Storage conditions of selling mungbean sprouts should affect their marketability. The study was done to examine the effect of light quality (blue, green, yellow, red, far-red) on greening period, shape, fresh and dry weights of mungbean (cv. Zhong Lu 1) sprouts for 5 days to get some information on designing their various polyethylene envelops with different colors. Periods taking to green were 2 to 3.5 days in blue, red and far-red lights but longer than 6 days in green and yellow lights. Yellow lights had the longest total length adding hypocotyl and root, and blue light did the widest hypocotyl diameter while all light treatments showed similar lateral roots for the period. Total fresh and dry weights were the highest in red light but the least in far-red light. Their lengths and weights in green and yellow lights showing the longest periods for their greening declined with increased storage periods but showed no difference between them, meaning that the envelops should be designed mainly by green and yellow colors.
The effect of blanching time and power settings of microwave oven on the ascorbic acid retention in seven kinds of vegetables were investigated. The vegetable were blanched for 120 or 180 sec. at three different power setting, 650 watt(high power), 500 watt(medium power) and 160 watt(low power). The retentions of ascorbic acid in cabbage, garland chrysanthemum, mungbean sprout, amaranth and carrot were higher when they were blanched at the high power than those blanced at the lower power stettings. Blanching of spinach and yul-moo(small korean radish) showed that the vitamin was more retained by the medium power heating. Blanching at the low power revealed that the ascorbic acid retention was reduced remarkably as the blanching time increased. From the scoring difference tests the 10-panel members indicated that the texture of three-tested vegetables was more acceptable when they were blanched at the high power setting.

We have studied physiological responses of mung bean sprout to the treatment of elicitors. Chemicals such as salicylic acid and methyl jasmonic acid are not only the intermediates found in plant defense system but also could affect plant secondary metabolism. We found that mild treatment of salicylic acid and acetyl salicylic acid (aspirin) increase isoflavone production dramatically in mung bean sprout which has very low level of isoflavones compared with soybean sprout. The isoflavone content in salicylic acid treated- and acetyl salicylic acid treated-mung bean sprout was about 2.3 and 2.2 times higher than that of control, respectively. However, the increasing patterns of isoflavone in cotyledon and hypocotyl and root were not identical. The major increase among isoflavone fractions in cotyledon was led by the increase in malonylglycitin and malonyldaidzin level. Whereas, the increase in hypocotyl and root was led by malonyldaidzin. Methyl jasmonic acid did not show statistically significant increase in mung bean sprout. With this result, we were able to propose the non-transgenic method, which can control the isoflavone production in germinating mung bean.

This study was performed to determine the relative quality of mungbeans harvested in bulk after applying a labor-saving cultivation (LSC) method, compared to mungbeans harvested three different times under the conventional cultivation condition. There was no significant difference in starch, crude protein, and vitexin or isovitexin content of seed according to the cropping system or harvest time. The mungbeans grown under the LSC method had the highest crude fat content, followed by mungbeans from the third-, the second- and the first-harvest mungbeans under the conventional cultivation. No significant difference was found in the composite ratio of saturated fatty acids to unsaturated fatty acids according to cropping system or harvest time. The second-harvest mungbeans grown under the conventional cultivation condition had 17 different types of fatty acids, while the third-harvest mungbeans grown under the conventional cultivation and those grown under the LSC condition had the fewest types of fatty acids with 12. Of the major saturated fatty acids, palmitic acid and arachidonic acid had the highest composite ratio in the first conventional cultivation followed by the second, the third and the LSC. However, stearic acid showed the opposite tendency. Of the major unsaturated fatty acids, linoleic acid had the highest composite ratio in the first conventional cultivation, followed by the second and third conventional cultivation and the LSC. Amylogram characteristics of the mungbeans were significantly different according to cropping system and harvest times. The mungbeans harvested after the first conventional cultivation had significantly higher pasting temperature, peak viscosity, holding strength viscosity, final viscosity and breakdown, while mungbeans harvested after the third conventional cultivation had significantly higher setback viscosity. In contrast, the mungbeans harvested under the LSC methods had a significantly lower amylogram value. When harvest rate, color values and amino acid content of sprout were measured, mungbeans grown under the LSC conditions had a low harvest rate of sprout, but had Hunter's color values and amino acid content of sprout similar to those of mungbeans grown under the conventional cultivation condition.

In bean sprout culture water imbibition and benzyladenopurine (BA) treatment are done at the same time. The study was carried out to check the effect of treatment period (3, 5, and 7 hours) on growth of mungbean (cv. Keumseongnogdu, Owoolnogdu, and Zhong Lu 1) sprouts and to analyse its absorption amount on the base of their moisture content. The 3 cultivar seeds were soaked in 50 ppm BA solution immediately before 3 hour aeration and then cultured for 6 days. The sprouts were sorted by 4 categories on the base of hypocotyl length; > 7cm, 4 to 7cm < 4cm, and non-germination, and their morphological characters, fresh and dry weights were measured. The cultivar Zhong Lu 1 had the highest rate in longer than 7cm hypocotyls of the three cultivars but the lowest one in shorter than 4cm. Rates of the above 4 categories in cv. Keumseongnogdu, Owoolnogdu showed no significant difference between the treatment periods while one of longer than 7cm hypocotyls in cv. Zhong Lu1 was decreased with longer treatment period. Lateral roots were less formed with longer treatment period, especially as lengthened from 3 to 5 hours. Hypocotyl and root were also lengthened with longer treatment period and hypocotyl was more thickened in 5 hour treatment period than in the two others. Total fresh and dry weights per sprout showed no significant difference between treatment periods although cv. Zhong Lu1 relatively faster grew than the other cultivars. In the case of shorter than 5hour treatment periods the absorption amount of BA was the greatest in cv. Zhong Lu1 but in 7 hour treatment period it was the greatest in cv. Keumseongnogdu and Zhong Lu 1.
Lateral roots of soybean sprouts should deeply affect their quality and marketability. The study was done to compare the effects of ocher, chitosan, corn kennel, tea (Thea sinensis L.) and hard rubber tree (Eucommia ulmoides Oliver) leaf extracts on lateral root formation, growth and morphological characters of the sprouts. Seeds of three cultivars, Pungsannamulkong, Sowonkong and Junjery, were imbibed for 5 hours into their 10% solutions and cultured for 6 days. The cultured sprouts were classified into 4 categories to calculate their composition rates on the base of hypocotyl lengths;>7 cm (A), 4 to 7 cm (B), < 4 cm (C) and not germinated (D), and their morphological characters, fresh and dry weights were measured. Composition rate of A was the lowest in Junjery of the three cultivars, while that of C showed reverse result compared to A. This results was the most distinct in hard rubber tree leaf extracts (HRTLE) of the five treatments. In HRTLE treatment, lateral root formation rate were formed in almost of Sowonkong although reduced in order of Pungsannamulkong and Junjery. However, there was no significant difference between the other treatments. Lateral roots per sprout were the lowest in HRTLE treatment of the 5 treatments. In all treatments except the chitosan treatment, the roots were most formed in Sowonkong but least in Junjery. Sprout length adding hypocotyl and root was the shortest in Junjery compared to the other two cultivars. and was the longest in tea leaf extract treatment but the shortest in HRTLE treatment. The result in total fresh weight of sprouts was similar to that of the sprout length.
We developed a polyclonal antibody based-ELISA system to monitor inocula accurately and rapidly before onset of anthracnose on soybean sprouts. Titer of mouse antisera against conidia of Colletotrichum gloeosporioides, determined by indirect ELISA, was high enough to be detectable up to ${\times}$25,600 dilutions. Both PAb1 and PAb2 had the highest level of reactivity to Colletotrichum gloeosporioides. Absorbance readings exceeded 0.15. Sensitivity of PAb to C. gloeosporioides was precise enough to detect spore concentration as low as 500 conidia/well by indirect ELISA. Both antibodies are very sensitive and highly specific to the target pathogen Colletotrichum gloeosporioides, apparently discriminating other unrelated pathogen, or epiphytes. This kit fulfills the requirements far detecting inocula before infection and onset of anthracnose. Our ELISA system should also be feasible to detect C. acutatum (Mungbean sprouts rot) and G. cingulata (C. gleosporioides), (apple, pepper). It was remarkable that absorbance value was not reduced even after 4 consecutive washings (Fig.4), suggesting that antigenic determinants are on the surface of conidia. Antigenic determinant was characterized by heating and enzyme treatment: Both PAb1 and PAb2 bind to protein epitope that does not contain residue of amino acid, arginine, and Iysine, even though more work needs to be done.

This study examined the effective treatment method of selenium and translocation characteristics of selenium in order to produce mungbean containing selenium. The foliar application of selenium at 3.5, 7, 14, and $28mg/{\ell}$ during the flowering period, yielded a relatively high record of seeds containing $0.41{\sim}3.96mg/kg$ and $0.27{\sim}2.38mg/kg$ of selenium, from the first and second harvesting. However, seeds from the first harvesting contained $52{\sim}71%$ more selenium than the seeds from the second harvesting. On the other hand, seeds from first and second harvesting of the non-treatment group had the same amount of selenium at 0.02mg/kg only. When the foliar application of selenium at $7mg/{\ell}$ was conducted two or three times, seeds from the first to third harvesting contained just the equal amount of selenium. However, when it was conducted only once, seeds from the first harvesting contained 56% and 67% more than seeds from the second and third harvesting, respectively. In seeds of mungbean containing 2.05mg/kg of selenium, cotyledon had 2.99mg/kg of selenium, which was 38% more than seed coat per unit weight. When mungbean sprout was produced, selenium content was 5.51mg/kg, but seed coats by-product of sprouts had 0.78mg/kg of selenium. The growth and quantity of mungbean was not significantly different according to the concentration and the frequency of foliar application of selenium used for in study.

Methods for culturing bean sprouts could be divided into two main groups of overspraying and underwatering according to water supplying. The study was done to measure the effect of water supplying method on growth of mungbean sprouts and temperatures inside their culture boxes. The morphological characters, fresh and dry weights were measured on the 6th day after culturing, but temperatures of the boxes were recorded daily by dataloggers. Lateral roots was not formed in the under-watering method (UM) while partially done in the over-spraying method (OM). OM had longer hypocotyl but UM had longer root compared to the other. Two water supplying methods, however, had nearly similar total length adding hypocotyl and root lengths, diameters of middle and upper parts of hypocotyl. OM showed more total fresh weight than UM mainly resulting from increment of hypocotyl fresh weight. The fresh weight increment in OM was caused by relatively higher temperature of culture box compared to UM.

A mungbean cultivar "Munpyeong" (Vigna radiata (L.) Wilczek) was derived as a cross between "Keumseong" and "IT163157" at the Jeollanamdo Agricultural Research and Extension Services (JARES) in 2013. "Munpyeong" has an erect growth habit, heart leaflet, green hypocotyls, black and straight pods when matured, and a dull green seed surface. The stem length of "Munpyeong" was 60 cm, which was 6 cm shorter than that of the control cultivar "Owool." The pod number per plant was 25, which was 3 more than that of the control cultivar. The 1000 seed weight of "Munpyeong" was 45 g, which was 4 g lighter than that of the control cultivar "Owool." Its field resistance to mungbean mottle virus, cercospora leaf spot, and powdery mildew are similar to the control cultivar, whereas its field resistance to lodging was slightly stronger. The hard seed rate of "Munpyeong" was 3.2%, which was similar to that of the control cultivar. The sprout yield ratio was 7.54 times, which was 9% more than that of the control cultivar. The average yield of "Munpyeong" was 1.93 ton/㏊, which was 21% more than that of the control cultivar "Owool" (Cultivar registration number: 5878).
