid content decreased. Most of amino acid except leucine, isoleucine and phenylalanine decreased by increasing level of egg ye The Predominant amino acids were glutamic acid, aspartic acid and lysine but only small amount of proline was detected in each treatment. Results of experiment indicated that yolk could be used up 20% level in view of physicochemical and sensory quality in seasoned products.

Housewives' Awareness of the Quality Attributes for Korean Native Chickens (토종닭 품질 특성에 대한 주부의 인식 조사)

  • A consumer survey was conducted for the subject of a total of 503 housewives in Korea, with the questionnaires on the quality attributes for Korean native chicken. The responding results collected were used for the importance-performance analysis of the quality attributes involved in production, processing, distribution, and consumption of Korean native chicken. The quality attributes with both relatively high importance and performance ("keep up the good work") were chicken origin, shelf life, freshness, and safety issues, while those with high importance but low performance ("concentrate here") were chicken breed certification and refrigerated/ frozen state. Respondents were also interested in lean meat and protein content of the chicken meat. In the aspect of eating quality attributes, chewiness was the most important one. The survey shows tenderer, chewier, and more flavorful chicken meat will be preferred and a new chicken breed with those eating quality attributes needs to be developed.

Isolation and Identification of Feather-Degrading Bacteria for Biotechnological Applications of Keratinaceous Protein Waste (케라틴 단백질 폐기물의 생물공학적 적용을 위한 우모 분해세균의 분리 및 동정)

  • Feathers, which are almost pure keratin protein, are produced in large amounts as a waste by-product at poultry-processing plants. Keratinolytic enzymes may have important uses in biotechnological processes involving keratin-containing wastes from poultry and leather processes. In this study, screening and identification of keratin-degrading bacteria were investigated. Five keratin-degrading bacterial strains (F3-1, F3-4, F7-1, C1-1, C1-2) were isolated from compost and decayed chicken feather. On the basis of morphological, physiological studies, and Biolog system, all isolates were identified as the genus Bacillus. Among them, the strain F7-1 had the highest feather-degrading activity and was selected for further taxonomical study. Phylogenetic analysis of strain F7-1 based on comparison of 165 rDNA sequences revealed that this strain is closely related to Bacillus megaterium.

Future Business Direction of Korean Native Chicken: Farmer and Processor Perspectives (토종닭 농장주 및 가공업자가 바라본 토종닭 산업의 미래 방향)

  • The aim of this study was to investigate the difficulties that Korean farmers and processors currently experience with respect to the market for Korean native chicken (KNC). This study also provides suggestions by which they can overcome these difficulties. In all, sixty-nine farmers and sixty-two processors participated in our investigation, which addressed 1) the current difficulties that KNC farmers face, 2) the current importance-satisfaction measures among KNC farmers and processors, and 3) the future direction of the KNC market: farmer and processor opinions. The respondents stated that the limited number of sales stores was the most difficult market condition they faced in raising KNC, followed by feed cost, animal disease, and poor production environment. Regarding issues of importance and satisfaction, origin in raising step and slaughtering in the processing and distribution step were considered the areas most in urgent need of improvement, given farmers' and processors' high levels of dissatisfaction with these. Both the free-range farming system and the concept of animal welfare are growing in importance, given consumers' interests in these areas. As to opinions on the direction of KNC development, menu development was cited as most important, followed by public advertisement, accessibilities, business aid, and breed development. Consequently, the results show that well-organized support from both the government and related industries is needed, as chicken farmers and processors cannot resolve certain limitations inherent in the KNC industry on their own.

Combination of multiplex reverse transcription recombinase polymerase amplification assay and capillary electrophoresis provides high sensitive and high-throughput simultaneous detection of avian influenza virus subtypes

  • The pandemic of avian influenza viruses (AIVs) in Asia has caused enormous economic loss in poultry industry and human health threat, especially clade 2.3.4.4 H5 and H7 subtypes in recent years. The endemic chicken H6 virus in Taiwan has also brought about human and dog infections. Since wild waterfowls is the major AIV reservoir, it is important to monitor the diversified subtypes in wildfowl flocks in early stage to prevent viral reassortment and transmission. To develop a more efficient and sensitive approach is a key issue in epidemic control. In this study, we integrate multiplex reverse transcription recombinase polymerase amplification (RT-RPA) and capillary electrophoresis (CE) for high-throughput detection and differentiation of AIVs in wild waterfowls in Taiwan. Four viral genes were detected simultaneously, including nucleoprotein (NP) gene of all AIVs, hemagglutinin (HA) gene of clade 2.3.4.4 H5, H6 and H7 subtypes. The detection limit of the developed detection system could achieve as low as one copy number for each of the four viral gene targets. Sixty wild waterfowl field samples were tested and all of the four gene signals were unambiguously identified within 6 h, including the initial sample processing and the final CE data analysis. The results indicated that multiplex RT-RPA combined with CE was an excellent alternative for instant simultaneous AIV detection and subtype differentiation. The high efficiency and sensitivity of the proposed method could greatly assist in wild bird monitoring and epidemic control of poultry.
