재래 및 개량메주와 납두의 배합이 된장 발효에 미치는 영향 (Effects of mixture of improved Meju, Korean traditional Meju and Natto on soybean paste fermentation)

  • 개량식과 재래식 된장의 기호와 향기의 단점을 개선하고 장점을 유지하기 위하여 재래식, 개량식 그리고 납두를 혼합 제조한 된장의 이화학적 변화와 관능검사에 의한 적정배합 비율과 숙성정도를 검토하였다. pH는 개량식 메주에 납두의 배합량이 높을수록 증가하였으며 재래식 메주의 배합에서는 감소하였다. 재래식 메주에서의 질소화합물 함량은 개량식에서 보다 3배 높았으며 숙성도 빨랐다. 갈색색소의 변화는 초기의 값에 따르며 재래식이 높았다. 개량식과 재래식 그리고 납두를 혼합한 구가 관능적 평가가 높았으며 그 비율은 개량식, 재량식 그리고 남두의 비가 48 : 48 : 5의 비율이었다.

  • Makgeolli lees is a jigaemi by product produced by makgeolli brew processing. Jigaemi has high fiber content and therefore can potentially be used in the development of foods rich in dietary fiber. The effects of makgeolli lees fibers on the composition and physico-chemical properties of chicken emulsion systems were studied. The moisture and ash contents, yellowness, and viscosity of chicken meat emulsion systems with makgeolli lees fiber were all higher than those of control. Moreover, chicken batters supplemented with makgeolli lees fiber were characterized by lower cooking loss and better emulsion stability. Chicken emulsion systems with makgeolli lees fiber also had improved emulsion stability and emulsion viscosity, and the best results were obtained with meat batter containing 2% makgeolli lees fiber.

  • 고구마를 1) 베이킹(baking), 2) 고주파가열(microwaved), 3) 고주파가열/베이킹, 4) 고주파가열/정지/고주파가열의 방법으로 가열하여 고구마의 당, 색도, 조직감, 관능검사, 수분함량, 전분, 알콜불용성 성분을 측정하였다. 1)의 방법은 당의 함량은 높았으나 전분의 함량은 낮았다 2)의 방법은 전분과 알콜불용성 성분은 높고 당의 함량은 낮았다. 조직감 측정결과 1)의 방법에서는 압축력과 전단력이 가장 낮은 값을 나타내었고 2)의 방법은 가장 높은 값을 나타내었다. 4)의 방법은 1)의 방법과 모든 측정치에서 유사한 결과를 나타내었다. 관능검사 결과 1)의 방법과 4)의 방법은 높은 기호도를 나타내었다. 4)의 방법은 향에 있어서 1)의 방법과 유사하였으며, 색도 역시 높은 기호도를 나타내었다.

Changes in the Physico-chemical and Microbial Quality during the Production of Pastırma Cured with Different Levels of Sodium Nitrite

  • Pastırma, a dry-cured meat product, is produced from the whole muscle and/or muscles obtained from certain parts of beef and water buffalo carcasses. The purpose of this study was to determine the effects of different levels of sodium nitrite on changes in the physicochemical and microbial quality during the production of pastırma. The changes in residual nitrite, salt, pH, moisture, thiobarbutiric acid reactive substances (TBARS), colour (L*, a*, b*), total aerobic mesophilic bacteria (TAMB), lactic acid bacteria (LAB), Micrococcus/Staphylococcus (M/S), mould-yeast (M-Y), and Enterobacteriaceae counts of pastırma with 0, 50, 100 and 150 ppm sodium nitrite were determined during the production. The nitrite levels and the production stages had significant effects (p<0.01) on residual nitrite, TBARS, pH, salt, and colour values. The TBARS values of the pastırma with nitrite were significantly lower (p<0.05) than the control. The final TAMB, LAB, M/S, and M-Y counts of pastırma with 150 ppm nitrite were significantly (p<0.05) lower than the control. Also, the a* (relative redness) values of control pastırma were significantly lower (p<0.05) than the pastırma with nitrite. The production stages had a significant effect (p<0.01) on the moisture.

혐기화 시간에 따른 활성슬러지의 물리ㆍ화학적 특성변화 (Changes of physico-chemical properties of the activated sludges with anaerobic storage time)

  • Physico-chemical properties of the activated sludges(Suyoung and Changlim treatment plant), such as SVI(sludge volume index), absorbance, specific surface area, and specific resistance using Buchener funnel test were investigated with changing anaerobic storage time. This experimental condition was found that it was possible to estimate a linear relationship between their parameters such as specific surface area specific resistance, and sludge volume index(SVI). The specific surface area and the specific resistance to filtration of the activated sludges of Suyoung and Changlim treatment plant were found as 123.6~136.6$m^2$/gDS and 41.5~44.9$m^2$/gDS(dry solid), and 1.09$\times$10$^{14}$ ~5.48$\times$10$_{14}$ m/kg and 1.05$\times$10$^{14}$ ~2.48$\times$10$^{14}$ m/kg, respectively. The results gave a good linear relationship between the specific surface area and the specific resistance, r=2.25$\times$10$^{12}$ s-8.10$\times$10$^{13}$ ($R^2$=0.8885) at Suyoung treatment plant and r=1.26$\times$10$^{13}$ s-4.75$\times$10$^{14}$ ($R^2$=0.8756) at Changlim treatment plant.

테르페나딘-${\beta}$-시클로덱스트린 포접화합물의 제조방법 및 물리화학적 특성 (Preparing Method and Physico-chemical Characteristics of $Terfenadine-{\beta}-Cyclodextrin$ Inclusion Compound)

  • Terfenadine, antihistaminic drug, is poorly soluble in water. The purpose of this study is to investigate the possibility of using $terfenadine-{\beta}-cyclodextrin$ inclusion compound, instead of terfenadine, as the active substance of solid dosage form by improving the solubility, dissolution and anti-histaminic activity of terfenadine. The solubility and binding characteristics of $terfenadine-{\beta}-cyclodextrin$ complex in pH $1.2{\sim}6.8$ were investigated. Furthermore, the preparing method of $terfenadine-{\beta}-\;cyclodextrin$ inclusion compound was setting up and its physico-chemical characteristics such as DSC curve, solubility, dissolution and anti-histaminic activity were investigated. In conclusion, the solubility of terfenadine was increasing ${\beta}-cyclodextrin$ and with the decreasing pH. $Terfenadine-{\beta}-cyclodextrin$ inclusion compound, whose yield is almost 100%, was prepared by neutralization method. This inclusion compound was 200-times as soluble as terfenadine in pH 1.2-6.8. In addition, it had the faster dissolution and anti-histaminic activity than terfenadine. Therefore, it is used to the active substance of solid dosage form such as tablet and capsule in stead of terfenadine.

  • 정제된 저해물질의 Rf치는 0.12-0.71 사이였으며 melting point는 154.3-155.3$^{\circ}C$로 나타났다. 물, formic acid, ethylene glycol monomethyl ether에는 용해되지만 그외 대부분의 용매에서는 불용성이었고 흡습성이 매우 큰 물질이었다. Phenol-sulfuric acid, ninhydrin, silvernitrate-sodium hydroxide 반응은 양성이었으나, DNS 반응에서는 음성이며 자외선 조사하에서 형광을 나타내었다. 저해물질의 구성성분은 fructose와 aspartic acid로 확인되었으며 분자량이 약 1,050 정도였다.

  • Polymers submitted to thermo/electrical stress suffer from ageing that can drastically affect their functional behaviour. Understanding the physico/chemical processes at play during ageing and defining transport regimes in which these mechanisms start to be critical is therefore a prime goal to prevent degradation and to develop new formulation or new materials with improved properties. It is thought that a way to define these critical regimes is to investigate under which conditions (in terms of stress parameters) light is generated in the material by electroluminescence (EL). This can happen through impact excitation/ionization involving hot carriers or upon bi-polar charge recombination (a definition that excludes light from partial discharges, which would sign an advanced stage in the degradation process). After a brief review of the EL phenomenology under DC, we introduce a numerical model of charge transport postulating a recombination controlled electroluminescence. The model output is critically evaluated with special emphasize on the comparison between simulated and experimental light emission. Finally, we comment some open questions and perspectives.

영남지역(嶺南地域) 몇개 야산지(野山地) 토양(土壤)의 특성(特性) (Characteristics of Hillside Soils in Yeongnam Area)

  • 야산지(野山地)를 경작지(耕作地)로 전환(轉換)하기 위한 기초자료(基礎資料)를 얻고자 영남지역(嶺南地域)을 중심(中心)으로 야산지(野山地) 토양(土壤)의 특성(特性)을 조사(調査)하였다. 일반적(一般的) 이화학성(理化學性)은 기경지(旣耕地) 토양(土壤)에 비해 불량(不良)하였다. 경사지(傾斜地)에서는 침식성인자(浸蝕性因子) K치(値)가 높고 입단안전성(粒團安定性)이 낮아 침식(浸蝕)에 의(依)한 표토(表土)의 유실(流失)이 있을 것으로 추정(推定)되었다. 주구성점토광물(主構成粘土鑛物)은 Kaoline계(系)이고 영일(迎日)II는 Bentonite로 판단(判斷)되었다. 이들지역(地域)의 토양(土壤)은 치환성(置換性) Al 및 Fe함량(含量)이 높고 인산흡착계수(燐酸吸着係數)가 246~551(Pmg/100g)으로 높았다. 따라서 야산지(野山地)를 경작지(耕作地)로 전환(轉換)하기 위해서는 물리(物理) 및 화학적(化學的) 성질(性質)의 개량(改良)이 선결(先決)되어야 하겠다.

Occurrence, Seasonal Changes and Vertical Distribution of Silica-scaled Chrysophytes in a Small Fish-free Pond in Japan

  • Occurence, seasonal changes and vertical distribution of the silica-scaled chrysophytes in a small fish-free pond were studied using electron microscopy (EM) and light microscopy (LM) from October 1998 to July 1999. The phytoplankton community was characterized by Chrysophyta and Cryptophyta. Ten species of the silica-scaled chrysophytes of genera Mallomonas, Synura, Chrysosphaerella and Spiniferomonas were identified by EM, and the most abundant species were Mallomonas akrokomos and M. portae-ferreae. The maximum population density of M. akrokomos was observed in December and several peaks appeared periodically at about one to two month intervals, whereas M. portae-ferreae developed the maximum density in March. The diurnal vertical distribution of M. akrokomos exhibited clear downward migration at night and slightly upward migration in the morning. A complex interaction among physico-chemical and biological factors seemed to affect the vertical distribution of M. akrokomos. However, the seasonal changes of M. akrokomos did not show significant corre1ations with the physico-chemical and some biologica1 factors. Although M. akrokomos was evenly distributed throughout the water column during some experimental periods, the diurnal patterns found in the two diurnal cycles showed consistency in that it clearly avoided the surface water during the day. This suggested that M. akrokomos may be a shade plankton with maximum densities below surface layer.
