Mulberry leaves containing 1-deoxynojirimycin (DNJ) known to be a strong inhibitory effect for ${\alpha}-glucosidase$. Thus, DNJ has been recognized as a potentially important source for prevent or treat hyperglycemia. More effective method for the DNJ high-production is needed because DNJ content of natural mulberry leaf are as low as 0.1%. Many researchers have studied for the DNJ high-production in mulberry leaves such as the harvest season, fermentation using microorganisms, optimal culture conditions, and optimal extraction conditions. In order to provide for useful data that is anticipated at the level of industrial scale, we investigated ${\alpha}-glucosidase$ inhibitory activity, pH value and DNJ content in large-scale based on the optimal culture conditions for mulberry leaf fermentation of small-scale in our previous study. The ${\alpha}-glucosidase$ inhibitory activity, pH value, and DNJ content in this study were measured from the mulberry leaf fermentation broth for 7 days. During mulberry leaf fermentation, the ${\alpha}-glucosidase$ inhibitory activity and DNJ content was increased until 2 to 4 days, but after 4 day was decreased. The pH value showed a decreasing trend up to 2 day, and little changes in 2 to 4 days. However, the pH was started to increase after 4 days.

We studied on improvement method of rutin content using mulberry leaf powder. Mulberry leaves were collected and then hot-air dried and powdered for experiment. As a result, we have developed a pre-treatment method that extracts mulberry leaf powder with water or fermented alcohol with reflux extractor and then increases the rutin content by improving the process. Citric acid (0.1 ~ 1%) and 1000 ml fermented alcohol (50 ~ 95%) or water (10 ~ 50 times) was extracted with 100 g of mulberry leaf powder using a reflux extraction device ($80{\sim}90^{\circ}C$, 1 hour, twice). The extracts were collected, filtered and concentrated. For the recrystallization, the concentrate was dissolved by adding distilled water and allowed to stand at a low temperature. Then, the supernatant was discarded by centrifugation, and only the residue was lyophilized to prepare a final powder. As a result, regardless of the concentration of citric acid added, the content of rutin was higher in 90% fermented alcohol extract. Whereas, in the case of extracting with water, citric acid 0.5% was added to water 25 times as much as the weight of mulberry leaf powder, and 2274.4 (mg / 100g) of rutin content was highest in the case of refluxing twice at $80^{\circ}C$ for 1 hour. The powder with increased rutin content is expected to be applicable to various foods as a food additive. In addition, it can contribute to the improvement of the farm income by promoting consumption of mulberry leaf while satisfying the consumers' desire for functional food intake.
Experiments were carried out to make clear the relationships among some morphological characters of four-varieties of mulberry trees. Simple correlation coefficients and particial correlation coefficients were calcultated among the characters, namely branch length, branch diameter, leaf number per branch, leaf area per branch, node number per branch, total branch wt. branch weight except leaves and leaf weight per branch of the mulberry trees. The results obtained are summarized as follows: 1. Variances of the characters and covariances between the each characters are shown in table 1, and simple correlation coefficients among various characters are shown in table 2. It was observed that there were close relationships between yield (leaf weight) and branch length, branch diameter, leaf number per branch, leaf are per branch, node number per branch, total branch weight and branch weight except leaves, respectively. 2. Partial correlation coefficients among some characters are shown in table 3. From this table, it was also observed that leaf yield of mulberry trees and leaf area are more closely related more than leaf yield and the other characters of mulberry trees in four different varieties. From the experimental studies, it was recognized that the four characters, namely branch length, branch diameter, leaf number and leaf area, should be very useful characters in the estimation of mulberry leaf yield as they could be measured. or counted easily before harvest of mulberry leaves, and are affected more in mulberry 1eaf yields than the other characters.
Mulberry plants cultivated in mid-Korea were studied on the growth habitat, canopy type, productive structure and vertical light intensity in relation to the quality of mulberry leaves for sericulture. The growth in length of new branch of summer cut mulberry in spring was vigorous on the uppermost of old shoot. Numbers of leaves on a branch were barely 4 leaves on lower than 20th branch from base, but those were 13 leaves on higher than 24th branch. Area of leaves completely expanded was broad on high branch, but narrow on low one. The form of canopy, the type of productive structure and the vertical light distribution depend upon varieties of cultivated mulberry plants were classified according to characteristic of each variety in two groups, respectively; globular and columnar form in canopy, broad leaves and narrow leaves types in productive structure, and seriously obstructured the light and fairly transmitted the light into lower leaf stratum invertical light distribution. Out of varieties of mulberry investigated, Suwon No. 4 and Rosang were belong to the former characters, but Illchiroe and Kaeryangsubun were to the latters. The values of leaf dry matter index and dry matter production produced by leaves were increased in direct proportion to the height of leaf stratum; the leaf dry matter index of the uppermost leaf was twice as much that of the lowest, and the dry matter production by the highest leaf was 17 times compared with that by the lowest leaf. It is assumed that the meagre leaves occurred in the lower leaf stratum of Suwon No. 4 and Rosang were caused to diminished the dry matter index and dry matter production in the under leaves of plant, which were affected by receiving the weak light.

Peroxidase activity was measured in brown leaf spot pathogen (Myrothecium roridum) inoculated potted mulberry (Morus alba) during pre-symptomatic to various symptom development stages and compared with corresponding healthy leaf tissues. The enzyme showed a pH optimum of 7.0 and the activity was linearly increased up to 15 min of incubation. The peroxidase had a broad substrate specificity and the rates of oxidation were in the rank of pyrogallol> guaiacol> ascorbate at pH 7.0. Catechol at 10 mM inhibited 89% of guaiacol-peroxidase and 76% pyrogallol-peroxidase activities, indicated higher non-specific peroxidation in pyrogallol dependent assay system in mulberry than guaiacol. The optimum requirement for the guaiacol dependent assay was 0.2 ml (${\approx}40-60{\mu}g$ equivalent of protein) of crude enzyme source. Excepting the 8th leaf from the apex, the peroxidase activity did not vary appreciably in different leaf positions. In pre-symptomatic phases, an initial (1 to 5 min) rise of peroxidase activity was noticed in inoculated leaves, and then maintained a plateau up to 300 min. In contrary, non-infected tissue showed a slightly increased trend of enzyme level up to 420 min. In infected tissue, a sharp transient increase (3.1 fold) of peroxidase activity appeared between 300 - 420 min post infections. Afterwards, significantly different but steady maintenance of enzyme levels were observed in two treatments. On the other hand, during symptom development, a sharp increase in peroxidase activity was noticed up to 4th grade of lesion appearance (25.1 % to 50% of leaf area infection), and then declined slightly. However, in non-infected but same age healthy leaves, such huge fluctuations of enzyme level did not apparent. A high positive correlation $(R^2=0.92)$ between peroxidase activity and leaf spot development grades was also marked. The result implies that pre-symptomatic burst (between 1 - 5 and 300 - 420 min) and subsequent increased trend of guaiacol peroxidase activity may require for the symptomatic manifestation of Myrothecium leaf spot in mulberry.

Mulberry containing many bioactive components is very useful as functional food resource. Mulberry leaf ice cream, mulberry leaf tea, mulberry noodle, mulberry fruit jam, mulberry wine etc. have been developed in Korea. Because mulberry fruit has abundant natural pigments belonging to anthocyanins, we can expect their therapeutic and physiological effects. However, there are few reports about mulberry seed. So we studied on fatty acids of mulberry seed for the purpose of increasing the functional utilization of mulberry fruit. (omitted)
BACKGROUND: Globally, mulberry (Morus sp.) is exploited for feeding leaf to silkworms in order to obtain silk fiber or for animal feedstock production. Also, mulberry fruit is known to a by-product that was produced from mulberry tree after harvesting leaves for silkworm rearing, as a yield and consumption of mulberry fruit was increased, it has been fixing to a newincome crop. Mulberry leaves and fruits are used for the health benefits of human beings. Mulberry contains various bioactive components, such as alkaloids and flavonoids. Mulberry flavonoids are an important part of the diet because of their effects on human nutrition. The flavonoids in mulberry leaf and fruit of 'Suhyang'(Morus alba L.) were determined. METHODS AND RESULTS: Flavonoids for mulberry leaf and fruit of 'Suhyang' were analysed using ultrahigh performance liquid chromatography coupled with diode array detection and quadrupole time-of-flight mass spectrometry (UPLC-DAD-QTOF/MS)technique. An UPLC-DAD-QTOF/MS system was used, and identification of mulberry leaves constituents was carried out on the basis of the complementary information obtained from LC spectra, MS ions, and MS/MS fragments. The mulberry leaf (16 flavonoids) and fruit (9 flavonoids) were isolated and analyzed from Suhyang using UPLC-DAD-QTOF/MS chromatogram. To the best of our knowledge, Quercetin 3-O-(6"-O-malonyl) glucoside and quercetin 3-O-rutinoside (rutin) was detected on the highest content in leaf and fruit, respectively and further research will be devoted to evaluate their biological activity. CONCLUSION: Obtaining information about the concentration of functional materials in mulberry leaves could contribute to the development and promotion of processed, functional products and offer possible industrial use of 'Suhyang', holding promises to enhance the overall profitability of sericulture.

Fifty-six indigenous and twenty nine exotic mulberry varieties were screened against powdery mildew, Myrothecium leaf spot, Pseudocercospora leaf spot, sooty mold and bacterial leaf spot for a period of three years under field condition. The percent disease index (PDI) was recorded during peak season of the foliar diseases. Out of eighty-five varieties studied, ten varieties were highly resistant and eight were resistant to powdery mildew; six varieties were immune and seventy-eight varieties were highly resistant to Myrothecium leaf spot; sixty varieties were highly resistant and 21 were resistant to Pseudocercospora leaf spot; forty four varieties were highly resistant to sooty mold and two varieties were immune and fifty-eight were highly resistant to bacterial leaf spot. Lowest cumulatative disease index was observed in M. multicaulis (7.28) followed by Thailand lobed (7.85) and Italian mulberry (8.06).

Soilborne diseases pose a serious problem for mulberry cultivation during nursery plantation and established gardens, which cause severe loss in revenue generation of mulberry growers as compared to foliar diseases. Various soilborne diseases affect mulberry. Among them, root knot and root rot affect the established plantation resulting in severe loss in leaf yield apart from deterioration in leaf quality, which is a pre-requisite in successful sericulture to get the good quality of cocoons. Besides, stem-canker, cutting rot, collar rot and die-back, affect the initial establishment and survivability of mulberry plantation in nursery. The problem is difficult to handle, due to the complex nature of the diseases and also involvement of various biotic and abiotic factors. This is compounded by the occurrence of disease complex (especially nematode + soilborne pathogenic microbes) in established mulberry gardens, which facilitates quick spread of the disease and enhance the plant mortality, resulting substantial loss in leaf yield. Therefore, prevention and timely control measures need to be taken up to protect the mulberry plants from different soilborne plant pathogens. In this review article, symptomatology, epidemiology, disease cycle and control measures of soilborne diseases of mulberry are discussed.
The purpose of this study is to investigate the effects of the ice-cream containing mulberry leaves on glucose levels in blood and on sensory characteristics. Mulberry leaves were treated with sodium hydrogencarbonate (NaHCO3) to remove the fresh green note out of dried mulberry powder with ball mill. The recovery rate of dried mulberry leaf powder was 28.9% from fresh mulberry leaves. The points of ice-cream with (treatment 2 : milk-fatty 23%) and without (treatment 7 : coconut butter 9.5%) milk-fatty in the sensory characteristics were 8.31 and 8.47, respectively, of 9.00 as a full point. The range of age of volunteers taken part in the glucose level test were 21∼25 years old. The glucose levels in blood were measured before and after taking up ice-cream. In case of ice-cream with vanilla, the glucose levels increased 27.8%, while those in the up take of ice-cream with mulberry powder decreased 1.6%. In conclusion, the present study has demonstrated that ice-cream containing mulberry leaf powder has an effect to decrease blood glucose levels after the application.
