With the steady growth in the scale of the domestic traditional liquor industry, the interest in makgeolli has also been increasing. As the demand for makgeolli increases, interest in manufacturing differentiated makgeolli by adding additional raw materials such as fruits is increasing. In this study, makgeolli with low storage persimmon juice was manufactured, and the sweet taste of persimmon was imparted without adding sweeteners. Unsweetened, high-quality persimmon makgeolli with an alcohol content of 15% or more was manufactured and its quality characteristics were analyzed. Yeast was selected after producing fermented yeast by treating domestic isolated yeast and commercial yeast. Upon producing fermented yeast, persimmon makgeolli was manufactured by varying the amount of persimmon juice added to the fermented yeast. As a result of analyzing the quality characteristics of persimmon makgeolli, the pH was 4.02-4.25, the total acid (citric acid, %) was 0.30-0.43, the amino acidity (glycine, %) range was 0.05-0.15, and the alcohol content (%) was 15.64-18.48.(p<0.05). Reducing sugar (%) was 1.82-12.68 and total sugar (%) was 1.41-10.42, exhibiting a tendency to increase as the amount of reducing sugar and total sugar and the amount of juice added increased (p<0.05). Considering the sensory characteristics, a sample with 50% persimmon juice added showed a significantly higher residual sugar content, and the residual sugar content had a positive effect on the sensory characteristics. Therefore, 50% persimmon juice was added when making persimmon makgeolli. It is suitable for high-quality, non-sweetened persimmon makgeolli that preserves the taste of persimmon, which suits the consumers'taste.
Environmentally and human compatible chitosan were pretreated on cotton fabrics which were then dyed with 100% persimmon juice. The chitosan concentration was 1% and the chitosan types were high molecular weight chitosan (1980cps), low molecular weight chitosan (18첸), chitosan oligomer and water soluble chitosan. The properties of the fabric surfaces, the dyeabilities, the color fastnesses, the antibacterial activities, the strengths, the elongations and the drape stiffnesses were evaluated. The properties of the chitosanpretreated, persimmon juice-dyed cotton fabrics (CLP) were compared to those of the untreated (CN), chitosan treated (CL) and persimmon juice-dyed fabrics (CP). The results were as follows. The fibers extruded from the surface of CN decreased on CP. The air between the fibers within CN were substituted by chitosan solution or persimmon juiceand decreased within CLP according to SEM observations. The effects of chitosan treatment, the chitosan molecular weights and the degrees of deacetylation of chitosan on the dyeabilities of the persimmon juice-dyed cotton fabric were not distinct. The curing after chitosan padding improved the dyeabilities of CLP compare to noncuring. The strengths of CP decreased and those of CL increased, compared to those of CN. The strengths of CLP were greater than those of CP. The elogations of CP and CL were greater than those of CN. The strengths and elongations of CLP were greater than those of CN. The chitosan treatments improved the strengths but not the elongations. The drape stiffnesses of CL, CP and CLP were greater than those of CN. The antibacterial activites of chitosan pretreated, persimmon juice-dyed cotton fabrics against Staphylococcus aureus were increased by more than 98% by persimmon juice.
The results of the analysis of dyed rayon fabrics treated with persimmon juice by padding are as follows. Rayon fabrics were dyed repeatedly with persimmon juice by a padding mangle for the development of dyeability. The merits of padding-based dyeing were easier color reproduction (versus traditional hand dyeing) of hard to obtain colors and color fastness to light and laundering. The add on weight increased with the number of padding times, and the color of the dyed fabrics had red-yellow colors with low brightness and high chromatic colors. Properties of fabrics treated with persimmon juice were: $2^{nd}$ level of light resistance, $4^{th}-5^{th}$ perspiration fastness levels, rubbing fastness, and $3^{rd}-4^{th}$ washing fastness levels. Dyed fabrics exposed to UV light have a deep yellow-red color that increased lightness and darken when exposed to sunlight. Rayon fabrics of a treated premordant indicated strong yellow colors, especially fabrics with Fe mordant indicated greenish red-yellow colors. The direction of the weft and warp increased and improved water-repellent qualities that increased with the number of dyeing padding times and persimmon juice; however, there was less anti-crease resistance. In addition, fabrics had good antibacterial activity and deodorization.
For the development of high quality textiles, silk fabrics were dyed repeatedly with persimmon juice by padding mangle. We evaluated the mechanical properties and hand value by Kawabata Evaluation system for dyed silk fabrics. The results obtained from this study were as follows. With the increase of repeating padding times of dyeing, the linearity load-extension curves of the silk fabrics were increased; however, the tensile resilience of fabrics decreased. The hysteresis values of shear force were increased without significant change of shear stiffness. The coefficient of friction values were also decreased and geometrical roughness values were increased. The silk fabrics dyed with persimmon juice had shown the thickness and weight grow as the number of padding increases. The hand values of silk fabrics which were classified into 6 items in the Kawabata Evaluation System, were evaluated as repeating times of dyeing with persimmon juice. The hand values of Koshi(stiffness) and Hari(anti-drape stiffness) were increased, whereas Shinayakasa (flexibility with soft feeling) and Fukurami(fullness and softness) were decreased by dyeing with persimmon juice. However there was no significant change in hand values according to repeating padding times of dyeing.
For development of dyeability, the rayon fabrics were dyed repeatedly with persimmon juice by padding mangle. The merit of padding-based dyeing was easier color reproduction over traditional hand dyeing where various colors and color fastness to light and laundering are hard to obtain. We evaluated the mechanical properties and hand value by Kawabata Evaluation system for dyed rayon fabrics. The results obtained from this study were as follows. With the increase of repeating padding times of dyeing, the linearity load-extension curve and tensile energy per unit length of the rayon fabrics were increased, but the tensile resilience of fabrics were decreased. The value of shear stiffness and shear hysteresis were increased. Also compression resilience and linearity of compression thickness were increased. The rayon fabrics dyed with persimmon juice had shown the thickness and weight increase as the number of padding increase. As repeating times of dyeing with persimmon juice were increased, among the 6 hand values, the item of koshi(stiffness) and Hari(anti-drape stiffness), fukurami(fullness and softness) were increased. while Shinayakasa (flexibility with soft feeling) and Shari(crispness) were greately decreased. The amount of coated persimmon juice on the surface of the fabric was gradually increased as the padding times of dyeing.

The purpose of this study was to improve dye effect and method in order to facilitate the use of persimmon juice dyeing. Silk fabrics were pad-dyed to 100% pick-up using padding machine after dipping in persimmon juice extracted from unripe persimmons indigenous to Jeju. The color of dyed silk fabrics by padding method was more even and repeatable than that by traditional hand method. Persimmon juice concentrations were 4 types 10, 25, 50 and 100%. The silk fabrics were pad-dyed to 100% pick-up and were repeatedly dyed two times and three times with 100% concentration. The higher the concentration, the more color deepened. UV Irradiation instead of sunlight was applied to color developing. Irradiation times were shortened to 1-8hrs. Color values which reguired 30-50 hrs. in sunlight irradiation. were obtained in 3-5 hrs. with UV irradiation. Tensile strengths of silk fabrics in UV irradiation decreased but not decreased in sunlight irradiation. Elongations of silk fabrics in sunlight irradiation increased but decreased in W irradiation. Drape stiffness increased up to three times.
Dyeing and discoloration effects on the fabrics of cotton, silk and rayon with unriped persimmon juice were investigated. Color of dyed fabrics treated with persimmon juice only, added 3% tartaric acid or 3% aluminium sulfate was not different each other. Dyeing assistants such as tartaric acid or aluminium sulfate were effective on the prevention from discoloration of dyed fabrics and ultraviolet rays. Discoloration were supposed to derive from tannin in unriped persimmon, ultraviolet rays, oxygen, enzyme and so on, ultraviolet rays at wavelength of 253.7nm was the most active the chromatophores and discoloration. The fabrics could be dyed, when unriped persimmon juice was store at low temperature or freezing.
By reviewing the cultural and historical literature on persimmon juice dyeing and Galot in Korea and Japan, this study aims to show the similarities and differences between the traditional and eco-friendly persimmon juice dyeing practices of these two countries and suggest a direction for the development of modern Galot. The root of persimmon dyeing in Korea is presumed to have begun around the 13th or 14th century; however, no documents or records have been found to support this notion. Meanwhile, there are records of persimmon dyeing in Japan that date back to around the 10th century, but that fact is rarely mentioned. The historical and folk cultural significance of traditional persimmon dyeing in Japan and Korea was different in terms of the use of persimmon dye and the wearing of Galot. In other words, in Korea, Galot was mainly used as work clothes for farmers and fishermen, who took advantage of the garment's functional strength, while kaki-tannin in Japan was applied to fishing tools and industrial materials. Furthermore, Japanese traditional Galot (Kakigoromo) was worn by monks. This was a remarkable difference in that the garments were used as clothing by a special class within society. There were also differences between the two countries in terms of their use of modern persimmon juice dye and Galot. Korea is currently developing and releasing a variety of modern Galots. Meanwhile, Japan is attempting to develop a feeling of relaxation by using the natural colors of Kakisibu dyeing and applying sophisticated traditional pattern printing techniques to modern Galot.

In this study, a change of hand of fabrics dyed with persimmon juice was measured using Kawabata Evaluation System. Using various cotton fabrics, linen fabric and silk fabric used frequently for persimmon juice dyeing, we examined the changes of physical properties and hand according to persimmon juice dyeing and washing. The dynamic characteristics of hand were measured tensile, shear, bending, compression, surface properties, thickness and weight. Linearity of load-extention and tensile resilience were increased in all kinds of fabrics after dyeing. Tensile energy decreased in cotton fabric 2(gauze), cotton fabric 3(muslin) and linen fabric. Shear stiffness and hysteresis of shear increased in most of fabrics. Bending rigidity of the bending property and hysteresis of bending, linearity of compression of the compression property, compression energy and compression resilience increased in all kinds of fabrics after dyeing. Thickness and weight increased much in all kinds of fabrics after dyeing. In the primary hand value, stiffness and anti-drape stiffness increased in all kind of fabrics after dyeing. The fullness and softness, crispness, scrooping feeling and flexibility with soft feeling decreased. As the stiffness after persimmons dyeing increased, it was suitable for clothes material of summer.
This research from analyzing dyed silk fabrics treated with persimmon juice by padding concludes as follows : The add on is increased as the number of padding increase and the color of the dyed fabrics holds red-yellow colors which has low brightness and high chromatic colors. The fabrics dyed with persimmon juice have properties such as 2nd grade of light fastness, 4~5th grade of perspiration fastness and rubbing fastness, and 3~4th grade of washing fastness. The dyed fabrics exposed to UV light have deeper yellow-red color than things exposed to sunlight. The silk fabrics treated premordants have shown strong yellow colors, especially the fabrics added Fe mordant have shown greenish red-yellow colors. As the padding times of dyeing with persimmon juice are increased, strength and water-repellent property are enhanced along warp and weft direction respectively but anti-crease property is decreased. Also, the dyed fabrics have good antibacterial activity and deodorization.
