Studies on Processing Techniques in Barley II. The Processing and Cooking Quality of Cut-polished Barley in Naked Barley (보리의 가공기술 개선연구 II. 쌀보리의 할맥가공특성과 취반성)

  • These studies were carried out to find out the polishing properties and cooking quality of the cut-polished barley. Naked barley, Youngsanbori which was produced in Chonnam province, Korea in 1981, was applied for this experiment. Polished barley was produced by the conventional method and cut-barley was manufactured by the method established by Wheat and Barley Research Institute. The yield of cut-polished barley was 68.2% and that of conventionally polished barley was 70.1 %. The ratio of length to width was 2.88 in cut-polished barley and that of conventionally polished barley was 1.36. And weight of 1,000 kernel was 9.5g in cut-polished barley and 18.5g in conventionally polished barley. Energy consumption was found to be 91.1kW/1,000kg in conventionally polished barley and 105kW/1,000kg in cut-polished barley. Whiteness, water uptake ratio and expanded volume of cooked barley were 45.5, 225.7 and 283% in conventionally polished barley and 49.5, 312.7 and 318% in cut-polished barley, respectively.

  • This study was conducted to evaluate the polishing process that affects the polishing properties and cooking qualities of cut-polished barley. Naked barley, Youngsanbori (Sedohadaka), which was produced in Cheonnam province, Korea in 1981, was cut and polished to have the polished yield per cent of four grades, 68.27, 72.85, 75.51 and 78.70, in contrast to the conventionally polished barley which was polished up to 70.10 per cent. Length. thickness and width of the kernels and weight of 1,000 kernels of the cut-polished barley were increased with improving the grade of the polishing yield. Energy consumption was found to be reduced according to increasing the polishing yield of the cut-polished barley. As polishing yield of the cut-polished barley were increased. the contents of P$_2$O$\_$5/, K$_2$O, MgO and Mn were increased. Also whiteness, water uptake and expanding volume of cooked barley were increased in accordance with upgrading the polishing yield of the cut-polished barley.

  • Studies on the brewing of Takju with polished barley was carried out. The results obtained and as follows. 1. Polished barley koji was not available because of low acidit production. 2. No significant differences of Takju quality observed among treatments of polished barley, but barleyflour Takju was remarkably inferior to other materials originated Takju in quality and color. 3. Yield per compressed barley Takju was higher than that of other type of materials. 4. The most desirable enzyme sources ratio in the brewing with polished barley were koji 20-30%, Kokja 2.5%, bunkuk 2% respectively. 5. This results indicates that Takju berwing with polished barley is possible.

  • Some effect on the protein metabolism in growing albino rats by feeding on the rice mixed with wheat or barley have been studied. The species of wheat and barley used in this experiment were either 80% polished or nonpolished wheat, barley and naked barley. The growing rats to be examined were fed on 30% wheat or barley mixed with rice diets for 8 weeks. The total nitrogen, creatinine, amino acid nitrogen and urea-nitrogen contents in the liver and the creatinine and urea-nitrogen contents in the urine have been measured. The results obtained are summarized as follows: 1. The total nitrogen contents in the liver and the serum were no remarkable difference by feeding on each mixed diet, compared with the rice diet group. 2. The creatinine contents in the liver of the unpolished wheat and barley mixed diet groups were the similar to that of the rice diet group, but these were higher by feeding on the polished wheat and barley mixed with rice diets. 3. The amino acid nitrogen contents in the liver of the polished naked barley mixed with rice diet groups were the similar to that of the rice diet group, but these were higher by feeding on the other mixed diets than the rice diet. 4. The urea-nitrogen contents in the serum of the polished wheat and naked barley mixed with rice diet groups were higher than that of the rice diet group, but these were significantly lower by feeding on the polished barley mixed with rice diets than the others. 5. The creatinine and the urea-nitrogen contents in the urine of the original wheat and barley mixed with rice diet groups were higher than that of the polished wheat and barley mixed with rice diet groups. In the view of the above results, it could be seen that the protein metabolism was remarkable change according to polish of the wheat and barley.

  • Crease cut pearled baller was studied in relation to product and quality, and processing electricity requirement with various pearling yields. 1. Increasing the pearling rate resulted in increasing broken grain of cut-Polished barley. 2. The range of length/width ratio in cut-polished baller were from 2.09 to 2.13 and those of pearled barley were 1.36, respectively. 3. Cut-polished barley required more electricity than pearled barley at the same polishing rate. As pearling rate increased at first polishing before cutting, total electricity requirement of cut-polished barley reduced significantly.

  • A study was performed to establish the detection method of irradiated cereals. A drastic reduction of the apparent viscosity of suspensions with heat treatment was observed up to 1∼2 kGy in brown rice, Job's-tears, polished barley and polished rice. They were gently reduced to samples irradiated at 15 kGy. This trend was similar for all stirring speeds. The viscosity of unirradiated brown rice, Job's-tears, polished barley and polished rice reduced with in-creasing stirring speeds and this tendency was similar for irradiation doses. Regression expressions and coefficients of brown rice, Job's s-tears, polished barley and polished rice on different doses were 0.9399($y=3408.0e^{-0.2338x}$), 0.8855($y=3597.8e^{-0.6864x}$), 0.9343($y=7554.0e^{-0.4998x}$) and 0.9714($y=3228.2e^{-0.5312x}$), respectively, at 120 rpm. These results sug-gest that detection of irradiation for cereals could be possible by viscometric methods.

  • These studies were conducted to find out the polishing methods that improve yield and quality of the polished barley. Four varieties of hulled barley, Dongbori 1. Bunong, Kangbori and Suwon 182 which were produced in Suwon, Korea in 1979, were subjected to this experiment. The polishing machine, manufactured by Satake Co, was used as test mill. Increasing the roller speed of polishing machine causes more polished barley in a unit period. The speed influenced more in length than thickness or width of grain. Therefore the shape of grain became bold type as the speed increased. The optimum roller speed was 1,300rpm in ideal shape of polished barley. The lowest hardness was observed in the husk layer and the hardness was found in the decreasing order of the aleurone, testa, peri carp and the endosperm layer. The thickness of bran layer, weight of 1,000 kernel and hardness of polished barley were greatly different according to barley varieties. Also the length, thickness, width and the ratio of length to width of barley grain were significantly different in barley varieties. The ratio of length to width of the polished barley was 1.59 in Suwon 182, 1.53 in Bunong, 1.51 in Kangbori and 1.26 in Dongbori 1.

  • Calcium and magnesium in polished rice, polished barley, what flour, and corn which were used for Yakju fermentation were determined by atomic absorption spectrophotometry and their quantitative changes in the filtrates of mashes were checked at 24 hours intervals dueing the whole brewing period. The results obtained were as follows. 1) Mineral contens of raw materials(mg% of each anhydrous materials). Ca : polished rice 8.21, polished barley 26.11, wheat flour 66.10, corn 86.63 2) Mineral contents of kojies made from raw materials (mg %of each anhydrous materials). Ca : rice koji 26.36, barley koji 97.61, what flour koji 87.69, corn koji 16.13, seeding koji 28.76 Mg: rice koji 29.29, barley koji 39.84, what flour koji 244.50, corn koji 102.64, seeding koji 143.79 3) Quantitative changes of minerals in the fitrates of mashes. Calcium contents in the filtrates of mashes were increased gradually after mashing in the first stage but unchanged till the mashes were ripened after mashing in the second stage. On the other hand, magnesium cotents were decreased gradually after increase in the the other hand, magnesium contens were decreased gradually after increase in the first stage but showed a tendency to increase gradually in the second stage. 4)Mineral contents of Yakjues produced, marketing Yakju, and natural water for brewing (g/ml).   • 1) It was found that the polished rice is short of Iysine, methionine, cystine, and tryptophan among the essential amino acids, and that it shows no significant variations with regard to its pattern of geographical region. 2) Comparing in the contents of essential amino acids in the cereals, such as polished barley, wheat, great millet, and soy bean, the soy bean is found to be better than the polished rice, while the others to be either poorer or similar than the polished rice. 3) The aminal experiments observed with the mixed diet revealed that the most ideal composition of the mixed diet is the one composed of 70% polished rice, 20% polished barley, and 10% soy bean.
