Correlation between Songyi(Tricholoma matsutake, pine mushroom, matsutake) production and the annual pine tree growth in Korea was analyzed with 18 years data of the mushroom production in Sangju area and the annual ring-growth of pine trees at Mt Sogni in the area. The two parameters were not significantly related to each other(r=0.408). A possible reason of this low relationship is that September and October climate affected annual Songyi production through mushroom primordial formation, continued growth of the primordia, while May and June climate did the annual tree-ring growth. Songyi production at Mt. Wolak in Chungcheongbukdo peaked while the minimum daily air temperature ranged about $7^{\circ}C$ to $13^{\circ}C$ during the first week of October in 1999. These show that Songyi production variation is not a simple trend depending on the energy the pine trees have accumulated. Rather, controlling soil moisture and air temperature during Songyi fruiting season can be a significant management option for improving the mushroom production.
Pine mushroom (Tricholoma matsutake) is one of the most profitable forest products in Korea. We postulated a hypothesis that a high rate of returns to labor input could make the harvest of pine mushroom off the optimum level. In the view of developing a sustainable production strategy for pine mushroom producers, production of pine mushroom collectors and pine mushroom growth function were estimated using maximum entropy method. Annual pine mushroom production and labor input were the data used in the estimation of production function of pine mushroom collectors and pine mushroom growth function. The level of sustainable maximum production derived from the estimated function. The production function estimated shows that production of pine mushroom is affected more by the resource of pine mushroom stocked in the forests than by labor that households put in forestry business. The production function of mushroom collectors and the estimated growth function indicate that pine mushroom harvests for the period of 2005-2011 did not reach the potential level of maximum sustainable production. Therefore, we suggest that pine mushroom harvest should be controlled until the resource stock of pine mushroom in the forests increases to the level of maximum sustainable production.

Tricholoma matsutake (Pine mushroom) is expensive, and its artificial cultivation has been tried in several countries. Until date, the only successful cultivation of artificial pine mushroom in pine forests uses matsutake-infected pine trees. The National Institute of Forest Science in Korea has been restudying this method since 2000. Success in fruit production and reproduction was achieved in 2010 and 2017, respectively, in the same locale. The successes proved that pine mushrooms could be cultivated artificially in the field using matsutake-infected pine trees. The fruiting of pine mushroom in October 2010 occurred 6 years, 6 months after the transplantation of matsutake-infected pine trees. Five pine mushrooms reoccurred in September 2017, 13 years, 5 months and 15 years, 5 months after the transplantation of the respective matsutake-infected pine trees. The distance between the matsutake-infected pine tree and the pine mushrooms was 12 cm at 6.6 years, 90~115 cm at 13.5 years, and 95 cm at 15.5 years. Fruiting bodies occurred 13~16 days after the underground temperature declined to below $19^{\circ}C$. In conclusion, the use of matsutake-infected pine trees remains the only way to artificially cultivate pine mushrooms. More knowledge of the environmental factors affecting matsutake fruiting would be beneficial.
The differences in the nonvolatile metabolites of pine-mushrooms (Tricholoma matsutake Sing.) according to different parts and heating times were analyzed by applying principal component analysis (PCA) to $^1H$ nuclear magnetic resonance (NMR) spectroscopy data. The $^1H$ NMR spectra and PCA enabled the differences of nonvolatile metabolites among mushroom samples to be clearly observed. The two parts of mushrooms could be easily discriminated based on PC 1, and could be separated according to different heattreated times based on PC 3. The major peaks in the $^1H$ NMR spectra that contributed to differences among mushroom samples were assigned to trehalose, succinic acid, choline, leucine/isoleucine, and alanine. The content of trehalose was higher in the pileus than in the stipe of all mushroom samples, whereas succinic acid, choline, and leucine/isoleucine were the main components in the stipe. Heating resulted in significant losses of alanine and leucine/isoleucine, whereas succinic acid, choline, and trehalose were the most abundant components in mushrooms heat-treated for 3 min and 5 min, respectively.

Tricholoma matsutake is commercially important wild edible mushroom. The only method for cultivation of T. matsutake has been to use matsutake-infected pine trees. In this study, twenty-one fruiting bodies were collected from the matsutake-infected pine trees in the Hongcheon experimental site in 2020. The fruiting bodies from the existing production area of matsutake-infected pine tree and from its transplantation site were found to be identical through monitoring and analysis of 13 microsatellite markers. Transplanted matsutake-infected pine trees succeeded in fairy-ring formation and matsutake fruiting in 2010 and 2017 to 2020. In conclusion, the matsutake mycelium of transplanted matsutake-infected pine tree originates from the existing matsutake-infected pine tree production.
Effect of electric pulse stimulation was tested on the fruit body formation of valuable mushroom Tricholoma matsutake in the field of natural habitat of this mushroom. After applying the electric stimulator to the specific area of pine forest we found that the treatment especially stimulated the fructification of T. matsutake. And the most valuable findings of our study was that only our treatment plots showed fruit body formation whereas the control plots and the whole natural habitats of our study area showed zero production of this mushroom during the same time. From the point of view of mushroom production, our experiment shows that fruit body production can be upgraded by using pulsed power as an electrical stimulation in the field of the natural habitat of this mushroom. These findings from our experiment confirm the effectiveness of the significance of pulsed power technology for the improvement of T. matsutake fruit body production in the natural habit of this mushroom.
This study was carried out to obtain basic information elucidating relationship meteorological elements and yield of Tricholoma matsutake. The yields of pine mushroom in seven areas including Yangyang-gun more than 30,000 kg. Pine mushrooms were generally distributed in the red pine (Pinus densiflora) forests of East-Coast Region, Sobaek and Taebaek-Mountainous Regions, Yeongnam-Central Region and North-Central Region of Korea. Yields of pine mushroom were significant correlation with precipitation during April-October in last years, average minima temperature during July-September, rainy days during Aug. 21-Sep. 10 and precipitation during Sep. 11-30, etc. Air and soil temperature during pine mushroom yield period were 15-25 and $15-20^{\circ}C$, respectively. The first collection date of pine mushroom could be predicted by measuring the soil temperature at 5 cm depth.

Despite the high commercial value of the pine mushroom (Tricholoma matsutake) around the world, its production still depends upon natural harvesting. In recent years, mushroom researchers in Korea and Japan have been successful in artificially cultivating T. matsutake by producing single mushroom through matsutake-infected pine seedlings. In this study, we determined the minimum seedling height required for the survival of matsutake mycelia in the infected pine seedlings in the field. The survival rate of matsutake mycelia in the matsutake-infected pine seedlings was 50% (14) in two years and 71% (10) in one year after their transplantation. The average height at time of transplantation of the matsutake-infected pine seedlings that bore surviving mycelia after transplantation was 25 cm (minimum 12 cm to maximum 40 cm). In conclusion, the matsutake mycelium of matsutake-infected pine seedlings was able to survive in field conditions if the height of the seedling at the time of T. matsutake infection was at least 12 cm. These results suggest that the height of the host plants used in conventional matsutake-infected pine seedling production should be greatly reduced to improve the matsutake cultivation. Therefore, standardization of the seedling height for artificial cultivation of pine mushrooms by the matsutake-infected pine seedling method is suggested.

The relationship between the contents of methyl trans-cinnamate and the ratio of DP/DS (diameter of pileus / diameter of stalk) in the fruit-body of Tricholoma matsutake during its development was investigated. The stages of development were divided as follows: stage A is less than 1, stage B is from 1 to less than 2, stage C is from 2 to less than 3, and stage D is more than 3 of the values of DP/DS. The contents of methyl trans-cinnamate in pileus and stalk of pine mushroom ranged from $77{\mu}g/g$ to $824{\mu}g/g$ and from $7.6{\mu}g/g$ to $22.4{\mu}g/g$, respectively during its development. In the part of pileus, there is no relevance of the methyl trans-cinnamate content of pine mushroom between the stage A and B, but there was significantly different among the stage of B, C and D. In the case of stalk, the relevance of the methyl trans-cinnamate content of pine mushroom between stage D and other stages showed a low difference. In addition, as pileus of pine mushroom developed the level of the aroma compound increased as well and showed higher correlation relationship ($r^2=0.877$) between the contents of methyl trans-cinnamate in the pileus and the ratio of DP/DS. From the results of this study, we can conclude that the aromatic component of pine mushroom can be deduced from the value of DP/DS, which indicates the stage of the development appearance.

Pine mushroom (Tricholoma matsutake Sing.) is an expensive and highly prized delicacy in Korean and Japanese cuisines with its unique flavor and functional properties. The pine mushroom juice (PMJ) was investigated for its antioxidant and anti-tumor activities with ABTS radical scavenging method and MTT assay. The phenolic contents in pine mushroom juice ranged from 1.19 to 54.99 GAEs mg/100 mL at the concentrations of $1{\sim}50\;mg/mL$. The ABTS radical scavenging activities of pine mushroom juice were 7.0%, 81.7% and 91.8% at the concentrations of 1, 10 and 50 mg/mL, respectively. The $IC_{50}$ values of pine mushroom juice were 605.9, 788.4, 583.6 and $232.5{\mu}g/mL$ on the cytotoxicities against AGS, HeLa, HepG2 and HT-29, respectively, and PMJ showed the strongest growth inhibitory activity against HT-29 cell. These results suggested therapeutic potential for pine mushroom juice as an anti-oxidant and anti-tumor agent.
