본 연구는 식중독 세균 등 유해미생물에 의한 농산물 오염을 예측하여 대응방안을 마련할 수 있도록 하는데 필요한 모의실험 computing platform을 개발하고자 수행되었다. 농산물 오염은 그 빈도가 매우 낮고, 발생패턴도 극히 불규칙하여 계량적 요소가 많지 않기 때문에 기존의 광범위하게 활용되는 수리모형(Mathematical Modeling)이나 확률통계모형(Probability Statistical Modeling)을 기반으로 한 예측모형은 개발이 어렵다. 이와는 달리 개체기반모형(Agent-based Model)은 목적지향적인 각 개체들이 내재된 특성에 따라 변화하는 환경에서 상황 의존적 또는 자율적 행동을 하였을 때 나타나는 결과를 바탕으로 앞으로의 변화를 예측하는 모형으로 각 개체들에 대한 간단한 행동규칙과 몇 개의 변수를 활용하여 직관적 분석 가능하기 때문에 농산물의 안전성에 영향을 미치는 여러 개체 (농작물, 오염원, 오염매개자)가 상호작용하는 메커니즘을 모의실험하는 경우에 유용하다. 본 연구에서는 Scala와 Java 프로그래밍 언어에 기반을 둔 개체기반모형 개발환경을 지원하는 전용 소프트웨어인 NetLogo를 이용하여 프로그램을 제작하였다. 개발된 모형은 가상의 엽채류 재배지역을 대상으로 가축 또는 야생동물이 출입할 수 있도록 하였고, 이들 동물이 배설하는 분변에 있는 장관유래 식중독 세균에 의해 토양 오염 또는 농작물 오염이 발생될 수 있도록 하였다. 이 오염은 시간이 지남에 따라 점차 소멸되지만 건전한 동물이 오염된 농작물을 섭취하는 경우 다시 동물의 장내로 들어가게 되어 보균 동물이 될 수 있도록 하였고, 역시 이 보균 동물이 배설하는 분변에 식중독 세균이 있도록 설정하였다. 가상 엽채류 재배환경에서 생존하는 식중독 세균은 파리와 같은 위생해충에 의해 다른 곳의 토양이나 농작물에 옮겨질 수 있게 하였다. 작물체는 60일 동안 생장하고, 동물은 개체군의 밀도 증감이 없으며, 파리는 시간이 지남에 따라 개체군 밀도가 변동될 수 있도록 하였다. 동물 개체수, 파리 개체수, 그리고 초기 오염 작물 개체수를 달리하면서 작물체의 미생물 오염을 시뮬레이션한 결과, 다른 요인들 보다는 동물 개체수가 작물체 오염에 가장 큰 영향을 주는 것으로 판단되었다.

Purpose: The inability to adequately judge the efficacy of cleaning and sanitation procedures in deli departments is a recognized food safety concern. In a prior study, our research group demonstrated that visual inspection of cleaned produce processing surfaces could be enhanced through the use of a portable fluorescence imaging device that detected residual produce residues. Methods: To explore the feasibility of using fluorescence imaging to similarly detect residual deli residues, spectra of American, Cheddar, Provolone, and Swiss cheeses and of processed chicken, ham, roast beef, and turkey were acquired using a laboratory hyperspectral imaging system. Circular punches of these commodities were placed onto stainless steel and high density polyethylene coupons for imaging. The coupon materials were selected to represent common surfaces found in deli departments. Results: Analysis of hyperspectral fluorescence images showed that cheeses exhibited peaks in the blue-green region and at around 675 nm. Meats exhibited peaks in the blue-green region with one of four ham and one of four chicken brands exhibiting peaks at around 675 nm, presumably due to use of plant-derived additives. When commodities were intermittently imaged over two weeks, locations of spectral peaks were preserved while intensity of peaks at shorter wavelengths increased with time. Conclusion: These results demonstrate that fluorescence imaging techniques have the potential to enhance surface hygiene inspection in deli departments and, given the immediate availability of imaging results, to help optimize routine cleaning procedures.
Background: Liquid chromatography-tandem mass spectrometry (LC-MSMS) for simultaneous analysis of multiple microbial secondary metabolites (MSMs) is potentially subject to interference by matrix components. Methods: We examined potential matrix effects (MEs) in analyses of 31 MSMs using ultraperformance LC-MSMS. Twenty-one dust aliquots from three buildings (seven aliquots/building) were spiked with seven concentrations of each of the MSMs ($6.2pg/{\mu}l-900pg/{\mu}l$) and then extracted. Another set of 21 aliquots were first extracted and then, the extract was spiked with the same concentrations. We added deepoxy-deoxynivalenol (DOM) to all aliquots as a universal internal standard. Ten microliters of the extract was injected into the ultraperformance LC-MSMS. ME was calculated by subtracting the percentage of the response of analyte in spiked extract to that in neat standard from 100. Spiked extract results were used to create a matrix-matched calibration (MMC) curve for estimating MSM concentration in dust spiked before extraction. Results: Analysis of variance was used to examine effects of compound (MSM), building and concentration on response. MEs (range: 63.4%-99.97%) significantly differed by MSM (p < 0.01) and building (p < 0.05). Mean percent recoveries adjusted with DOM and the MMC method were 246.3% (SD = 226.0) and 86.3% (SD = 70.7), respectively. Conclusion: We found that dust MEs resulted in substantial underestimation in quantifying MSMs and that DOM was not an optimal universal internal standard for the adjustment but that the MMC method resulted in more accurate and precise recovery compared with DOM. More research on adjustment methods for dust MEs in the simultaneous analyses of multiple MSMs using LC-MSMS is warranted.

Capsaicinoids in red pepper powder are known to show anti-bacterial effects; however, their effects during kimchi fermentation are not known. This study aimed to investigate the effects of various concentrations of capsaicinoids on kimchi fermentation. Five sets of kimchi samples were prepared using 0 mg/kg (control), $98.34{\pm}5.34mg/kg$ (mild), $243.47{\pm}3.71mg/kg$ (medium), $428.63{\pm}30.78mg/kg$ (hot), and $1,320.49{\pm}28.27mg/kg$ (extreme) capsaicinoid. The characteristics of each kimchi sample, including pH, acidity, organic acid, sugars, sugar alcohol, capsaicinoid content, and microbial community were periodically investigated during fermentation. Kimchi with red pepper powder shows significantly higher acidity than control kimchi, whereas pH values were the same. Organic acid in kimchi with red pepper powder was higher than in control kimchi, probably caused by higher lactic acid bacteria (LAB) counts in kimchi samples with red pepper powder. Our results show that addition of red pepper powder decreased Leuconostoc spp. counts in the bacterial community. In particular, Lactobacillus sakei and Leuconostoc gelidum counts increased and decreased, respectively, with increasing capsaicinoid content of red pepper powder added to kimchi. Overall, the results of this study indicate that physicochemical properties and LAB such as L. sakei and L. gelidum are influenced by capsaicinoid content. However, further studies are necessary to investigate the effects of the percentage of red pepper powder in kimchi on fermentation to provide practical guidelines for producing standardized kimchi.
Purpose: To investigate the antioxidant, physicochemical sensory, and microbial safety qualities of sunsik containing fermented Curcuma longa L. powder. Methods: Quality characteristics of samples were measured using pH, moisture content, crude ash content, color and sensory evaluation. Antioxidant activities of samples were compared using 2,2-diphenyl-1-picrylhydrazyl (DPPH) radical scavenging and 2,2'-azino-bis (3-ethylbenzothiazoline-6-sulfonic acid)(ABTS) cation radical scavenging activities. Microbial safety of samples were tested for Aerobic plate counts, Salmonella spp., Bacillus cereus, Listeria monocytogenes, Staphylococcus aureus, and Escherichia coli O157:H7. Results: The pH of samples was between pH 5.51 and pH 5.64, which was significantly lower than the optimum microbial living range. The DPPH and ABTS radical activities of sunsik containing 0.8% fermented Curcuma longa L. were significantly increased compared to that of the control (p<0.05). In sensory intensities, sunsik containing 0.8% fermented Curcuma longa L. showed significantly (p<0.05) similar savoy aroma and flavor, spicy aroma, spicy hot flavor, sweet flavor, and throat swallowing values to those of the control samples. Samples of sunsik added 0.8% and 1.2% fermented Curcuma longa L. showed significantly similar overall acceptance values to those of the control. All samples tested were found to free of microbes and microbiologically safe according to the food code standards. Conclusion: The sunsik added with 0.8% or 1.2% fermented Curcuma longa L. powder were successfully developed. we conclude that the developed sunsik with the fermented turmeric powder can be potentially high value products in the highly competitive sunsik food industry.
This research aimed to examine the effects of grapefruit seed extract (GSE) at various concentrations on the microbial safety and physicochemical characteristics of onion puree (0.01~0.1%). The onion puree was kept at 4℃ for 14 days. The results of the study indicated that the addition of GSE did not cause any significant changes in the sample's brix degree and viscosity in onion puree (p<0.05). However, as the concentration of GSE increased, the pH level decreased. On the other hand, as GSE was added, the lightness of the onion puree increased, while the redness and yellowness decreased. Compared to pure onion puree, the GSE-incorporated onion puree had higher levels of total flavonoid and total polyphenol content, indicating that it helps to maintain antioxidant activities. Based on the microbial safety test, aerobic bacteria, yeast, and mold were absent until day 14 of storage. In conclusion, the study suggests that the addition of GSE to onion puree increases its antioxidant activity and shelf-life.
본 연구에서는 단일 시료를 검사하는 식품공전의 방법을 통계적 개념인 n, c, m, M을 도입하여 국제기준에 발맞춘 시스템을 확립하고자 식품 중 미생물 오염실태 조사 및 기준 규격 재평가를 실시하였다. 즉석섭취 편의식품류에 대한 미생물의 오염도 조사를 위한 모니터링을 실시하였으며, 이를 바탕으로 통계적 개념을 도입하여 새로운 기준 규격을 마련하고자 하였다. 즉석섭취 편의식품류 총 2,040건(즉석섭취식품 630건, 즉석조리식품1,020건, 신선편의식품390건)을 구입하여 일반세균수, 대장균군, E. coli, B. cereus, S. aureus, C. perfringens 에 대한 모니터링을 진행하였다. 즉석섭취 편의식품류의 일반세균수는 평균 2.10 log CFU/g, 대장균군은 평균 -0.60 log CFU/g, E.coli은 평균 -1.33 log CFU/g, B.cereus은 평균 -1.23 log CFU/g으로 검출되었으며, S.aureus은 신선편의식품에서만 평균 -1.35 log CFU/g, C. perfringens은 즉석조리식품에서만 평균 -1.37 log CFU/g 검출되었다. 일반세균수, B. cereus, S. aureus, C. perfringens은 현 기준규격을 초과하지 않은 것으로 나타났으나, 신선편의식품에 한하여 E. coli 는 34건이 식품기준 및 규격을 초과 하였다. 즉석섭취 편의식품류의 모니터링 결과를 바탕으로 Newsamplesplan 2 프로그램을 활용하여 이론적 규격을 도출하였다. 오염 분포도가 넓어 사실상 규격 마련의 실효성이 없는 것으로 파악되었고, 대장균은 즉석섭취식품 및 즉석조리식품에서 n=5 c=1 m=0 M=10으로, 신선편의식품에서는 n=5 c=1 m=10 M=100으로 이론적 규격이 필요할 것으로 판단된다.
최근 국내에서는 Escherichia coli O157:H7, Listeria monocytogenes등의 미생물에 대한 건강위해성이 강조되면서 미생물 위해성평가에 대한 필요성이 제기되고 있고, U.S.FPA, U.S.DA, FAO/WHO를 비롯한 국제기구 및 외국 유관기관들에서도 미생물 위해성평가 방법을 식품관리에 활용하고자 방법론 연구에 주력하고 있다. 미생물 위험성은 화학물질과 달리 인체건강에 대한 영향이 즉각적이고, 심각하게 나타나 정량적인 위해성평가가 용이하지 않고 유해화학물질과는 다른 평가방법이 요구된다. 식품중 미생물의 위해성평가는 크게 4단계로 구분되는데, 미생물관련질환 추세파악 및 미생물 관련질병에 관한 역학조사 등을 활용하는 위험성확인 단계와 실제 식품원료, 식품가공, 수송, 포장단계 중 식품의 물리적, 화학적 조건에 따른 미생물 변화를 고려하여 식품중 미생물에 대한 노출을 정량화하는 노출평가 단계, 미생물의 용량에 따른 질병발생에 근거하여 용량-반응관계를 규명하는 용량-반응평가 단계, 규명된 모델을 활용하여 모든 평가결과를 통합함으로 위해 도치 예측과 불확실성 분석 등을 수행하는 위해도결정단계로 구성되어 있다. 미생물 용량-반응평가는 크게 비역치(Nonthreshold)와 역치(Threshold) 평가 방법론으로 구분되는데, 비역치 평가방법론은 단일 병원균이 감염을 일으킬 수 있다는 것과 감염을 일으킬 수 있는 확률이 독립적이라는 가정을 전제로 하고, 역치평가방법론은 미생물이 감염을 일으키기 위해서 각기 개별 역치가 존재하는데 어느 정도의 미생물수가 모여 서로 작용해야 독성유발물질을 만들어 낸다는 가정을 전제로 한다. 현재 받아들여지고 있는 비역치 모델로는 Exponential, Beta-poisson, Gompertz, Gamma-weibull 모델 등이 있으며, 역치모델로는 Log-normal, Log-logistic모델 등이 있다. 본 연구에서는 인체 volunteer자료를 활용하여 용량-반응자료를 입력하고 용량-반응자료를 토대로 적합한 수학적 모델을 찾아내어, 선별한 모델의 적합도 검정을 실시하는 방법론 연구를 실시하였으며, 노출평가 자료와 용량-반응평가 결과를 연계하여 위해도를 결정하는 과정에 대해 연구하였다 이 밖에도 모델(Food MicroModel)을 이용하여 식품의 염도, 수분활성도, 온도, pH등의 조건에 따른 미생물의 성장률, 사멸률 등 변화를 예측할 수 있는 방법론 연구를 통해 식품의 최적 보관 조건등을 찾아내는 방법을 습득하였다. 미생물 위해성평가는 외국에서도 아직 초기 연구단계에 있으며 현재로서 사후조사자료인 역학자료보다 건강한 성인남자를 대상으로 한 volunteer 자료를 우선적으로 활용하고 있으나 노약자나 민감그룹에 대한 실험은 현실적으로 불가능하여 동물실험을 이용한 평가방법을 연구중에 있다. 추후 연구방향으로는 국내 volunteer들을 대상으로 한 미생물별 용량-반응결과를 토대로 population sensitivity를 비교할 수 있는 기초자료를 확보함으로써 미생물에 대한 인구집단의 반응 민감성 차이를 비교하고 시료채취 후 즉각적인 실험실적 분석이 가능토록하여 정확한 인체노출평가를 수행함으로써 미생물 위해성평가방법론을 식품미생물관리에 적용하는 것이다.
Despite the great importance of chemical insecticides, with the ever increasing resistance of pest insects to chemical insecticides and the growing concern over environmental pollution, it becomes evident that the problem of pest attack on crops cannot be solved by anyone system. Under these circumstances, main pathogens of insects, i.e., viruses, bacteria, fungi and protozoa, have been studied to control many insect pests. Some of these pathogens are now being produced as microbial insecticides at the rate of hundreds of tons per year in the world. Some microbial insecticides are very effective against numerous or target insects under suitable environmental condition, and microbial control has been played an important role in integrated control program. They have many unique properties such as selectivity, multiplication and harmless to higher animals. However, we must be aware also that there are many problems to be solved, such as safety, persistence and difficulty of efficacy, etc_ on the microbial insecticides.
In this study, the effect of gamma irradiation on the microbial contamination and biological activities of tuna cooking juices was investigated. Tuna cooking juice was by-produced during the canning processing, and had various functional components. But, it was shown that the tuna cooking juice was seriously contaminated. Gamma irradiation effectively reduced the microbial population in tuna cooking juice. Also, 1,1-diphenyl-2-picryl-hydrazyl (DPPH) radical scavenging activity, tyrosinse inhibitory activity, and ACE inhibitory activity of tuna cooking juices were all increased as a result of gamma irradiation. These results suggest that wasted tuna cooking juices can be used as a functional component in the food and cosmetic industries if the irradiation technology were applied.

② 상기 이용제한 규정에 따라 서비스를 이용하는 회원에게 서비스 이용에 대하여 별도 공지 없이 서비스 이용의
일시정지, 이용계약 해지 할 수 있습니다.
제 17 조 (전자우편주소 수집 금지)
회원은 전자우편주소 추출기 등을 이용하여 전자우편주소를 수집 또는 제3자에게 제공할 수 없습니다.
제 6 장 손해배상 및 기타사항
제 18 조 (손해배상)
당 사이트는 무료로 제공되는 서비스와 관련하여 회원에게 어떠한 손해가 발생하더라도 당 사이트가 고의 또는 과실로 인한 손해발생을 제외하고는 이에 대하여 책임을 부담하지 아니합니다.
제 19 조 (관할 법원)
서비스 이용으로 발생한 분쟁에 대해 소송이 제기되는 경우 민사 소송법상의 관할 법원에 제기합니다.
[부 칙]
1. (시행일) 이 약관은 2016년 9월 5일부터 적용되며, 종전 약관은 본 약관으로 대체되며, 개정된 약관의 적용일 이전 가입자도 개정된 약관의 적용을 받습니다.
