To evaluate the school lunch program served by elementary schools in Muan, Korea, we examined children's preference for the dishes offered on the menus. School lunch program menus showing the food composition of 400 meals (100 meals in each season) were collected. The serving frequency of each dish on the menus was counted. Eighty-seven representative dishes were selected based on the serving frequency and preference for each dish was determined by a survey of 414 elementary school students who were served by the school lunch program. We also analyzed the nutrient contents of each representative dish. Among the prepared foods, children indicated the highest preference for desserts. Steamed rice was served more frequently as a main course than one dish meals, although children preferred one dish meals to steamed rice. Among side dishes, those that were deep-fried were the most preferred. Children indicated high preference for fruits, milk, and eggs, and low preference for fish and clams, vegetables, and beans. The serving frequency with which main courses, soups, and side dishes were served showed no correlation with children's preference for each. Preference for dishes correlated positively with nutrient contents of calories and lipids, but negatively with nutrient contents of fiber, calcium and vitamin A. According to these results we can suggest that dietitian should consider children's preference into greater consideration to increase menu acceptability and thereby reduce waste. Children need to be educated about the roles and contents of nutrients in food and the fact that preference for foods affects nutrient intake.
Objectives: The purpose of this study is to analyze the current status of nutrition education programs for multicultural families and to provide policy suggestions for improvement. Methods: In-depth interviews of a total of 21 multicultural experts were conducted; 15 people were interviewed individually, while 6 people were interviewed in groups of three. Results: In-depth interviews revealed various problems related to the operation of nutrition education programs. The causes of problems were analyzed and categorized as four factors: systemic, practical, environmental and cultural. As for the systematic factors, insufficient linkage between related organizations and duplicate performance of several projects were identified as concerns Establishment of a control tower and strengthening the linkage among the related organizations may be needed to address this concern. With regard to practical factors, the study identified that language barriers, and lack of nutritional education media and tools translated into multicultural languages were limiting factors. These limitations the development of nutrition education materials that aretranslated into multiple languages, implementation of education programs that are different from the Korean education, and by providing interpreters. As for the environmental factors, low educational level and poor nutritional knowledge of multicultural women made it difficult for them to understand the contents of the education. Demonstration, practical training and urgent education on pregnancy and childbirth nutrition were identified as needs to address these concerns. Withregard to cultural factors, food culture conflict with Korean families, and difficulties in home practices were detected as concerns. Participants in the study suggested that getting education with family and facilitation of weekend and nighttime programs health of this community. Conclusions: Further studies are needed to adopt more effective and efficient nutrition intervention to promote the healthy eating of the married immigrant women based on the study results.
This study was conducted to provide basic information on the nutritional status and health status of the rural elderly. The food intake, food habits and others health related factors were surveryed by interview method. The subjects was 200 people(71 male, 129 female) aged over 65 year in the Han-an area. The obtained results as follows; Their average age is 73.5$\pm$5.6. Mean height and weight of elderly men were 163 cm and 58.1 kg. respectively and 148.7 cm and 50.0 kg for women. The regularity appetite and frequency of eating snacks and eating out were higher in men than in women. The favorite snacks for men were alcohol fruit coffee and for women was fruit, candy, cookies and coffee. The daily alcohol drinking and smoking ration were 50.0%, 60.6% for men, respectively and 14.0%, 24.8 % for women. The nutritional intake ratio to RDA of men was significantly higher than women. Especially, the intakes of energy, Ca, Vit.A, Vit B$_1$, Vit B$_2$ niacin were extremely low in women. The frequency of alcohol intake was related to nutrient intake of women . There was a negative correlation between age. smoking rate and the nutritional intake. The pocket money, weight height appetite, and frequency of snacks showed a positive relation to nutritional intake. In conclusion the study shows that gender did influence food intake in the elderly, Food intake of women was extremely in deficit, because the most elderly rural women live alone. For successful aging. a program for rural elderly is needed on the govermment level, i.e actions to provide minimum economic life, food delivery and psychological/ physical health care through regional pubilc health centers.
The purpose of this study was to investigate nutrients intakes and nutritional quality of Adults and Elderly People in an island area (Wando). A three-day dietary intakes survey, using a 24 hour recall method was obtained from 187 subjects aged 46 to 84 (mean age 65.3) living in an island area (Wando). Nutient intakes were analyzed using CAN-Pro soft program and compared to Korean RDA. The quality of nutrients was assessed by analyzing nutrient adequacy ratio (NAR), mean adequacy ratio (MAR), and index of nutritional quality (INQ). The average daily mean energy intakes were 1869.0 kcal for males and 1943.9 kcal for females, respectively. Daily intakes of protein for males and females were 28.0 and 30.4 g and those of fat were 31.5 and 28.51 g, respectively. Nutrient consumed below $75\%$ of Korean RDA was protein, vitamin A, Ca and Zn in both males and females. Average CPF ratio of males and females were 78.8 : 6.0 : 15.1 and 80.0 : 6.4 13.4, respectively. Energy intake ratio from protein was significantly higher in over 60 years males. Carbohydrate dependency decreased with age. Protein dependency increased with age. Nutrient adequacy ratio (NAR) of energy, protein vitamin A and vitamin E were increased with age in males. The mean adequacy ratio (MAR), an index of overall dietary quality, were not significantly different by age group. Average MAR for males and females was 0.77 and 0.78, respectively. The index of nutritional quality (INQ) showed the tendency to decrease with age. Especially, there were significantly decreases in INQ of all nutrients, except protein, with age. Based on these results, it is evident that people in the island area did not consume enough nutrients. Specially, dietary intake of protein, vitamin A, vitamin E, and Ca were not adequate. This study was conducted to investigate the nutritional knowledge, nutrients intake and the assessment of dietary behavior of old peoples living in Incheon area. Two hundred and three elderly were examined using the questionnaire. The results of this study are summarized as follows. 1. The old people was lacking in correct information about nutrition and diseases. 2. The nutritional knowledge scores of old women were higher than those of old men and the scores went up according to the amount of pocket money. 3. The amount of vitamin C and phosphorus intakes were higher than those of the RDA, protein intake reached the level of the RDA. The vitamin B$_2$intake, however, was below 75% of the RDA and that of calcium was very low in women, especially. 4. Most of subjects had a meal regularly three times a day and the skipping rate of breakfast was very low. Dey had a moderate meal volume and did not have an unbalanced diet. Dey nearly do not take the processed food, dine out and exceed in the cholesterol intake. 5. They took green and yellow vegetables and, milk and milk products relatively small. On the other hand, the intake of caffein beverage was relatively high. the rates of drinking and smoking were low. From these results, we may propose the conclusion as follows: The old people were much concerned about the nutrition and diseases, but they had no correct informations about them. Therefore, the program of nutrition and dietary behavior for their healthy elderly life had to be prepared and to be applied to them immediately.
This study was conducted to evaluate nutritional status of school children by biochemical assessment method. Subjects were 308 school children from 4th to 6th grade living in Bucheon city. Their blood glucose, total protein, albumin, total cholesterol, and triglyceride (TG) concentrations were determined. Mean blood glucose concentration was 77.56 mg/dl and $81.2\%$ of children had normal blood glucose concentration. The average proportion of hypoglycemia was $18.8\%$ among the three grades and prevalence of hypoglycemia in 4th grade school children was highest ($21.8\%$). Mean serum total protein and albumin levels were 7.14g/dl and 4.35g/dl, respectively, and all the subjects except only one were in normal range of total protein and albumin. Mean serum TG and total cholesterol concentrations were 145.82mg/dl and 94.50mg/dl. Serum TG and total cholesterol levels showed same pattern that the concentrations decreased in proportion to grade. Especially, there was significant difference between grades in serum total cholesterol. Furthermore, $11.7\%$ of 4th, $6.8\%$ of 5th, and $2.8\%$ of 6th grade school children have borderline hypertriglycemia or hypertriglycemia, risk factors of obesity or cardiovascular disease later in life. Taken together, there was conflict phenomenon that undernutrition of hypertriglycemia and overnutrition of hypertriglycemia existed together. Therefore, it is needed to develop discriminating and personalized nutritional feeding, counseling, and education program to cover the children of under- or over- nutritional status.
This study was conducted to investigate the nutrient supplement use and its related influencing factors by high school students in Chonbuk area. Self administered questionnaires were collected from 489 (urban: 268, rural: 221). Statistical data analysis was completed using a SPSS v. 10.0 program. The results are summarized as follows. According to the general characteristic of subjects, the job and education level of parents and family monthly income respectively affected the nutrient supplement use of subjects (p<0.001). According to the living area, taking a nutrient supplement of parents and nutritional information respectively affected the nutrient supplement use of subjects (p<0.001). About 42.2% of subjects, who taking a nutrient supplement, responded to take a traditional medicine type, and 24.4% of them a multivitamin. Their mothers were important recommended person. The main reason for taking was 'to recommended from parent' (38.5%) and 'recovery from tiredness' (29.6%). The main reason for not-taking was that they were health, therefore nutrient supplements were not necessary. In the future about 43.7% of urban and 33.9% of rural area responded to take a nutrient supplements (p<0.05). These findings show that the behaviors of nutritional supplement usage by subjects are not reasonable, and their supplement usage tends to be affected by general characteristics. Therefore, nutritional understanding and education that are intended to from reasonable behaviors toward nutritional supplement usage of adolescents should be provided with considering the relationship between general characteristic of subjects and supplement usage.

Children's health is interesting to parents and society. A system that assists to monitor the development of their children and gives nutritional advices is an interesting of parents. In this study, we present a system that allows to track the heights and weights of a child since he/she was born up to adulthood, to predict his age of puberty, and to provide nutritional advice. Particularly, it predicts the height in near future and the adult stature for detecting the child with abnormal development. We applied Sager's model for predicting the height in near future by using interpolation and regression techniques before puberty. After determining the puberty time, we proposed a model for predicting the height. Then we applied fuzzy logic for evaluating the health status and providing nutritional advice. Our system predicted stature in near future with error bound of $1.7361{\pm}0.0397cm$ in girls and $2.4020{\pm}0.0799cm$ in boys. Our model also gave a reliable adult stature prediction with error bound of $0.3507{\pm}0.2808cm$ in girls and $1.3414{\pm}0.7024cm$ in boys. At the same time, the nutrition was provided appropriately in terms of protein, lipid, glucid. We implemented a program based on this research. Our system promises to improve the health of every child.
The purpose of this study was to evaluate the meal pattern and the nutritional balance in university foodservices of Seoul. The survey was conducted using a questionnaire with 317 students at five different cafeterias that served 23 meals. We weighed all the meals offered by the university foodservices, separated the foods, and calculated their nutritional content using a computer program $\ulcorner$DS24$\lrcorner$. We also checked the dishes and those amount students consumed from the menu. The results of this study is summarized as follows. : 1) The most prevalent menu patterns included rice, soup, two side dishes, and kimchi. 2) Most nutrient contents per meal in a given menu was lower than one third of the recommended dietary allowance(RDA). 3) The mean energy content for the amount of rice that was served was 399㎉, for the side dish, it was 107㎉, and for the kimchi, it was 9.9㎉. 4) The number of total dishes and side dishes was five and two, respectively. The dietary variety score was 16.7, and the dietary diversity score was 3. 5) The mean energy intake by students at self-operated managements were 545㎉, and at one contracted management, the energy intake were 494㎉. Both of them did not serve enough to meet one third of the RDA. Nutrient adequacy ration(NAR) was 0.4∼0.9, and Index of nutritional quality(INQ) was above 0.9 for most nutrients with the exception of calcium and vitamin B$_2$.
Insufficient dietary intake of vitamin A is one of the major nutritional problems for elderly adults in some parts of Korea. The objective of this study was to determine the vitamin A nutritional status of elderly adults in Asan, Korea by assessing the dietary intake and serum retinol concentration. Five hundred twenty four subjects (218 male and 306 female) over 65 years were recruited from city of Asan. Each subject was interviewed to assess the intake of vitamin A using a 24hr recall method and data were analysed from computer-aided nutrient analysis program. Blood samples after 12hr fasting were collected for serum retinol concentration and reverse phased HPLC with UV detector used. The results showed that subjects did not consume the sufficient amount of energy (82-85% of Korean RDA for male and 77-79% RDA for female) and vitamin A (59% RDA for male and 50% RDA for female). Range for retinol intake was 0 to $4342\;{\mu}g$ a day while that of beta-carotene was 65 to $31595\;{\mu}g$. Serum retinol concentrations were within a normal range for both male ($80\;{\mu}g/dl$) and female ($67\;{\mu}g/dl$) subjects. Many subjects (n=342) consumed less than 50% RDA of vitamin A. However, if retinol intake was high (> $37\;{\mu}g$), even with less than 50% RDA of vitamin A intake, serum retinol concentration was high ($75\;{\mu}g/dl$). Subjects showed normal serum retinol status even with low vitamin A intake. The results suggested that optimal intake ratio of dietary retinol and carotenoid is important to maintain an appropriate serum retinol concentration.
