This study was conducted to determine the changes in the contents of vitamin C and reducing sugars of wheat flour and glutinous rice pastes added Kimchi during fermentation. Kimchi was fermented at 10$^{\circ}C$ for 14 days. Sensory evaluation of various Kimchi samples were also conducted. During fermentation, pH decreased in the order of wheat flour paste added Kimchi (WHFP-Kimchi), glutinous rice paste added Kimchi (GLRP-Kimchi) and control. Total acidity increased in the same order The contents of total vitamin C of all Kimchi samples decreased. Total reducing sugar contents of Kimchi juices from various samples decreased in the order of WHFP-Kimchi, GLRP-Kimchi and control. In sensory evaluation, the red color of Kimchi juice decreased in the order of control>WHFP-Kimchi>GLRP-Kimchi. Off flavor decreased control>WHFP-Kimchi>GLRP-Kimchi. Firmness decreased control> GLRP-Kimchi>WHFP-Kimchi. Sour tate decreased WHFP-Kimchi>Control>GLRP-Kimchi. But there were no significant difference in crispiness, ans salty taste. Overall prefernce decreased GLRP-Kimchi>control>WHFP-Kimchi.
The study was conducted to evaluate the feasibility of Mozzarella cheese analogue generation by using a mixture of soy milk and raw milk and to compare the quality of the resultant cheese with that of Mozzarella cheese manufactured using the traditional method. The mixtures showed increase in protein and decrease in lactose and SNF in a dose-dependent manner with the addition of soy milk. The Mozzarella cheese analogue had lower total solids content than the control cheese product, while the fat content was similar between both. The analogue cheese had lower ash content than the traditionally prepared cheese; the content was proportional to the amount of soy milk in the mixture. Higher soy milk quantities within mixtures also resulted in proportionally higher levels of fat content within analogue cheese. Water-soluble nitrogen content was lower in the analogue cheese than in the control cheese. While the WSN level increased in the control cheese, it was almost constant in the analogue cheese. The control cheese had much higher actual and predicted yield than the analogue cheese, while the analogue cheese had a higher stability level. The control cheese had a higher transfer rate than the analogue cheese, with the exception of lactose. Electrophoresis analysis showed bands for Mozzarella cheese analogues that were present in addition to the normal ${\alpha}$-casein and ${\beta}$-casein bands. Physical characteristic analysis showed that hardness was affected by the addition of soy milk to cheese, while cohesiveness and brittleness were affected by the addition of raw milk, and elasticity was barely affected by milk composition. The meltability of the control cheese was higher than that of the analogue cheese and increased during 30 days of storage at $4^{\circ}C$. Browning, oiling-off, and stretching characteristics were almost identical between the 2 types of cheeses. Sensory evaluation findings showed that the control cheese had much better body texture, appearance, and flavor than the analogue cheese.

The hydrolysis conditions (enzym $e_strate ratio, time and temperature) of the mixture of anchovy sauce residue (ASR) and soy sauce residue (SSR) after fermentation by Flavourzyme 500M $G^{TM}$ were optimized using response surface methodology (RSM) for pretreatment of processing functional enzyme-hydrolyzed sauce. A model equation obtained from RSM was hydrolysis ratio (%) = 28.157+1.929enzym $e_strate ratio+1.818time+2.038temperature-1.093temperatur $e^2$, whose stationary point showed saddle point. From the ridge analysis of the saddle point, the conditions producing the highest hydrolysis ratio was determined as follows: 0.49% enzym $e_strate ratio; 3.55hr hydrolysis time; 62.5$^{\circ}C$ hydrolysis temperature. Adding of SSR to the mixture of water and ASR improved sensory qualities of mixture, so it seemed that SSR has masking effects on off-flavor and taste of ASR.R.of ASR.R.

This study was conducted to evaluate the characteristics of geosmin production of Anabaena circinalis under different environmental condition. The test cyanobacterium was isolated from Lake Paldang. The growth rate and geosmin production of A. circinalis were examined with different variables including temperature (10, 15, 20, $25^{\circ}C$), light intensity (60, 120, $240{\mu}mol\;photons\;m^{-2}\;s^{-1}$), and phosphorus concentration (0.01, 0.05, 0.25, 0.50, $1.00mg\;L^{-1}$). The highest growth rate and chlorophyll-a (Chl-a) concentration appeared at $25^{\circ}C$, $60{\mu}mol\;photons\;m^{-2}\;s^{-1}$ and $1.00mgP\;L^{-1}$ for temperature, light intensity, and P concentration, respectively. Total geosmin production was highest at the optimal growth condition of each variable, while chlorophyll-specific geosmin production (the ratio of geosmin to Chl-a) was higher at the less favorable growth condition, indicating high potential of the off-flavor problem during low temperature period, e.g., late fall and early winter. Our results demonstrated that geosmin production of A. circinalis was directly related to chlorophyll synthesis and varied with cellular growth condition.
Betarich carrots were washed at various hypochloric acid(HCA) concentration and steeping time and packed in PE bag keeping at $8^{\circ}C$ for 12 days, in order eventually to examine microbiology, firmness, surface color, whiteness index(WI) and sensory quality. It was found that total bacterial counts at T-II and T-III with the 3 minute steeping were $4.37{\pm}0.19\;\log\;CFU/g$ and $4.27{\pm}0.13\;\log\;CFU/g$ respectively, showing slight decrease compared to control condition. E. coli was not detected at all treatments but less coliforms were detected at the 8-day treatments of T-II and T-III. Treatment of 3-minute steeping showed smaller reduction in firmness than that of I-minute steeping at 12-days, and T-1 (T-3) had the largest (smallest) reduction among them. It was also found that during the treatment the L-value showed decreasing trend, but the parameter a- and b-value showed increasing trend. WI increased, and its change was small with the increase in HCA concentration. The sensory quality check after 8 day storage showed that evaluation of the off-flavor appeared to be significantly high (p<0.05) at both non-treatment and HCA treatment. On the basis of the results above, it is likely to be more effective to prolong the period of circulation of beta rich carrots if you use HCA over 50 ppm for washing betarich carrots. This study will contribute to improve safety and quality in circulation of beta rich carrots.
To prevent deterioration of the jujube wine quality by using heat sterilization while commercial production, ultrafiltration and microfiltration were applied. The permeate flux and physicochemical properties of jujube wine determined by MF and UF membrane ($0.2\;{\mu}m$ pore size and 50 K dalton cut off) were investigated. The permeate flux increasing caused the increased operating pressure. The Hunter L value of jujube wine treated MF and UF was increased and that of b value was decreased. The turbidity of jujube wine treated MF and UF was largely decreased. And the values of pH, ethanol, total acid and soluble solid were decreased or were at the same level comparing with untreated jujube wine. Retention percentage of sugar and organic acid was more than 80% and was not influenced by operating pressure. Results of sensory evaluation indicated that the color of UF was superior to un-treatment and commercial ones. And the flavor and taste were not significantly different with untreated jujube wine. The quality deterioration of commercial jujube wine could be improved by MF and UF. According to the sensory evaluation, there was also not difference between MF and UF for preference test. Therefore, the quality of jujube wine could be improved by MF having better separation yield efficiency than UF.
For the evaluation of storage stability of kiwifruit, the conditions of CA storage were based on the following gas compositions; 2% oxygen and 2, 4, 6% carbon dioxide, respectively. The results obtained from the experiment were as follows; The flesh softening was considerably reduced at the storage atmospheres of 4% $CO_2$ plus 2% $O_2$, and fruit firmness of 3.0kg was marked in this CA condition after storage for 180 days. The concentration of $CO_2$ affected clearly on the respiration rate and organic acid compositions of kiwifruit during CA storage. The respiration rate at the storage condition of 6% $CO_2$ was lower than those at 2 and 4% $CO_2$. Quinic and succinic acid contents were obviously increased in the kiwifruit stored at all the CA conditions studied. In comparision of the developed amounts of off-flavor substances, ethanol and acetaldehyde, depended upon the concentration of $CO_2$ in the CA conditions, the larger amount were produced in the storage condition of higher concentration of $CO_3$. From the results mentioned above, it could be concluded that the optimum atmosphere combination for CA storage of kiwifruit was 4% $CO_2$ plus 2% $O_2$.
Attempts were made to investigate the effect of gamma irradiation and heat treatment on quality changes of Bulgogi sauce during the storage at 4 and $20^{\circ}C$. Total acidity, Surface color, brix, microbial growth and sensory quality of test products were evaluated during storage. Total acidity of sauce did not change during storage at $4^{\circ}C$, whereas those of control and 4 kGy groups changed significantly during storage at $20^{\circ}C$. Gamma irradiation and heat treatment had little effect on brix of the suace during storage period. Surface color of control and 4 kGy group significantly changed during storage, especially at $20^{\circ}C$. Sucrose contents in sauce decreased during storage, while glucose and fructose contents increased. Sensory quality of sauces stored at $4^{\circ}C$ for 12 weeks was similar, except the control. Control and 4 kGy treated sauces stored at $20^{\circ}C$ for 6 week had detectable levels of off-flavor. Colifrom bacteria were not detected in sauces treated by either heat or gammma-ray. Total acrobic increases in colony counts were slower at $4^{\circ}C$. Yeasts or molds were not detected in sauces treated by heat or gamma-ray over 7-10 kGy. These results indicated that gamma irradiation over 7kGy or heat treatment of the sauce maintained acceptable quality.
The influence of storage atmosphere on ethylene production, quality attributes and storage injury of 'Tsugaru' apples was investigated. Apples were stored in 1% $O_2+1%\;CO_2,\;1%\;O_2+3%\;CO_2,\;3%\;O_2+1%\;CO_2,\;3%\;O_2+3%\;CO_2$ and air at $0^{\circ}C$ for 5 months. Ethylene production was more suppressed by 1% $O_2$ than 3% $O_2$ atmospheres regardless $CO_2$ levels. The loss of flesh firmness and the decrease of titratable acidity were not significantly different among the storage atmospheres until 3 months of storage but more retarded by 1% $O_2$ than 3% $O_2$ atmospheres thereafter. Soluble solid content was unaffected by the storage atmosphere, but the content tended to be increased until 2 months of storage and then not varied. Ethanol content increased up to a peak level followed by a gradual loss during storage in CA but increased continuously in air. In the sensory evaluation after storage for 5 months, hardness, tartness and overall acceptability of apples stored in 1% $O_2$ atmospheres were significantly higher than those stored in the others. There was no fruit injury or off-flavor production resulting from the 1% $O_2$ atmospheres. The incidence of bitter pit was reduced as storage $O_2$ level decreased. The results show that the optimum conditions of CA storage for 'Tsugaru' apples are $0^{\circ}C$ and 1% $O_2+1{\sim}3%\;CO_2$.
In this study, the fermentation characteristics of Yakju were investigated by addition of protein and lipid. These are classified according to raw material (rice, glucose) and inducing substance (rice protein, rice lipid). Alcoholic fermentation occurred at $25^{\circ}C$, after 14 days. The results of this study were as follows: Alcohol content of Yakju with rice protein was higher than those of other samples. The pH and glucose of rice Yakju were detemied to be 4.86~5.13 and 4.17~4.86, respectively. Titratable acid and the total amino acid content of the Yakju with rice protein were the highest among other samples. The optical density contents of the rice Yakju and glucose Yakju were 0.52~0.653 and 0.27~0.61, respectively. The concentration of organic acids in rice Yakju (433.98~519.31 mg%) was higher than that of glucose Yakju (303.76~387.50 mg%). The major organic acid components of the Yakju were succinic, citric, acetic and lactic acids. The nitrogen compound concentrations of rice Yakju (4377.38~10208.06 ppm) was higher than that of glucose Yakju (671.20~9368.93 ppm). The protein odor correlation coefficient was 0.98 (p<0.001) showing a very high correlation coefficient, while lipid odor coefficient showed a negative correlation with -0.038 (p<0.458).
