This study was done to determine the effects of coix on the content of cholesterol. lipids, phosphoilpids, total bile acids in liver, plasma, and feces of rats fed containing 1% cholesterol. Four groups of experimental diets, such as soybean oil-starch diet, soybean oil-coix diet, lard-starch diet, lard-coix diet were fed ad libitum to the 6 weeks old white male rat of Spargue-Dawley strain for 27 days. The results obtained are summarized as follows: 1) Plasma cholesterol level of the lard-starch group was significantly higher than the other groups (p<0.05), and that of the lard-coix group was the lowest. The content of plasma triglyceride, total bile acids was not different among the lard-starch group was significantly higher than the other groups(p<0.05). 2) The contents of the liver lipids, cholesterol, and triglycerides of the lard-coix group were significantly lower than the other groups(p<0.05). The contents of phospholipid of the liver of the lard-starch group was significantly lower than the other groups(p<0.05), and those of the soybean oil-coix group and the lard-coix group were high. 3) The contents of intestinal lipids, triglyceride, and phospholipid of the lard-coix group were significantly lower than the other groups(p<0.05). The contents of the intestinal tissue cholesterol of the lard-coix group was significantly lower than the other groups(p<0.05). 4) Cholesterol content of the feces was not different among the experimental groups. Triglyceride content of the feces of the soybean oil-starch group was significantly higher than the other groups, but total bile acid content of the feces was not different among the experimental groups. 5) Dry matter digestibility was not different among the experimental groups, but cholesterol retention was rather low when soybean oil-diet was fed. The results of this study reveales that coix has an effect to lower the plasma cholesterol level. Coix were decreased the content of liver cholesterol, increased the contend of liver phospholipid, and induced triglyceride excretion of the feces in the lard diet which lead to hypercholesterolemia. It could be suggested that the coix has influesced liped metabolsim in body.

In order to expand the acceptability of irradiated foods by public, substantial basic data about the change of nutrient contents during irradiation are needed. The nutrient contents and digestibility of macronutrients such as carbohydrates, proteins and lipids in foods are known to be not significantly influenced by irradiation treatment. However, some of the vitamins among micronutrients are susceptible to irradiation to a large extent depending upon the food composition, food process and storage condition. This study was conducted to investigate change of thiamin in chicken breast, and vitamin C in strawberry and mandarine orange after irradiation. The effects of irradiation at frozen or refrigerated state and the effects of cooking such as heating or micron ave on thiamin contents in chicken breast were observed. Irradiation reduced the thiamin content, however, temperature condition during irradiation was much more important factor to the loss of thiamin contents. In strawberry, vitamin C content was significantly affected by original content or the variety rattler than treatments such as irradiation, heating or microwave. These results indicated that the losses of water-soluble vitamins, especially thiamin or vitamin C, are affected by food temperature during irradiation process and variety or composition of foods rallier than irradiation itself, within an acceptable range of irradiation.

This experiment was undertaken to investigate the effect of black pepper (BP) added to food on a living body and to determine the growth rate, digestibility, weight of organs, composition of blood and liver in the rat. Fifty-six male rats of Sprague-Dawley strain, weight $120{\pm}10g$, were divided into 4 groups and were fed ad libitum for 8 weeks. Experimental diets were divided into 4 groups. Each groups were separately added 0%, 0.5%, 2.0% and 5.0% of BP level. The results obtained are summarized as follows. The highest net weight of liver and heart generally increased according to increasing amount of BP and that of spleen and lung were not significantly different. Kidney weight was significantly higher in the group of containing 5.0% BP. Serum GOT and GPT were not significant, serum glucose was significantly lower in the group of containing 5.0% BP, and serum cholesterol was significantly higher in the group of containing 5.0% BP. Total serum protein decreased gradually as the amount of BP increased, but albumin and globulin were nor affect. Serum Na and K were not significant, but serum Ca and P were decreased as the amount of BP was increased. Liver crude lipid and crude protein were not affect. In fatty acid composition, arachidonic acid was significantly lower in the group of containing 5.0% BP.
The effect of 16 cultivars on the quality of the rice porridge was investigated. The 'Geunnun' had the highest water absorption rate, but the 'Segyejinmi' yield (w/w) was the highest. The total sugar content of the rice porridge was 0.29~8.10%, showing significant variation among the cultivars. High amylose 'Dodamssal' and 'Hwaseonchalbyeo' glutinous rice displayed rotational viscosities of <20,000 cP. Rotational viscosities for boiled rice cultivars were 30,000~40,000 cP, representing an intermediate level, and the rotational viscosities of 'Geonyang2' and 'Hanareum4' were over 50,000 cP. These results suggest that the viscosity of rice porridge varies significantly among raw material cultivars. Among other variables affecting the texture profile of rice porridge, there were significant differences in hardness and gumminess among the cultivars. As a raw material, 'Baekokchal', a kind of glutinous rice, is known to be whiter than the non-glutinous rice, but after processing to porridge, it showed the lowest L value (71.1). Starch degrading enzyme activity was not significant in most types of rice porridges within 30 or 60 minutes. Therefore, enzymatic starch degradation is thought to be completed within 30 minutes. Among the tested raw materials, 'Miho' was 73.5 ㎍/mg, indicating the best digestibility in vitro.

This study was conducted to explore the quality characteristics of colored rice depending on the cultivars (Jeogjinu, Josaengheugchal, Joeunheukmi, Heukjinjubyeo, Hongjinju, Heukjinmi, Geongganghongmi) for porridge. The moisture, crude protein, lipid, ash, amylose and damaged starch contents of colored rice ranged from 10.05~11.23%, 7.72~8.69%, 2.68~3.26%, 1.62~1.88%, 6.29~20.31% and 5.06~8.26%, respectively. The highest moisture (11.23%), crude protein (8.69%), lipid (3.26%) and ash (1.88%) contents of colored rice were detected in Heukjinjubyeo, Joeunheukmi, Josaengheugchal and Heukjinmi, respectively. The lowest amylose and damaged starch contents of colored rice were detected in Josaengheugchal and Joeunheukmi, respectively. In general, the water binding capacity, water solubility and swelling power of Heukjinmi were greater than those of the other cultivars. The investigation of the pasting properties (peak, trough, break down, final and setback viscosity, peak time, pasting temperature) of colored rice indicated a low value in Josaengheugchal. The lowest hardness (13,673.25 g) of colored rice was observed in Heukjinjubyeo while the highest digestibility (5.44 glucose mg/g) of colored rice was observed in Josaengheugchal. These results indicated that Josaengheugchal are suitable cultivars for porridge.

Proximate composition and the contents of free sugars, minerals, fatty acids, amino acids and in vitro digestibility of mixed pollen load were analyzed. The protein in pollen load per 100g was 25.2g, lipid 5.4g, non-fibrous carbohydrate 50.0g and fiber 10.4. Free sugars in pollen load, as dry basis g per 100g, was fructose 26.6g, glucose 13.1g, sucrose 0.2g, maltose 1.3g, melezitose 0.02g and F/G ratio was 2.0. The content of mineral in pollen load was in the order K > P > Mg > Ca > Fe > Na > Mn > Zn > Cu. Unsaturated fatty acid of pollen load was about 69.1% and polyunsalturated fatty acid being about 50.3%. The ratios of SFA : MUFA : PUFA and PUFA : SFA were 0.61 : 0.37 : 1.00 and 1.63 respectively. The total amino acid contained in pollen load 22,337.5mg/100g and total essential amino acid was 39.2% of the total amino acid. proline was the most abundant amino acid (2,824.7 mg/100g),followed by Glu, Leu, Asp, Val, Phe, Ile, Ala and Thr. E/T ratio of protein in pollen load was 2.03 ; protein score, 65.2(Lys) : A/E ratio(egg), 61.7(Lys) : amino acid score, 51.7% after 1hr and on non-fibrous carbohydrate was 80.6%. But that of protein was 67.3% after 1hr, 75.5% after 2hr.
This study was conducted to evaluate effects of dietary Escherichia coli phytase supplementation on growth performance, carcass quality and excretion of copper and zinc concentrations in finishing pigs. The total of seventy two [(Landrace×Yorkshire)×Duroc] pigs(65.43±0.72 kg in average initial body weight) were used in 56 days assay. Dietary treatments included 1) CON (basal diet) 2) P5(basal diet+phytase 0.05%) and 3) P10 (basal diet + phytase 0.1%). There were three dietary treatments with six replicate pens per treatment and four pigs per pen. During the overall periods, ADFI(Average daily feed intake) was increased (P<0.05) in phytase supplementation treatments compared to CON treatment. At the 5th week, dry matter, nitrogen and ash digestibilities were higher in P5 treatment than in CON and P10 treatments(P<0.05) and CON treatment showed the lowest effect on nutrition digestibility(P<0.05). However, phosphorus digestibility was higher in both phytase supplementation treatments than in CON treatment(P<0.05). The pH of M. logissimus dorsi was significantly higher in CON treatment than phytase supplementation treatments(P<0.05). L* value of M. logissimus dorsi muscle color was significantly increased(P<0.05) in P10 treatment compared to CON and P5 treatments. Also, a* value was increased (P<0.05) in CON treatment compared with phytase supplementation treatments. However, excretion of copper and zinc concentrations were no significant difference among the treatments. In conclusion, the effect of Escherichia coli phytase showed in ADFI, digestibilities, pH and color of meat in finishing pigs.
The apparent nutrient digestibilities were examined by using chromic oxide indicator according to the various fecal collection methods in juvenile and adult Korean rockfish (Sebastes schlegeli). Feces were collected from three replicate groups of fish by dissection, stripping or decantation using fecal collector attached to fish rearing tank, respectively. The digestibilities of dry matter, protein, lipid, and energy were affected by fecal collection methods (P<0.01), but not affected by fish size. The digestibilities of nutrient determined by stripping or decantation methods were significantly higher than those determined by dissection method (P<0.01). No significant differences in the digestibilities of protein, lipid and energy were found between the stripping and decantation methods in adult fish (P>0.01). The digestibilities of dry matter, protein, lipid, energy, nitrogen-free extract, and total amino acids in juvenile and adult fish were 58, 93, 94, 79, 32, and $93\%$, and 61, 94, 96, 80, 29, and $94\%$, respectively, when they were measured by decantation method. Methionine, cystine and valine digestibilities were significantly lower than those of other amino acids in both juvenile and adult fish (P<0.01). Results indicate that stripping or decantation with fecal collector could be a reliable digestibility procedure for measuring the nutrient digestibilities in Korean rockfish.
A study was made on the effect of anti-nutritional factors found in some Korean beans : soybean, red bead, mung bean and kidney bean. Two animal experiments were conducted to investigate the nutritional value of the beans. The first experiment, in which the diet contained 15% protein from raw beans, compared the intensity of inhibition caused by methionine deficiency or a total amino acid deficiency. In the second experiment, the conditions were the same as in experiment I, except that heated beans were substituted for raw beans. Severe growth inhibition and high mortality was found in the raw kidney bean and red bean groups than in the soybean and mung bean groups. As no effect on the growth inhibition of raw bean groups was shown by methionine and protein supplementation, the inhibition could be ascribed mainly to the low feed intake and the low protein digestibility caused by toxic factors. Pancreatic enlargement was obserbed in all the raw bean groups. A increase in body weight, a decrease in mortality and a decrease in the weight pancreases were found in the heated bean groups. But the digestility of the diet and of the protein and the PER by heating did not increase as markedly as weight, except in the heated red bean groups. Even with heat treatment, the whole inhibitory action could not be eliminated.

In order to investigate the effect of dietary protein and energy on growing female and male rats, Sprague-Dawley 90 female rats and 54 male rats of 3 weeks old weighing approximately 70-80g and 54-75g, respectively, were subjected feeding trials for 8 weeks and then subsequently to metabolic trials for 2 weeks. Three dietary energy levels(3,200, 3,600, 4,000 kcal/kg) were employed and each energy level contained three protein levels (15, 25, 35% of 3600 kcal ME/kg) and three rat levels (10, 20, 40% of 3,600 kcal ME/kg) by addition of an appropriate amount of carbohydrate and the following result were obtained. As the protein level was increasing, digestibilities of dry matter and carbohydrate tended to decrease whereas that of protein was slightly increasing. On the other hand, digestibility of fat was always very high regardless of the level of protein but that tended to be slightly improved as the level of energy or rat increased. The digestibilities of female and male rats tended to be same. The digestibilities of dry matter, crude protein, crude fat and carbohydrate were 83%, 90%, 96% and 93%, respectively, and they were neither affected by protein and energy levels nor observed differently depending upon the sex. Nitrogen retention of female and male rats were best for LPHE ration. In other words, both nitrogen retention was improved as the level of energy increased and the level of protein decreased. The gross energy intake was high at low protein level in female rats and at medium protein level in male rats. That tended to decrease as the level of energy increased in female rats whereas that was not affected by the level of energy in male rats. The metabolic energy efficiency was highest for LPHE ration in female rats and for LPME ration in male rats.
