This study was carried out to examine the antioxidative, antimicrobial and nitrite scavenging effects of various solvent extracts and different solvent fractions from Schizandra chinensis RUPRECHT(Omija) seed. The results were as follows; The antioxidative activities using lard, soybean oil and linoleic acid were the highest in methanol, ethanol and methanol extract from omija seed, respectively. The free radical scavenging activity using DPPH method was the strongest in acetate fraction of methanol extract from seed. The methanol extract from omija seed had the strongest antimicrobial activities to L. plantarum, B. subtilis, E. coli and P. citrinum, while ethyl acetate extract had the strongest against S. aureus and S. typhimurium. The buthanol fraction from methanol extract had the highest antimicrobial activities, followed by B. subtilis, L. plantarum, E. coli, S. aureus and S. typhimurium. The nitrite scavenging ability was pH dependent, highest at pH 1.2 and lowest at pH 6.0. The buthanol fraction of methanol extract from omija seed had more effective nitrite scavenging ability than other fractions of extracts.

The natural sources extracted from crab shell Korean tagnrine peel, sesame meals were utilized to investigate the effects of extracts on free radical reaction, lipid oxidation and nitrite scavenging ability. The recovery percentage of extracts from waste resources (crab shell, sesame meal, dry korean tangrine peel) were chitosan 11.6%, crude sesamol 2.2% and ascorbic acid 2.8%, respectively. The antioxidants were tended to have a lower TBARS value than those of control. The nitrite scavenging and electron donating ability of crude sesamol were tended to be the most effective extract among all extracts. However, In case of chitosan, the superoxide dismutase (SOD)-like activity was the most highest, compared to other extracts.
Functional activities of Flammulina velutipes extract including electron donating ability, nitrite-scavenging effect, and tyrosinase inhibition activity was examined. Extraction were carried out by microwave-assisted extraction (MAE) under different conditions including solvent and microwave power. Tyrosinase inhibition activity and nitrite-scavenging effect increased as microwave power increased during extraction. Total phenol content and electron-donating ability reached maximum at the microwave power of 90 W. Total polyphenol content and electron-donating ability increased as extraction time extended up to 15 min, with the highest tyrosinase inhibition obtained after 5 min extraction. Significantly higher tyrosinase inhibition activity was found in 99% ethanol extract, whereas greater nitrite-scavenging effect was observed in the water extract. The maximum nitrite-scavenging effect was found at pH 1.2 and decreased as pH increased.
Effects on the physiological functionality, such as tyrosinase, xanthine oxidase, angiotensin converting enzyme and Nitrite scavenging ability were also observed by pine needle fermentation extract(PFE) and the difference in the consistency of pine needle ethanol extracts(PE 80, PE 50) was found. In the inhibition effect on tyrosinase, PFE showed 5-38% higher than that of PE 80 and PE 50. In the inhibition on XOase, PFE, PE 80 and PE 50 showed 62.77%, 64.90%, 55.9% respectively. In the inhibition effect on ACE, PFE, PE SO and PE 50 showed 78.02%, 69.82% and 21.75% respectively. Among these, PFE showed the highest ACE inhibition effect. In the inhibition effect on nitrite scavenging ability, the pine needle extracts showed a high effect in pH 3.0. As the result of the research using HPLC for the organic acid, all the samples(PFE, PE 80, PE 50) showed higher contents of the ascorbic acid concerned with the effect of the antioxidative. PFE showed the highest contents of the ascorbic acid.
This study was carried out to investigate the extraction yield, the contents of total phenol substances and antioxidative substances, electron donating abilities, nitrite scavenging abilities of water and ethanol extracts from Cassia tora L. and Pueraria thunbergiana and antioxidative activity of water and ethoanol extract from Cassia tara L. Tatal phenol substances of water and ethanol extract from Cassia tora L. and Pueraria thunbergiana showed nearly the same levels, and the antioxidative substances of water and ethanol extract from Pueraria thunbergiana has as much as two times higher than those from Cassia tara L.. The nitrite scavenging abilities were measured at pH 1.2, 3.0, 4.2 and 6.0, respectively. Water and ethanol extracts from Cassia tora L showed 14.9%∼22.3% and 49.1%∼56.7%, and those from Pueraria thunbergiana revealed 57.7%∼61.0% of nitrite scavenging abilities, respectively. Especially the extracts from Pueraria thunbergiana showed higher pH dependence than those from Cassia tora L. The electrol donating abilities of water extract from Cassia tora L. were higher than those from Pueraria thunbergiana, and vice versa in the case of ethanol extracts. In the antioxidative activitiy of extracts from Cassia tora L. against linoleic acid during storage of 20 days at 50$^{circ}C$, peroxide values at the addition level of 5mg and 10mg were consoderably lower than 2mg although peroxide value increased above 375 after 12days of storage compared with the control(BHA-added) of 129 at 8days.

The objective of this study was to determine the effect of antioxidant enzyme activity and radical scavenging activities of cucumber grown greenhouse. The analytic method of antioxidant activities were measured by estimating DPPH free radical scavenging, nitrite scavenging ability activity and ABTS radical scavenging ability. The DPPH free radical scavenging activity of Jangjukcheongjang was the highest in most of the growth stage. The Nitrite scavenging ability at pH 1.2 was more than 40% in all cultivars and growth stages. The ABTS radical scavenging ability of Jangjukcheongjang and Nulpureuncheongjang showed relatively little higher than Janghyeongnakhap and Sinjoeunbaekdadagi. The SOD activity showed higher activity than 95% in all cultivars and growth stages. The activity of CAT was highest in the Nulpureuncheongjang of 2 (12~16cm) growth stage, and the APX activity of Nulpureuncheongjang and Janghyeongnakhap showed a relatively high activity. The POX activity showed distinctly different trends depending on the growth stage, and that is, the activity at harvest stage was significantly reduced. These results suggest that the cucumber had the potent biological activities, and that in the future, the availability of cucumber will be increase in the field of high-value cosmetic and food products.
We investigated noodles supplemented with functional ingredients for their antioxidant properties, including total phenol, flavonoid contents, electron donating, nitrite scavenging abilities and ferrous ion chelating effect. The total polyphenol contents of functional noodles arranged in order of decreasing concentration were kudzu (7.98%) > green tea (4.99%) > pumpkin (5.03%) > mulberry leaves (4.99%) > mugwort (4.23%) > cactus (3.57%) > kelp (3.33). The total flavonoid contents in green tea noodles were the highest as 4.35%. The electron donating ability in mugwort noodle was the highest as 12.27% at 1,000 ppm. This amount was 4.85 times than that of wheat flour noodle (2.53%). The nitrite scavenging ability of functional noodles at pH 1.2 arranged in order of decreasing concentration were green tea (66.52%) > cactus (55.12%) > kudzu (52.67%) > pumpkin (50.50%) > mulberry leaves (43.58%) > kelp (41.41%) > mugwort (37.66). The nitrite-scavenging ability of green tea noodle was lower than ascorbic acid (natural antioxidant) 77.83%, while that of green tea noodle was similar with BHT (artificial antioxidant) 69.45%. The ferrous ion chelating effect of noodles containing kelp were the highest as 27.02%. All of the experimental results showed good antioxidant property. Thus, noodles supplemented with mulberry leaves, cactus, mugwort, green tea, pumpkin, kelp or kudzu, demonstrated to have good functional effects for human health.
This study explores the antioxidant activities of solvent extracts from Rhus verniciflua, and the results were as follows. Total phenolic compound and flavonoid contents of Rhus verniciflua were $4.32{\pm}0.17$ mg/100 g and $0.16{\pm}0.02$ mg/100 g, respectively. Electron-donating abilities of solvent extracts from Rhus verniciflua proportionally increased with concentration, and ethyl acetate extract ($95.4{\pm}0.4%$) showed higher activity than that of BHT ($93.3{\pm}1.7%$) at a concentration of 1,000 ${\mu}L$/mL. Reducing power of the solvent extracts from Rhus verniciflua was the highest in ethyl acetate extract ($2.45{\pm}0.03$) at a concentration of 1,000 ${\mu}L$/mL. Nitrite scavenging ability of the solvent extracts from Rhus verniciflua (pH 1.2, 1,000 ${\mu}L$/mL) was the highest in ethyl acetate extract ($95.5{\pm}0.7%$). Therefore, ethyl acetate extract from Rhus verniciflua has similar antioxidant activity as that of BHT.

This study was carried out to investigate the effects of ethanol extracts on lipid oxidation of oil emulsion. The results are as follows; The scavenging ability of plant extracts for hydroxyl radical was found, and plant extracts played an important role as a strong chelating agents to bind iron if Fe2+ ion exists in oil emulsion. Pinus densiflora(PD), Lithospermum erythrorhizon(LE) and PD+LE acted as strong chelating agents to bind iron to reduce lipid oxidation in oil emulsion. The content of Fe2+ ion in ethanol extracts from LE and PD+LE were significantly higher(p<0.05) than that of ethanol extracts from PD. The content of total iron has same tendency. The ascorbic acid content of PD(16.36ppm) was slightly higher than those of LE(13.08ppm). Electron donating ability of PD was significantly higher(p<0.05) than those of LE. However, the superoxide(SOD) like ability of LE showed a little higher than those of LE and PD+LE, which means the strong antioxidant activity of LE. The nitrite scavenging effects were dependent on pH value, however, they decreased as pH value increased. Especially, they almost didn't show the nitrite scavenging effect in pH 6.0. In conclusion, the PD and LE extracts may be used as natural antioxidant sources to reduce lipid oxidation in oil emulsion.

Electron donating abilities, nitrite scavenging effects and antimicrobial activities of various fractions obtained from ethanol extract of Smilax china were examined. Among the fractions investigated, the highest electron donating ability was determined with ethyl acetate fraction showing about 81.0% when reacted for 10 min. However, the lowest ability was found from chloroform fraction. Ethyl acetate and butanol fractions also showed very high nitrite scavenging activity at all concentrations tested. All the fractions revealed antimicrobial activity against Listeria monocytogenes and Staphylococcus aureus, Gram (+) bacteria, at both 2.5% and 5.0% concentrations. However, no antimicrobial activity was observed on Escherichia coli O157:H7 and Salmonella Typhimurium, Gram (-) bacteria, at 2.5%, but very low activity was detected by 5.0% concentration of ethanol extract, ethyl acetate and water fractions.
