Comparison of Salinity of Soups on the Use of Bluetooth Salinity Meter at Childcare Centers in Anyang Area (안양지역 어린이집에서의 블루투스 염도계 사용에 따른 국의 염도 비교)

  • We analyzed whether the use of the Bluetooth salinity meter could affect the proper level of salinity in childcare centers. This study was conducted on childcare centers that wish to participate in the sodium reduction project (Bluetooth salinity meter using group, BG) and those that did not participate (Bluetooth salinity meter not using group, NG) among childcare centers registered with Center for Children's Foodservice Management in Anyang from January to December 2019. As a result of comparing the salinity and sodium contents of the soup according to whether or not a Bluetooth salinity meter was used, the salinity and sodium contents of BG was significantly lower than that of NG (p < 0.0001). Salinity and sodium contents in soups tended to decrease as the number of use of the Bluetooth salinity meter increased (p = 0.020). In conclusion, Bluetooth salinity meter can be used as a means to induce voluntary salinity control by cookers regarding sodium reduction education at childcare centers.

Subunits and Composition of Carotenoprotein from Salmo Salar Eggs (연어알에서 분리한 Carotenoprotein의 구조적 특성)

  • Carotenoprotein from Salmo Salar eggs was purified and characterized by CM-cellulose, 50% $(NH_4)_2SO_4$, DEAE-cellulose and sephadex G-75 column. The chromoprotein had a spectrum with ${\lambda}_{max}$ 409, 540 and 580nm in p-buffer (pH 7.0) at initial step. Molecular weights by sephadex G-200 gel filtration were 50, 200 and 26,000 daltons. SDS-PAGE analysis showed a structure with four identical subunits (12,500 daltons). Its sample retained a small amount of carbohydrates and lipids. Amino acids were analyzed, and mannose, galactose and glucosamine also were identified. Carotenoid extacted with acetone was found to be astaxanthin ester by partition test, epoxy test, iodine test, allylic test, reduction, acetylation, uv/vis, ir and nmr datas. Stearate (47.9%) and palmitate (21.4%) were predominant fatty acids in the astaxanthin ester.

The Influence of Smoking Behavior on Chronic Diseases in Korean Adults (한국 성인의 흡연 행태가 만성질환 유병에 미치는 영향)

  • This study was to find out the influence of smoking behavior in Korean adults on chronic diseases using data from the seventh Korea national health and nutrition examination survey(KNHANES VII-2) 2017. The subjects were 6,193. The data were analyzed by frequency analysis, x2 test and logistic regression analysis using SPSS 25 complex samples Win program. The main findings were that smoking age and smoking behavior were considered as early as the age of smoking, and in case of smoking in the past, the prevalence of chronic disease increased 1.30 times and 2.75 times, respectively. When the subjects' health behaviors and demographic characteristics were simultaneously corrected, the higher the age was, the more they were 0.25 times higher and 0.34 times higher than the graduate level of education. As a result, it is necessary to improve lifestyles such as obesity and lack of exercise, to reduce the prevalence of chronic disease in Korean adults, and to pay attention to younger age groups. There is a need to develop interdisciplinary convergent approaches with great interest.

A Survey on Menarche of School Girls in Seoul and Taegu Area (우리나라 도시(都市) 여학생(女學生)의 초경(初經)에 관(關)한 조사연구(調査硏究))

  • It is clearly defined through a number of authoritative studies that the age of menarche influenced by the various combined factocs such as nutrition status, physical status, physical growth and development status, socio-economic status, locality, culture, education level, climate, race heredity etc. In order to obtain statistical data regarding the menarche of Korean school girls, anthers investigated on 4207 middle school girls and 703 woman college students in Seoul and Teagu during the period of September 10 to 30, 1973 and the result are summarized as followings; 1. The rates of menses experience by years were 18.2% in the age group of 12 years girls, 31.9% in 13 years, 64.6% in 14 years, 89.8% in 15 years, 98.1% in 16 years respectvely. 2. The average age of menarche for the 2504 school girls who were born during the yrar of 1957-1961 is 13.4 years with the rang of 9 years to 16 years. And the most frequent age of menarche is 13 years. 3. The average age of menarche for the 703 woman college students who were born during the year of 1950-1954 is 14.3 years with the rang of 9 years to 18 years. And the most frequent age if menarche is 13 years. 4. The appearence of menarche is most common in August (20.7%) for the group who were born during the year of 1957-1961 and most rear in November (4.2%). And it is also most common in August (19.9%) for the group who were born puring the year of 1950-1954 but most rear in June (3.4%).

Convergence Factors Affecting Subjective Oral Health Cognition Using 6th Sixth National Health and Nutrition Survey Data (제6기 국민건강영양조사자료를 이용한 주관적 구강건강인지에 영향을 미치는 융합적 요인)

  • The purpose of this study was to investigate factors affecting perceived oral health status according to socioeconomic status and community periodontal index(CPI) and decayed, missing, and filled teeth(DMFT) using the 6th Korean national health and nutritional examination survey(KNHANES VI) and provide a basic data for plan of policy. The higher the age, the lower the household income and education level, the worse the subjective oral health had better oral health and there was a tendency that the respondents who had no oral exam within 1 year and experienced CPI or DMFT estimated their own health as worse. It is needed to make policy development to resolve the inequality of oral health.

A Convergence Study on the Factors Influencing Health-related Quality of Life in the Elderly Health Behavior (노인들의 보건행태가 건강관련 삶의 질에 미치는 영향요인에 관한 융합연구)

  • The purpose of the Convergence study is to identify the factors of health-related quality of life for the elderly and provide the basic data needed to improve the quality of life for the elderly. The objects of the study were 1,367 people aged 65 or older living in Korea out of the original data for the 7th National Health and Nutrition Survey by the Korea Centers for Disease Control and Prevention (Year 2017). Multiple regression analyses was performed by using the SPSS/PC 21.0 statistical program for the purpose of the study. According to the study, mental health and then physical activity were the most influential factors in health-related quality of life. Based on these results, we found that health education is highly important to provide customized health care services and to build the correct lifestyle in order to improve the quality of health-related life. Therefore, follow-up research is needed to identify the effectiveness of developing and applying diverse programs to enhance mental health and physical activity of the elderly in the future.

A Study on Physicochemical and Sensory Characteristics of Ssanghwa Tea

  • This study tried to analyze sensual properties by classifying the thermal water extract of the main material used in Ssanghwa tea. Through this study, we wanted to develop popular Ssanghwa tea and further carry out basic research for the development of various menus using it. The ingredients for the Ssanghwa tea were washed under running water, then dehydrated and put in a pot as 2L of purified water. Ssangwha tea were heated at 100℃ for 10 minutes, then lowered the temperature to 75℃ and boiled down to 200 ml for 110 minutes. This study evaluated sensory characteristics of four types of commercial products and the five types manufactured by the description analysis. Quantitative analysis of the commercial Ssanghwa tea showed significant differences between samples in seven of the total 13 sensory characteristics except OG(Smell of grass), OC(Oriental medicine smell), TG(Umami), RT(Thick), RC(Rough) and RS(Tub-Tub) (p<0.05). In particular, differences between samples were evident in CT(Transmittance), CB(Brownness), TW(Sweet taste) and TB(Bitter) (p<0.001), which appeared to be the main differentiated features of appearance, aroma and taste for commercial Ssanghwa tea. Relationship of oral health behavior to subjective oral health status and the DMFT index in Korean adults (한국 성인의 구강보건행태와 주관적인 구강건강인지 및 우식경험영구치지수와의 관련성)

  • Objectives : The purpose of this study was to provide some information on down-to-earth oral health policy to improve the systemic health involving oral health and the quality of life in Korean adults. Methods : The third-year data of the 4th National Health and Nutrition Survey in 2009 were analyzed, and $x^2$(Chi-square) test was carried out to see whether there would be any gaps in subjective oral health status according to demographic characteristics, systemic health state, frequency of eating between meals and oral health behavior. In terms of the DMFT index, one-way ANOVA was utilized, and then Scheffe post-hoc analysis was conducted. Besides, multiple regression analysis was made to grasp the relationship of oral health behavior to subjective oral health state and the DMFT index. Results : The demographic characteristics, systemic health status and oral health behavior had a significant relationship to both of subjective oral health status and the DMFT index. As a result of analyzing the relationship of oral health behavior to subjective oral health state and the DMFT index, the subfactors of oral health behavior exerted a significant independent influence on subjective oral health status and the DMFT index. Conclusions : The findings of the study suggest that in order to promote the oral health of adults, preventive measures should be taken, and systematic oral health education should be provided. As there is an increase in the elderly population in Korea, the successful implementation of senior oral health plans and the development of oral health programs geared toward adults are both required.

Drying Characteristics of Agricultural Products under Different Drying Methods: A Review

  • Purpose: Drying is one of the most widely used methods for preserving agricultural products or food. The main purpose of drying agricultural products is to reduce their water content for minimizing microbial spoilage and deterioration reaction during storage. Methods: Although numerous drying methods are successfully applied to dehydrate various agricultural products with little drying time, the final quality of dried samples in terms of appearance and shape cannot be guaranteed. Therefore, based on published literature, this review was conducted to study the drying characteristics of various agricultural products when different drying methods were applied. Results: An increase in the drying power of sources-for example, increase in hot air temperature or velocity, infrared or microwave power-and the combination of drying power levels can reduce the drying time of various agricultural products. In addition, energy efficiency in drying significantly relies on the compositions of the dried samples and drying conditions. Conclusions: The drying power source is the key factor to control entire drying process of different samples and final product quality. In addition, an appropriate drying method should be selected depending on the compositions of the agricultural products.

Study on the Comparison between the Need of Medical Checkup and Self-cognition of Oral Health (본인인지 구강건강상태와 실제 검진 치료필요도 비교 연구)

  • This study applied comparative analysis on the need of medical checkup and subjective oral health of adults above 19 years old based on based on the 5th primitive data of Korea National Health and Nutrition Examination. From the analysis of the need of medical checkup for left and right molar teeth on upper and lower jaw, it is reported that 90% of the cases that cognize themselves having poor oral health on the first and second moral tooth turned out no need of treatment and the same result has shown in the lower jaw. Also, the number of people who cognize their oral health as good on the first and the second moral tooth was only 10% of all and those who cognize their oral health neither good nor bad shows 96% of results in no need of treatment.
