This study was conducted to investigated the kimchi quality of the addition of green tea extract and green tea leaf. Kimchi was examined for pH, titratable acidity, the changes in the number of microorganism, color,sensory evaluation . The pH and titratable acidity of kimchi at the addition of 5%, 1% of green tea extract and green tea leaf were higher and lower than those of control kimchi. the number of total microoranism at 21 days. were detected much more in the kimchi added green tea extract and green tea leaf than in control. The number of coliforms up to 7 days of fermentation were detected. And those at 14-21 days were not detected but those of 28 days were detected. The number of coliforms at 28 days were most lowest in the kimchi added green tea extract 3%. The number of lactic acid bacteria were detected more in the kimchi added green tea leaf. As a result of sensory evaluation during fermentation, the kimchi added green tea extract 5% was the highest score in carbonated taste. texture and overall quality. As the result of correlation between sensory characteristics and mechanical characteristics, it was found that sensory characteristics of sour taste is negatively related to the mechanical characteristics of L value, while it is positively related to the texture. The a values is negatively related to the sensory characteristics of overall quality. The b values is positively related to the sensory characteristics of sour taste.
Food is an essential component of good health and a high quality of life. This is especially true for the elderly, where health and quality of life can vary due to eating issues. This study attempts to measure the satisfaction with food-related life in the elderly of South Korea, while examining differences in social support, depression, isolation, and life satisfaction based on the level of satisfaction with food-related life. Data collection was conducted using one-on-one surveys from December 2011 to January 2012. A total of 390 elderly (aged 65 and over) who live in Korea participated in this study. The results showed that the satisfaction with food-related life was high (3.52 out of 5). The elderly who had company during a meal or a meal preparer showed a higher satisfaction with their food-related life. Social support was high (5.32 out of 7) and the feelings of isolation were low (3.85 out of 5). The average satisfaction with life was 4.42 out of 7, indicating a fair satisfaction with life, while the average depression score was relatively low (8.77 out of 26). In general, the elderly with a higher satisfaction with food-related life had a higher social support and overall satisfaction with their life. On the other hand, the elderly with a lower satisfaction with food-related life generally reported higher levels of depression and isolation. A positive correlation was observed between satisfaction with food-related life, social support, and satisfaction of life, while a negative correlation was found between satisfaction with food-related life, isolation, and depression. The results of this study indicate that managing the satisfaction with food-related life is an important component of mental health in the elderly.

Purpose: This study was done to construct a quality of life (QOL) model for recipients of a liver transplant. Method: In consideration of the main factors influencing QOL in recipient of liver transplants, a hypothetical model was constructed with 16 paths. A questionnaire was used to collect data from recipients of liver transplants who were being followed at one of 3 university hospitals. For the final analysis, there were 189 completed questionnaires and the hypothetical model was verified through covariance structure using LISREL program. Results: Overall fitness indices of hypothetical model were GFI= .99, AGFI= .97, NNFI= .96 and RMR=.020. After considering modification indices and paths that proved not to be significant and to improve model fitness, the hypothetical model was modified. In the final model, 3 paths from the hypothetical model were excluded. Overall fitness indices of the final model were GFI= .99, AGFI= .98, NNFI= .98 and RMR= .020. Eleven of fifteen paths proved to be significant. QOL was influenced by duration after transplantation, perceived health status, self-esteem, uncertainty, social support, self efficacy and depression and these variables explained 65% of the variance. Conclusion: This study presents a theoretical model for QOL for recipients of a liver transplant. Based on the results of this study and to improve QOL for recipients of a liver transplant, it is suggested that interventions to re-enforce self efficacy and self-help are needed.
Purpose: The purpose of this study is to investigate how to perceive the role of the slow city and provide policy and managerial implications on the necessity of the slow city management and distributional values based on perspectives of millennials and generation Z. This study examined i) how do millennials and generation Z perceive economic, environment, cultural, community, and quality of life factors on attitude toward the slow city? ii) how does attitude affect overall satisfaction and intention to recommend the slow city to other cities' residents? iii) how do millennials perspectives on proposed factors differ from generation Z? Research design, data and methodology: This study conducted an online survey and applied t-test, factor, ANOVA, and regression analysis. Results: This study found that effects of economic and quality of life factors on attitude toward the slow city showed significance in cases of millennials and generation Z, while effects of environment factor on overall attitude showed significance in the case of generation Z. Conclusions: Governments should foster how millennials and generation Z understand the meanings of the slow city to form a better attitude in a society and put efforts to build a better image and management of the slow city.
Purpose: The purpose of this study was to identify the relationships between physical activity, health status, and quality of life (QOL) of University students. Methods: The research design was based on a descriptive research design model. This study sample consisted of 183 K University students in D city. Data was collected from December 2012 to January 2013 and analyzed with descriptive statistics (frequency, percentage, analysis of variance (ANOVA), t-test, and Pearson's correlation analysis) using SPSS 19.0. Subjects completed questionnaires on their demographics, physical activity, health status, and QOL. Results: The overall physical activity of participants was $2529.40{\pm}5057.896$ min/week on average. The average health status was $28.66{\pm}6.3$ and the average physical health and mental health were $16.45{\pm}3.955$ and $12.31{\pm}3.446$, respectively. The overall degree of QOL was $3.429{\pm}0.379$. A positive relationship existed between moderate and vigorous activity and health status. In addition, QOL positively correlated with physical health (under health status). However, physical activity was not related with both mental health (under health status) and QOL. Conclusion: Based on the results of this study, health educational programs are needed to promote sufficient physical activity in university students.
The objective of this study was to investigate the methods of quality maintenance using modified atmosphere packaging with various quality preservatives at ambient and low temperatures. Ethylene(<1.0ppm) accumulated during modified atmosphere storage of Chinese cabbage using polyethylene film(60$\mu\textrm{m}$) caused quality deterioration such as yellowing and abscission. The addition of potassium permanganate reduced ethylene level and thus extended storage life of l00% at 20$^{\circ}C$ and 140% at 0$^{\circ}C$. To establish the storage conditions of minimally processed sit and vegetables, the experiment was conducted with various quality preservatives and packaging materials. Ceramic film(Zeolite 7%, 60$\mu\textrm{m}$) showed increasing storage life of 50%, reducing total microbial counts of 50% and keeping high appearance quality of minimally processed pears stored at 20$^{\circ}C$ and 0$^{\circ}C$. Minimally processed Chinese cabbage treated with l% CaCl2 at 20$^{\circ}C$, and 1% CaCl2 and 1% NaCl at 0$^{\circ}C$ has a longer storage life of 90% with good maketable quality. Treatment of 1% NaCl for cut Asian penis appeared increased storage life of 100%, decreased cut surface browning and the best overall acceptability by a sensory panel.

Purpose: The purpose of this study was to collect basic data in the quality of life related to health in migrant workers. Methods: Data from 133 migrant workers was collected from August to December 2007 using a questionnaire from two free clinics located in Seoul and Gyeonggi-do. The data was scored by mean and standard deviation. Differences were evaluated according to the subjects' general characteristics by the t-test and the ANOVA test. The relationships in the quality of life related to health between the 9 sub-scales were evaluated by the Pearson's correlation coefficient. Results: 1) Total average score of migrant workers' quality of life related to overall health is $61.09{\pm}13.68$. The score of the quality of life related to physical health is $64.39{\pm}15.21$ and the quality of life related to mental health is $57.80{\pm}16.18$. 2) With respect to the general characteristics of subjects, the quality of life related to health was significantly different in age(F=3.852, p=.013), especially in physical health(F=6.868, p=.000). 3) The relationship between physical health and mental health was significant(r=.663, p=.000). Conclusion: Program development to improve quality of life related to health for migrant workers is needed.
Background: No studies have reported on the effects of loess beddings on insomnia patients. Purpose: It studied the change in quality of life and quality of sleep after having 15 insomnia subjects use the bedding that emits far-infrared rays. Methods: After using loess bedding for the test group and general yellow bedding for the control group, the study was conducted in the form of a questionnaire on the WHO quality of life of the subjects. Results: In the overall quality of life evaluation, the pre-and post-changes significantly improved in the test group. Using loess bedding was greatly enhanced the physical change, the actual sleep time, and the quality of sleep of the test group. The period of sleep was significantly longer post-treating, and the habitual sleep efficiency was considerably higher, and sleep disturbance was significantly lower than before in the test group. Sleep drug use and daytime dysfunction after treating in the test group significantly improved the sleep effect. Changes in the Sociality Scale, Environmental Change Scale, and Quality of Life Scale significantly improved in the test group. The quality of life for 14 items in the test group was significantly correlated. Daytime drowsiness, depression, and anxiety scale changes were significantly improved in the test group. According to the predictive survey, the subjects felt warmth in their body and comfort in mind during and after using loess bedding and evaluated that sleep quality was good. Conclusions: The overall quality of life in the test group increased using loess bedding.
This study was designed to construct a model that predicts the quality of life of family caregivers with a chronically ill patient. The hypothetical model was developed based on the findings from past studies on quality of life and on the family with a chronically ill patient. Data were collected by self-reported questionnaires from 200 family caregivers in Seoul & Kyung Gi-Do, from May 1 to July 21, 1997. Data were analyzed using descriptive statistics and correlation analysis. The Linear Structural Relationship(LISREL) modeling process was used to find the best fit model which predicts causal relationships among variables. The results are as follows : 1. The overall fit of the hypothetical model to the data was moderate [X$^2$=31.54(df=23, p=.11), GFI=.96, AGFI=.91, RMR=.04]. 2. Paths of the model were modified by considering both its theoretical implication and the statistical significance of the parameter estimates. Compared to the hypothetical model, the revised model has become parsimonious and had a better fit to the data expect chi-square value(GFI=.95, AGFI=.91, RMR=.04). 3. Some of predictive factors, especially economic status, physical ability to perform daily-life activity, period after disease-onset, social support and fatigue revealed indirect effects on the quality of life of family caregivers with a chronically ill patient. 4. The factors, burden and role satisfaction revealed significant direct effects on the quality of life of family caregivers with a chronically ill patient. 5. All predictive variables of quality of life of family caregivers with a chronically ill patient, especially economic status, physical ability to perform daily-life activity, period after disease-onset, social support, fatigue, burden and role satisfaction explained 38.0% of the total variance in the model. In conclusion, the derived model in this study is considered appropriate in explaining and predicting quality of life of family caregivers with a chronically ill patient. Therefore it can effectively be used as a reference model for further studies and suggests direction in nursing practice.

Background: The effects of home nursing intervention on the quality of life in patients with nasopharyngeal carcinoma (NPC) after radiotherapy and chemotherapy are unclear. According to the characteristics of nursing home patients with nasopharyngeal carcinoma, we should continuously improve the nursing plan and improve the quality of life of patients at home. Materials and Methods: We selected 180 patients at home with NPC after radiotherapy and chemotherapy. The patients were randomly divided into experimental and control groups (90 patients each). The experimental group featured intervention with an NPC home nursing plan, while the control group was given routine discharge and outpatient review. Nursing intervention for patients was mainly achieved by regular telephone follow-up and home visits. We use the quality of life scale (QOL-C30), anxiety scale (SAS) and depression scale (SDS) to evaluate these patients before intervention, and during follow-up at 1 month and 3 months after the intervention. Results: Overall health and quality of life were significantly different between the groups (p<0.05), Emotional function score was significantly higher after intervention (p<0.05), as were cognitive function and social function scores after 3 months of intervention (p<0.05). Scores of fatigue, nausea and vomiting, pain, appetite and constipation were also significantly different between the two groups (p<0.05). Rates of anxiety and depression after 3 months of intervention were 11.1%, 22.2% and 34.4%, 53.3%, the differences being significant (p<0.05). Conclusions: NPC home nursing plan could effectively improve overall quality of life, cognitive function, social function (after 3 months) of patients, but improvement regarding body function is not suggested. Fatigue, nausea and vomiting, pain, appetite, constipation were clearly improved. We should further pursue a personalized, comprehensive measurements for nursing interventions and try to improve the quality of life of NPC patients at home.
