바이오 에탄올 부산물 DDGS와 복합 효소제 첨가급여가 돈육의 품질 특성에 미치는 영향 (Effects of Dietary Bio Ethanol By-product and Complex Enzyme on Meat Quality of Pork Loin)

  • 시험동물은 $68.77{\pm}0.10kg$인 3원 교잡종(Landrace${\times}$Yorkshire${\times}$Duroc) 비육돈 96두를 공시하였으며, 8주간 사양시험을 실시하였다. 시험설계는 1) corn-soybean meal diet, 2) corn-soybean meal diet + 0.05% enzyme complex, 3) cornsoybean meal diet with DDGS 및 4) corn-soybean meal diet with DDGS + 0.05% enzyme complex으로 4개 처리를 하여 처리당 6반복, 반복당 4두씩 완전임의 배치하였다. 등심의 pH는 DDGS를 함유한 두 처리구가 CON - Enzyme 처리구와 비교하여 유의적으로 증가하였다(p<0.01). 관능평가에 있어서 경도(Firmness)은 DDGS - Enzyme 처리구가 CON 처리구와 비교하여 유의적으로 증가하였으며(p<0.01), 육색에 있어서 $a^*$ 값은 DDGS를 함유한 두 처리구가 DDGS를 함유하지 않은 두 처리구와 비교하여 유의적으로 높게 나타났다(p<0.05). 등심 및 등지방의 지방산 조성에서 총 UFA와 총 UFA/SFA는 DDGS를 함유한 처리구가 CON 처리구와 비교하여 유의적으로 높은 효과를 나타냈다(p<0.001). 결론적으로 DDGS 급여는 등심의 pH, 경도, 육색, 불포화 지방산 조성을 증가시켰으나, 복합 효소제 첨가 급여에 따른 육질의 변화는 크게 나타나지 않았다.

Effect of fermented biogas residue on growth performance, serum biochemical parameters, and meat quality in pigs

  • Objective: This study investigated the effect of fermented biogas residue (FBR) of wheat on the performance, serum biochemical parameters, and meat quality in pigs. Methods: We selected 128 pigs (the mean initial body weight was $40.24{\pm}3.08kg$) and randomly allocated them to 4 groups (1 control group and 3 treatment groups) with 4 replicates per group and 8 pigs per pen in a randomized complete block design based on initial body weight and sex. The control group received a corn-soybean meal-based diet, the treatment group fed diets containing 5%, 10%, and 15% FBR, respectively (abbreviated as FBR5, FBR10, and FBR15, respectively). Every group received equivalent-energy and nitrogen diets. The test lasted 60 days and was divided into early and late stages. Blood and carcass samples were obtained on 60 d. Meat quality was collected from two pigs per pen. Results: During the late stage, the average daily feed intake and average daily gain of the treatment groups was greater than that of the control group (p<0.05). During the entire experiment, the average daily gain of the treatment groups was higher than that of the control group (p<0.05). Fermented biomass residue did not significantly affect serum biochemical parameters or meat quality, but did affect amino acid profiles in pork. The contents of Asp, Arg, Tyr, Phe, Leu, Thr, Ser, Lys, Pro, Ala, essential amino acids, non-essential amino acids, and total amino acids in pork of FBR5 and FBR10 were greater than those of the control group (p<0.05). Conclusion: These combined results suggest that feeding FBR could increase the average daily gain and average daily feed intake in pigs and the content of several flavor-promoting amino acids.

돼지의 성이 등심의 육질, 전자혀 측정치 및 관능적 맛 특성에 미치는 영향 (Influences of Gender on Meat Quality, Electronic Tongue Measurements and Sensory Characteristics of Pork Loin)

  • 본 연구의 목적은 비육돈의 성이 육질과 맛 특성에 미치는 영향을 구명하는 것으로, 이를 위해 총 90두 삼원교잡 LYD 비육돈(180일령 암퇘지 45두와 거세돈 45두; 각 처리구당 1+, 1, 2등급 15마리씩 배치)의 육질, 기계적 맛 및 관능적 맛을 성별에 따라 조사하였다. 등심근의 pH, 근내지방 함량, 육색 및 전단가는 성별 간 차이가 없었지만(p>0.05), 암퇘지와 거세돈의 육즙감량(1.66% vs 1.21%), 유리수분량(12.19% vs 10.68%) 및 가열감량(23.67% vs 21.04%)에서는 유의적인 차이가 확인되었다(p<0.05). 전자혀 측정치는 거세돈의 신맛의 강도가 암퇘지보다 유의적으로 낮은 반면, 감칠맛과 감칠맛후미의 강도는 높았다(p<0.05). 관능검사에서는 풍미, 다즙성 및 연도에서 거세돈이 높은 점수를 받은 결과, 기호성에서도 거세돈(5.51점)이 암퇘지(4.86점)보다 유의적으로 높은 점수를 얻었다(p<0.05). 이러한 결과로부터, 암퇘지보다 높은 거세돈의 보수력이 감칠맛 강도를 증가시켜 관능적 맛도 좋게 한 것으로 사료되었다.

Hunter L 값에 따른 돈육의 육질 특성 연구 (Studies on Quality Characteristics of Pork Classified by Hunter L Value)

  • 본 연구에서는 육색에 따른 돈육의 육질특성을 파악하기 위하여 육색특성중 대표적인 Hunter L 값을 기준으로 설정하여 육의 이화학적 특성 및 관능특성을 분석하였다. 도축후 3, 5, 10, 15시간에 측정한 도체온도와 도축후 15시간까지의 온도 저하율은 Hunter L 값의 증가에 따라 유의적으로 낮았으며(p<0.05), 도축 직후와 24시간에 측정한 pH의 경우에도 명도가 증가할수록 유의적으로 낮았다. 물리적 특성에서 전단력은 L 값의 세 범위간에 유의성이 인정되지 않았으나, 보수성은 명도가 증가함에 따라 유의적으로 감소하였다(p<0.05). 조리감량에서는 유의적인 차이가 없었지만, 드립의 경우 명도가 높을수록 드립량이 증가되었다. 육색의 경우 CIE L*, a*, b*와 chroma, Hue 및 ΔE값은 육색명도가 증가할수록 유의적으로 증가하였다(p<0.05). 결론적으로 다른 육에 비해 육색명도(Hunter L) 값이 높은 육은 사후 온도가 높고, pH와 보수성이 낮으며, 드립이 많이 발생하여 소비측면에서 보면, 좋지 못한 외관으로 소비자가 구입을 기피할 수 있을 것으로 판단된다. 그러나 관능적 특성에 유의적인 차이가 인정되지 않아 보다 폭넓은 연구가 이루어져야 될 것으로 사료된다.

Influence of freeze-thawed cycles on pork quality

  • Objective: This study was conducted to determine the effect of freeze-thawed cycles (Fresh meat, F-T 1 cycle and F-T 2 cycles) on the quality characteristics of porcine longissimus dorsi muscle. Methods: A total of 20 three-crossbred pigs (Duroc×[Large White×Landrace]) were randomly obtained from a commercial slaughterhouse in Thailand. Muscle samples were immediately taken from 10 to 11th of the longissimus dorsi for histochemical analysis. The muscles were cut into 2.54 cm-thick chops. A minimum of 20 chops were used for each treatment (fresh meat, freeze-thawed 1 and 2 cycles). Individually chops were packaged in polyethylene bags and frozen at -20℃ for 6 months followed by thawing in refrigerator at 4℃ for 24 h (the 1st freeze-thawed cycle). The freeze-thawed procedure was repeated for two cycles (the 2nd freeze-thawed cycle). Thawing loss, shear force value, citrate synthase activity and muscle fiber characteristics were determined on the muscles. Results: Results showed that increasing of freeze-thawed cycle increased the thawing loss (p<0.01) and citrate synthase activity (p<0.001). Shear force value of fresh meat was higher than freeze-thawed 1 and 2 cycles (F-T 1 cycle and F-T 2 cycles). Freeze-thawed cycles affected muscle characteristics. Muscle fiber area and muscle fiber diameter decreased with an increasing number of freeze-thawed cycles (p<0.001), while the thickness of endomysium and perimysium were increased (p<0.001). Conclusion: Repeated freeze-thawed cycles degraded muscle fiber structure and deteriorated pork quality.

A comparison of Echium, fish, palm, soya, and linseed oil supplementation on pork quality

  • Objective: Long chain n-3 polyunsaturated fatty acids (PUFA) exert positive effects on human health. The long chain n-3 PUFA of pork can be increased by adding fish oil to the diet. Due to the cost and availability of fish oil an alternative source must be found. Methods: This study evaluated the effect of five dietary oils on meat quality, fatty acid composition and lipid stability. The five diets contained 1% palm oil (Control), 1% soya oil, 1% linseed oil, 1% fish oil, and 1% Echium oil, respectively. The trial consisted of 60 gilts, randomly allocated to five groups. Results: All color parameters, extractable fat content, fat free dry matter, and moisture content of the m. longissimus muscle were unaffected by dietary treatment. Consumers and a trained sensory panel could not detect a difference between the control samples and the Echium oil sample during sensory analysis. Samples containing higher levels of PUFA (soya, linseed, fish, and Echium oil) had higher levels of primary and secondary lipid oxidation products after refrigerated and frozen storage. However, these values were still well below the threshold value where off flavors can be detected. The Echium oil treatment had significantly higher levels of long chain PUFA than the linseed oil treatment, but it was still significantly lower than that of the fish oil treatment. Conclusion: Echium oil supplementation did not increase the levels of n-3 to the same extent as fish oil did. The result did however suggest that Echium oil can be used in pig diets to improve muscle long chain n-3 fatty acid content without any adverse effects on meat quality when compared to linseed, soya, and palm oil.

QTL Scan for Meat Quality Traits Using High-density SNP Chip Analysis in Cross between Korean Native Pig and Yorkshire

  • We attempted to generate a linkage map using Illumina Porcine 60K SNP Beadchip genotypes of the $F_2$ offspring from Korean native pig (KNP) crossed with Yorkshire (YS) pig, and to identify quantitative trait loci (QTL) using the line-cross model. Among the genotype information of the 62,136 SNPs obtained from the high-density SNP analysis, 45,308 SNPs were used to select informative markers with allelic frequencies >0.7 between the KNP (n = 16) and YS (n = 8) F0 animals. Of the selected SNP markers, a final set of 500 SNPs with polymorphic information contents (PIC) values of >0.300 in the $F_2$ groups (n = 252) was used for detection of thirty meat quality-related QTL on chromosomes at the 5% significance level and 10 QTL at the 1% significance level. The QTL for crude protein were detected on SSC2, SSC3, SSC6, SSC9 and SSC12; for intramuscular fat and marbling on SSC2, SSC8, SSC12, SSC14 and SSC18; meat color measurements on SSC1, SSC3, SSC4, SSC5, SSC6, SSC10, SSC11, SSC12, SSC16 and SSC18; water content related measurements in pork were detected on SSC4, SSC6, SSC7, SSC10, SSC12 and SSC14. Additional QTL of pork quality traits such as texture, tenderness and pH were detected on SSC6, SSC12, SSC13 and SSC16. The most important chromosomal region of superior pork quality in KNP compared to YS was identified on SSC12. Our results demonstrated that a QTL linkage map of the $F_2$ design in the pig breed can be generated with a selected data set of high density SNP genotypes. The QTL regions detected in this study will provide useful information for identifying genetic factors related to better pork quality in KNP.

Effect of Dietary Processed Sulfur on the Meat Quality in Pork under Aging

  • The present study was performed to determine the effect of dietary supplementation with processed sulfur on the quality and stability of vacuum packaged pork during aging time. All groups were designated into two groups; NP, a group fed basal diet and SP, a group fed basal diet and processed sulfur, 3 g/kg feed. Following vacuum packaging, Longissimus dorsi muscles were vacuum-packaged and stored under refrigerated condition ($1-2^{\circ}C$) for 21 d. Weight loss of the SP group was lower (p<0.05) than that of the NP group. Interaction effect of shear force and cooking loss was observed (p<0.05). Redness values of the SP group at 14 and 21 d after storage were higher than those of the NP group (p<0.05). Lipid oxidation and volatile basic nitrogen (VBN) levels in the SP group were retarded (p<0.05) compared to that of the NP group during storage. Aspartic and glutamic acid in SP were higher than in NP (p<0.1). There was no significant (p>0.05) difference in TPC between the both groups during storage. Therefore, vacuum packaged pork from pigs fed processed sulfur had better aging yield and storage stability than pork from pigs fed basal diet.

토끼고기의 지방질과 단백질에 관한 연구 -I. 지방성분을 중심으로- (Studies on Lipids and Proteins of Rabbit Meat -I. Emphasis on lipid component of rabbit meat-)

  • Among animals, the rabbit is known to be affected most sensitively by dietary changes and to be most susceptible to atherosclerosis. The exact reason is still unknown as to whether the primary cause is intrinsic (tissue itself) or extrinsic such as a blood factor which could be influenced by various dietary means. It is of utmost importance to check the nutritional quality of rabbit meat before it is accepted and adapted as a daily food item. To evaluate nutritional quality of rabbit meat, studies on various aspects of lipid components were carried out in comparison with other animal meats such as beef, pork and chicken also included in the study was the question whether the cooking and storage conditions influence the composition of fatty acids and cholesterol level. Some results and findings are listed below: 1. The content of linoleic acid (18 : 2), one of the essential fatty acids, was much higher in rabbit meat compared to the other meats. The Percentages of this Polyunsaturated fatty acids, was much higher in rabbit meat compared to the other meats. The percentages of this polyunsaturated fatty acid in terms of total fatty acids were $37.3{\pm}3.7$, 5.9, 14.5, and 21.9% for rabbit, beef, pork, and chicken respectively. The degree of unsaturation was high not only in meat but also in liver and adipose tissue of rabbit. The values of iodine number, the indication of degree of unsaturation, were known to be $102{\sim}107$, $32{\sim}47$, $46{\sim}67$, and $55{\sim}77$ for rabbit, beef, pork, and chicken respectively. Such a high proportion of this polyunsaturated fatty acid contained in rabbit meat could be harmful due to their Peroxidation effect. 2. A small amount of lower (short chain) fatty acids was isolated from rabbit tussues, which were not observed in other animal's tissues. The significance of this small amount of short chain fatty acids contained in rabbit meat remained an open question. 3. The concentration of total cholesterol in rabbit meat was similar to that of otherr but the content of esterified cholesterol was higher in rabbit meat. This was probably due to the perference of cholesterol to esterify with unsaturated fatty acids. By roasting the percentage of Polyunsaturated fatty acids was decreased while saturated palmitic acid was proportionally increased. 4 The composition of fatty acids were affected more by dry heat than moist heat. More research should be pursued to improve methods of preservation and storage to prevent possible peroxidation and rancidity problems of rabbit meat. In the meantime, the public should be informed to eat fresh rabbit meat and not to store it for a long period of time. This study was supported by the Ministry of Science and Technology in Korea.

제올라이트 급여가 돈육 목살의 조리 전후 품질에 미치는 영향 (Effect of Dietary Supplementation of Zeolite on the Quality of Pork Shoulder Before and After Cooking)

  • The purpose of the study was to investigate the quality characteristics and sensory properties of fresh and boiling pork shoulder at different feed ration of zeolite (0, 0.5, 1.0 and 2.0%). All of the dietary zeolite groups had significantly higher pH than the control; 0.5% zeolite (6.14) had the highest pH. Cooking loss was significantly higher in the control compared to other treatments; further, the loss, increased as the feed ratio of zeolite addition increased. The cooking loss of fresh pork shoulder fed with 0.5% zeolite (22.47%) was significantly lower than other treatments. The dissolution crude lipid of 0.5% zeolite was the lowest, but was not significant. In the Hunter's color value of fresh pork shoulder, the L and a values were significantly higher in 0.5% zeolite compared to other treatments, whereas the b value was significantly higher in 2.0% zeolite. In the Hunter's color value of boiling pork shoulder, the L and b values with 0.5% zeolite were significantly higher compared to other treatments; however, the a value was not significantly different between groups. The hardness, springiness, cohesiveness, gumminess and chewiness of fresh pork shoulder were significantly increased as the feed ration of zeolite increased. These properties, except for springiness in boiling pork shoulder were significantly increased as the feed ration of zeolite increased. Furthermore, sensory characteristics of color, taste, flavor, appearance and overall preference were significantly higher in boiling pork shoulder with 0.5% zeolite compared to other treatments. Also, texture preference, which was decreased as the feed ratio of zeolite increased, was higher in the control compared to other treatments. In conclusion, the quality characteristics and sensory properties of pork shoulder meat were enhanced with the dietary supplementation of zeolite.
