Organoleptic Quality Attributes of Three Different Types of Vegetable-Based Milk Analogs Supplemented with Hibiscus Oil

  • Hibiscus is rich in acids, anthocyanins, flavonols, oils, proanthocyanidins, and various pigments. It is utilized for medicinal purposes, to improve human health, and as a galactagogue to stimulate milk production in cows. Due to its biofunctional activities, hibiscus oil has broad applications spanning different fields. This study analyzed the pH and organoleptic quality attributes of three different vegetable-based milk analogs supplemented with hibiscus oil at 0%-1.5% concentrations. The results revealed that the addition of hibiscus oil did not affect pH; however, as the concentration of the hibiscus oil increased, the organoleptic quality attributes of the milk analogs supplemented with it decreased. All three milk analogs supplemented with 0.25% hibiscus oil demonstrated favorable attributes compared to the control group. This study provides valuable foundational data for developing new vegetable-based milk analogs that possess enhanced biofunctionality through the supplementation of hibiscus oil.

  • Salmonella spp. is the most common cause of gastrointestinal food poisoning worldwide, and human salmonellosis is mostly caused by the consumption of contaminated food. Therefore, the development of rapid detection methods for Salmoenlla spp. and rapid identification of the source of infection by subtyping are important for the surveillance and monitoring of food-borne salmonellosis. Therefore, this review introduces (1) History and nomenclature of Salmoenlla spp., (2) Epidemiology of Salmoenlla spp., (3) Detection methods for Salmoenlla spp. - conventional culture method, genetic detection method, molecular detection methods, and aptamer, and (4) Subtyping methods for Salmoenlla spp. - pulsed-field gel electrophoresis and repetitive sequence-based polymerase chain reaction (PCR).

의료보장정책의 형성과 문제점 (Policy Formulation of Health Insurance and Its Problems in Korea)

  • Korea's social health insurance system was introduced in 1977, which has made a universal coverage possibly by July 1989. Korean government had pursued a single objective for the last decade to put the whole population under the coverage of medical security, and the objective was achieved within 12 years. The rapid accomplishment is primarily due to such factors as limited benefits, high copayment rate, low contributions as well as rapid economic growth. There are several sources of pressure for the implementation of social health insurance such as health professional group, labor unions, politicians, international organizations etc.. However it is important to look at the feasibility of social health insurance. Among other things, it is necessary to identify the administrative infrastructure of insurance system and to assess income for source of fund. As many developed countries, Korea began to apply health insurance to the employees of the large firms, and the expansion based on employment status. Thus the several funds system was inevitable according to the gradual expansion strategy. However many persons had criticized several funds system in respect with equity and efficiency aspects. In the short history of the Korean health insurance, whether one fund or sever or funds had been the most controversial issue. In Febrary 1999, the National Assembly passed the act of one fund system. From July 2000 separate funds will be unifed under new health insurance scheme. In this study we will analyze the policy making process on implementation, expansion and integration of health insurance system of Korea. And also analyse problems related to policy making.

양호교사에 의한 학생(學生) 신체검사(身體檢査) 능력(能力)에 관한 평가(評價) (A Study on the analysis of physical assessment by school nurses)

  • For the evaluation of physical assessment by school nurses, this study was designed in two steps physical assessment. The first step is the primary health screening by school health nurses. The second step is the Physicians' physical examination of ill health students selected by school nurses. This study was conducted on a total of 3,525 students of three primary schools located in urban, township, and rural area during the period from May to June, 1987, all data were collected through direct observation & survey method. The main findings are as follows 1. The number of ill health students selected by two step method was more than that of one step method by the physician. 2. The types of ill health students selected by two step method had more diversity than that of one step method by the physician. 3. Budgets and time consumption for two step method were more reductive than that of one step method by the physician.

Survival Behavior of Escherichia coli O157:H7 during over 60-Day Aging of Camembert Cheeses Manufactured from Unpasteurized Raw Milk

  • Although many developed countries (USA, Canada, and several EU countries) allow raw milk cheese to be aged more than 60 days, these countries have strict standards for the aging conditions, such as temperature, of raw milk cheese. Spiking experiments were conducted with Camembert cheese made from raw milk, to assess the microbiological safety of raw milk cheese aged for more than 60 days. We spiked Escherichia coli O157:H7 into raw milk with different inoculation levels (high, medium, and low). Camembert cheese was prepared from the inoculated raw milk, then aged in an incubator for up to 9 weeks (63 days). There were no significant differences in pH and water activity (aW) between uninoculated cheese and cheese samples inoculated with E. coli O157:H7 (p<0.05). The pH and aWof the Camembert cheese decreased throughout the storage period. In conclusion, E. coli O157:H7 did not affect the pH and aW of the cheese samples. Cell counts were conducted every week using the agar-plating method. Inoculated cells were completely eliminated, especially in Camembert cheese, after 60 days, and the reduction rate of cells was much faster in Camembert cheese.

Growth Behavior of Listeria monocytogenes during over 60-Day Ripening of Camembert Cheeses Produced by Unpasteurized Raw Milk

  • Although the USA, Canada, and several EU countries allow raw milk cheese to be aged more than 60 days, these countries have strict standards for its aging conditions, such as temperature. Many developed countries have employed standards of identity which effectively prevent the manufacture and sale, of cheese made from unpasteurized milk (i.e., raw milk) in interstate commerce, unless such cheese has been aged for a minimum of 60 days. The microbiological safety of raw milk Camembert cheese, aged for more than 60 days, was evaluated using spiking experiments. We spiked Listeria monocytogenes into raw milk with different inoculation levels (high, medium and low). Camembert cheese was prepared from the inoculated raw milk, then aged in an incubator for up to 9 weeks (63 days). The number of cells was determined every week using the agar-plating method. Inoculated cells were completely eliminated, especially in Camembert cheese, after 60 days, and the reduction rate of cells was much faster in Camembert cheese. There were no significant differences in pH and water activity (aW) between the uninoculated cheese and the cheese samples in which Listeria monocytogenes was inoculated (p<0.05). 초등학교 고학년의 구강건강신념과 구강건강행동간의 관련성에 관한 연구 (Study on Relation between Dental Health Beliefs and Dental Health Behavior in the High Grade Students of Elementary School)

  • 사회심리적인 모형인 구강건강신념모형이 예방적인 측면에서 구강건강행위에 영향을 미치므로 구강건강신념을 구성하는 요소와 구강건강관련 행동간의 관련성을 규명하고자 초등학교 고학년 490명을 대상으로 개별자기기입방식에 의한 설문조사를 실시하였다. 수집된 자료는 통계프로그램 SPSS 14.0을 활용하여 T-test, 일변량 T검정, One-way ANOVA, 피어슨 상관분석을 하여 나타난 결과는 다음과 같다. 1. 일반적 특성에 따른 구강건강신념은 유의한 차이가 없었으나 구강보건행동은 하루 칫솔질 횟수에서 여자가 남자보다 유의하게 조금 더 높았으며, 연간 치과의료기관 방문 횟수는 고학년일수록 유의하게 낮았다(p < 0.01). 2. 학생들의 구강건강신념과 구강건강행동의 상관관계에서 하루 칫솔질 횟수는 감수성, 장애도와 부의 미미한 상관성을 나타내었다. 그리고 연간 치과의료기관 방문횟수는 감수성, 심각성과 정의 미미한 상관성을 나타났었고, 하루 우식성식품 섭취횟수는 감수성, 심각성, 장애도와 정의 미미한 상관성를 나타내었으나 유익성과는 부의 미미한 상관성을 나타내었다. 3. 구강건강신념간의 상관관계는 감수성을 높게 느낄수록 심각성과 장애도는 높게 나타나지만 유익성은 낮아지며, 심각성을 높게 느낄수록 장애도는 높아지는 반면에 유익성은 낮아졌다. 또한 유익성이 높을수록 중요도는 높아지는 반면 장애도는 낮아졌다. 이상의 결과에서 알 수 있듯이 자신의 구강질환에 대한 인식의 정도나 구강상태를 심각하게 생각할수록 하루 우식성식품 섭취횟수와 연간 치과의료기관 방문횟수는 많았으나 칫솔질 횟수는 낮았다. 이는 칫솔질을 적게 하거나 우식성식품 섭취횟수와 연간 치과의료기관 방문횟수가 많을수록 자신의 구강상태가 나쁠 것이라는 생각을 하고 있으며, 치과진료에 대한 장애를 많이 느끼는 것으로 나타났다. 위의 결과를 미루어보아 구강건강신념과 구강건강행동은 서로 상호 관련성이 있음을 알 수 있으나 강한 상관성은 나타내지 않았다. 따라서 자기주도적 행동이 시작되는 초등학교 고학년의 올바른 구강건강신념 및 구강건강행동을 유도하기 위해서는 보다 적극적인 전문가에 의한 지속적이고 체계적인 학교구강보건 교육프로그램이 강화되어야 하겠다.

Fructose Contents of Various Popular Sweetened Beverages based on Milk Using by HPLC

  • The global consumption of fructose in the form of high-fructose corn syrup (HFCS) has increased considerably over the past several decades. The current intake of HFCS exceeds that of other major caloric sweeteners such as sucrose. Fructose has potentially adverse effects on human metabolism. Therefore, the objective of this study was to analyze the monosaccharide contents of 13 sweetened milk-based beverages by using high-performance liquid chromatography (HPLC). The total monosaccharide (fructose and glucose) contents of various sweetened milk-based beverages ranged from 0.60 g/100 mL (cheese) to 26.03 g/100 mL (maple caramel snack), while milk showed only 0 g/100 mL monosaccharides. The fructose-to-glucose ratio of various popular sweetened milk-based beverages ranged from not-detected (ND) to 2.24 g/100 mL, but the content of glucose was higher than that of fructose in only three samples, namely, strawberry flavored milk, shrimp chips, and maple caramel snack. The analyzed results revealed important basic information about monosaccharides in various milk-based sweetened beverages, presenting ideas for future fructose research.

Establishing Quantitative Standards for Residual Alkaline Phosphatase in Pasteurized Milk

  • The alkaline phosphatase (ALP) assay is a rapid and convenient method for verifying milk pasteurization. Since colorimetric ALP assays rely on subjective visual assessments, their results are especially unreliable near the detection limits. In this study, we attempted to establish quantitative criteria for residual ALP in milk by using a more objective method based on spectrophotometric measurements. Raw milk was heat-treated for 0, 10, 20, 30, and 40 min and then subjected to ALP assays. The quantitative criteria for residual ALP in the milk was determined as 2 μg phenol/mL of milk, which is just above the ALP value of milk samples heat-treated for 30 min. These newly proposed methodology and criteria could facilitate the microbiological quality control of milk.

Evaluation of Selective Media Containing Iron Source and Alpha-Glucosidase Substrates for Enterobacter sakazakii (Cronobacter spp.) Detection

  • Enterobacter sakazakii (Cronobacter spp.) causes meningitis, necrotizing enterocolitis, sepsis, and bacteremia in neonates and children and has a high mortality rate. For rapid E. sakazakii detection, various differential and selective media containing α-glucosidase substrates, such as 5-bromo-4-chloro-3-indolyl-α-D-glucopyranoside (BCIG) or 4-methylumbelliferyl-α-D-glucoside (α-MUG), have been developed as only E. sakazakii exhibits α-glucosidase activity in the genus Enterobacter. However, Escherichia vulneris (family: Enterobacteriaceae) can also utilize α-glucosidase substrates, thereby resulting in false positives. Various iron sources are known to promote the growth of gram-negative bacteria. This study aimed to develop a selective medium containing α-glucosidase substrates for E. sakazakii detection that would eliminate false positives, such as those of E. vulneris, and to determine the role of iron source in the medium. Three previously developed (TPD) media, i.e., Oxoid, OK, and VRBG, and the medium developed in this study, i.e., NGTE, were evaluated using 58 E. sakazakii and 5 non-E. sakazakii strains. Fifty-four E. sakazakii strains appeared as fluorescent or chromogenic colonies on all four media that were assessed. Two strains showed colonies on NGTE medium and not on TPD media. In contrast, the remaining two strains showed colonies on TPD media and not on NGTE medium. None of the non-E. sakazakii strains showed fluorescent or chromogenic colonies on any of the evaluated media except E. vulneris, which showed colonies on TPD media and not on NGTE medium. This study demonstrated that the newly developed NGTE medium was not only equally efficient in promoting the growth of bacterial colonies when compared with the currently available media but also eliminated false positives, such as E. vulneris.
