EFFECTS OF LYSINE AND ENERGY LEVELS ON GROWTH PERFORMANCE THIGH MUSCLE COMPOSITION AND UTILIZATION OF NUTRIENTS IN BROILER CHICKS

  • The effects of dietary levels of lysine and energy on growth performance, the content of DNA, RNA and protein in liver, thigh muscle composition and nutrient utilization in broiler chicks were investigated in an experiment involvies with 2 levels of dietary energy : 3,200 (2900) 2,900 (2700) kcal ME/kg) and 6 levels of lysine : 0.6(0.5), 0.8(0.7), 1.0(0.9), 1.2(1.1), 1.4(1.3), and 1.6(1.5)% was carried out. A total number of 384 male broiler chicks was used for a period of 7 weeks. Body weight gain of 1.0(0.9)% lysine level group was significantly (p < 0.01) higher than that of any other groups. Interaction between lysine and energy in the feed intake was observed (p < 0.05). Present data indicate that the content of DNA in liver tissues was significantly (p < 0.05) different by the levels of lysine, namely, 1.0(0.9)% or 1.2(1.1)% lysine level groups showed higher content than other groups (p < 0.01). Dietary levels of 1.2(1.1)% or 1.6(1.5)% lysine groups showed the highest protein content in thigh muscle tissues than that of any other groups (p < 0.05). Interaction between energy and lysine in the content of protein of thigh muscle tissues was shown (p < 0.01). The level of 0.6% lysine group showed the highest fat content in thigh muscle tissues than any other groups. Interaction between lysine and energy in the content of crude ash and crude fat of thigh muscle tissues was observed (p < 0.01). Apparent amino acid availability of arginine, glycine and threonine (p < 0.01), phenylalanine (p < 0.05) were significantly affected by the levels of lysine and interaction between lysine and energy was found only in arginine (p < 0.01).

성인 여성의 비만도와 신체구성 성분, 체중조절과 식행동 요인 분석 (Analysis of BMI, Body Composition, Weight Control, Dietary Behaviors of Adult Women)

  • This study was carried out to investigate distribution of obesity, body composition, weight control and dietary behaviors, and to analyze the relationship between Body Mass Index (BMI) and physical characteristics, body composition and dietary behaviors by anthropmetric measurement and questionnaires. The 199 study subjects were divided into 3 age groups; 30's (78), 40's (77) and 50's (44) and 4 groups by BMI ; under weight (4.5%), normal (51.3%), over weight (26.1%) and obese (18.1%). Amount of skeletal muscle, body water, mineral and body fat were significantly increased with BMI. There were especially significant increase skeletal muscle 5.3 kg ($19.1\;{\rightarrow}\;23.5\;kg$), body water 5.3 kg ($26.3\;{\rightarrow}\;31.6\;kg$) and fat 15.2 kg ($11.2\;{\rightarrow}\;26.4\;kg$) from under weight to obesity group, respectively (p < 0.01). There were significantly decreased in the ratio of body water (10.3%), protein (2.7%) and body mineral (1.1%) from under weight to obesity, but significant increase 14.1% in body fat (p < 0.001). About 44.4% of under weight group and 40.1% of normal group and 50% of over and obesity group had dissatisfaction on their body images. Most of the women were concerned about their body images and experienced weight control. Dietary behavior scores of obesity group were significant lower than the other four groups (p < 0.001). There were significant positive correlation between BMI and body water (r = 0.62), protein (r = 0.52), skeletal muscle (r = 0.63), body fat (r = 0.91) and WH ratio (r = 0.91), respectively (p < 0.001). The correlation between BMI and body fat and WH ratio were much higher than the correlation between weight and fat and WH ratio.

Poultry Meat Quality in Relation to Muscle Growth and Muscle Fiber Characteristics

  • Variations in the definition of poultry meat quality exist because the quality traits are not solely based on intrinsic and extrinsic factors but also consumers' preference. Appearance quality traits (AQT), eating quality traits (EQT), and reliance quality traits (RQT) are the major factors focused by the consumer before buying good quality of poultry meat. AQT and EQT of poultry meat are controlled by physical and biochemical characteristics of muscle fibers which can be categorized into a total number of fibers (TNF), cross-sectional area of fibers (CSAF), and fiber type composition (FTC). In poultry meat, it has been shown that muscle fiber properties play a key role in meat quality because numerous studies have reported the relationships between quality traits and fiber characteristics. Despite intensive research has been carried out to manipulate the muscle fiber to improve poultry meat quality, demand in a rapid growth of poultry muscle has correlated to the deterioration in the meat quality. The present paper reviews the definition of poultry meat quality, meat quality traits, and variations of meat quality. Also, this review presents recent knowledge underlying the relationship between poultry meat quality traits and muscle fiber characteristics.

한국 COPD 환자의 비만도와 근감소증 분석 (Analysis of Obesity and Sarcopenia among COPD Patients in Korea)

  • The purpose of this study is to analyze the level of obesity and sarcopenia among chronic obstructive pulmonary disease(COPD) patients in Korea. The current study recruited 75 patients with COPD who visited the department of respiratory medicine at J University Hospital in J-do. Height, body weight, waist circumference, and hip circumference were measured, and body composition, muscle strength, and flexibility were assessed. The levels of obesity were classified with body mass index(BMI), waist-hip circumference ratio(WHR) and percent body fat, and sarcopenia was classified with the value of skeletal muscle mass and muscle strength by Asian Working Group for Sarcopenia. In results, it was found that the level of obesity was very high as 43% by BMI, 88% by WHR, and 64% by percent body fat. The lower level of muscle strength was 15.50% in males and 23.50% in females. The lower level of muscle mass was 24.10% in males and .00% in females. Males who had one sarcopenia factors were 22.40%, and females were 23.50%, respectively. Males with sarcopenia were 6.90%, and females were .00%. In conclusion, regular resistance exercise is essential not only for the development of motor skills, but also for the normalization of skeletal muscle function and prevention of muscle dystrophy among COPD patients.

미색동물 및 패류의 Carotenoids 색소성분과 돌연변이 및 종양세포 증식의 억제효과 (Carotenoids Components of Tunicata, Shellfishes and Its Inhibitory Effects on Mutagenicity and Growth of Tumor Cell)

  • To investigate the composition of carotenoids present in marine organisms and the biological activity of the carotenoids, carotenoids of the muscles and tunic of tunicates and shellfishes were isolated and identified. Anitmutagenic activities of the carotenoids for S. typhimurium TA 98 and cytotoxic activity for cancer cell lines were determined. Total carotenoid contents in the muscle of tunicata ranged from 18.65 mg% to 2.39 mg%. The highest amount of the total carotenoid was found in the muscle of Halocynthia aurantium, followed by Styela clava (HERDMAN), H. roretzi, H. hilgendorfi f. igaboya, H. hilgendorfi f. retteri, S. plicata (LESUEUR) in order. Interestingly, total carotenoid content in the muscle of S. clava (HERDAMAN) was higher than that of H. roretzi. Total carotenoid content of all tunicata, other than H. aurantium and H. roretzi, were higher in muscle than tunic. The major carotenoids in H. roretzi, H. aurantium, S. plicata (LESUEUR), and S. clava (HERDAMAN) were cynthiaxanthin (25.1∼42.2%), halocynthiaxanthin (9.7∼26.3%), diatoxanthin (8.0∼18.7%) and β-carotene (7.7%∼21.7%). Similarly, cantaxanthin (19.6%), cynthiaxanthin (15.4%), halocynthiaxanthin (14.8%), and (3R, 3'R), (3S, 3'S)-astaxanthin (22.6%) in H. hilgendorfi f. retteri and fucoxanthin (26.6%), cynthiaxanthin (21.8%), halocynthiaxanthin (15.2%), and β-carotene (9.3%) in H. hilgendorfi f. igaboya were major carotenoids in both tunicate. However, the composition of carotenoids in muscle and tunic of tunicata was similar each other. Among the shellfishes examined, total carotenoid content of the muscle of Peronidia venulosa (Schrenck) and Corbicula fluminea, and of the gonad of Atrina pinnata and Chlamys farreri, was ranged from 2.51 to 6.83 mg% which were relatively higher than that of other shellfishes. The composition of the carotenoids of shellfishes, which might depend upon their living environments, was varied. But cynthiaxanthin (15.9∼39.0%) and zeaxanthin (9.6∼21.9%) in gonad of C. farreri, and muscles of Buccinum Volutharpa perryi (JAY) and Crassostrea gigas, cynthiaxanthin (21.5∼48.6%) and mytiloxanthin (14.6%) in muscle of C.fluminea and gonad of A. pinnata, and canthaxanthin (60.6%) and isozeaxanthin (20.5%) in muscles of P. venulosa (Schrenck), and β-carotene (23.7%∼37.8%) and zeaxanthin (18.2∼20.4) in muscles of Semisulcospira libertina and Meretrix lusoria were major carotenoids. Interestingly, diester type-carotenoids were present along with free type-carotenoids in muscles of C. gigas. antimutagenic effect of the carotenoids isolated from tunicata and shellfishes against 2-amino-3-methylimidazol [4,5-f]quinoline (IQ) for S. typhimurium TA 98 was proportional to the amount (20, 50 and 100㎍/plate) treated. Mutagenicity of IQ was significantly reduced by astaxanthin, isozeaxanthin, mytiloxanthin and halocynthiaxanthin, whereas the mutagenicity of aflatoxin B₁(AFB₁) was significantly reduced by β-carotene, isozeaxanthin, and mytiloxnthin. Growth inhibition effect of carotenoids isolated from tunicata and shellfishes for cancer cell was proportional to the amount (5, 10, and 20㎍/plate) treated. The growth of HeLa cell by β-carotene, cynthiaxanthin, astaxanthin and halocynthiaxanthin, NCI-H87 cell by β-carotene, astaxanthin, cynthiaxanthin, and halocynthiaxanthin, HT-29 cell by β-carotene, cynthiaxanthin, mytiloxanthin and halocynthiaxanthin, and MG-63 cells by β-carotene, cynthiaxanthin, astaxanthin, canthaxanthin and halocynthiaxanthin were statistically reduced.

Linseed oil supplementation affects fatty acid desaturase 2, peroxisome proliferator activated receptor gamma, and insulin-like growth factor 1 gene expression in turkeys (Meleagris gallopavo)

  • Objective: Effects of linseed oil (LO) supplementation on the fat content and fatty acid profile of breast meat, and the expression of three genes in the liver, breast muscle and fat tissues of commercial 154-day-old hybrid male turkeys were investigated. Methods: The animals in the control group were fed a commercially available feed and received no LO supplementation (n = 70), whereas animals in the LO group (n = 70) were fed the same basic diet supplemented with LO (day 15 to 21, 0.5%; day 22 to 112, 1%). The effect of dietary LO supplementation on fatty acid composition of breast muscle was examined by gas chromatography, and the expression of fatty acid desaturase 2 (FADS2), peroxisome proliferator activated receptor gamma (PPARγ), and insulin-like growth factor 1 (IGF1) genes was analysed by means of quantitative reverse transcription polymerase chain reaction. Results: The LO supplementation affected the fatty acid composition of breast muscle. Hepatic FADS2 levels were considerably lower (p<0.001), while adipose tissue expression was higher (p<0.05) in the control compared to the LO group. The PPARγ expression was lower (p<0.05), whereas IGF1 was higher (p<0.05) in the fat of control animals. There were no significant (p>0.05) differences in FADS2, PPARγ, and IGF1 gene expressions of breast muscle; however, omega-6/omega-3 ratio of breast muscle substantially decreased (p<0.001) in the LO group compared to control. Conclusion: Fatty acid composition of breast meat was positively influenced by LO supplementation without deterioration of fattening parameters. Remarkably, increased FADS2 expression in the liver of LO supplemented animals was associated with a significantly decreased omega-6/omega-3 ratio, providing a potentially healthier meat product for human consumption. Increased PPARγ expression in fat tissue of the LO group was not associated with fat content of muscle, whereas a decreased IGF1 expression in fat tissue was associated with a trend of decreasing fat content in muscle of the experimental LO group.

  • This study was carried out to identify the components of the human heart meridian muscle, the regional muscle group being divided into outer, middle, and inner layers. The inner parts of the body surface were opened widely to demonstrate muscles, nerves, blood vessels and to expose the inner structure of the heart meridian muscle in the order of layers. 사료 중에 첨가된 효모(Phaffia rhodozyma)가 이스라엘 잉어와 비단잉어 및 틸라피아의 성장, 체조성, 근육 탄력도 및 색소 착색에 미치는 영향 (Effect of the Yeast (Phaffia rhodozyma) in the Diet on Growth, Body Composition, Muscle Elasticity and Pigmentation of Israeli Strain of Common Carp, Colored Carp (Cyprinus carpio) and Nile Tilapia (Oreochromis niloticus))

  • 천연 astaxanthin 색소를 다량 함유한 phaffia 효모를 양식 어류에게 공급하였을 때, 이 색소가 어류의 성장과 소화, 흡수되는 정도를 조사하기 위하여 이스라엘 잉어($650{\pm}20$ g), 비단잉어($80{\pm}10$ g) 및 나일틸라피아($200{\pm}20$ g)의 사료에 phaffia 효모를 $10\%$ 첨가하여 10주간 공급한 다음 성장률, 체조성, 근육의 탄력도 및 근육 색과 체색 등의 변화를 측정하였다. Phaffia 효모 첨가 사료에 대한 효모 대조구로서 $10\%$의 맥주 효모 첨가 사료구를, 그리고 이들 두가지 반정제 효모 사료에 대한 성장 대조구로서 시판 상품 사료구를 설정하여 10주간 사육한 결과 이스라엘 잉어, 비단잉어 및 틸라피아의 성장에는 모든 사료 공급구에서 유의적인 차이가 없었다(P>0.05). 이들 실험어의 근육 내의 일반 성분은 실험 후에도 현저한 차이가 나타나지 않아(P>0.05), phaffia 효모나 맥주 효모 사료가 체성분 조성에는 영향이 없는 것으로 나타났다. 또한 횟감으로 이용되는 어종인 이스라엘 잉어와 틸라피아의 근육에 쫄깃한 정도를 나타내는 기계적 탄력도와 관능적 탄력도를 측정한 결과 모두 유의적인 차이는 나타나지 않았다(P>0.05). 실험어의 근육에 phaffia 효모에서 유래되는 붉은 색소의 침착은 이스라엘 잉어와 비단잉어 실험구에서는 근육내의 색소 분석과 관능적 측정 실험 모두에서 현저하게 높게 나타났지만(P<0.05), 틸라피아에서는 색소 분석과 관능적 측정 실험 모두에서 유의적인 차이가 나타나지 않았다(P>0.05).

Correlation analysis of muscle amino acid deposition and gut microbiota profile of broilers reared at different ambient temperatures

  • Objective: Temperature could influence protein and amino acid deposition as well as gut microbiota profile and composition. However, the specific effects of ambient temperature on amino acids deposition and gut microbiota composition remain insufficiently understood. Methods: A total of 300 one-day-old Avian broilers were randomly divided into three groups and reared at high, medium, and low temperature (HT, MT, and LT), respectively. Breast muscle and fecal samples were collected for amino acid composition analysis and 16S rRNA gene sequence analysis. Results: Our data showed that compared to the MT group, there was a decrease of muscle leucine and tyrosine (p<0.05), as well as an increase of methionine in the HT group (p<0.05) and a decrease of serine in the LT group. Examination of microbiota shift revealed that at genus level, the relative abundance of Turicibacter and Parabacteroides was increased in the HT group (p<0.05) and that the relative abundances of Pandoraea, Achromobacter, Prevotella, Brevundimonas, and Stenotrophomonas in the LT group were higher than those in the MT group (p<0.05). In addition, there were substantial correlations between microbes and amino acids. In the HT group. Turicibacter was negatively correlated with aspartic acid and tyrosine, whereas Parabacteroides was positively correlated with methionine (p<0.05). In the LT group, there were multiple positive correlations between Achromobacter and arginine, isoleucine or tyrosine; between Prevotella and cysteine or phenylalanine; between Brevundimonas and cysteine; and between Stenotrophomonas and cysteine as well as a negative correlation between Stenotrophomonas and serine. Conclusion: Our findings demonstrated that amino acid content of breast muscle and intestinal microbiota profile was affected by different ambient temperatures. Under heat exposure, augmented abundance of Parabacteroides was correlated with elevated methionine. Low temperature treatment may affect muscle tyrosine content through the regulation of Achromobacter.

코끼리 조개육이 동결저장중 단백질 조성 및 Texture변화에 미치는 Blanching의 영향 (Effect of Blanching on Protein Composition and Texture in Geoduck Muscle during Frozen Storage)

  • 코끼리 조개의 동결저장중 단백질조성 및 texture변화에 미치는 blanching의 영향에 대하여 조사한 결과는 다음과 같다. 생육에 있어서 근형질 단백질과 근원섬유 단백질은 급격한 감소현상을 보였으나 알카리가용성 단백질은 급격히 증가하였다. Blanching육에서는 근형질 단백질과 근원섬유 단백질은 완만하게 감소하였다. Blanching 시간에 있어서 2분간 처리한 시료가 관능검사에 의해 가장 texture가 우수하였는데 생육과 비교할 때 경도는 차이가 없었으나 탄성, 변형력 완화율은 낮은 값을 보였고 파괴신장율과 toughness은 높은 값을 나타내었다. 동결저장 중의 texture의 변화에 있어서 저장기간이 증가함에 따라 경도와 toughness은 생육과 blanching육 모두 증가하였으며 변형력 완화율은 저장초기 모두 급격히 감소되었다가 그 후로는 큰변화를 보이지 않았으며 파괴신장율은 생육의 경우 저장초기에 급속히 증가하였고 blanching육은 큰 변화가 없었다. 탄성에서는 생육은 점차적으로 감소하였고 blanching육은 증가하는 경향을 나타내었다.
