The relationship between socio-economic status and food and nutrient consumption patterns was studied in 7,370 Koreans aged 20 years and older in the 1995 Korean Health and Nutrition Survey. The aim of this study was to investigate the effect of rapid economic growth on food and nutrient consumption for Korean adults in the last 30 years. Monthly household income, and individual's educational level and occupation were chosen as variables of socio-economic status for individuals. A one day 24 hour recall method was used for the dietary survey. One way analysis of varience was adopted to test tole association between socio-economic variables and food and nutrient consumption patterns. Individuals who had a high socio-economic status had significantly higher daily intake of most of the nutrients including calcium, vitamin A, vitamin B$_2$which reached above the recommended dietary allowances(RDA) and a higher percentage energy consumption from fat. In addition, individual who belonged to a low socio-economic status consumed less animal foods, including meat, egg, milk and consumed low proportion of energy from fat. The results suggest that in spite of rapid economic growth during the last 30 years in Korea, individuals who belonged to low sorio-economic status categories are still nutritionally vulnerable. Among the sorio-economic variables, income and education except occupation were the influential factors on the food and nutrient consumption of Koreans. Therefore, nutrition policy should focus on influencing the dietary patterns of lower social class individuals to improve the health status of the population as a whole.
This study was designed to investigate food consumption patterns and nutrient intakes of college students, divided into subgroups of normal weight men (no.=140), normal weight women (no.=101), and underweight women (no.=155) by body mass index. Frequency of food eaten, nutrient intakes from each meal, percentages of RDAs, and nutrient densities were analyzed using 24-hour recall records. It was very interesting in these results as follows. Normal weight men ate on the whole more frequently than other groups. Underweight women had higher intakes of nutrient than did normal weight women. However normal weight women consumed food of greater nutrient density than did other college students. Consequently, it is desirable to suggest nutrient density of food than learn RDAs for adequate diet in nutritional education programs.
Korea has not tried any food consumption survey so far except the national nutrition survey, which does not show food consumption patterns of different income stratas. The results of the family income and expenditure survey(FIES) by the national statistical office can be precious sources which show household food consumption patterns due to large, random. Samples, year-round survey period and socioeconomic background data. This study analyzed the FIES data to find out food consumption patterns including nutrient intakes and frequently consumed foods by households among different monthly income levels. Big difference was found in food consumption patterns among the quartile-income groups especially the amount of consumed foods, food expenditure, and nutrient intakes. The monthly food expenditure of higher higher income strata was composed with higher percentage of relatively expensive foods compared to other stratas. Nutrient intake levels of lower income strata were 50-60% of the RDA, which showed the necessicity of food assistance programs for those high risk groups to complement the nutritional difficiency. The purpose of this study was to evaluate the diet quality of the menus delivered by 17 free meal service centers for the low-income home-bound elderly in Chung- cheong buk-Do. Statistical data analysis was compleleted using the SPSS package program for descriptive analysis, T-test, and ANOVA. The meals offered by free meal service centers were not met the 1/3 recommended dietary allowances in calcium and vitamin $B_2$. There were significant differences between dependent variables(nutrient content, nutrient density, nutrient deficiency, NAR, MAR, food group intake patterns) and independent variables (operation type, operation status, operation period, nutritionist, food cost).
The purposes of this study were to: (a) identify the changes in food patterns for last 20 years; (b) analyze the factors affecting on the changes in food patterns; (c) investigate the impact of changes in food patterns on nutritional composition of the diet and diet-related health problems. A questionnaire was developed and mailed to 30 country members of the International Federation for Home Economics(IFHE) regional representatives. The response rate was 60%; simple descriptive and content analyses indicated that the significant differences of food consumption pattern were existed between western and eastern countries. Traditional food consumption patterns were maintained even though each countries' food consumption patterns have been dramatically changed due to the development of food technology and industrialization. The factors most frequently affecting on the changes in food patterns were nutrition and heallth-related educations. The food pattern changes have considerable effect on the nutritional composition of the diet among countries. The major diet-related health problems with nutrient deficiency were reported by underdeveloped countries such as India. In contrast to the above, in the developed countries, the adult disease related to the nutrition have been increased, while the developing countries such as Korea have the problems with nutrient deficiency and adult diseases simultaneously.
Patterns of mass loss and nutrient release from decomposing oak (Quercus mongolica) and mixed litters (Q. mongolica, Betula schmidtii, Acer pseudo-sieboldianum, Kalopanx pictus and Tilia amurensis) in a natural hardwood forest in Gyebangsan (Mt.) were examined using litterbags placed on the forest floor for 869 days. Mass loss rates from decomposing litter were consistently higher in mixed litter (59%) than in oak litter types (52%) during the study period. Nutrient concentrations such as nitrogen (N), phosphorus (P), potassium (K), and magnesium (Mg) from decomposing litter were also higher in mixed litter than in oak litter types. Nutrient concentrations (N, P, Ca, and Mg) increased compared with initial concentration of litter, while K concentrations dropped rapidly at the first 5 months and then stabilized. The results suggest that mas loss and nutrient release obtained from decomposing litter of single species in mixed hardwood forest ecosystem should be applied with caution because of the potential differences of mass loss and nutrient release between single litter and mixed litter types.
Underreporting patterns by the level of obesity have not been fully assessed yet. The purpose of this study was to examine the differential underreporting patterns on cardiovascular risk factor, macronutrient, and food group intakes by the level of Body Mass Index (BMI). We analyzed cross-sectional baseline nutritional survey data from the population-based longitudinal study, the Healthy Women Study (HWS) cohort. Study subjects included 538 healthy premenopausal women participating in the HWS. Nutrient and food group intakes were assessed by the one-day 24-hour dietary recall and a semi-quantitative food frequency questionnaire, respectively. The ratio of reported energy intake (EI) to estimated basal metabolic rate (BMR) was used as a measure of relative energy reporting status and categorized into tertiles. Overweight group ($BMI{\geq}25kg/m^2$) had a higher ratio of EI to BMR (EI/BMR) than normal weight group ($BMI<25kg/m^2$). Normal weight and overweight groups showed similar patterns in cardiovascular risk factors, nutrient intake, and food group intake by the EI/BMR. Fat and saturated fat intakes as a nutrient density were positively associated with the EI/BMR. Proportion of women who reported higher consumption (${\geq}4\;times/wk$) of sugar/candy, cream and red meat groups was greater in higher tertiles of the EI/BMR in both BMI groups. Our findings suggest similar patterns of underreporting of cardiovascular risk factors, and macronutrient and food group intakes in both normal and overweight women.

This study was conducted to assess the nutrient intake patterns among urban and rural adolescents and to investigate the effects due to parent's socioeconomic status and other factors, such as mother's job, family type and regular exercise on that pattern. 2,455 middle and high school students living in Seoul and Yangpong, Kyounffi-Do participated in a self-administered questionnaire that was used to collect data. The one-day dietary intake was surveyed through a 24-hour recall method. The factors significantly different between urban and rural adolescents according to monthly income, parent's education level, mother's job, family type and exercise. Income, the parents' education level and regular exercise were associated with the patterns of nutrient intakes as a percent of the RDA. So, when adjusted for parental income, the father's and mother's education level and regular exercise, there were no signifcant differences within the patterns of nutritional intake between urban and rural adolescents. The results provided the information regarding the determinants of nutrient status among adolescents and were expected to be helpful for planning school health promotion programs.
In this study, sixth grade school children in the Guri area were surveyed via questionnaire regarding their sociodemographic characteristics, snacking patterns, and intakes of different food groups and sugared snacks. Students with employed mothers had more frequent snacking events and were more dependent on store-purchased snacks compared to those having an unemployed mother. A high consumption of snack sugar was associated with a higher dietary diversity score. There was a positive relationship between snack sugar intake and the intakes of meat and dairy products and foods in the oil and nut group, respectively. A high snack sugar intake had a negative effect on fruit intake. Specific nutrient intake data will be required before conclusions can be made on whether nutrient imbalances are a concern in elementary school children having sweet snacks. Yet, the current data indicate that an increased snack sugar intake can decrease fruit intake, which could result in certain nutrient deficits. Specific dietary guidance may be necessary to address the snacking habits of elementary school children.
One hundred twenty healthy college students and housewives from urban middle income household were investigated in terms of food consumption patterns, nutrient intake and dietary fiber intake. Total food intake was slightly lower in college students(1059.9g/d) than in housewives(1160.g/d) . However, the ration of animal food to total food was considerably higher in college students(23.7%) than in housewives(16.8%). College students tended to consume more dairly products, meat & products, and cereals & grain products but less vegetables , fruits, fish and shellfish than housewives. Although nutrient intake was not much different (except for total calories, fats, and ascorbic acid), dietary fiber intake was slightly and significantly lower in college students(14.9g/d, 8.3g/1000kcal) than in housewives(16.9g/d, 103g/1000kcal) . That is partially due to college students irregular food habits and the change in their meal patterns from traditional to western diets. There was a significantly positive correlation between dietary fiber intake and thiamin, riboflavin, niacin and crude fiber intake.
