  • Objective: The current study was carried out to examine the response of different levels of fat and protein in calf starter on nutrient utilisation, nitrogen metabolism, weight gain, blood parameters, and immunity level in pre-ruminant calves. Methods: Twenty four calves (5 days old) were divided into six groups in a 2×3 factorial design, with two levels of fat (10% and 14%) and three levels of protein (18%, 21%, and 24%). The calves were kept in individual pens for 120 days and fed with whole milk (1/10th of body weight) and calf starter ad-libitum. Daily dry matter intake was recorded; whereas body weight was taken on fortnightly basis to calculate average daily gain. During the growth trial blood samples were collected at 30 days interval to estimate blood glucose, albumin, total protein, total leucocyte count, total immunoglobulins and immunoglobulin G levels. A metabolic trial of seven days was carried out to find out the digestibility of different nutrients. Results: The dry matter intake was reduced (p<0.05) with higher fat and protein levels whereas feed conversion efficiency was improved (p<0.05) with higher protein level. Different levels of fat and protein in calf ration did not affect average daily gain in calves. The dry matter, organic matter, and crude protein digestibility were significantly (p<0.01) higher with increased level of protein. The nitrogen retention was also significantly higher (p<0.05) at 24% protein level, similarly the total immunoglobulin was significantly (p<0.05) high in higher protein fed groups, showed better immunity. Conclusion: The present finding suggested that 10% fat and 18% protein level of calf starter could be used in Sahiwal calves for optimum performance in terms of weight gain and immunity.

  • Infanthood is a crucial period when mental and emotional developments take place along with physical growth. Adequate supply of nutrition is essential during this period and there is an urgent need for proper education and guidance on balanced nutrition. Therefore, this study was designed to assess to current status of lactation and to investigate mothers' perspectives on human milk and formular milk. As random samples for this study, a total of 352 mothers having infant under the age of 4 were surveyed. 27.3% of mother surveyed were breast-feeding, 38.0% were formula-feeding and 34.7% were mixed-feeding. According to the result of this study, the percentage of breast feeding was on the decrease, while the dependence on formular milk was on the rise. The main reason of formula-feeding was insufficient secretion of human milk on mothers part. The major factors that affect to select feeding method were employment status, degree of education, family income and age. Also, the interviewees desired the product fortified with special ingredients that are hot contained in formular milk currently available in the market. The most concerned problem of formula milk was indigestion and the interviewees wanted the formular milk to be improved digestibility.

  • Seven hybrid lines of Leucaena leucocephala $\times$ L. diversifolia and two control lines of L. leucocephala were compared for their adaptation to acid-soils and tolerance to damage by the psyllid, Heteropsyla cubana, at four locations over two years in Peninsular Malaysia. Primary data on leaf composition and in vitro digestibility (nutrition variables) and secondary data on plant height, stem girth and psyllid damage (agronomy variables) were the measures of performance. Cluster solutions of the nine lines were different within locations, between locations and between years for nutrition and agronomy variables. Controls and hybrids did not cluster separately. Principal component scores of the nine lines gave rank orders which were different by location and by year. No performance trend could be detected between hybrids and controls. The conclusion is that nutritional and agronomic characteristics in Leucaena are independent, soil composition and weather did not consistently affect performance, and evidence is inconclusive as to the benefits of interspecific crossing with L. diversifolia.

  • Human milk, which nourishes the early infants, is a source of bioactive components for the infant growth, development and commensal formulation as well. Human milk oligosaccharide is a group of complex and diverse glycans that is apparently not absorbed in human gastrointestinal tract. Although most mammalian milk contains oligosaccharides, oligosaccharides in human milk exhibit unique features in terms of their types, amounts, sizes, and functionalities. In addition to the prevention of infectious bacteria and the development of early immune system, human milk oligosaccharides are able to facilitate the healthy intestinal microbiota. Bifidobacterial intestinal microbiota appears to be established by the unilateral interaction between milk oligosaccharides, human intestinal activity and commensals. Digestibility, membrane transportation and catabolic activity by bacteria and intestinal epithelial cells, all of which are linked to the structural of human milk oligosaccharides, are crucial in determining intestinal microbiota.

  • This study investigates the supplementing effects of milks by various heat treatment on growth performance and protein and calcium metabolism of rats. For 4 weeks, raw, LTLT-HTST-and UHT-processed milks were given to rats which fed on a calcium free, semi-synthetic diet containing 5%casein. There were no significant differences among the experimental groups in weight gain, feed efficiency ratio and the serum level of total protein and calcium. Also, no significant differences were showed in protein efficiency, nitrogen balance, apparent protein digestibiltiy and the contents of weight and calcium of the left femur as well as 2 incisors. However, the biological value of protein in the UHT-milk group was significantly higher than that of the raw-milk group. The apparent calcium digestibility and calcium balance in the UHT-milk group were higher than those in the raw-, LTLT- and HTST-milk groups. The weight of left femur in all the groups supplemented with various heat-treated milks was significantly impair the nutritive value of protein and calcium in milk. Futhermore, UHT-processing may improve the bioavailability of protein and calcium in milk.

  • The effect of lysine or methionine addition on the lipid oxidation and protein properties in casein-fish oil model system during the storage of 21 days at 37$^{\circ}C$ was studied. The peroxide and TBA values were increased markedly and the amino acids addition to the system caused to reduce the extent of lipid oxidation in comparison with that of casein-fish oil system which was a control group. Significant changes in fatty acid composition of each group were observed. Polyenoic acid contents were drastically decreased during the storage in the groups with and without the amino acids additions, . And also significant losses of several amino acids were occurred with the reduction of solubility and digestibility of casein during the storage. However no different effects were observed in both additionsof lysine and methionine to the system.

  • To explore the possibility of using freeze dried loach for instant choo o tang(Korean traditional loach soup), protein qualities and fatty acid composition were evaluated on boiled and steamed loach. Total lipid and ash content were lowered in both heated(boiled and steamed) loaches due to deboning and eviscerating during cooked meat preparation. Profiles of total amino acids were not changed seriously by the type of cooking, but the amount of essential amino acids were comparable in all samples. Two times more free amino acids were quantified in cooked samples compared to raw meat. Available lysine was marginally decreased by cooking, and that caused some measurable change in typsin indigestible substrate(TI) in streamed whole loach. In vitro protein digestibility of the heated loaches was not altered drastically and the protein quality determined as computed protein efficiency ratio(C PER) was similar for the raw, boiled and steamed loach. The ratios of unsaturated to saturated fatty acids changed measurably in heated whole loach. The results shows that heating caused apparent oxidative deterioration of the polyunsaturated fatty acids.

  • Storage stability of boiled and freeze dried loach and antioxidative effect of Zanthoxylum schinifolium were studied to confirm the possibility in development of instant choo o tang(Korean traditional loach soup). Packaging and storage temperature did not cause a measurable change in in vitro protein digestibility and trypsin indigestible substrate within 45 days of storage but remarkable quality changes were occurred in all samples stored after 60 days. Vacuum packaging and low temperature storage(4 oC) had some effect in retarding protein quality deterioration due to delaying polyunsaturated fatty acid oxidation. Maximum peroxide value and TBA value were reached in 15 days, and there were a slow(TBA value) and rapid reduction(POV) after peaks were reached. In contrast, increasing brown pigment development and fluorescence intensity continued until 90 days of storage. Treatment of ethanolic extracts from Zanthoxylum schinifolium prior to freeze drying could protect against lipid oxidation of freeze dried loach products.

  • Twelve swamp buffaloes and Brahman cattle heifers (6 animals each) were randomly assigned to two treatments, control (grazing only) and supplementation of cassava hay (CH) at 1-kg dry matter per head per day (DM/hd/d), in a $2{\times}2$ factorial arrangement according to a cross-over design. The cassava hay contained a high level of protein (19.5% of DM) and a strategic amount of condensed tannins (4.0% of DM). As a result it was revealed that supplementation of CH at 1-kg DM/hd/d significantly (p<0.05) improved the nutrition of both swamp buffaloes and Brahman cattle in terms of DM, organic matter (OM), protein and energy intake and digestibility, ruminal NH3-N and rumen ecology. Supplementation significantly (p<0.05) reduced weight losses in both species and improved the health, in terms of reduced number of parasite eggs in feces (p<0.05), of both buffaloes and cattle. There tended to be a difference in term of response to CH between the two species. The DM, OM, protein intake and digestibility and total digestible energy intake tended to be higher for buffaloes as compared to cattle. Moreover, the percentage reduction of parasite eggs tended to be higher for buffaloes as compared to cattle (57.6 and 45.0%, respectively). However, there were no significant interactions between species and treatments.

  • The aim of this study was to compare in vitro gas production kinetics, metabolizable energy (ME), organic matter digestibility (OMD) and microbial protein (MP) production of widely used legume hays in ruminant nutrition in Turkey. Gas production were determined at 0, 3, 6, 12, 24, 48, 72 and 96 h and their kinetics were described using the equation p = a+b ($1-e^{-ct}$). There were significant differences among legume hays in terms of chemical composition. The crude protein content of legume hays ranged from 11.7 to 18.6% of dry matter (DM); crude fat from 2.1 to 3.5% DM; neutral detergent fiber from 35.6 to 52.0% DM; acid detergent fiber from 32.0 to 35.5% DM and acid detergent lignin 1.7 to 11.0% DM. Total gas production after 96 h incubation ranged between 61.67 and 76.00 ml/0.200 g of substrate. At 24, 72 and 96 h incubation the total gas production for common vetch were significantly (p<0.01) higher than those of the other legume hays. The ME, OMD and MP of legume hays ranged from 9.09 to 11.12 MJ/kg DM, 61.30 to 75.54% and 90.35 to 138.05 g/kg DM, respectively. The ME, OMD and MP of common vetch was significantly (p<0.01) higher than those of the other hays due to low cell-wall contents and high crude protein. At the end of the experiment, differences in chemical composition of legume hays resulted in the differences in the in vitro gas production, gas production kinetics and the estimated parameters such as ME, OMD and MP. Common vetch can be recommended to hay producers and ruminant breeders, due to high ME, OMD and MP production.
