시중에서 유통되는 건강식품의 종류에 관한 연구 -매스미디어와 인터넷 미디어를 중심으로- (A Study on the Classification of Health Food Circulated in the Market -Surveyed on Mass Media and Internet-)

  • This study was performed to investigate the kinds of health food advertised and sold through media like printed matter, TV broadcasting or internet. It was found that fifty three percent of the health food was circulated through internet, 27% through printed matter, 9% through TV Broadcasting. When the health foods was classified, the proportion of special purpose nutritious foods was 36.1%, health aid foods 33.9%, uncooked powdered foods 18.5%, functional foods for health 4.9%, Ginseng products 3.9%, and tea 0.9%. The special purpose nutritious foods was composed of 59% of nutrition supplementary foods, 24% of dietary fiber foods, 9% of weaning foods, 7% of milk formula and 2% of HCA. Vegetable extracts occupied 21.1% of health aid foods, yeast 7.5%, mushroom extracts 7.0%, chitosan 6.2%, aloe 5.3%. Dried powdered type health food occupied the highest proportion. The other type were capsule(18.8%), tablet(18.1%), and liquid type(16.4%). When the health food was classified with health claim, the proportion of "nutrition supplementation" was the highest (23.9%), "diet" 14.9%, "ergogenic"(18.8%), "promoting bowel movement" 7.8%, "growth" 5.7%, "regulation of blood sugar" 4.5%, "improving of immunity"(2.4%) and anti-aging effect(2.4%).

사상체질과 음식 혈청 IgG 반응의 상관관계 분석 (Correlation between Sasang Institution and Reaction of Food IgG Serum)

  • Objectives The purpose of this study was to find correlation between food IgG serum and food classification for Sasangin match. Methods We recruited 10 Soeumin, 10 Soyangin, 10 Taeumin. We did a survey about food intake and obtained their blood samples. We detected IgG antigen reaction of 66 different foods using IgG exclusive Microarray assay. Results We found that IgG value of foods were correlated with Sasangin. Pork, shrimp and black tea has showed significant differences by constitution. The IgG response of the food according to the constitution and frequency of intake was found to be significantly correlated with those of banana, chestnut, citrus, milk, mushroom, cucumber, barley, corn, pineapple, honey and abalone. Conclusions The result of this study was partially matched to food classification for Sasangin.

Comparison of in vitro antioxidant capacities of Phragmites communis Trin. and Phragmites japonica Steud.

  • The rhizome of Phragmites communis Trin. is used for vomiting and belching by clearing stomach and the sprout is used as tea. Phragmites japonica is similar with P. communis except the color of sheath is purple. This study is aimed to compare the in vitro antioxidant activity, total polyphenol and flavonoids contents of P. communis and P. japonica. The antioxidant activities of fractions from the two Phragmites plants were evaluated by 1,1-diphenyl-2- picrylhydrazyl (DPPH) and 2,2'-azinobis-(3-ethylbenzothiazoline-6-sulfonic acid) (ABTS) radical scavenging assay. The antioxidant activity varied with plant parts and extract solvents. The fractions of leaf extract from the two Phragmites plants (4.06±1.32-16.47±1.28%) showed higher antioxidant activity by DPPH assay compared with rhizome fractions of two Phragmites plants (0.00±0.00-14.15±0.07%), these are lower compared with ascorbic acid and butylhydroxyanisole (BHA). The highest ABTS radical scavenging activity was found for rhizome ether fraction, namely 74.95±0.56% and 73.04±1.85% for P. communis and P. japonica, these are higher than BHA. The total polyphenol and flavonoids contents were different with plant parts and extract solvents, likewise antioxidant activity. A significant correlation was shown between DPPH and ABTS radical scavenging activity. Considering the results of this study, the leaves and stems of P. communis and P. japonica are expected to be used as natural antioxidants.

치매의 병리(病理), 연구동향(硏究動向)과 향후(向後) 연구전략(硏究戰略)에 대(對)한 고찰(考察) (Study on pathology of Alzheimer's disease, trends and future strategy for research)

  • For the development of drugs for alzheimer,s disease, the study was done to review the oriental pathology, clinical data, recent trends for research and strategy for future study. The results were as follows: 1. The medical term Chi-dsi implying alzheimer,s disease was referred for the first time in a medical book, Hwatasheneubijeon written by Hwa-Ta and its differentiation and treatment were studied more in Ming or Ching dynasties. Chi-dai can be differentated as weak(虛) syndrome and Shi(實) syndrome. This can be caused by deficiencies of renal Yin, renal Yang, cardiac Yin and hepatic blood, while that by deficiencies of pathological fluid(痰飮) and clotted blood(瘀血). 2. Dementia can be roughly classified as alzheimer's disease and multi-infarct disease. Its causes were known to be cholinergic transmitter, C-peptide, amyloid-${\beta}$, apolipoprotein, APP(amyloid precursor protein), TGF, MMP-9 and free radical. 3. In Korea experimental studies were chiefly done for the elimataion of C-peptide, amyloid-${\beta}$, apolipoprotein, APP for alzheimer's disease, for the development of drug inhibiting degerative change following CVA and loss of memory and also administrative measure was done by support of government. 4. Drugs of dimentia developed so far were Chi-Dai dan, extracts from aloe, mushroom, green tea, Ganoderma and also folic acid, vitamin C, DHEA and silk amino acid were reported to be effective in dimenta. 5. Future strategic research had better be done on dementia-inducing factors such as acetylcholine, C-peptide, amyloid-${\beta}$, apolipoprotein, APP, TGF, MMP-9 and free radical, development of animal model for dimentia, clinical study, epidemiology, nursing and administrative studies and also consortium for dimentia research should be formed so that repeated investment be avoided.

  • Radiation causes various pathophysiological alterations in living animals, and it causes death at high doses by multiple mechanisms, including direct DNA damage and indirect oxidative stress. The search for useful radioprotectors has been an important issue in the field of radiation biology. Ideal radioprotectors should have low toxicity and an extended window of protection. As many synthetic compounds have toxic side effects, the natural products have attracted scientific attention as radioprotectors. Natural products that have been recently shown to be effective with various biological activities were found to have radioprotective effect. The aim of this review is to summary the recent research of the radioprotective effects of natural foods, especially focused on the glycobiological properties of mushrooms.

시금장, 청국장 및 표고버섯을 혼합 발효한 제품의 이화학 및 기능적 특성 (Physicochemical and functional characteristics of fermented products by using Sigumjang, Cheonggukjang and oak mushroom)

  • 본 연구의 목적은 청국장, 시금장, 표고버섯 분말의 첨가 비율을 달리하여 새로운 발효 식품(일명: 청금장)을 개발하고자 하였다. 시금장, 청국장, 시금장과 청국장의 첨가비율을 달리하여 청금장 A(Sigumjang:Cheonggukjang=1:2), 청금장 B(Sigumjang:Cheonggukjang=1:1), 청금장 C(Sigumjang: Cheonggukjang=2:1) 시료를 제조한 후 이화학적 특성과 기능성 평가를 실시하였다. 청금장은 시금장보다 단백질 함량은 증가하였으며, 청국장보다 지방과 칼로리는 낮았으나, 유리당 함량은 청금장 C에서 5.8681 g/100g으로 가장 높은 함량을 나타내었다. DPPH 라디컬 소거능은 시금장과 청금장 C가 양성대조구인 BHT와 유사할 정도로 높은 활성이 나타났다. SOD 유사활성능은 시금장이 가장 높은 SOD 유사활성능을 나타내었고 청금장 중에서는 청금장 C가 가장 높았다. 금속이온의 지방산패 촉진에 대한 청금장의 억제능은 $Cu^{2+}$ ion에 대한 억제능보다 $Fe^{2+}$ ion에 대한 억제능이 다소 높은 것으로 나타났고, 활성 산소종의 지방산패 촉진에 대한 청금장의 억제능은 $KO_2$보다 $H_2O_2$에 대한 억제능이 다소 높은 것으로 나타났다. Xanthine oxidase 활성저해능은 700 ppm 에서는 전반적으로 높은 xanthine oxidase 활성 저해능을 나타내었고, 특히 시금장과 청금장 C는 높은 xanthine oxidase 활성 저해능을 나타내었다. ${\alpha}$-Glucosidase 저해 활성능은 모든 농도(300 ppm, 500 ppm, 700 ppm)에서 전반적으로 우수한 ${\alpha}$-glucosidase 저해 활성능을 나타내었으며 시금장과 청금장 C는 높은 ${\alpha}$-glucosidase 저해 활성능을 나타내어 혈당을 조절하는데 도움을 줄 것으로 기대된다. 관능평가 결과 청금장 C가 색, 향기, 쓴맛, 짠맛 및 종합적인 맛에서 가장 높은 평가을 받은 것으로 나타났기 때문에 시금장과 청국장을 단독으로 사용하는 것보다 시금장과 청국장을 2:1로 혼합하여 제품을 제조하는 것이 이화학적 특성과 기능성에 효과적일 것으로 판단된다.

농어촌(農漁村) 특산단지개발사업(特産團地開發事業)의 평가(評價)와 농외소득증대방안(農外所得增大方案) (충청남도(忠淸南道)를 중심(中心)으로) (Appraisal of the Special Production Area Development Project in Rural Area and Countermeasures for Off-farm Income Increase (The Case of Chungnam Province))

  • Korean agriculture has encountered two problems. One is internal income disparity between rural and urbarn area and the other is external Uruguay Round trade problems as an abolition of direct and indirect import barriers, reduction in export subsidies and to reduce internal price supports. These problems will be brought severe farm problems such as decreasing farm household income and repressing agricultural growth in the near future. Considering the above inevitable facts Korean government has implemented several development projects such as rural industrial area development project, rural special production area development project, leisuresight seeing farm development project, traditional food development project, unskilled labor training project for off-farm employment and so on, to increase farm household income through off-farm income increase. This study was mainly concentrated on the identification of operational problems and post evaluation of the rural special production area development projects which aimed at increasing non-farm incomes and giving employment opportunity for rural farmers in small factories processing regional special farm products and mine products. The main findings and problems to be solved for the successful project implementation are as followed ; 1. Total number of the special production area development projects as of the end of 1991 was amount to 138, and total number of farm household participated were estimated at 2,079, and total amount of off-farm income per farm household was reached to 3,011 thousand won. 2. The total number of processed special products have increased from 21 items in 1981 to 56 items in 1991. On the other hand the total number of farm household participated in the projects have decreased from 2,518 to 2,079 during same period. 3. Total amount of investment for the projects has increased from 1,429 million won in 1981 to 24,760 million won in 1991 but the rate of G'T loan of the total investment has reduced from 24.5% to 5.2% during same period. 4. 138 special production area development project are classified into 6 kinds of commodity groups such as 19 of general industrial good production areas, 52 of folks-industrial art objects production areas, 39 of food processing areas, 9 of fiber and texstile processing areas, 18 of agricultural and fishery inputs processing areas and 1 of stone processing area. 5. The total production value in 1990 was estimated 20,169 million won of which export was amount to 2,627 million won. 6. The finacial rate of return of the UNGOK KUGIJA Tea processing Project operated by UNGOK coops and BAKSAN ginseng tea processing project were estimated at 45.4% (B/C Ratio=1.17, NPV=152.5 million won) and 17.7% (B/C Ratio=1.12, NPV=120.2 million won) respectively. 7. More favorite terms and condition of the loan including collateral problems have to be given to farmers participated. Heavy investment and G'T subsidy policies should be started for the successful project implementation anf farm household income increase. 8. To expand market demand of the rural special goods G'T have to provide special program of TV or other mass media for commodity propaganda and the total cost concerned must be supported by G'T subsidy. 9. The special farm products as GUGUJA,MOSI'Ramie', Ginseng. SOGOKJU,HEMP,Mushroom.DUGYUNJU and Chesnut processing projects have to be propelled and expanded for off-farm income increase in Chung Nam Province. 10. Direct operational pattern of the special production area by coops is more favorable to farmers and recommendable considering with off-farm income increase and market demand creation throughout Korea. 11. In rural area, special organizations for project appraisal are not exist. Accordingly special training program, project appraisal, formulation and preparation for civil servants concerned have to be prepared for project selection and sound implementation under limited budget and financial support.

제주지역에서 소비되는 식품 중 137Cs과 40K 방사능 농도 ([ 137Cs] and 40K Activities of Foodstuffs Consumed in Jeju)

  • 본 연구는 제주지역에서 소비되는 식품류 중의 $^{137}Cs$$^{40}K$ 방사능 농도를 조사하여, 식품 섭취에 따른 $^{137}Cs$$^{40}K$에 의한 내부피폭 선량의 값을 평가함으로써 만일의 원자력 사고로 인한 방사능 오염에 대처할 수 있는 기초 자료를 확보하고자 수행하였다. 시료로 채취한 식품류는 농산물 31, 축산물 6, 수산물 12, 임산물 4 그리고 가공식품(차류)이 3종류였고, 방사능 분석은 고순도 게르마늄검출기가 장착된 감마선분광계로 수행하였다. 시료 중 $^{137}Cs$ 방사능 농도범위는 농산물이 MDA이하 ${\sim}650\;mBq/kg$ fresh 축산물 MDA이하 ${\sim}131\;mBq/kg$ fresh, 임산물 MDA이하 ${\sim}834\;mBq/kg$ fresh, 수산물 MDA이하 ${\sim}253\;mBq/kg$ fresh, 그리고 가공식품은 $32.0{\sim}483\;mBq/kg$ fresh 이었다. $^{40}K$의 경우는 농산물 $16.6{\sim}542\;Bq/kg$ fresh, 축산물 $39.1{\sim}294\;Bq/kg$ fresh, 임산물 $85.5{\sim}116\;Bq/kg$ fresh 수산물 $50.1{\sim}657\;Bq/kg$ fresh 그리고 가공식품$33.6{\sim}1,065Bq/kg$ fresh 범위였다. 시료 중 $^{137}Cs$ 방사능 농도가 가장 높은 것은 표고버섯으로 834 mBq/kg fresh 이었으며, $^{40}K$은 커피가 1,065 Bq/kg fresh로 가장 높았다. 각 식품류 중 $^{137}Cs$$^{40}K$에 의한 연간 유효선량은 농산물이 66,543 nSv로 가장 높았고, 축산물 19,311, 가공식품(차류) 6,648, 수산물 6,579 그리고 임산물 860 nSv 순으로 낮았으며, 이것을 모두 합한 총 연간 유효선량 값은 99,941 nSv 이었다. 본 연구에 포함된 식품의 1인당 연간 섭취량이 연간 총 식품 섭취량의 60%임을 감안해도 자연환경 중에서 이루어지는 외부피폭에 의한 연간 유효선량인 2,400,000 nSv에 비하면 무시 할 정도여서 평상시 식품섭취에 의한 방사선 내부피폭은 매우 미량이었다. 이상의 자료는 유사시 방사선에 의한 식품류 오염정도를 식별하는데 필수 불가결할 것으로 사료된다.

물리적 방법(PSL, TL)을 이용한 선종별 조사처리 식품의 검지 특성 (Detection of irradiated food using photostimulated luminescence and thermoluminescence)

  • 국내 조사처리 허용품목을 대상으로 다소비, 다빈도, 다수입 품목 12종(감자, 양파, 마늘, 건호박, 목이버섯, 검은콩, 청국장가루, 미역, 고춧가루, 라면수프, 옥수수차, 분말 녹차)을 선정하여 조사처리 선원에 따른 물리적 확인시험법(PSL 및 TL)을 적용하여 조사처리 여부를 확인하였다. PSL 적용 결과 모든 비조사 시료에서는 700 count/60초($T_1$) 이하의 값을 나타내어 음성 또는 비조사판정이 가능하였다. 감마선, 전자선과 X선을 처리한 시료에서는 879-2,414 (intermediate)와 19,951-65,919,035 (positive) 범위로 수치가 확인되었으며 조사 선원에 따른 수치차이는 보이지 않았다. TL 적용 결과 비조사 시료에서는 $300^{\circ}C$ 이상에서 자연방사선에 의한 peak를 나타내는 비특이적인 글로우 곡선을 보였으며 3개의 선종별 TL 분석 결과에서는 $150-250^{\circ}C$의 온도 범위에서 최대 peak를 나타내었다. 한편, 선종별 TL 강도 차이는 청국장 분말의 경우 감마선(${\gamma}$)>전자선(E)>X선(X), 고춧가루와 분말 녹차는 ${\gamma}$>X>E, 미역, 목이버섯, 마늘은 E>${\gamma}$>X, 양파, 감자, 검은콩는 E>X>${\gamma}$, 라면수프와 옥수수차는 X>E>${\gamma}$, 건호박은 X>${\gamma}$>E의 순서로 TL 강도 차이를 나타내었다. 이와 함께, TL ratio($TL_1/TL_2$) 값은 조사처리구에서 0.1143-2.9318 범위를 나타내어 국내 단일시료 조사판정 범위인 TL ratio 0.1 이상을 확인할 수 있었다. 따라서 조사처리선원에 따른 조사여부 판정은 현행 물리적 확인시험법으로 가능하였으며 광물질의 함량과 조사처리 선량 등 식품 중 조사처리에 관한 연구가 지속적으로 수행되어야 할 것으로 생각된다.

귤피 및 녹차추출물에서 배양한 소나무잔나비버섯(Fomitopsis pinicola) 균사체의 유리아미노산 및 다당류 함량 (Free Amino Acid and Polysaccharide Content of Submerged Mycelial Culture of Fomitopsis pinicola)

  • 천연배지에서 배양한 소나무잔나비버섯(Fomitopsis pinicola)균사체와 균체외 유리아미노산 및 다당류함량을 조사하였다. 배지로는 YM(yeast-malt broth), CP(citrus peel-broth) 및 GT 배지(green tea-broth)를 사용하였으며 $30^{\circ}C$, 150rpm에서 10일간 배양하였다. 균사체의 수율은 GT, CP 및 YM에서 각각 42.3, 34.2 및 $9.89\%$였으며, 균사체를 제거한 배양액의 탁도는 GT 0.14, CP 0.16, YM 0.22이었다. 균사체의 총 유리아미노산 함량은 YM 928.19 $mg\%$, CP 1060.53 $mg\%$, GT 764.83 $mg\%$였으며, 주 아미노산은 YM은 lysine, CP와 GT는 glutamic acid였다. 균체외 총 유리아미노산 함량은 YM 659.75 $mg\%$, CP 954.55 $mg\%$, GT 838.69 $mg\%$였으며, 주 아미노산은 YM, CP 및 GT 모두 glutamic acid였다. 균사체와 균체외 total 아미노산 유도체의 함량은 CP>GT>YM 순이었다. 균사체의 주 아미노산 유도체는 YM은 cystathionine, CP와 GT는 hydroxy proline이였다. YM, CP 및 GT의 균체외 주 아미노산 유도체는 hydroxy proline이였다. 균사체와 균체외 AIS 함량은 CP>GT>YM순이었다. 산가용성 다당류 함량은 GT($0.69\%$)>YM($0.39\%$)>CP($0.18\%$)순, 균체외 산가용성 다당류 함량은 GT($0.87\%$)>CP($0.69\%$)>YM($0.09\%$)순이었다. 균사체의 알칼리 가용성 다당류 함량은 CP($5.21\%$)>GT($5.18\%$)>YM($4.56\%$) 순, 균체외는 GT($6.79\%$)>YM($3.57\%$)>CP($3.01\%$)순으로, 균사체 함유 다당류는 산가용성($0.18{\sim}0.69\%$)에 비하여 알칼리가용성($4.56{\sim}5.21\%$)의 함량이 현저하게 높았다. CP 배지에서 배양한 균사체의 알칼리가용성 다당류를 겔 여과한 결과 hexose와 uronic acid로 구성된 분자량 500,000 dalton의 다당류와 분자량 10,000 dalton이하의 단백질이 결합한 단백 다당체로 추정되었다.
