This study was performed to define the physicochemical characteristics of food waste and food wastewater, and to find the effect of salinity variation experiment, the samples of 1, 2, 3 and 4 were prepared by the salinity of 1.0%, 1.5%, 2.0% and 2.5%, respectively. In experiment, aerobic composting reactors were operated by the model which was composed of half an hour's stirring and 2 hour's aeration per day, for 45 days. Seeds of vegetables of Chinese cabbage and red pepper were seeded at compost-free control, compost 1, 2, 3 and compost 4 for the sake of investigation of germination rate and growth rate of those. The followings are the conclusions that were derived from this study. 1. In food waste, the moisture content was 60%, organic compound content was 95%, total carbon was 47.5%, total nitrogen was 1.6%(therefore, C/N ratio was 30). The values of pH were 4.0 and 3.8 the values of salinity were 0.9% and 1.2%, and the values of conductivity were 7.8 mS/cm and 18.0 mS/cm, respectively. 2. In salinity experiment, the reduction rate of volume was increased(40%) when the salinity was decreased(1.0%). Also, the reduction rate of mass was increased(52%) when the salinity was decreased(1.0%). This fact denotes that salinity hinders the process of composting. 3. Germination rate and growth rate of Chinese cabbage are more excellent than those of red pepper(97.14%, 5.2:2.5 cm). 4. In Chinese cabbage, germination rate and growth rate at compost with the lowest salinity are more excellent than those at compost-free control(97:94%, 5.2:4.5 cm).
This study were investigated the changes in chemical components, quality characteristics of the fermented broth, and physiological functionality during fermentation period of fruit, vegetables, and medicinal herbs. pH and $^{\circ}$Bx gradually decreased and the viscosity increased. The chromaticity of L, a, and b all increased. The total number of germs dropped from $10^5{\sim}10^6\;to\;10^2{\sim}10^3$ CFU/ml, and that of lactobacilli also decreased noticeably. According to the result of the effect on fat oxidation, a very low level of TBARS was shown. After thirty days of fermentation, the amount of each fermentation broth increased more or less, but as it declined considerably after ninety days, it was found that the binding effect of $Fe^{2+}$ ion was small and insignificant. The electron donating ability, though not reaching 0.5% ascorbic acid, showed a high level of activity from $33.71{\sim}72.15%$ before fifteen days and $44.76{\sim}75.20%$ ninety days after fermentation. Among them, the fruit fermentation solution showed the highest activity. It was also found that the organic functions for each fermentation broth decreased more or less depending on the fermentation period and the thirty-days-old fermentation broth were favored most. On the basis of the above experiment results, it can be concluded that the optimum fermentation period for fruit, vegetables, and medicinal herb is thirty to ninety days.

This paper has examined the origin of organic fanning, its development stages, its certification program, and its distributional characteristics in South Korea. Organic agriculture in South Korea originated in the late 1970s as several organic farmers' associations started to be formed. However, the certification of organic farm products, based upon the Codex guideline on organic produce as well as the FAO/WHO find standards, was not institutionalized with the year 2001. A majority of organic products are currently certified as farm products grown with low chemical input. Vegetables grown without any chemical input occupy the largest proportion of the certified produce, while fruits take the smallest. The average size of farms practicing organic agriculture is 0.88 hectare, smaller than the scale of conventional farms being 1.39 hectare. These organic farms are concentrated in Gyeonggi, Chungcheongbuk, and Jeju Province, where organic farmers' associations were first founded. The roles of those associations not only in developing and extending organic farming techniques but also in promoting organic agriculture to consumers were most critical in the regional development of organic farming. It would be desirable for local governments to promote organic farming in tandem with a whole environmental movement.
This study was conducted to investigate the growth characteristics and functional materials of baby vegetables as affected by different LEDs and luminous intensity at Anseongsi, Gyeonggi Province, in 2014. Test crops were beet, chicory, spinach, red leaf lettuce, crown daisy and red mustard purchased from the seed company of Dongbu Hannong and Jinheung. Growth characteristics were measured and the content of functional materials was analyzed 40 days after seeding at plug plate. Treatment of Red+Blue (4:1) at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity showed the highest number of leaves in five baby vegetables of beet, chicory, red leaf lettuce, crown daisy and red mustard. The highest shoot length of chicory, spinach, red leaf lettuce, crown daisy and red mustard was obtained from the treatment of Red+Blue (4:1) at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity. Fresh weight and dry weight of all six baby vegetables were the highest in treatment of Red+Blue (4:1) at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity. Content of chlorophyll a and chlorophyll b of spinach, red leaf lettuce and red mustard showed the highest in Fluorescent lamp at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity whereas other crops did not show definite trend under different LEDs lights and luminous intensity. The highest total content of anthocyanins and polyphenol were obtained from the treatment of Red+Blue (4:1) at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity in all six baby vegetables. Free radical scavenging activity was highest in all six vegetable crops at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity, but it was not different significantly between LEDs. As a result, the growth and the content of functional material of baby vegetables are generally to be increased in Red+Blue (4:1) at $150{\mu}mol\;m^{-2}s^{-1}$ luminous intensity. Mixed light of Red+Blue is thought to give good effect on the growth and the content of functional material in baby vegetable crops. Because there are many differences in regard of LED lights, crop varieties, cultivation and experimental methods in their impact on the growth and functional materials of baby vegetables among researchers, it is considered that a more precise studies are needed for the crop responses to LED light and luminous intensity.

The amount of salted food waste and non-salted food waste from household consisted of 4 family members was surveyed. And the feeding rate and growth rate of Eisenia fetida population upon the different food wastes such as vegetables, grains, fruits and salted food waste were investigated. Total amount of food waste from a household was 3,200g/week. i.e. 0.114kg/day/capita and non-salted food waste was 53.9% of food waste. Salt contents of vegetables, grains, fruits were 0.60, 0.36 and 0.33%, respectively, if they were assumed to have 70% water content. Salt content of salted food waste was 0.78%. Upon the non-salted vegetables and fruits, feeding rate of earthworm was high but growth rate was low. Upon the non-salted grains, feeding rate of earthworm was low but growth rate was high. Upon the food with 70% water content, earthworm could not feed and grow when salt content of food was over 0.6%, and earthworm could feed normally but showed low growth rate when salt content of food was 0.3%. These results indicated that earthworm could stabilize the non-salted food wastes with ease but could hardly stabilize the salted food wastes.
This study was to investigate the consumption pattern and nutrition knowledge about vegetables of 184 housewives attending the school of adult and continuing education attached to DukSung Women's University. The results were summarized as follows; the average vegetable expenses were $10,000{\sim}20,000$ won per week. The frequency of purchasing vegetables was $2{\sim}3$ times a week. Respondents usually bought the vegetables at local markets and supermarkets. As for buying vegetables, all of respondents kept in mind all the time the organic vegetables were better. The price was the most important factor of their purchase in the low income households. In the family, the vegetable dishes were favored by housewives most and by sons least. Among the vegetable cooking methods, Kimchi was the most frequently used and salad was the least. Forty four percent of the respondents experienced purchasing ready made vegetable dishes in the market. The reason they bought ready made ones was the special taste of the dishes. The rest of respondents never bought cooked vegetable dishes because they thought the dishes unsanitary. Twenty seven percent of the respondents experienced purchasing. The reason for not purchasing Kimchi was the housewives' traditional prejudice of buying Kimchi in the market. Respondents have a considerable knowledge that 42 kinds of vegetables could be good for certain disease and 10 kinds of vegetables might be harmful for certain disease.

BACKGROUND: This study was conducted to monitor the current status of pesticide residues and to assess their risk in domestic agricultural products. The samples were rice, barley, lettuce and perilla leaf. These four types of agricultural products were those with GAP(Good Agricultural Practice) certification, organic agricultural products, pesticide-free agricultural products or general agricultural products. METHODS AND RESULTS: They were purchased from traditional markets and supermarkets of 12 regions in Korea from July to August 2010. The total number of samples was 259 for agricultural products and these were analyzed by GC/ECD, GC/NPD and GC/MSD. We used multiresidue methods to analyze for 110 different pesticides except for herbicides. CONCLUSION: In this study, residual pesticides were detected in 18 samples. Among these general agricultural products, organic agricultural products and products with GAP-certification were detected in 12, 4 and 2 samples, respectively. Detection rates of general agricultural products, organic agricultural products and products with GAPcertification were 4.6%, 1.5% and 0.8% respectively. Pesticides were not detected in pesticide-free agricultural products. Their detection levels were less than their maximum residue levels. Their estimated daily intakes ranged from 0.0003% to 0.04302% of their acceptable daily intakes, of which the values have no effect on human health.

A survey of the free amino acids and organic acids in the shoot of Phyllostachys edulis was made by means of amino acid autoanalyzer and gas chromatograph. The results of the survey are summerized as follows. 1. Eighteen amino acids found in bamboo shoot were lysine, histidine, arginine, tryptophan, aspartic acid, glutamic acid, threonine, serine, proline, glycine, alanine, valine, leucine, isoleucine, methionine, tyrosine and phenylalanine, and an unknown was found. Serine showed the highest amount and more than about 44% of total free amino acids. 2. Oxalic acid was the major organic acid, and formic acid, acetic acid, maleic acid, succinic acid, fumaric acid, citric acid, tartaric acid and sorbic acid were determined, and two unknown were found.
BACKGROUND: This study was conducted to monitor the residue of pesticides and to assess their risk in domestic agricultural products, such as fruit vegetables, tomatoes, oriental melons and root vegetables, garlic, potatoes and onions. METHODS AND RESULTS: 250 samples containing both general and environment-friendly certified agricultural products were collected from traditional markets and supermarkets in 6 cities. 132 pesticides except for herbicides were analysed using the multi-residue methods by GC/ECD, GC/NPD and HPLC/UVD. 17 kinds of pesticides were detected from 42 samples, which were 32 general, 1 organic, 4 pesticide-free and 5 low pesticide agricultural products. Among those, myclobutanil detected in 1 potato and procymidone detected in 10 oriental melons were unregistered pesticides for using in Korea. Fenbuconazole detected in 1 potato and phorate detected in 1 tomato were exceeded over the MRLs established by Korea Food and Drug Administration. CONCLUSION: Based on these results, a risk assesment was conducted using a percentage of acceptable daily intake(%ADI). %ADI ranged from 0.0064% to 4.6035%, and showed these values have no effect on human health.

This study was conducted to evaluate the properties of mixtures of mixed organic fertilizer (MOF) and various organic sources such as livestock manure compost (LMC), dried compost of poultry manure (CPM), dried food waste powder (FWP) and amino acid by-product fertilizer (ABF) and their influences on growth of lettuce and Chinese cabbage. The content of N, P2O5 and K2O of mixture of MOF, LMC and FWP (MLF) was 3.6~3.9%, 2.1~2.2% and 1.3~1.4%, respectively. Lettuce dry weight of MLF3 treatment blending with MOF (60%), LMC (10%) and FWP (30%) was increased by about 29% than that of MOF. The content of N, P2O5 and K2O of mixture of MOF, CPM, FWP and ABF (MCFA) was 4.5~4.7%, 1.7~1.9% and 1.3~1.4%, respectively. Compared to MOF, growth factors of lettuce and Chinese cabbage in the MCFA treatments were not significantly deferent. These results indicated that MLFs and MCFAs, the mixtures of respectively organic sources and MOF, could be applied as orgnic fertilizer in the cultivation of lettuce and Chinese cabbage, and were expected that LMC and ABF might be used as another sources of organic fertilizer.
