Use of Fish Oil Nanoencapsulated with Gum Arabic Carrier in Low Fat Probiotic Fermented Milk

  • Fish oil consists of omega-3 fatty acids which play an important role in human health. Its susceptibility to oxidation causes considerable degradation during the processing and storage of food products. Accordingly, encapsulation of this ingredient through freeze drying was studied with the aim of protecting it against environmental conditions. Gum arabic (GA) was used as the wall material for fish oil nanoencapsulation where tween 80 was applied as the emulsifier. A water-in-oil (W/O) emulsion was prepared by sonication, containing 6% fish oil dispersed in aqueous solutions including 20% and 25% total wall material. The emulsion was sonicated at 24 kHz for 120 s. The emulsion was then freeze-dried and the nanocapsules were incorporated into probiotic fermented milk, with the effects of nanocapsules examined on the milk. The results showed that the nanoparticles encapsulated with 25% gum arabic and 4% emulsifier had the highest encapsulation efficiency (EE) (87.17%) and the lowest surface oil (31.66 mg/100 kg). Using nanoencapsulated fish oil in fermented milk significantly (p<0.05) increased the viability of Lactobacillus plantarum as well as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) contents. The fermented milk sample containing fish oil nanoencapsulated with 25% wall material and 4% emulsifier yielded the greatest probiotic bacterial count (8.41 Log CFU/mL) and the lowest peroxide value (0.57 mEq/kg). Moreover, this sample had the highest EPA and DHA contents. Utilizing this nanoencapsulated fish oil did not adversely affect fermented milk overall acceptance. Therefore, it can be used for fortification of low fat probiotic fermented milk.

Effect of Heat-Treat Methods on the Soluble Calcium Levels in the Commercial Milk Products

  • Milk is well known to be rich in some nutrients such as protein, calcium, phosphorus, and vitamins. In particular, absorption and bioavailability of calcium receive lots of attention because calcium is very little absorbed until it is changed to the ionized form in the intestine. In this study, concentration of the soluble calcium was determined in the commercial bovine milk products, which were processed by different heat-treatment methods for pasteurization. As for general constituents, lactose, fat, protein, and mineral were almost same in the liquid milk products by different processors. Ultrafiltration of the skimmed milk caused little change in the permeate as for lactose content but both fat and protein decreased. pH values ranges from 6.57-6.62 at room temperature and slightly increase after centrifugation, 10,000 g, 10 min. Rennet-coagulation activity was the lowest in the ultra high temperature (UHT-)milk compared to the low temperature long time (LTLT-) and high temperature short time (HTST-)milk products. Each bovine milk products contains 1056.5-1111.3 mg/kg of Ca. The content of sulfhydryl group was the lowest in raw milk compared to the commercial products tested. For the skimmed milks after ultrafiltration with a membrane (Mw cut-off, 3 Kd), soluble Ca in the raw milk was highest at 450.2 mg/kg, followed by LTLT-milk 336.4-345.1 mg/kg, HTST-milk 305.5-313.3 mg/kg, UHT-milk 370.3-380.2 mg/kg in the decreasing order. After secondary ultrafiltration with a membrane (Mw cut-off, 1 kD), total calcium in raw milk had a highest of 444.2 mg/kg, and those in the market milk products. As follow: UHT-milk, 371.3 to 378.2 mg/kg; LTLT-milk, 333.3 to 342.2 mg/kg; HTST-milk 301.9 to 311.2 mg/kg in a decreasing order.

Genetic parameters of milk and lactation curve traits of dairy cattle from research farms in Thailand

  • Objective: This study was aimed to estimate the genetic parameters, including genetic and phenotypic correlations, of milk yield, lactation curve traits and milk composition of Thai dairy cattle from three government research farms. Methods: The data of 25,789 test-day milk yield and milk composition records of 1,468 cattle from lactation 1 to 3 of Holstein Friesian (HF) and crossbred HF dairy cattle calved between 1990 and 2015 from three government research farms in Thailand were analysed. 305-day milk yield was estimated by the Wood model and a test interval method. The Wood model was used for estimating cumulative 305-day milk yield, peak milk yield, days to peak milk yield and persistency. Genetic parameters were estimated using linear mixed models with herd, breed group, year and season of calving as fixed effects, and animals linked to a pedigree as random effects, together with a residual error. Univariate models were used to estimate variance components, heritability, estimated breeding values (EBVs) and repeatability of each trait, while pairwise bivariate models were used to estimate covariance components and correlations between traits in the same lactation and in the same trait across lactations. Results: The heritability of 305-day milk yield, peak milk yield and protein percentage have moderate to high estimates ranging from 0.19 to 0.45 while days to peak milk yield, persistency and fat percentage have low heritability ranging from 0.08 to 0.14 in lactation 1 cows. Further, heritability of most traits considered was higher in lactation 1 compared with lactations 2 and 3. For cows in lactation 1, high genetic correlations were found between 305-day milk yield and peak milk yield (0.86±0.07) and days to peak milk yield and persistency (0.99±0.02) while estimates of genetic correlations between the remaining traits were imprecise due to the high standard errors. The genetic correlations within the traits across lactation were high. There was no consistent trend of EBVs for most traits in the first lactation over the study period. Conclusion: Both the Wood model and test interval method can be used for milk yield estimates in these herds. However, the Wood model has advantages over the test interval method as it can be fitted using fewer test-day records and the estimated model parameters can be used to derive estimates of other lactation curve parameters. Milk yield, peak milk yield and protein percentage can be improved by a selection and mating program while days to peak milk yield, persistency and fat percentage can be improved by including into a selection index.

Physicochemical Properties of Reconstituted Milk Made from Freeze-dried Milk Powder or Spray-dried Milk Powder

  • This study was designed to compare the physicochemical and nutritional properties between reconstituted milk samples made from freeze-dried milk powder (FDMP) and spray-dried milk powder (SDMP). Reconstituted milk (87%, wb) was made by combining FDMP or SDMP with water. In the color analysis, the $L^*$, $a^*$ and $b^*$ values of the reconstituted milk samples made from both powders were not significantly different from the control. The thiobarbituric acid values and short-chain free fatty acid concentrations were considerably greater in the reconstituted milk made from SDMP than in the milk made from FDMP. The quantities of water-soluble and fat-soluble vitamins in the reconstituted milk samples made from SDMP were significantly lower than those made from FDMP. Based on the findings obtained in the present study, the reconstituted milk made from FDMP appeared to be more resistant to lipid oxidation and exhibited little changes in the nutrients levels when compared with reconstituted milk made from SDMP.

Colostral milk is some special things for baby newborn, and the other men and women of course. It is low in fat, and high in carbohydrates, protein, and antibodies to help keep your body healthy. Colostral milk is easy to digest, and it is low in volume, but high in concentrated nutrition for the newborn and men and women. 2. Colostral milk provides some of living cells which will defend babies against many harmful agents. The immune factors is much higher in colostral milk than in nature milk. Colostral milk works as a vaccine. It contains some quantities of an antibody called secretory immunoglobulin A Which is a important substance to the baby and men, 3. Colostral milk has a role to play in the baby's gastrointestinal tract. A newborn's intestines are permeable. The colostral milk makes the gastrointestinal tract in general. In addition, colostral milk contains a lot of leukocytes.

Nutrient Contributions of the Five Meal Components in School Lunch: $Entr{\'{e}}e$, Milk, Vegetable/Fruit, Bread/Grain, and Miscellaneous

  • This retrospective study was designed to evaluate the nutrient contributions of the five meal components of school lunch menus planned for elementary students in two school districts (District A and B) in the Midwestern state of the United States. The 4-week cycle menu was planned for two time periods (Period 1 and Period 2) following guidelines for NuMenus and general menu planning principles. Menu components of planned and served menus for two time periods were analyzed using $Nutri-Kids^{TM}$. No significant differences in the nutrient content of between Periods 1 and 2 were found for District A. District B served significantly more vitamin A and total fat in Period 1 and significantly more calories, iron, vitamin A, protein, and total fat in Period 2 than was planned. The major nutrients provided by the entree component included protein, calories, cholesterol, total fat, saturated fat, and sodium. Milk was an important source of calcium and provided approximately one-third of the total protein and vitamin A in the meal. The vegetable/fruit component was the major source of vitamins A and C. The grain/bread component provided approximately 20% of the carbohydrates among five meal components. The miscellaneous component affected the sodium and fat content of the menus. Menu planners can use the results of this study to enhance their knowledge of the nutrient contributions of each meal component and as inputs for planning menus that meet children's nutritional requirements.

Distribution and Content of Geometric Isomers of Conjugated Linoleic Acid in Dairy Foods from the Quebec Province of Canada

  • The distributions and content of geometrical isomers of conjugated linoleic acids (CLA) in dairy foods such as milk, yogurt, and cheese, produced or being sold in the Quebec province of Canada, were investigated by gas chromatographic analysis. The mean contents of total CLA (mg/g fat) were $5.06{\pm}0.74$ in 4 low-fat milk samples, $14.14{\pm}4.95$ in 6 yogurt samples, and $18.22{\pm}7.89$ in 5 natural ripened cheeses. Among the yogurt samples, YY contained the highest content of total CLA ($20.68{\pm}5.17\;mg/g$ fat). Among the cheese samples, Gruyere contained the highest amount of total CLA ($29.86{\pm}0.62$) as well as c-9,t-11 ($22.03{\pm}0.36\;mg/g$ fat), followed by Jarlsberg ($22.76{\pm}0.14$), Provolone ($16.42{\pm}0.52$), Cheddar ($13.83{\pm}0.81$), and Swiss ($8.23{\pm}1.11$). Based on the distribution ratios of CLA isomers in these dairy foods, the c-9,t-11 isomer appeared to be the major CLA isomer in both the low-fat milk ($89.87{\pm}2.39%$) and yogurt ($90.98{\pm}4.42%$). In the cheeses, however, the ratio of c-9,t-11 ($54.86{\pm}13.06%$) was slightly higher than that of c-10,c-12 ($40.81{\pm}13.40%$).

역사적 고찰로 본 우유 음용 및 건강효과 (The Historical Background of Milk and Its Health Effect)

  • Recently some negative opinions on milk, for instance, 'don't drink, if you want to live long' 'people who drink milk life-long, they suffer from arteriosclerosis' or 'milk is not helpful to osteoporosis, because it's acid food' etc. are confusing the regular consumers who believe milk is one of the best food, although milk has been used for a longtime since it was proved as the most nutritionally perfect food by many scientific researchers and medical doctors. According to the contents of negative assertion, experiments were carried out mostly targeting western people who are eating bread with butter everyday and taking large quantity of meat & milk, probably 2~3 times more than asian people. So, the probability of suffering from many diseases like obesity, hypertension, arteriosclerosis etc. is naturally high. Therefore, comparison itself between westerner and asian is not reasonable because of quite different food culture and fat intake far less. Milk has been contributing to the health of human for hundreds years supplying many nutrients, and this kind of contribution will last as long as humankind exist on the earth. However, milk is good source of many functional components, there are some people who can not drink milk. As a nutritionist said, milk is a kind of food, the only problem is quantity, people who can not digest milk can choose another and who want to drink milk, drink it as much as they need. That's all.

Association between SNPs within Prolactin Gene and Milk Performance Traits in Holstein Dairy Cattle

  • Prolactin plays an important role in mammary gland development, milk section initiation and maintenance of lactation, so the bovine prolactin gene is considered as a potential quantitative trait locus affecting milk performance traits in dairy cattle. In this study, to determine the association between prolactin and milk performance traits, the genetic polymorphisms of a part of the prolactin gene were detected in a population of 649 cows of Chinese Holstein Dairy Cattle. Three SNPs in the promoter and one SNP in the intron1 of prolactin were identified, which was A/C (-767), G/T (-485), C/A (-247), and C/T (427), respectively. Statistical results indicated that one of SNP within promote, CHBP2, was significantly associated with milk yield (p<0.01), fat yield (p<0.05), protein yield (p<0.01), and protein percentage (p<0.05). The cows with genotype BB of CHBP2 had significantly higher milk yield (p<0.01), fat yield (p<0.05), and protein yield (p<0.01) than those of cows with genotype AA, while cows with genotype AA showed the highest protein percentage (p<0.05). In addition, based on the nine major haplotypes constructed from the four SNPs, the association analysis between diplotypes and milk performance trait was carried out. Results showed that the least square mean for fat yield of diplotype H2H8 was significantly higher than those of other eleven diplotypes (p<0.05). Our findings implied that CHBP2 and H2H8 of prolactin would be useful genetic markers in selection program on milk performance traits in Holstein Dairy Cattle.

  • 엽농축단백질(葉濃縮蛋白質)(LPC)을 이용해서 인공유(人工乳)를 만들 수 있는 기틀을 마련코저, 엽농축단백질(葉濃縮蛋白質)의 기능적(機能的) 성질(性質)을 milk casein 수준으로 높이기 위해 섬바디(Dystaenia takeshimana Nakai) 잎에서 추출한 chloroplastic protein과 cytoplasmic protein 및 Italian ryegrass(Lolium multiflorum Lamb.)에서 추출(抽出)한 엽농축단백질(葉濃縮蛋白質) 1g당 succinic anhydride 0. 10, 0. 25, 100g씩을 가(加)해 숙시닐화시켜 기능성을 조사한 결과는 다음과 같다. 1. bulk density는 섬바디잎에서 추출한 chloroplastic protein 및 cytoplasmic protein과 Italian ryegrass에서 추출한 LPC가 succinic anhydride의 무처리구에서 높았으며 숙시닐화 시킴으로 감소한 후 숙시닐화가 증가하므로서 bulk density는 어느 정도 증가하는 추세였다. 2. 용해도는 숙시닐화를 시킨 각 구에서는 Italian ryegrass LPC 1g에 succinic anhydride 1g 첨가반응시 섬바디 chloroplastic protein에서는 시료 1g당 succinic anhydride 0.1g이상 첨가반응시 milk casein 보다 용해도가 높은 경향이었다. 3. 흡수도 및 지방흡착에서는 숙시닐화 시킨 것과 시키지 않은 것 모두가 milk casein 보다 높은 경향이었다. 4. 유화능과 유제의 안정성에서는 숙시닐화를 시키지 않은 각(各) LPC가 약간 낮은 반면 숙시닐화 시킴에 따라 milk casein 보다도 높고 점점 증가하는 경향이었다.
