The purpose of this study was to examine the effect of different types of frying oil on the quality of yakgwa such as expansion rate, color, moisture content and rheological properties. Yakgwa fried with corn oil showed the highest expansion in width and length, and rice bran oil in height. With regard to the overall expansion rate, yakgwa fried with rice bran had the highest value. As for lightness and yellowness, yakgwa fried with soybean oil had the highest lightness (34.74), while yakgwa fried with grape seed oil had the lowest lightness (29.82). As for redness, however, no significant difference was found. Regarding fat content, yakgwa fried with rice bran oil showed the highest value with 18.91%, while yakgwa fried with corn oil and canola oil showed the lowest value. No difference was found in moisture content according to the type of frying oil. In relation to the acid value, yagkwa with soybean oil showed the lowest value of $0.24{\pm}0.66$; as for peroxide value, yagkwa fried with rice bran oil showed the lowest value of $3.59{\pm}1.74meq/kg$. No difference was found in hardness, cohesiveness and resilience according to the type of frying oil. Yagkwa fried with corn oil and canola oil showed the lowest value in terms of adhesiveness and chewiness, respectively. The results of the sensory evaluation showed not significance difference in overall preference, but yakgwa fried with rice bran oil had the highest value of $5.93{\pm}1.87$.
Dryers becoming commercially available for experimental and industrial use are classified to general drying oven, hot-air dryer, vacuum dryer, freezing dryer, etc. and kinds of them are various from the function, size and volume, etc. But the moisture measurement is not applied although it is important factor for the quality control and the performance improvement of products, and then now is very passive because the weight is weighed arbitrarily after dry-end. Generally the method for measuring moisture is divided by a direct measurement method and a indirect measurement method, and the former such as the change of weight or volume on the front and rear of separation of moisture, etc. is mainly used. Relatively a indirect measurement is very limited to apply due to utilize measurement apparatuses using temperature conductivity and micro-wave etc. In this research, we easily designed the moisture measurement system using the open-source based Arduino, and monitored moisture fluctuations and weight profiles in the real-time without the effect of external environment. Concretely the temperature-humidity and load cell sensors were packaged into a drying oven and the various change values were measured, and their sensors capable to operate 60℃ and 80℃ were selected to suitable for the moisture sensitive materials and the food dry. And also the performance safety using the organic samples of banana, pear, sawdust could be secured because the changes of evaporation rate as the dry time and temperature, and the measurement values of load cell appeared stable response characteristics through repeated experiments. Hereafter we judge that the reliability can be improved increasingly through the expansion of temperature-humidity range and the comparative analysis with CFD(Computational Fluid Dynamics) program.
Ginseng Is renowned for both its medicinal and herbal uses and successful cultivation of Panax ginseng in Asia and Panax quinquefolium in North America has until recently taken place in the native geographical ranges of the plants. As a consequence of the potential high capital return and anticipated increases in consumer consumption, commercial cultivation of American ginseng now occurs well outside the native range of the plant in North America. In fact, the region of greatest expansion of cultivation is in the semi-arid interior region of British Columbia, Canada. Linked with this expansion is the potential domination of the ginseng industry by agricultural corporations. In the interior of British Columbia, the native deciduous forest environment of eastern North America is simulated with elevated polypropylene shade and a surface covering of straw mulch. The architecture of these environments is designed to permit maximum machinery usage and to minimize labor requirements. Further, with only a four- years growth cycle, plant densities in the gardens are high. In this hot, semi-arid environment, producers believe they have a competitive advantage over other regions in North America because of the low precipitation rates. This helps to minimize atmospheric humidity such that the conditions for fungal disease development are reduced. If soil moisture level become limited, supplemental water can be provided by irrigation. The nature of the radiation and energy balance regimes of the shade and many environments promotes high soil moisture levels. Also, the modified environment redlines soil heating. This can result in an aerial environment for the plant that is stressful and a rooting zone environment that is suloptimal. The challenge of further refining the man modified environment for enhanced plant growth and health still remains. Keywords Panax ginseng, Panax quinquefolium, cultivation, ginseng production.
This study is conducted to investigate the possibility of the utilization of the mixed soil formed by mixing stone sludge, bentonite, and residual soil as a soil sealant sustaining both stability and capacity in the barrier system. A series of tests were performed on the mixed soils to evaluate basic properties such as compaction, compressive strength, permeability and CBR of these materials. The results indicates that as the stone sludge content increases, the optimum moisture content increases a little, but the maximum dry density decreases. The compressive strength and CBR decrease, and the cohesion, internal friction angle and expansion ratio increase. When the bentonite content increases, the maximum dry density decreases, and the optimum moisture content, compressive strength and cohesion, internal friction angle, CBR and expansion ratio increase. Mixing ratio of the mixed soil contained with the stone dust more than 10% and the bentonite less than 10% satisfies the standard of the permeability coefficient as the soil sealant.

Styrofoam as shock-absorbing materials for packaging has been regarded as one of non-biodegradable products leading to soil contamination at a landfill and release of dioxine during its incineration. For avoiding severe burdens on our environments by styrofoam, it must be replaced by environment-friendly materials. In order to evaluate availability of pulp fibers as a substitute for styrofoam, various extrusion processes were applied for making optimal biodegradable products. Then thermomechanical pulp fibers made of Pinus radiata and Pinus rigida were uniformly mixed with other additives such as starch and polyvinyl alcohol prior to expansion. The physical properties of the final products were examined by measuring expansion efficiency, compression strength, and elastic modulus. Wheat starch played a key role to maintain optimal flowing conditions within the barrel of the extruder irrespective of addition of soluble starch and polyvinyl alcohol. However, as the amounts of wheat starch in raw-materials increased, the elastic modulus of the expanded materials greatly increased. High elastic modulus is not suitable as shock-absorbing products for packaging. Thus the wheat starch must be added at a minimum if possible, that is, below 20% based on oven-dried weight of pulp fibers. the elastic modulus of the expanded products was decreased as their moisture contents increased. For the products containing 20% wheat starch, the lowest elastic modulus, 844.64 kPa was obtained under 10% of the moisture content. This was similar to that of styrofoam.
This study was conducted to preserve the quality of Gangjung (Traditional Korean cookies) during storage with the addition of sorbitol in Gangjung dough. Sorbitol was added with different levels (0, 1.5, 3%) in the Gangjung dough and the Gangjung samples were stored for different periods (1, 16, and 31 days). Compared to the control group, the Gangjung samples with sorbitol groups had higher moisture content, expansion ratio, and ceil size. As the storage was extended, peroxide values, hardness, fracturability, chewiness and stickiness to teeth were increased, while cohesiveness, moistness, and degree of melting were decreased. From the PCA in the sensory analysis, Gangjung with addition of 3% sorbitol stored for 1, 16, and 31 days showed high levels in moistness, cohesiveness, degree of expansion, cell size, and degree of melting, whiie Gangjung in control group stored for 16 and 31 days showed high levels in fracturability, heated oil flavor, chewiness, and stickiness to teeth. The moisture content of Gangjung was significantly increased as the level of sorbitol was increased. The changes of physicochemical and sensory characteristics by storage were increased in control groups the most, 1.5% sorbitol groups the next, and 3% sorbitol groups the least. Therefore, the sorbitol added groups could be delayed in the quality deterioration during storage, especially in the texture, and could be increased in the preservation of Gangjung.
The purpose of this study is to provide the basic guidelines of spatial and physical environment for the planning and design of clinical laboratory by analysing the extent of satisfaction of clinical laboratory scientists. The data for this analysis was gathered from March to May 2005 by the questionnaires of 208 clinical laboratory scientists who work in the 13 hospitals. All the collected data was analyzed by the SPSSWIN program. In this study, the satisfaction measurement tool was composed with 8 items and 5 score scale. The mean score of satisfaction for spatial and physical environment was 2.89 out of 5.0, "noise" was the lowest 2.40, "temperature and moisture of the lab." was 2.72, "lab. area, service area and administration area" was 2.77, "passageway space" was 2.94, circulation of workers was 2.94, "color of finish" was 3.19, "lighting of lab." was the highest 3.39. In conclusion, various factors, noise, temperature and moisture, clinical lab area, were evaluated to moderate dissatisfaction. Noise was especially the first serious problem in clinical lab. Considering the high growth of the number of tests, the planning of the clinical laboratory size should be considered not only to provide the optimal size but how it will correspond to the growth of the number of tests. Therefore the arrangement of each section need to be flexible in arrangement which is inevitable in expansion and reconstruction in the future.
This study added black lentil ethanol extract to Yakgwa at ratios of 0%, 0.5%, 1.0%, and 2.0%, and its quality characteristics were compared to those of the synthetic antioxidant BHT added to Yakgwa. Yakgwa with black lentil extract had lower moisture content than Yakgwa with BHT (3.98%) but higher content than the control group (5.72%). Higher black lentil extract resulted in less moisture content (p<0.001) as well as a faster expansion rate and oil absorption rate (p<0.001). Scanning Electron Microscopy (SEM) showed that as black lentil extract content increased, pores merged and collapsed, whereas the number of pores decreased and pore size became larger. For chromaticity, all L, a, and b values of the group containing black lentil extract were higher compared to the control group and group with BHT (p<0.001). For texture, as amount of added black lentil extract increased, hardness (p<0.001) and gumminess (p<0.01) increased while cohesiveness (p<0.01) decreased compared to the control group. For sensory characteristics, Yakgwa with 1.0% black lentil extract showed the best preference for all items except for off-flavor. Thus, 1.0% black lentil added to Yakgwa was the best in terms of functionality including preference.

This study investigated about how much the limestone's volume was changed as time passed while maintaining a certain level of moisture condition in the limestone material for concrete under high temperature. The result is summarized as follows: It was appeared that the limestone material under high temperature emitted some CO2 resulting from the decarboxylation, so that as the heating temperature was increased, the limestone's length change rate was decreased. In the leave time change after heating the stone, the both conditions of 50% and 100% made the limestone create Ca(OH)2 using some H2O. So it was appeared that as time passed, the limestone's length change rate first increased because of its volume expansion, but the rate was reduced after the limestone material was crumbled.
This study was conducted to investigate the quality characteristics of bread added with four different amounts (0% 3%, 6%, 9%, 12%) of gochujang. The pH, total soluble solid and moisture content of bread added with gochujang were $4.88{\pm}0.05$, $62.00{\pm}0.81%$ and $42.88{\pm}007$, respectively. For amino nitrogen content $224.00{\pm}0.00%$, chromaticity had a L value of $24.46{\pm}0.06$, a value of $10.18{\pm}0.13$, and b value of $7.44{\pm}0.10$. The pH of bread decreased with increasing gochujang content in bread. Total soluble solids of dough increased with increasing gochujang in bread (p<0.001). For fermentation 3% expansion was the highest, and bread volume and specific volume increased with increasing gochujang in bread. For baking loss, 12% was the highest. L values of bread decreased for both crust and crumb with increasing gochujang content in bread, and b values tended to decrease for both. Moisture contents increased with increasing gochujang content (p<0.001). For hardness, cohesiveness, springiness, and gumminess, chewiness of 12% gochujang added to bread showed the lowest value. Evaluation of sensory characteristics of 3% gochujang added to bread was the best. In conclusion, these results confirm that bread with gochujang has good effects on fermentation and preference.
