신선편의화된 김치제조용 배추의 품질 유지 (Quality Maintenance of Minimally Processed Chinese Cabbage for Kimchi Preparation)

  • The objective of this study was to investigate the effectiveness of preservatives for extending storage life and maintaining the quality of minimally processed Chinese cabbage. Cut Chinese cabbage was treated with either 1% CaCl2, 1% NaCl, 3% sucrose, 1% Ca-lactate, 1% vitamin C, 0.05% chitosan+1% vitamin C, 0.1% Sporix+1% vitamin C or hot water(6$0^{\circ}C$) and then packed with polyethylene film(60${\mu}{\textrm}{m}$) and stored at either 2$0^{\circ}C$ or 4$^{\circ}C$. To evaluate biochemical changes and quality of minimally processed Chinese cabbage, the samples were tested to determine the amount of vitamen C, titratable acidity, organic acid and fiber contents. Changes in color were also examined. The quality of kimchi prepared form minimally processed cabbage was affected by the treatments. REsults indicate that the minimally processed Chinese cabbage treated with either 1% CaCl2 at 2$0^{\circ}C$ and 4$^{\circ}C$ or 1% NaCl at 2$0^{\circ}C$ minimized biochemical changes in plant tissue and those treatments were most effective in maintaining product quality. The cabbage treated with 1% vitamin C or 1% NaCl at 4$^{\circ}C$ resulted in kimchi with improved color, texture, flavor and the best overall acceptability, as determined by a sensory test.

배추무사마귀병 발생실태와 뿌리혹의 생성생태 (Survey of Field Conditions of Clubroot Disease Incidence of Chinese Cabbage in Major Production Areas and Ecology of Root Gall Development)

  • In 1997 surveys 82 out of 180 crucifer fields were infected with clubroot disease in a range of 1-100% of diseased plants and among crucifier crops Chinese cabbage was the most severe, In cropping systems Chinese cabbage-monocropping of Chinese cabbage-radish were found to be most common in major Chinese cabbage production areas. Welsh onion squash or paddy rice were also planted between cropping of Chinese cabbage. Paddy fields converted to upland were lowered in incidence of clubroot disease and fields with loam to silty loam soil were more severe in disease than those with sandy soil. Soil pH and organic contents were nor related to clubroot disease severity. Soil fauua such as total fungi bacteria actinomyces Pseudomonads and Bascillus were not correlated with severity of the disease. Root rall development on Chinese cabbage seedlings was initifially observed under a microscope 13 days after inoculation with Plasmodiophora brassicae but 18 days by naked eyes after inoculation. Root galls were formed mostly around collar roots and gradually spread to main root lateral roots and secondary root branches. Root galls started to enlarge greatly in size and weight from 23 days after inoculation. Chinese cabbage plants at mid-growth stage with root gall development were reduced to 1/2 of that of healthy plants in number of leaves 1/4-1/5 in above ground fresh weight 1/6 in root length but increased to 3 times in diameter of collar root. Diseased plants had little root hairs. Diseased Chinese cabbage plants at harvest were reduced by 9,1-11.8% in head weight compared to healthy plants a positive correlation was observed between root and head weight but those relationships were rot found in the diseased plants.

김치 모재료 채소의 질산염 함량 분포와 배추 염장처리 및 김치 조리방법에 따른 질산염 함량 변화 (Distribution of Nitrate Content in Vegetables for Kimchi Raw Material and Changes of Nitrate Content by Salting of Chinese Cabbage and by Cooking Process of Kimchi)

  • This study aims to find out the devices to minimize the amount of nitrate ingested from kimchi, the main way of vegetable intake for Koreans, and the basic data to deliver to calculate the total daily intake for Korean, investigating the year-round changes of nitrate content in vegetables for Kimche raw material, and changes of nitrate content by salting of chinese cabbage, and stewed kimchi through the use of different cooking methods. The results obtained were summarized as follow: over between 205-6655mg/kg f.w. in chinese cabbage, 480-3970mg/kg f.w. in chinese radish, 157-5820mg/kg f.w. in lettuce and 29-520mg/kg f.w. in cucumber respectively. Therefore it was strongly adviced to introduce the nitrate limit value of vegetables in Korea if the nitrate content in Kimchi should be reduced to meet the nitrate ADI(Acceptable Daily Intake, 219mg60kg b.w) of FAO.WHO, because the nitrate content in Kimchi reflects the nitrate content in vegetables. In order to keep the low nitrate content in Kimchi. it was adviced to remove the outer leaf which contains 2-3 times higher nitrate content compare to the inner leaf at the time of preparation, i.e. chinese cabbage, before the soaking treatment in salt solution for Kimchi making process. The dehydration by soaking treatment in salt solution occurred at 0.9%~4.7% in leaf midrib and more than 13%~24% in leaf blade. The nitrate content after soaking in salt solution was increased 107%~123% compared with before soaking, increasing rates of nitrate content in the outer and inner leaf midrib were higher than those in leaf blade. The increase of nitrate content in salt solution after soaking due to the dehydration of chinese cabbage by soaking treatment. The Kimchi stew(Kimchi JJige) was processed with and without animal oil, but the amount of nitrate in kimchi stew did not decrease both treatments, but it increased after the processing since the water in Kimchi stew has got low by boiling.

음식물류 폐기물 건조분말과 유기질비료 혼합물의 이화학적 특성 및 주요 엽채류 생육에 미치는 영향 (Physicochemical Properties of a Mixture of Dried Food Waste Powder with Organic Fertilizer and Effects on the Growth of Major Leafy Vegetable)

  • 본 연구는 음식물류 폐기물 건조분말(FWP)이 처리된 작물의 생육 효과와 FWP와 유기질비료(OF) 혼합물(MFOs)의 이화학적 특성 및 작물생육효과를 평가하기 위해 수행되었다. 3.11%의 NaCl을 함유하는 FWP를 250, 500 및 1,000 kg/10a 씩 상추와 배추에 처리하였을 때, 작물의 엽수, 엽장, 엽폭, 생물중 및 건물중 등과 같은 작물의 생육지수는 대조구보다 감소하였다. MFOs의 이화학적 특성 분석에서 FWP의 배합비율이 증가할수록 MFOs의 질소 및 인산 함량은 감소하였고, 염분함량은 증가하였다. 상추와 배추에 MFOs와 OF를 각각 처리한 후 작물의 건물중으로 생육을 평가할 때, 상추에서는 FWP 10~30% 범위에서, 배추는 FWP 10% 범위에서 유기질비료처리구(대조구)와 유사한 생육을 나타내었다.

수확 후 저장 조리조건에 따른 배추 가식분위내 $NO_3^-$함량변화 (Changes of Nitrate Contents in Edible Parts of Chinese Cabbage by Conditions of Cooking and Post-Harvest Storage)

  • Inorder to minimize the daily intake amount of nitrate by chinese cabbage, the favorate vegetable for Korean, the influences of storage conditions at different temperature and light or dark treatments after post-harvest and effects of cooking temperature and infrared rays on changes of nitrate contents in edible parts of chinese cabbage were determined. The nitrate contents on midrib and leaf blade in chinese cabbage during post-harvest were decreased steeply in 2 days and decreased slowly again in 5 days. The temperature treatment to decrease the nitrate contents in midrib and leaf blade of chinese cabbage were effective as the following of $25^{\circ}C$> $15^{\circ}C$ > $-4^{\circ}C$ > $-10^{\circ}C$. The nitrate contents of midrib and leaf blade were decreased in the timecourse of post-harvest. It is more effective to store in $4^{\circ}C$ than in $15^{\circ}C$, and is more effective in transparent vinyl package than in black vinyl package, but the treatment of light is more effective than the treatment of temperature. The nitrate contents of midrib decreased rapidly by 17.9% in the treatment of 5 days at$ 15^{\circ}C$. By treatment of $80^{\circ}C$, $90^{\circ}C$, $100^{\circ}C$ water, the nitrate contents of midrib were increased slightly, but decreased in leaf blade. It reached 68.5%, 50.6%, 45.9% in the leaf blade respectively by treatment of 80%, 90%, 100% water at 1 min. By infrared rays treatment, the nitrate contents of midrib did not change in 3 min but increased rapidly after 6 min, and in the leaf blade it increased continually after 1 min.

The Effect of Food Waste Compost and Livestock Manure on Chinese Cabbage (Brassica rapa var. glabra) Growth

  • Treatment of food waste is becoming a big issue due to their significant quantities. Composting could be an effective alternative for food waste management which could be used as soil conditioner or fertilizer with little concerns about heavy metals and pathogens. The purpose of this research was to evaluate the effect of food waste on Chinese cabbage growth and soil properties. 9 different treatments (two livestock manures, two food wastes, two livestock manures + chemical fertilizer, two food wastes + chemical fertilizer, and control) were applied to Chinese cabbage. All treatments were carried out in 3 replicates. We measured leaf length, leaf width, fresh weight, dry weight, and leaf greenness of Chinese cabbage. Treatment of one of food waste composts significantly increased leaf length and leaf width of Chinese cabbage by 28.6, 26.6, 67.7, and 59.9%, respectively, in comparison to those of control, while no significant differences for leaf greenness were shown. Application of food waste compost resulted in significant increase of EC, available $P_2O_5$, CEC, organic matter, and exchangeable cations. However, further researches are needed to reduce NaCl content of food waste.

유기농 자재의 시용이 토양의 이화학적 특성과 배추의 생육 및 체내성분에 미치는 영향 (Effect of the Soil Physicochemistry Property and Plant Growth and Components of Chinese Cabbage after Application Organic Farming Materials)

  • 화학비료와 농약의 대용으로 가축분의 발효퇴비 및 미생물 발효퇴비를 시용하여 토양의 이화학적 성질 변화와 배추의 생육 및 체내 성분변화을 알아보기 위하여 본 시험을 수행하였던바 결과는 다음과 같다. 1. 유기농 자재를 시용한 토양의 화학적 성질을 보면 pH 및 유기물함량은 화학비료 처리구에서는 거의 변화가 없었던 반면 발효퇴비 및 미생물 발효퇴비 처리구에서는 약간 증가하였고, 인산, 칼슘 및 칼리 성분은 발효퇴비 및 미생물 발효퇴비 처리구에서 화학비료 처리구보다 증가하였으며, 특히 계분+미생물 발효퇴비 처리구에서 가장 높았다. 2. 유기농 자재를 시용한 토양의 미생물상의 변화는 화학비료 처리구에서는 세균 및 방선균수는 거의 일정한 경향을 보였고 사상균수는 약간 감소하는 경향을 보인 반면 발효퇴비 및 미생물 발효퇴비 처리구에서는 세균, 방선균 및 사상균수가 모두 증가하는 경향을 보였으며, 특히 미생물 발효퇴비 처리구에서는 세균수가 상당히 증가하였다. 3, 유기농 자재의 시용에 따른 배추의 생육은 화학비료 처리구> 미생물 발효퇴비 처리구> 발효퇴비 처리구순으로 높았고, 체내 NO$_3$$^{-}$ 함량은 내엽보다 외엽에서 많았고, 처리간에는 화학비료 처리구에서 내.외엽 모두 가장 많았으며, 미생물 발효퇴비 처리구에서 다소 적었다. 4. 유기농 자재의 시용에 따른 배추의 체내성분은 처리간 뚜렷한 차이는 나타나지 않았다.

유기농자재인 비티, 님, 고삼 단독 및 혼합처리에 의한 유기농 배추 주요해충 방제효과 (Insecticidal Effect of Organic Materials of BT, Neem and Matrine Alone and Its Mixture against Major Insect Pests of Organic Chinese cabbage)

  • 본 연구는 유기농 배추재배지에 발생하는 주요해충 4종에 대한 살충효과가 잘 알려진 중 3종의 살충효과를 조사하기 위해 수행되었다. 좁은가슴입벌레 유충에 대해 BT+Matrine+Neem 혼합처리의 방제효과가 가장 높게 나타났으며, 가장 낮은 처리농도인 0.05%에서도 94.1%의 살충효과를 보였다. 3종의 를 단독으로 처리한 것보다 두 종류(68.3~70.0%) 또는 세 종류(95.2%)의 를 혼합 처리하였을 경우에 배추흰나비 유충에 대한 살충효과가 더 높게 나타났다. 배추좀나방 3령 유충에 대한 Matrine, Neem, BT제 처리 효과도 단독처리에 비하여 혼합처리에서 90.0% 이상의 매우 높은 방제효과를 나타내었다. 따라서 BT, Neem, Matrine을 적절하게 혼합 처리할 경우 유기농 배추 재배지의 주요 해충을 방제하는데 유용할 것으로 판단된다.

생육정보를 이용한 가을배추와 가을무 단수 예측 모형 개발 (Development of Yield Forecast Models for Autumn Chinese Cabbage and Radish Using Crop Growth and Development Information)

  • This study suggests the yield forecast models for autumn chinese cabbage and radish using crop growth and development information. For this, we construct 24 alternative yield forecast models and compare the predictive power using root mean square percentage errors. The results shows that the predictive power of model including crop growth and development informations is better than model which does not include those informations. But the forecast errors of best forecast models exceeds 5%. Thus it is important to establish reliable data and improve forecast models.

미생물제제 처리가 토양 미생물상의 변화 및 배추의 생육에 미치는 영향 (Effect of Microbial Product on Microorganisms in Soil and Growth of Chinese Cabbage)

  • This study was conducted to investigate the effect of different concentrations of microbial products on growth of chinese cabbage and microorganisms in soil. Two different levels of microbial products, such as 50 times and 100 times diluted solutions of chitosan, wood vinegar and EM activity liquid, were treated for foliar application. the results were summarized as follows : Among foliar applications of microbial products, 100 times diluted solution of chitosan was effective on growth of chinese cabbage comparing to other levels of dilutions and untreated control plot. The number of microorganism in the soil tended to increase under the treatment of microbial products compared to control plot. Especially, the numbers of the bacteria and actinomycetes were estimated $73.67{\times}10^3$ CFU/g and $34.00{\times}10^3$ CFU/g, respectively, under the treatment of 100 times diluted solution of chitosan.
