식품분진의 폭발 특성과 발화온도에 관한 연구 (A study on the explosion properties and Autoignition Temperature of a food additive Dusts)

  • A study for the dangerous properties measurment of dust explosion was attended by the various dust concentration on Anthraquinone, Sodiumbenzoic acid, Corn starch, soy sauce powder, and cheese powder. As the result, maximum explosion pressure, the maximum rate of pressure rise, autoigntion temperature, and the water content of dust on lower limit explosion concentration was obtained as follows 1. The lower limit explosion concentration on soy sauce powder with the humidity of 65 to 90% increased by increasing the con tent of moisture, and the effect of dry air and moisture air decreased better in make of dry air. 2. The effect of a various dust concentration on autoigntion temperatures is investigated, If the vessel of dust explosion is small size and the easiness of autoignition was controled by air within the vessel, because it was better decreased air with increasing of dust concentration 3. The maximum explosion pressures of Anthraguinone, sodiumbenzoic acid, com starch, soy sauce powder, and cheese powder were 1.0g/$\ell$, 1.0g/$\ell$, 1.5g/$\ell$, 1.5g/$\ell$, and 1.5g/$\ell$, respectively, and the maximum rate of pressure rise were 0.5g/$\ell$, 0.5g/$\ell$, 1.0g/$\ell$, 1.0g/$\ell$, and 1.0g/$\ell$, respectively.

쌀가루 첨가 어묵의 품질 특성에 관한 연구 (A Study on the Quality Characteristics of Fish Cakes Containing Rice Flour)

  • To encourage rice consumption, this study investigated the quality characteristics of fish cakes containing four different amounts (0%: control, 50%, 75%, 100%) of rice flour. The moisture and pH of fish cake dough and fat contents, color values, folding score, texture profiles and consumer acceptability of fried fish cakes containing rice flour were measured. There were no significant difference on moisture and pH of fish cake dough containing rice flour. There was significant decrease in terms of fat contents, folding score of the fish cakes with increasing rice flour(p<.05). While a and b values were increased, L value decreased significantly, as the ratio of rice flour increased(p<.05). Hardness, cohesiveness, gumminess and chewiness of fish cakes with rice flour decreased significantly (p<.05), but no significant difference in springiness. There were no significant differences in overall acceptance, appearance, flavor, color and taste between the control group and treatment groups(p<.05). Texture was decreased significantly as the rice flour increased(p<.05). This study suggests that adding fifty percent rice flour to fish cakes could be a good way to increasing rice flour without decreasing texture acceptability.

뽕잎분말 첨가 비율에 따른 인절미의 품질특성 (Quality Characteristics of Injeulmi Made with Different Ratios of Mulberry Leaf Powder)

  • This study investigated the quality characteristics of Pongnip Injeulmi samples according to different mulberry leaf powder(MLP) contents. The moisture levels of the samples ranged from 47.43 to 49.16%, with the 0% MLP sample presenting the highest moisture level. The amounts of crude protein, crude fat, and crude ash in samples were in ranges of 3.82${\sim}$5.01%, 0.05${\sim}$0.2%, and 0.65${\sim}$1.62%, respectively, and the values increased with increasing MLP content. Color L and b values decreased, while the a-value increased, with increasing MLP content. The 0% sample showed the highest gelatinization temperature of 63.4$^{\circ}$C, and the viscosity decreased with increasing MLP content. Texture and hardness also decreased with increasing MLP content, however, over 3 days storage, they increased in all samples. Finally, in the sensory tests, the 6% MLP sample received the highest scores for color, flavor, sweetness, texture and overall acceptability.

폐 열가소성 플라스틱 탄성체 분쇄물의 자연발화가능성에 관한 연구 (A Study on the Spontaneous Ignition Possibility of Shredded Waste Thermoplastic Elastomer)

  • In this study, we considered the ignition possibility for the shredded thermoplastic elastomer at the fire ground loaded the waste TPE. The average moisture content of the TPE sample was almost 0.33 wt.% at $110^{\circ}C$ and the range of ignition point was $461.9{\sim}491.9^{\circ}C$ approximately. In addition, we analyzed the change of weight and calorie the TPE sample according to temperature variations using the TG-DTA analyzer. As a result, the weight loss occurred twice in $250{\sim}420^{\circ}C$ and $420{\sim}473^{\circ}C$, and we found the second weight loss temperature range was the ignition point of TPE. Also, we conducted the spontaneous ignition tests of TPE for the wet and dry samples and we confirmed that the possibility of spontaneous ignition of TPE was very low. The elapsed time and humidity had little influence on the spontaneous ignition of TPE in this experimental conditions. In conclusion, the spontaneous of the shredded waste TPE in this study.

분리 대두 단백질 첨가에 의한 증편의 이화학적 특성 (Rheological Properties of Jeung-pyun Prepared with SPI(Soybean Protein Isolates))

  • In this study the rheological properties of Jeung-pyun prepared with soybean protein isolate (SPI) were investigated. SPI Jeung-pyun samples were manufactured with 3% whole protein, 7S protein, or 11S protein (w/w). In terms of moisture content the Jeung-pyun samples prepared with soybean flour had greater moisture contents than the control group. With the addition of SPI water binding capacity solubility and swelling power increased. Dough pH decreased during the fermentation, but increased after steaming and the SPI Jeung-pyun samples presented higher pH levels han the control group. Foaming ability was significantly strong in the 7S, 11S and whole protein groups. The surface structures of the 7S, 11S and whole protein Jeung-pyun samples displayed small uniform pores when examined by SEM. Overall, the results suggest that SPI can contribute to quality improvements in Jeung-pyun through effects on dough fermentation.

  • The aim of this research was to determine the relationship between quality of puffer fish and soak time in maturing water. This research used the cutting cranial nerve method, which is called the MSK method. The data was analyzed using the SPSS program. Based on salinity analysis result, both moisture content and pH were measured after 20 min of soaking. As the salinity of the maturing water increased, the moisture content initially decreased then increased once the salinity was greater than 3%. However, the concentration of the maturing water did not influence the pH level. The texture properties were measured to assess the effect of soak time in the maturing water. Hardness of the sample was highest (3.99) at 20 min, and cohesiveness also showed a maximum value (0.26) at 20 min. Gumminess and chewiness were highest 1.04 and 4.09, respectively, when the fish was matured for 20 min. Sensory properties were evaluated, and springiness, umami flavor, texture, and overall preference were highest at 20 min of soak time. The results showed that maturing the puffer fish for 20 min provided the best quality of texture and sensory characteristics for the fish.

고추장을 첨가한 식빵의 품질 특성 (Quality Characteristics of Bread added with Gochujang)

  • This study was conducted to investigate the quality characteristics of bread added with four different amounts (0% 3%, 6%, 9%, 12%) of gochujang. The pH, total soluble solid and moisture content of bread added with gochujang were $4.88{\pm}0.05$, $62.00{\pm}0.81%$ and $42.88{\pm}007$, respectively. For amino nitrogen content $224.00{\pm}0.00%$, chromaticity had a L value of $24.46{\pm}0.06$, a value of $10.18{\pm}0.13$, and b value of $7.44{\pm}0.10$. The pH of bread decreased with increasing gochujang content in bread. Total soluble solids of dough increased with increasing gochujang in bread (p<0.001). For fermentation 3% expansion was the highest, and bread volume and specific volume increased with increasing gochujang in bread. For baking loss, 12% was the highest. L values of bread decreased for both crust and crumb with increasing gochujang content in bread, and b values tended to decrease for both. Moisture contents increased with increasing gochujang content (p<0.001). For hardness, cohesiveness, springiness, and gumminess, chewiness of 12% gochujang added to bread showed the lowest value. Evaluation of sensory characteristics of 3% gochujang added to bread was the best. In conclusion, these results confirm that bread with gochujang has good effects on fermentation and preference.

설탕 대체 감미료로 만든 양갱의 품질 특성 (Quality Characteristics of Yanggeng Made with Various Sweeteners)

  • The effects of sweeteners(fracto-oligosaccharide: xylitol: erythritol: stevioside) as alternative ingredients to sugar on the characteristics of yanggeng were investigated. The relative sweetners of fracto-oligosaccharide, xylitol, erythritol and stevioside to a 25% sugar solution were found to be 25%, 25%, 22.5% and 0.25% respectively. Sensory evaluation to compare yanggeng made using fracto-oligosaccharide, xylitol, erythritol and stevioside to a 100% sugar yanggeng revealed that they differed by 37.5%, 37.5%, 33.75% and 0.75% respectively highlight. The viscosity of yanggeng differed depending on the type of sweetener used. Sugar contents(°Brix) were the highest in sugar. The moisture contents were the highest in yanggeng made with 0.75% stevioside, while the hardness, adhesiveness, chewiness and gumminess were highest in that made with 33.75% erythritol. The springiness was highest in yanggeng made with 37.5% fracto-oligosaccharide, while the cohesiveness was highest in that made with 37.5% xylitol, and the L-values, b-values and a-values were lowest in yanggeng made with 25% sugar. Sensory evaluation, revealed that the overall preference was highest for yanggeng made with 37.5% fracto-oligosaccharide and xylitol.

가염 토마토 분말의 품질특성에 관한 연구 (Quality Characteristics of Salted Tomato Powder)

  • Purpose: This study was conducted to investigate the physical and sensory properties of seasoned powders utilizing tomato. Methods: Tests of salted tomato powder were performed for the physiochemical properties (moisture content, pH value, titratable acidity, color value, salinity content, and solubility content), sensory characteristics and sensory preference. Results: Moisture content of salted tomato powder containing fully ripened tomato (RT) was higher than that of salted tomato powder containing cherry tomato (CT), with the exception of CT 10%. The pH values of RT was relatively high and increased salt addition increased the pH as well. The titratable acidity was opposite the result of pH measurement. The color values of RT was higher than that of CT for the L, a, and b values. The salt content of RT was higher than that of CT. RT 10% showed the highest dissolution followed by CT 10%. In addition, the sensory preference for CT 10% was the highest, with the best scores for appearance and taste. Conclusion: It was concluded that 10% salt addition is the most suitable sensually for the manufacture of salted tomato powder.

크랜베리 분말을 첨가한 파운드케이크의 품질특성 (Quality Characteristics of Pound Cake with Cranberry Powder)

  • This study was investigated cranberry powder substituted for flour in pound cake recipes with the amounts of 0, 4, 7, 10, and 13%. Cranberry powder have of 6.47% of moisture content, 3.38% of crude protein, 4.92% of crude fat and 0.43% of crude ash. No significant difference in weight was found from increased cranberry powder concentration. Volume and specific loaf volume have decreased as the cranberry powder content increased. No significant difference in moisture and brix was found from increased cranberry powder concentration. pH have decreased as the cranberry powder content increased. 'L' and 'b' decreased with an increase in the cranberry powder concentration, but 'a' increased. The texture measurement result showed that the hardness and chewiness of cake have decreased as the cranberry powder content increased. springiness, cohesiveness and adhesiveness showed no significant difference with the increasing amount of caked cranberry. Overall preference scores showed a high overall acceptability for the cake made with 7% cranberry powder.
