Quality Characteristics and Optimization of Rice Muffins prepared by Substituting Salt with Spergularia marina L. Griseb using Response Surface Methodology (반응표면분석법을 이용한 소금대용 세발나물 첨가 쌀머핀의 품질특성 및 최적화)

  • The purpose of this study was to determine the optimal composite recipe of rice muffins with 3 concentrations of Spergularia marina L. Griseb, sugar and grape seed oil, using central composite design. In addition, the mixing condition of rice muffins was optimized by subjecting it to sensory evaluation and mechanical and physicochemical analysis using response surface methodology (RSM). In regard to its antioxidant effects, Spergularia marina L. Griseb had a total phenol and flavonoid contents and DPPH free radical scavenging activity of 17.03 mg/g, 5.13 mg/g and 17.21%, respectively. The results of mechanical and physicochemical analysis showed significant values for lightness, redness, yellowness, hardness, springiness, chewiness, gumminess, cohesiveness, height, volume, weight, specific volume, loss rate, pH, moisture, sweetness and saltiness (p<0.05), and the results of sensory evaluation showed significant values for color, flavor, taste, softness, appearance and overall quality (p<0.05). As results, optimal sensory ratio was found to be 6.69 g of Spergularia marina L. Griseb, 41.89 g of sugar and 30.48 g of grape seed oil.

Study of the Al-coating on the STS 316L Stainless Steel by Pulse Plating in the Molten Salts at Room Temperature (펄스 도금법을 이용한 STS 316L 스테인리스강 상의 저온 염욕 알루미늄 코팅에 관한 연구)

  • Electroplating methods by molten salts and non-aqueous melts were employed for aluminium coating on STS 316L stainless steel. After coated with Ni or non-coated surface on stainless steel, Al pulse plating was carried out in two different types of electrolytes at room temperature. The Al layer from $AlCl_3$-TMPAC melts could not obtain appreciable thickness for engineering application due to chemical reactions between deposits and moisture of air. However, The Al coating by pulse plating in the Ethylbenzene-Toluene-$AlBr_3$ systems was found to be solid coating layer with a few $\mu\textrm{m}$ scale. The conductivity of Ethylbenzene-Toluene-$AlBr_3$ electrolyte was as functions of time and agitation. By seven days exposure after mixing of the electrolyte, Al-deposited layer shows uniform and near by pore-free with high current density (higher than 30mA/$\textrm{cm}^2$). The roughness and imperfection of coating layer were decreased with a increasing agitation speed. It was found that the optimum condition for the Al pulse plating on the 316L stainless steel was a 400mA peak current, duty cycle, $t_{on}$ $t_{ off}$=3ms/1ms, and a current density of 30mA/$\textrm{cm}^2$.

Effect of bound water on mechanical properties of typical subgrade soils in southern China

  • From the effect of bound water, this study aims to seek the potential reasons for difference of mechanical experiment results of subgrades soils. To attain the comparatively test condition of bound water, dry forming (DF) and wet forming (WF) were used in the specimen forming process before testing, series of laboratory tests, i.e., CBR tests, direct shear tests and compaction tests. The measured optimal moisture contents, maximum dry densities, CBR, cohesion c, and internal friction angle 𝜑 were given contrastive analysis. Then to detect the adsorptive bound water in the subgrade soils, the thermal gravimetric and differential scanning calorimetry (TG-DSC) test were employed under different heating rates. The free water, loosely bound water and tightly bound water in soils were qualitatively and quantitatively analyzed. It was found that due to the different dehydration mechanics, the lost bound water in DF and WF process show their own characteristics. This may lead to the different mechanical properties of tested soils. The clayey particles have a great influence on the bound water adsorbed ability of subgrade soils. The more the clay content, the greater the difference of mechanical properties tested between the two forming methods. Moreover, in highway construction of southern China, the wet forming method is recommended for its higher authenticity in simulating the subgrade filed humidity.

Short-term Effect of Phosphogypsum on Soil Chemical Properties

  • Short-term effect of phosphogypsum on soil properties including acidification, salinity and metal availability were investigated under laboratory and field conditions. Phosphogypsum and mixtures of phosphogypsum and compost were added to soil and incubated in a laboratory condition with 15% moisture content. Phosphogypsum treatments were 2.5 and 5.0 g/kg soil and in the treatments of phosphogypsum and compost mixture 10 g of compost was added additionally. After the 30 days of incubation, an additional phosphogypsum and/or compost were added to the remaining soils at the same rates of the first treatments. pH, electrical conductivity, and available hazardous elements were measured periodically during the incubation. Field experiment was conducted in a plastic film house of mellon with four treatments of phosphogypsum and compost mixtures - 25+125, 50+125, 50+250 and 100+250 kg/165 $m^2$. pH, electrical conductivity, and hazardous elements in soil and total hazardous elements in leaf were measured. In the laboratory experiment, after 30 days of the first phosphogypsum application, soil pHs were lowered by 0.7-0.8 units. After the second treatment of phosphogypsum 0.2 units of additional acidification occurred. However, acidification was not observed in the soils treated with mixtures of phosphogypsum and compost. In the laboratory experiment, phosphogypsum treatments increased electrical conductivity very significantly. In field experiment, pH and electrical conductivity of soils treated with phosphogypsum were nearly the same as those of soil not treated with phosphogypsum. Since soil condition in the field study was an open system, the free acids and salts derived from phosphogypsum could be diffused down with water leaching through the soil profile and then any significant acidification or salt accumulation in the topsoil could not be observed. In both laboratory and field experiments, levels of available hazardous elements in soils treated with phosphogypsum were quite low and not different from the levels found in the control soil. Results obtained from this study suggest that application of phosphogypsum at appropriate rates on agricultural land appears of no concern in terms of acidity, salinity and hazardous element content of soil.

Corrosion Resistance Characteristics of Cold Rolled Steel by Cr-free Green Organic/Inorganic Hybrid Coating Solution (크롬 프리 친환경 유/무기 하이브리드 코팅액에 의한 냉연강판의 내식특성)

  • In the past, a very popular method for reducing the corrosion on zinc involved the use of chemical conversion layer coatings based on $Cr^{+6}$. However, there is an important problem with using chromium salts as a result of restrictive environmental protection legislation. This study investigated the optimum condition for galvanized steel using an organic/inorganic solution with a Ti composition. In the case of a fixed heat treatment time, the corrosion resistance values of LR-0727(1) and LR-0727(2) were improved as the heat treatment temperature increased, and the optimum minimum temperature decreased with the heat treatment time. At the optimum heat treatment condition of two coating solutions, the heat treatment time of the LR-0727(1) solution was shorter than LR-0727(2) for the same heat treatment temperature. LR-0727(1) coated specimens did not show desquamation, and all of the specimens showed a good adhesive property. In contrast, in the case of the LR-0727(2) coated specimens, desquamation arose. Therefore, the adhesive property of LR-0727(1) was superior to that of LR-0727(2). The pencil hardness had a 3H average for all of the coating solutions and heat treatment conditions. In the case of a corrosion resistance test with boiling water, the coated specimens of LR-0727(1) were discolored, but LR-0727(2) was not. Finally, LR-0727(1) was more moisture proof than LR-0727(2).

Effects of Storage Conditions on Weight Loss and Free Sugar Composition of Fresh Ginseng (보관조건에 따른 수삼의 중량과 유리당 조성 변화)

  • This study was to examine the effect of the opening ratio (area of spile hole/total surface area) of plastic container and storage temperature on physicochemical changes of fresh ginseng. At room temperature ($19\~23^{\circ}C$, RH $40\~61\%$), fungi and spoilage were observed 4 and 10 days, respectively after storing the fresh ginseng in a closed container. In storage container with $1\%$ opening ratio, fungi appeared 8 days after storage. In the container with $5\%$ and $10\%$ opening ratio, fresh ginseng showed excessive loss of moisture on the surface only after 4 days. The weight loss was most remarkable in the container with 5 and $10\%$ opening ratio. Content of maltose and sucrose decreased gradually in accordance with storage time but the extent of decreasing ratio was less significant in the container with lower opening ratio. At low temperature $(4\~9^{\circ}C,\;RH\;72\~92\%)$, no fungi but $10\%$ loss of weight was observed in the container with $5\%$ and $10\%$ opening ratio after 12 days storage. But in the tightly closed container and $1\%$ opening ratio for spiting, fresh ginseng showed good appearance even after 30 days of storage. Free sugars, especially maltose revealed gradual decrease but sucrose gradually increase following decrease at the beginning. This result suggests that storage condition of low temperature and opening ratio of plastic box less than $1\%$ can extend storage span of fresh ginseng significantly.

Studies on the chages in Free Amono Acids of Yellow Corvenia(Pseudosciaena manchurice) during Gulbi processing (굴비제조중 유리아미노산의 변화에 관한 연구)

  • Gulbi were processed by salting Yellow corvenia (Pseudosciaena manchurica) with in three ways: the dry salting method with bar salt, the dry salting method with purified salt or with the abdominal brine injection method with purified salt. The half of the sample was dried by the control system of temperature and humidity; the other part was dried by the natural condition. The moisture content of fresh Yellow corvenia muscle and eggs were 76.8%, and 68.2% while those of dried samples decreased to 57.7% and 45.3%, respectively. The total nitrogen content of fresh muscle and eggs were 11.0g% and 7.6g%, respectively (dry weight basis), which decreased slightly during salting and showed no significant changes during drying prosess. The protein nitrogen content of fresh muscle and eggs were 10.2g% and 7.5g%, which decreased during Gulbi processing. On the other hand, the nonprotein nitrogen content of both muscle and eggs increased. The content of free amino acids of fresh muscle and eggs were 508.8mg/100g and 1,110.6mg/100g, which increased to between 5.3 and 2.7 times, respectively after 25 days of drying. The composition patterns of free amino acids in muscle and eggs were similar to each other. The four amino acids - Ala, Glu, Lys and Leu - were most abundant in both fresh and dried samples. These amino acids are known as taste and flavour constituents.

Chemical Compositions and Antioxidant Activity of Extract from a Extruded White Ginseng (압출성형 백삼추출물의 화학적 조성 및 항산화 활성)

  • Chemical components and antioxidative activities of white ginseng, red ginseng and extruded white ginseng (EWG) were evaluated. Extrusion condition was 20% moisture content, 100 and $140^{\circ}C$ barrel temperature. The results showed that total sugar and acidic polysaccharide contents of white ginseng powder were increased after extrusion treatment of which EWG at $140^{\circ}C$ barrel temperature had higher value than EWG at $100^{\circ}C$ barrel temperature. Free radical scavenging activity of EWG at $140^{\circ}C$ barrel temperature was 80.2 and 45.6% respectively. The butanol fraction of polyphenolic compound and acidic polysaccharide were $27.2{\pm}0.1\;mg/g$ and $217.6{\pm}0.7\;mg/g$, respectively. The ginsenosides were quantified by HPLC and the yield of ginsenoside-Rg3s and Rg3r were achieved by extrusion process.

Effect of Variety and Stage of Maturity on Nutritive Value of Whole Crop Rice, Yield, Botanical Fractions, Silage Fermentability and Chemical Composition

  • The effect of eight varieties of grain and forage type whole crop rice (Oryza sativa L Japonica) each harvested at four stages of maturity were investigated for morphology and yield, proportion of botanical fractions, fermentatability and chemical composition in an $8{\times}4$ factorial experiment. All crops were sown in 1997 at Saitama Prefecture, Japan under identical condition and harvested on 10, 22, 34 and 45 days after flowering in 1998. Total DM yield of forage type varieties was similar to that of the highest yield of grain type varieties. However, while yield of forage type varieties was attributed to higher proportion of straw than head, the reverse was in the case of grain type varieties. Yield in line with the proportion of head increased (p<0.001), but in contrast proportion of straw decreased (p<0.001) with the increase in maturity. Silage fermentability of grain type varieties was better than forage type varieties. Fermentability improved with the increase (p<0.001) in maturity suggesting that the moisture content should be reduced to improve fermentation quality. Forage type varieties contained higher (p<0.001) ash, crude fat (EE), organic cell wall (OCW) and acid detergent fiber (ADF), but contained lower crude protein (CP), organic cell content (OCC), CP in OCC and nitrogen-free cell wall extract (NCWFE) than the grain type varieties. The ash, CP, EE, Oa (60% digestible OCW), Ob (40% digestible OCW), OCW, ADF and acid detergent lignin (ADL) decreased (p<0.001), but OCC and NCWFE increased (p<0.001) with the increase in maturity. It is concluded that stage of maturity not only increases yield and proportion of head, but also improved the fermentation quality and increases quality chemical composition (except CP) of whole crop rice. Forage type varieties may be as good as grain type varieties in terms of yield, but fermentation quality and chemical composition may not be as good as that of grain type varieties.

Study on the Nutrition Composition of Hydroponic Water Dropwort (수경미나리의 영양성분 분석에 관한 연구)

  • This study was conducted to investigate the nutrient composition of hydroponic water dropwort and the effect of blanching condition on ascorbic acid content. Nutrient composition of hydroponic water dropwort of mid harvest on the 30th day was measured in three portions of leaves, petioles and stems, and was compared with that of late harvest on the 40th day. Hydroponic water dropwort was obtained from the Department of Horticultural Science, Seoul National University. The results were as follows. The nutrients content of leaves were significantly higher in ash and ascorbic acid and lower in moisture, crude fat and crude fiber than those of stems and petioles. There was no significant difference in total vitamin A and thiamin contents between three portions. Ascorbic acid content of leaves harvested on the 30th day was the highest, 57mg/100g, and decreased to 18mg/100g in the leaves harvested on the 40th day. Marked increase in crude fiber and vitamin A content of leaves was observed in late harvest may be due to the maturation. The results of nutrient composition analysis suggest that the leaves of hydroponic water dropwort is important in ascorbic acid and ash. It is recommended that shorter blanching time and addition of 0.5% NaCl to the blanching water are better for higher ascorbic acid retention of hydroponic water dropwort. In conclusion, as hydroponic water dropwort has high content in ash, calcium, vitamin and free sugar with alkalinity, leaves as well as stems and petioles can be recommonded as a vegetable of high nutritional quality.
