'Manmibyeo', a new japonica rice cultivar, is a mid-late maturing ecotype cultivar developed by the rice breeding team of Department of Functional Crop, NICS, RDA in 2002. This cultivar was originated from the cross between 'Milyang 95' and $F_1$ of the cross between 'Bukrukbanna' and 'Milyang 95' in 1990/1991 winter season. It was selected by pedigree breeding method until F6 generation, and a promising line, YR14545-9-2-3-4, was advanced and designated as 'Milyang 162' in 1996. The local adaptability test of 'Milyang 162' was carried out at seven locations during 3 years in 1997, 1998 and 2002. It has about 86cm culm length and is lodging tolerant. This cultivar is susceptible to bacterial blight ($K_1$, $K_2$, $K_3$) and stripe virus, and moderately resistant to leaf blast disease. Milled rice kernels of 'Manmibyeo' is translucent with low amylose content in endosperm, clear in chalkiness and good at eating quality in panel test. The yield potential of 'Manmibyeo' in milled rice was about 4.46 MT/ha at ordinary fertilizer level in local adaptability test. This cultivar would be adaptable to the southern plain of Korea.
A new rice variety 'Jinbo' is a japonica rice (Oryza sativa L.) with good eating quality, lodging tolerance, and resistance to rice stripe virus (RSV) and bacterial blight disease (BB). It was developed by the rice breeding team of Yeongdeog Substation, National Institute of Crop Science (NICS), RDA in 2009. This variety was derived from a cross between 'Yeongdeog26' with good grain quality and wind tolerance and 'Koshihikari' with good eating quality in 1998 summer season. A promising line, YR21324-56-1-1, selected by pedigree breeding method, was designated as the name of 'Yeongdeog45' in 2005. After the local adaptability test was carried out at nine locations from 2006 to 2008, 'Yeongdeog45' was released as the name of 'Jinbo' in 2009. 'Jinbo' has short culm length as 74 cm and medium maturating growth duration. This variety is resistant to $K_1$, $K_2$, and $K_3$ races of bacterial blight and stripe virus and moderately resistant to leaf blast disease with durable resistance, and also it has tolerance to unfavorable environments such as cold and dried wind. 'Jinbo' has translucent and clear milled rice kernel without white core and white belly rice, and good eating quality as a result of panel test. The yield potential of 'Jinbo' in milled rice is about 5.65 MT/ha at ordinary fertilizer level in local adaptability test. This cultivar would be adaptable to middle plain, mid-west costal area, east-south coastal area, and south mid-mountainous area.
A new rice variety 'Haeoreumi' is a japonica rice (Oryza sativa L.) with lodging tolerance, resistance to rice stripe virus (RSV) and bacterial leaf blight (BLB), and high grain quality. It was developed by the rice breeding team of Yeongdeog Substation, National Institute of Crop Science (NICS), RDA in 2008. This variety was derived from a cross between 'Milyang165' with good grain quality and lodging resistance, and 'Haepyeongbyeo' with wind tolerance in winter season of 2000/2001. A promising line, YR22375-B-B-1, selected by pedigree breeding method, was designated as the name of 'Yeongdeog46' in 2005. 'Yeongdeog46' was released as the name of 'Haeoreumi' in 2008 after the local adaptability test that was carried out at nine locations from 2006 to 2008. 'Haeoreumi' has 74 cm short culm length as and medium maturating growth duration. This variety showed resistance to $K_1,\;K_2$, and $K_3$ races of bacterial blight, and stripe virus and moderate resistant to leaf blast disease with durable resistance, and also has tolerance to unfavorable environment such as cold, dry and cold salty wind. 'Haeoreumi' has translucent and clear milled rice kernel without white core and white belly rice, and good eating quality as a result of panel test. The yield potential of 'Haeoreumi' in milled rice is about 5.58MT/ha at ordinary fertilizer level of local adaptability test. This cultivar would be adaptable to Middle plain, mid-west costal area, and east-south coastal area.
A rice (Oryza sativa L.) cultivar of the SPP (stakeholder participatory program) and ordinary rice were characterized based on water-absorption properties and cooked rice texture. During rice soaking, the rice grain transformed from transparent to opaque (white), indicating that water molecules diffused into the rice grain during soaking. In addition, cracks in the internal structure of soaked rice gradually increased with an increase in soaking time. Water absorption increased rapidly up to 20 min, but no increment was observed after 30 min of soaking. At this point, the entire areas of the soaked rice grain turned white, indicating that water absorption had reached saturation. SPP rice showed lower hardness and higher stickiness in its cooked form than ordinary rice, suggesting that SPP rice could be a more preferable choice than ordinary rice. Furthermore, cooked SPP rice was more edible in terms of hardness and stickiness after being kept warm for 12 h than ordinary rice. These results indicated that cooked SPP rice exhibited slow retrogradation and improved taste.
The Korean rice, Nonglim # 6 was milled into brown rice and 92% polished one and packed with the kraft paper bags. The sample, bags were irradiated with the respective doses of 30, 50, 600 and 800 Krad and then were stored at $10^{\circ}C$ and 75% RH. Changes of fat acidity, amylase activity, viscosity of thus irradiated rice were examined during storage. The results were as follows. 1) Fat acidity increased slightly in the range of $30{\sim}50$ Krad but remarkably in the range of $600{\sim}800$ Krad. However, the rate of increase was low in comparison with the storage under the room temperature. 2) The amylase activity of both the low dose lot and the control decreased in the same rate during the storage. However the high dose lot had more remarkable decrease of the amylase activity from the beginning. 3) The viscosity by Brabender amylogram showed the slightly decreasing tendency in both the low $30{\sim}50$ Krad lot and the control lot of the polished rice powder during storage. On the other hand, the high dose lot of 600 or 800 Krad marked the similar decreasing rate but by far the lower values of the viscosity. 4) The results of the organoleptic test presented no differences between the low dose lot and the control lot, but the high dose lot and the control lot differed significantly only in the color.
This study was carried out to investigate optimum application rate with mixed organic fertilizer for chemical fertilizer alternative where the paddy rice (Chucheong) was cultivated in clay loam of paddy field. The mixed organic fertilizer were applied at 0, 50, 100 and 150% levels of recommended nitrogen by soil testing plot compared with plot of chemical fertilizer (nitrogen, phosphate and potash), respectively. The ammonium nitrogen content in paddy soil and surface water of mixed organic fertilizer 100% plot were higher than chemical fertilizer plot. The absorbed amount of nitrogen and nitrogen use efficiency by rice plant in mixed organic fertilizer 100% plot were higher than chemical fertilizer plot. The number of tillers on rice at 30 days and 60 days after transplanting mixed organic fertilizer 100% plot were many more than chemical fertilizer plot. The milled rice yield of mixed organic fertilizer 100% plot was increased by 4% than chemical fertilizer plot. The optimum application rate of mixed organic fertilizer was as follows ; $OAR_{MOF}(Mg\;ha^{-1})=[(NAR_{ST}{\div}NC_{MOF}/1,000{\times}0.93)/1,000]$ ($OAR_{MOF}$ : Optimum application rate of mixed organic fertilizer, NARST : Nitrogen application rate($kg\;ha^{-1}$) by soil testing, $NC_{MOF}$ : Nitrogen content($g\;kg^{-1}$) of mixed organic fertilizer, and $0.93:124.3kg\;ha^{-1}/133.0kg\;ha^{-1}$, respectively).
To develop efficient drying method, one of important process in manufacturing of Saengsik, uncooked food, the change of physicochemical characteristics and functional component contents of cereals dried by various drying methods was investigated. The proximate composition and dietary fiber content of rice, brown rice, glutinous rice and barley showed little changes during hot-air drying (50$\circC$, 55$\circC$, 60$\circC$) and freeze-drying. Yellowness(b) value of hot-air dried products was higher than one of freeze-dried products. The content of niacin was 0.77 mg% in milled rice, 1.84 mg% in brown rice, 0.68 mg% in glutinous rice, 1.00 mg% in barely dried by hot-air at 60$\circC$ and was lower than those of other samples. $\beta$-glucan content in barely was not changed by hot-air drying and freeze-drying method. In conclusion, hot-air drying would be recommended for barley having $\beta$-glucan, a kind of functional components and freeze-drying should be used for raw materials having heat-labile components such as niacin.
In order to analyze the structural factors and milling performance of farmhouse rice milling machines in Korea, this study classified 29 models of the farmhouse rice milling machines sold in Korea into hulling and polishing devices, examined the structural features for each device, and then analyzed the performance factors based on the results. With regard to hulling devices, impeller rotational speed was investigated as a major structural factor. The hulling devices at an impeller rotational speed of 4,800 rpm were most frequently used and accounted for the largest proportion, 65.5%. At this rotational speed, the hulling rate was the highest, 99.45%, and the brown rice cracked rate was the lowest. Thus, the best impeller rotational speed for the hulling performance was analyzed as 4,800 rpm (p<0.05). With regard to polishing devices, rotor speed was investigated as a major structural factor. The polishing devices with a rotor linear velocity of 2 m/s were most commonly used and accounted for the largest proportion, 60.1%. At this linear velocity, the hulling rate was the highest with 75.07%, and the dispassion rate and broken rice rate were the lowest with 0.02 and 7.06%, respectively. Thus, the best rotor linear velocity for the polishing performance was analyzed as 2 m/s (p<0.05).

This study was conducted to identify the optimum nitrogen (N) fertilization at panicle initiation stage on ridge direct seeding on dry paddy of rice. During 1999~2000, a series of experiments was carried out at field (Chonbuk series) of the National Honam Agricultural Experiment Station, RDA using Dongjinbyeo. Plants were taller, and leaf area index and top dry weight increased with more N fertilization at panicle initiation stage. Photosynthetic rate of heading stage was higher at higher amounts of N fertilization at panicle initiation stage, especially in 6 kg/10a compared with 10 kg/10a seeding rate. Lodging index and its related traits did not significantly differ under different rates of N fertilization at panicle initiation stage. N uptake of the rice plant increased as more N fertilization at panicle initiation stage. N use efficiency was highest under the standard topdressing rate at 6 kg/10a seeding rate. Panicle number per m$^2$ increased with more topdressed N, but ripened grain rate and 1,000-grain weight of brown rice did not differ with an increase in topdressed N. Milled rice yield was 6% higher in the 6 kg/10a seeding rate and 13% higher in the 10 kg/10a seeding rate at 50% more topdressed N compared with 4.8 kg/10a N fertilization at panicle initiation stage of 6 kg/10a seeding rate.

The structural properties of cold water extractable ${\alpha}-D-glucan$ in rice flours obtained by various milling methods were investigated. The blue value, ${\lambda}_{max}$ values of the iodine complex and ${\beta}-amylolysis$ limit of the cold water extractable ${\alpha}-D-glucan$ were in the range of $0.026{\sim}0.030,\;518{\sim}522\;nm$ and $52.7{\sim}59.6%$, respectively, indicating these materials were composed mainly of amylopectin-like polymer. The gel chromatography on Sepharose CL-2B indicated that the cold water extractable ${\alpha}-D-glucan$ had lower molecular weight but wider molecular weight distribution than that of the original rice amylopectin. The Sephadex G-50 gel chromatography showed that the unit chain distribution of cold water extratable ${\alpha}-D-glucan$ after debranching with pullulanase was similar to that of rice amylopectin. And the ion chromatography of the distribution pattern of the chain length below D.P.30 in the debranched ${\alpha}-D-glucan$ indicated only blade-milled flour was similar to the amylopectin, but in the amount of unit chain below D.P.10, all the ${\alpha}-D-glucan$ in rice flours was higher than that of amylopectin.
