Phytoplankton production is affected by various physico-chemical factors of environment. However, one of the most critical factors generally accepted as controlling primary production of phytoplankton is nutrients. It has recently been found that the succession of phytoplankton groups and species are closely related to the chemical properties of ambient water including nutrient limitation and their ratios. In Jangmok Bay, silicate and nitrate are primarily supplied by rainfall, while phosphate and ammonia are supplied by wind stress. Typhoons are associated with rainfall and strong wind stress, and when typhoons pass through the South Sea, such events may induce phytoplankton blooms. When nutrients were supplied by heavy rainfalls during the rainy season and by summer typhoons in Jangmok Bay, the dominant taxa among the phytoplankton groups were found to change successively with time. The dominant taxon was changed from diatoms to flagellates immediately after the episodic seasonal events, but returned to diatoms within 3~10 days. Pseudo-nitzschia spp. were dominant mainly in the presence of low phosphate levels during the first of the survey which included the rainy season, while Skeletonema costatum was dominant when phosphate concentrations were high due to the strong wind stress during the latter half of the survey as a result of the typhoon. The competition between S. costatum and Chaetoceros spp. appeared to be regulated by the silicate concentration. S. costatum preferred high silicate and phosphate concentrations; however, Chaetoceros spp. were able to endure low silicate concentrations. These results implied that, in coastal ecosystems, the input patterns of each nutrient supplied by rainfall and/or wind stress appeared to contribute to the summer succession of phytoplankton groups and species.

The aim of this study was to evaluate the food and nutrient intakes in 5th to 8th grade school boys and girls. A total of 1,333 students were recruited from 1 elementary and 1 middle school, both located in Seoul. The data on food and nutrients intake were collected by 3-day food record. The food intake was calculated as the percentage of total energy intake according to 21 food subgroups. The consumption of noodles, and meat's products (including ham and sausage) groups were higher in 7th and 8th grade than 5th and 6th grade. On the other hand consumption of vegetables and milk & its products groups were lower in 7th and 8th grade. As results, calcium, riboflavin, and vitamin C intakes were lower in 7th and 8th grade students. Dietary patterns by cluster analysis resulted in $77\%$ of subjects with traditional pattern based rice and kimchi, and $23\%$ with modified pattern. All students regardless of grades showed high fat intake, above 20 percent energy intake from fat, and high cholesterol intakes. In conclusion, there was significant difference between 5th and 6th grade primary school students and 7th and 8th junior school students regarding food and nutrient intakes; It should be necessary to provide proper nutrient education and monitoring in order to establish good dietary profile.
The purposes of this study were to assess dietary intake obtained by easy method and to compare dietary behavior of house wife and female college students in Yanbian. The subjects consisted of 276 house wives and 228 female college students. Mean daily energy intake of house wives was 1926.0kcal and that of female college students was 1949.0kcal. Calcium intake as NAR(Nutrient adequacy ratio) was lowest in house wife and female college student. Iron intake was also low in subjects and lower in female college student than in house wife. Meal frequency per day was regular in subjects. Skipping meal time in subjects was breakfast and snaking time was late evening generally. Frequency of eating out was rare in most subjects and 60.6% of subjects preferred chinese food in eating out, while house wives preferred Korean food than female college student in eating out. The vegetables were preferred than meat or fish and used by fried in sauces. Hot and sour tastes were more like than greasy taste in subjects. Nutrient intake levels and dietary behaviors of house wife were to be like as those of female college students in general. BMI(Body mass index) was lower in female collage students than house wives, similarly in Korean. According to these results, house wives and female college students in Yanbian had similar dietary patterns. Calcium intake was tend to be low and dietary pattern was regular, dietary qualifies of subjects were adequate. Nutrient intake and dietary pattern in Yanbian were to be like as in Korean, and the Korean-Chinese in Yanbian maintained traditional dietary pattern.
It is very important to collect information on the nutritional status of the Korean population for the development of health promotion programs including nutrition. The purpose of this study was to assess the nutritional status of various population living in selected areas for model nutritional work. Seven hundred eighty households(30 households per each area)from 26 areas participated in this study from November 1 to November 20, 1996. Dietary intake data for two consecutive days were collected at household level by a weighting method. The mean energy intake of the subjects(1,934kcal) was higher than that resulted from the ‘95 Korean National Nutrition Survey(1,839kcal). The proportion of energy derived from cereals was 60.1%. The proportion of total protein intake from animal sources was 49.4%. These results were similar to those found in the ‘95 Korean National Nutrition Survey. Most nutrients(except iron, thiamin, riboflavin, vitamin C, and crude fiber) were higher than the result of the ‘95 Korean National Nutrition Survey. However, the average iron intake was about 68% of the result of ‘95 Korean National Nutrition Survey. This may be due to the adjustment of iron content in rice(3.7mg/100glongrightarrow0.5mg/100g) included in nutrient database for calculating nutrient intakes. The mean energy contribution from carbohydrate, protein, and fat were 64.2%, 16.4% and 19.4%, respectively. Significant differences of nutrient intakes were noted among some areas, which may be due to different food intake patterns according to the needs of the particular area. Therefore, the result of this study indicates that there are significant differences in food and nutrient intakes among the areas, suggesting that nutritional improvement programs may need to be developed differently by areas.

In order to explore the role of nutrients and bioactive related substances in colorectal cancer, we conducted a case-control in Uruguay, which is the country with the highest production of beef in the world. Six hundred and eleven (611) cases afflicted with colorectal cancer and 1,362 controls drawn from the same hospitals in the same time period were analyzed through unconditional multiple logistic regression. This base population was submitted to a principal components factor analysis and three factors were retained. They were labeled as the meat-based, plant-based, and carbohydrates patterns. They were rotated using orthogonal varimax method. The highest risk was positively associated with the meat-based pattern (OR for the highest quartile versus the lowest one 1.63, 95 % CI 1.22-2.18, P value for trend = 0.001), whereas the plant-based pattern was strongly protective (OR 0.60, 95 % CI 0.45-0.81, P value for trend <0.0001. The carbohydrates pattern was only positively associated with colon cancer risk (OR 1.46, 95 % CI 1.02-2.09). The meat-based pattern was rich in saturated fat, animal protein, cholesterol, and phosphorus, nutrients originated in red meat. Since herocyclic amines are formed in the well-done red meat through the action of amino acids and creatine, it is suggestive that this pattern could be an important etiologic agent for colorectal cancer.
BACKGROUND/OBJECTIVES: Eating-out among Korean people has become an important part of modern lifestyle due to tremendous growth of the food service industry and various social and economic changes. This study examined trends in meal patterns and meal sources while eating-out among Korean adults aged 19 years and older. SUBJECTS/METHODS: Data were from the 1998-2012 KNHNES (Korea National Health and Nutrition Examination Survey) by the 24-hour dietary recall method. This study included 55,718 adults aged 19 years and older. For analysis of eating-out frequency, data were categorized by source of meals and serving place. RESULTS: Average frequency of meals consumed away from home increased from 1998 to 2012, although it remained lower than that of meals at home. In addition, male, unmarried, employed, higher educated, and high income individuals more frequently consumed meals away from home. Moreover, sodium intake while eating-out significantly increased from 2,370 mg in 1998 to 2,935 mg in 2012. Lastly, percentage contributions of daily total protein intake, fat intake, and sodium intake from eating-out increased to more than half (53-55%) in 2012 compared with 47-48% in 1998. CONCLUSIONS: As eating-out has grown in popularity, greater recognition of public health and nutritional education aimed at promoting healthy food choices is needed. In addition to developing consumer education for overall healthier eating patterns, individuals who are younger, unmarried, higher educated, and males are especially at risk and require attention.

It has been proposed that differences in diet between smokers and nonsmokers may partially explain the positive association between cigarette smoking and chronic diseases such as cancer and coronary heart disease. To investigate the potential for this confounding, the authors studied the relation between cigarette smoking and dietary pattern including nutrient intake in 152 Korean elderly people aged 59∼84years. Dietary intake was determined by a 24-hour recall method and a food frequency questionnaire. Male smokers were lighter than nonsmokers and had a lower body mass index(BMI)(p<0.05). But there were no differences in body weight and BMI between female smokers and nonsmokers. Female smokers had lower intakes of energy and carbohydrates than nonsmokers(p<0.05), but in male, smokers and nonsmokers did not show the difference in energy intake. The mean intake of fiber, protein, fat, minerals, and vitamins did not vary significantly by smoking status. However, both male and female smokers consumed fewer fruits than nonsmokers and ate fresh fruits less often than nonsmokers. The total food frequency score which reflect dietary quality of smokers was lower than those of nonsmokers(p<0.05). Male exsmokers' diet were similar to those of smokers, but in female, dietary patterns of exsmokers were similar to those of nonsmokers. These results confirm that elderly smokers have partially different nutrient and food intake patterns from nonsmokers. The decreased ingestion of fruits and less balanced diet by cigarette smokers could contribute to their increased risks of chronic disease compared with those by nonsmokers. The increased ingestion of nutrients and improved nutritional balance in the diet of exsmokers may help to reduce their risks as well.
The objectives of this study were to identify dietary patterns of Korean middle school students and to investigate the characteristics of dietary intake of subjects with different dietary pattern. Three-day diet records were obtained from 163 male and 155 female 7th graders in Seoul, Korea. Food items from the diet records were aggregated into 22 food groups before subjected to factor analysis. Four dietary patterns emerged from factor analysis with different factor score. Cluster analysis using factor score classified subjects into three groups named 'Traditional' (n = 42), 'Westernized' (n = 135), and 'Intermediate' (n = 145). Major nutrient intake and dietary quality assessed by NAR (Nutrients Adequacy Ratio), MAR (Mean Adequacy Ratio), DDS (Dietary Diversity Score), and DVS (Dietary Variety Score) of the three groups were compared. Mean energy intakes of three groups were 1783, 1916, 1578 kcal in Traditional, Westernized, and Intermediate diet group respectively. Differences in nutrient intake of the groups were significant in all nutrients except vitamin B$_1$. Percent energy from fat was significantly higher in Westernized and Intermediate diet group, and cholesterol intake of Westernized diet group was higher than 300mg. NARs of most nutrients were higher in Traditional and Westernized than Intermediate diet group except vitamin E. Traditional and Westernized diet groups had the highest MAR of fourteen nutrients. DDS was the highest in Westernized and DVS was the highest in Traditional and Westernized diet group. Traditional diet groups had 22% of energy consumption from breakfast, significantly higher than other diet groups. In conclusion, these results suggest that Korean teenagers with Traditional diet pattern have lower diet in % energy from fat, diversity of food and regularity of meals. Future studies need to focus on the relationship between dietary patterns and health status of Korean teenagers.
Effects of nitrogen and phosphorus fertilization on seasonal changes of nutrient content in tree components, and retranslocation N and P in foliage and twig were determined in adjacent 41-year-old plantations of Pinus rigida Miller and Larix kaempferi Gordon on a similar soil in Yangpyeong, Gyeonggi Province. In general, foliage N and P concentrations of L kaempferi were significantly higher than current and 1-year-old foliages of P. rigida. N and P concentrations were higher in foliage than in twigs for both tree species. However, there were no significant differences in foliage and twig N and P concentrations with ages. Significant seasonal differences in foliage and twig N and P concentrations were observed for both tree species because of nutrient retranslocation. Foliage nutrient concentrations were highest in the mid-growing season and lowest in autumn, whereas twig nutrient concnetrations have gradually increased since July. These seasonal trends indicated nutrient retranslocation from foliage into twigs before foliage senescence. However, there were no significant changes in foliage and twig nutrient retranslocation, and no consistent patterns in foliage and twig nutrient retranslocation following N and P fertilizer additions. No significant changes in nutrient retranslocation between different foliage and twig ages were observed following fertilization.

Litterfall and litter decomposition represent a major contribution to the carbon and nutrient inputs in a forest ecosystem. We measured litterfall quantity and nutrient dynamics in decomposing litter for two years at the Kwangneung broadleaf natural forest (DK site) in Korea. Litterfall was collected in circular littertraps (collecting area : 0.25 $m^2$) and mass loss rates and nutrient release patterns in decomposing litter were estimated using the litterbag technique employing 30 cm ${\times}$ 30 cm nylon bags with 1.5 mm mesh size. Total annual litterfall was 5,627 kg/ha/yr and leaf litter accounted for 61 % of the litterfall. The leaf litter quantity was highest in Quercus serrata, fallowed by Carpinus laxiflora and C. cordata, etc., which are dominant tree species in the site. Mass loss from decomposing leaf litter was more rapid in C. laxiflora and C. cordata than in Q. serrata litter. About 77% of C. laxiflora and 84% of C. cordata litter disappeared, while about 48% in Q. serrata litter lost over two years. Lower mass loss rates of Q. serrata litter may be attributed to the difference of substrate quality such as lower nutrient concentrations compared with the other litter types. Nutrient concentrations (N, P, Mg) of three litter types except for potassium (K) increased compared with initial nutrient concentrations of litter over the study period. Compared with Q. serrata litter, nutrients (N, P, K, Ca, Mg) in C. laxiflora and C. cordata litter were released rapidly. The results suggest that litter mass loss and nutrient dynamic processes among tree species vary considerably in the same site conditions.
