A Study on Culinary Arts Major Students's Type of Subjectivity Recognition through Restaurant Start-up Experience Program -Focused on Pop-up Restaurant- (외식창업교육 체험프로그램을 통한 조리전공 재학생의 주관적 인식유형 연구 -팝업레스토랑을 중심으로-)

  • This study used Q methodology for analogizing culinary arts major students' subjectivity through their participation of one of restaurant start-up experience program, called pop-up restaurant. The study tried to figure out particular structure of among students' responses and noticed five distinctive types. There were Increase learning effect type(Type 1, N=4), Collaboration of members importance type(Type2, N=8), Marketing PR need type(Type3, N=6), Restaurant business plan type(Type4, N=4), Industry work experience required type(Type5, N=3). The study also revealed that each type contained diverse characteristics figures in their own. The research finding could be used as fundamental source of future similar research but in other research methodology in the format of difference among students or diverse measuring point of time frame.

  • This study intended to examine the Korean restaurant customer's recognition about GIAP and to measure the reliability for them, and to figure out their effects on the customer's satisfaction and revisit intentions. Accordingly, research model had been set up and also hypotheses was made up according to pre-studies and pre-investigation results. Factor analysis and reliability analysis were concluded as valid results by the Cronbach's Alph for GIAP, customer satisfaction and revisit intention each other. Firstly, the effect of GIAP on the customer satisfaction was showed positive significance about four factors - perceived quality, reliability, authenticity and security on the customer satisfaction by the multiple regression analysis. Secondly, The effect of GIAP on the customer's revisit intention was showed positive significance about four factors - perceived quality, reliability, authenticity and security on the customer's revisit intention by the multiple regression analysis. Thirdly, the effect of the customer satisfaction on the customer's revisit intention was showed positive significance by the simple regression analysis. This study focused on medium level-cost Korean-pop restaurant so as to investigate general popular's recognition about the GIAP and intended to figure out their revisit intention. Therefore, the results are useful for increasing the food-service strategy system. Informations about the GIAP in restaurants can be credible to the restaurant customers.

  • Our Korean cuisine, due to growing interests in Korean culture along with outstanding performance of K-pop stars, is attracting worldly attention. As the worldly food pursuit tendency is changing from"fast food" to "slow food", preference for our Korean cuisine, which is well-known for its healthiness, is growing. However, our Korean cuisine, in terms of the world citizen's preference, as receiving evaluation for being lacking behind of Sushi of Japan, Dimsum of China, pizza and pasta of Italy, rice noodle of Vietnam, even to Indonesian and Middle-East foods, has not been achieving drastic advancements despite the cosmopolitan's attention. The previous studies were suggesting that, failure of a localization strategy that changes our traditional taste and aroma adaptive to foreigners' preference, is a cause for this. This study, through case studies of Korean food businesses in the US which have achieved a success through localization strategy, attempts to propose the following global entrepreneurial strategy of Koran food at the US dining out market. As a global entrepreneurial strategy for success, we propose, first a sales strategy not for Koreans but for local people as main customers, second a customization strategy which is not our traditional way but that meets local standard, and finally a committed entrepreneurship.
