A Study on Mineral Content in Processed Foods (가공식품의 무기질 함량에 관한 연구)

  • We analysed 398 kinds of processed foods sold on market - 43 kinds of ramyun, 67 kinds of bread, 104 kinds of cookies, 5 kinds of pizza, 28 kinds of sausage, 31 kinds of steamed fish cake, 4 kinds of tomato ketchup, 30 kinds of canned goods, 82 kinds of beverage and 4 kinds of danmoogi- to know mineral content such as p, Ca, Mg, Na and K. We used atomic absorption spectrophotometry for this study and the results were as follows; 1) P content was 204.24mg% in sausages, 101.80mg% in pizza, 671mg% in canned fish, 44.50mg in canned vegetable, 38.62 mg% in ramyun and 32.10mg% in steamed fish cake. Sausage had the highest P content showing almost 6 times as much as steamed fish cake. There was little difference between ramyun and steamed fish cake. 2) Ca content was 115.00 mg% in pizza, 106.94 mg% in steamed fish cake, 100.59 mg% in sausage, 91.25 mg% in canned vegetable, 79.84 mg% in bread and 78.97 mg% in ramyun, 3) Mg content was 555.16 mg% in steamed fish cake, 476.14 mg% in cookies, 436.75mg% in ketchup, 394.00mg% in canned vegetables 346.95mg% in ramyun and 341.40mg% in canned fish. Steamed fish cake was highest in Mg content and there was little difference between ramyun and canned fish. 4) Na content was 730.49mg% in ramyun, 680.25 mg% in danmoogi, 548.43 mg% sausage, 463.50mg% in canned vegetable, 449.25 mg% in ketchup, 401.29 mg% in steamed fish cake and 366.00 mg% in pizza. Ramyun had the highest Na content 5) K content was 302.30 mg% in pizza, 280.25 mg% in ketchup, 219.68 mg% in sausage, 219.2 mg% in canned fish, 183.75 mg% in canned vegetable, 166.49 mg% in ramyun and 122.77 mg% in cookies. Pizza had the highest K content.

Studies on the Mineral Content of Edible Mushrooms (식용 버섯류의 무기물 함량)

  • To investigate on the trace element content of twelve edible mushrooms and Aloe arborescens, i. e., Lentinus edodes, Ganoderma lucidum (culturing in wood and soil), Tricholoma matsutake, Agaricus bisporus, Cyrophora esculenta, Auricularia auricula-Jude (produced in Korea and China), Sarcodon asparatus, Pleurotus ostreatus, Coriolus versicolor, Smilax rotundifolia and Aloe arborescerts were analyzed by Atomic absorption spectrometer. The obtained results were summerized as follows: 1. Potassium, sodium, magnesium and iron content for the most part samples were in large quantities, especially phosphorus content of those was highest ammount for the all samples. 2. Sodium content was much ammount in the Lentinus edodes (39mg) and Ganoderma lucidurn (20 mg), Culturing in wood and soil, while potassium was very high ammount in the Aloe arborescens and other samples. Mush ammount of magnesium as compared with others was Lentinus edodes (144mg), Ganoderma lucidurn (128mg), Aloe arborescerts (50mg) and pleurotus ostreatus (60mg). Phosphorus content of Ganoderma lucidurn, Lentinus edodes, Gyrophora esculenta, Auricularia polytricha and Agaricus bisporus was much ammount while iron content of all samples equality higher ammount. Sodium content of Aloe arborescens was not analyzed out for almost all, its potassium (82mg), magnesium (50mg) and iron (18rng) content comparatively higher quentity than others minerals and phosphorus volume (4.9mg) as compared with others, was conspicuously lower detect. 4. Cadimium and lead content of harmful metal element were detected on trace quentity for the most part samples 5. Organic acids of samples i.e., Legtinus edodes, Agaricus bisporus, Pleurotus ostreatus and Ganoderma lucidum were Citrate, Malate, Fumalate, Succinate, Oxalate, Acetate, Lactate, and Tartarate and Citrate, Malate and Fumarate contents were higher amount remarkbly than other organic acids. Tartarate content was trace amount.

Changes of Phytic acid and Minerals by Heat Treatment in Korean Soybeans (한국산 대두의 열처리에 의한 피트산과 무기성분의 함량변화)

  • In this study, effect of heat treatment on phytic acid, phosphorus compounds, and minerals in Korean soybean varieties was investigated. Results were summarized as follwo: 1. In the soybeans tested, protein content ranged from 34.6 to 44.6%, lipid content from 15.4 to 20.2%, fiber content from 4.8 to 6.1% and ash content from 4.5 to 5.9%. 2. Content range for phytic acid in soybean varieties was 1,300 to 1,542mg/100g and its mean was measured 1,392mg/100g. With increasing of the temperature, the phytic acid tends to be destroyed, especially at 6$0^{\circ}C$ the loss was averaged about 20%. 3. Total phosphorus content in soybean ranged from 607 to 681mg/100g and the decending order of phosphors content in soybean varieties was Millyang > Hwangkeum > Kwangkyo > Danyoup > Hill > Jangyoup. It was also destroyed with increasing temperature. 4. Phytate phosphorus content range in soybean was from 315.6 to 318.0mg/100g and decreased with increasing temperature. 5. Inorganic phosphorus content ranged from 95.5 to 110.0mg/100g and it was increased by temperature rising among soybean varieties. 6. Phytate phosphorus to total phosphorus ratio ranged from 5.2 to 5.7 and decreased by temperature rising. 7. The content of nonphytate phosphorus varied widely between soybean varieties and decreased with temperature increase. 8. The content of calcium, iron and magnesium ranged from 15.7 to 25.7mg/100g from 8.8 to 16.8mg/100g and from 121.9 to 143.6mg/100g respectively. The content of Mg showed small difference among soybean varieties. The change of mineral content with heat treatment in soybean did not give any meaningful change mineral content.

THE EFFECT OF DIETARY MAGNESIUM LEVEL ON THE EGGSHELL QUALITY IN LAYING TSAIYA DUCK AND LEGHORN HEN

  • The study was undertaken to determine the effect of dietary magnesium on the eggshell quality and other performance in laying Tsaiya ducks and Leghorn hens. Twenty-five Tsaiya ducks and 25 Leghorn hens were raised in individual cages. The basal diet was mainly consisted of corn starch and isolated soybean protein. At the beginning of the experiments, birds were fed for 10 days with the basal diet supplemented with 500 mg/kg Mg (1070 mg/kg in total by analysis) in order to allow the birds adapting to the new diet. Both Tsaiya ducks and Leghorn hens were then each randomly divided into five groups and each group of five birds were fed with the experimental diets containing 690, 1070, 1690, 2150 or 2380 mg/kg Mg, respectively for 21 days. Eggs were collected in order to measure eggshell quality, Mg and Ca content of the eggshell. At the end of the experiments, blood samples of all birds were taken from their brachial veins for measuring the concentration of Mg and Ca in the plasma. Experimental results appeared that the dietary Mg content did not significantly affect egg production, egg weight, eggshell breaking strength and thickness in both Tsaiya ducks and Leghorn hens. In Tsaiya ducks, however, the plasma Mg concentration was affected by the dietary Mg content, but the plasma Mg almost reached a plateau (4.66 mg/dl) as long as the dietary Mg level was over 1070 mg/kg. In Leghorn hens, the plasma Mg level was significantly increased from 1.66 mg/dl to 4.03 mg/dl when the dietary Mg content in the diet had been increased from 690 mg/kg to 2380 mg/kg, suggesting that the plasma Mg concentration seems to be directly influenced by the Mg absorbed in the intestine. In the Tsaiya ducks, however, the dietary Mg level did not significantly affect the eggshell Mg content (from 0.113% to 0.123%). Whereas, there was a negative correlation between the eggshell thickness and eggshell Mg content (r = -0.50, p<0.01), revealing that the increase in eggshell Mg content probably associated with the impairment of eggshell quality in Tsaiya ducks. In Leghorn hens, however, there was no significant correlation between eggshell quality and eggshell Mg content, although the Mg content in the eggshell was also increased from 0.279% to 0.427% when the dietary Mg had been elevated from 690 mg/kg to 2380 mg/kg.

Analysis of Manganese Content in Frequently Consumed Foods by Koreans (한국인 상용 식품 중 망간 함량 분석)

  • Using ICP-AES, we analyzed manganese content in 366 foods consumed frequently by Koreans. For the analysis, it was included a total of 366 foods such as 51 kinds of grains, 7 kinds of potatoes and starches, 7 kinds of sugars and sweeteners, 12 kinds of legumes, 11 kinds of nuts and seeds, 68 kinds of vegetables, 7 kinds of mushrooms, 33 kinds of fruits, 13 kinds of meats, 4 kinds of eggs, 48 kinds of fishes and shellfishes, 7 kinds of seaweeds, 16 kinds of milks, 8 kinds of oils and fats, 27 kinds of beverages, 34 kinds of seasonings, 13 kinds of processed foods and others. Among the grains, starches and sugars, manganese content of rice was 0.745 mg/100g. As for legumes, the content of manganese in soybean milk was 0.033 mg/100g and in black beans was 4.075 mg/100g. In nuts and seeds, the content of manganese in gingko nuts was 0.268 mg/100g while that in pine nuts was 8.872 mg/100g. Among the vegetables, manganese contents were 0.061 mg/100g in cherry tomato and 14.017 mg/100g in ginger. In mushrooms, the highest manganese content was displayed in ear mushroom at 10.382 mg/100g. Dried jujube and shrimp were found to be the fruits and fishes with high manganese contents at 2.985 mg/100g and 3.512 mg/100g, respectively. Among dairy foods, oils and beverages, manganese content was the highest in instant coffee powder at 2.577 mg/100g. Seasonings and processed foods posted 0.010 mg/100g in Sagolgomtang, instant soup and 23.846 mg/100g in pepper. In a furture, more various food for manganese content needs to be analyzed and a reliable food database should be compiled from the findings of researches in order to estimate manganese consumption accurately.

  • The effects of Mg content on the pore formation, density and critical properties were investigated in in-situ reacted $MgB_2$ superconductors. The $Mg_{1+x}B_2$, (x=-0.2, 0.0, 0.05, 0.3, 1.0) bulk samples with different Mg contents were heat-treated at $900^{\circ}C$ for 1 h in an Ar atmosphere. The dimensional changes of a pellet's mass and volume after heat-treatment were measured. After heat-treatment process, the sample mass was decreased by Mg evaporation, but the sample volume was expanded by pore formation at the Mg site; therefore, the apparent density was decreased. Spherical pores the same as Mg particles were developed after heat-treatment in all samples, and the pore density was increased with increasing Mg content. As the x of Mg content was increased to 1.0, the apparent density of $Mg_{1+x}B_2$ samples was decreased due to a relatively larger reduction in a mass change. The critical current density of Mg excessive sample of x=0.05 showed the highest values over the applied magnetic fields because the excessive Mg may compensate Mg loss and enhance grain connectivity.

Studies on the Trace Elements, Heavy Metals and Organic acids Content of Edible Mushrooms (버섯류의 미양금속, 중금속 및 유기산 함양에 관한 연구)

Effect of the Mg Content on the Solidification Cracking Susceptibility of the Al-Mg Alloy Laser Welds

  • The solidification cracking susceptibilities of Al-Mg alloy laser welds were assessed using self-restraint tapered specimen crack test. The dependence of cracking susceptibility of Al-Mg alloy laser welds on Mg contents was observed to be similar to that of arc welds in the same materials. The cracking susceptibility of Al-Mg alloy laser welds increased as Mg content increased up to 1.6-1.9 wt.% and then it decreased as Mg content increased further. The peak cracking susceptibility occurred at around 1.6 to 1.9 wt.% Mg for both autogenous and wire feed welds. It was also observed that the cracking susceptibility decreased as the grain size of Al-Mg alloy laser welds decreased, when Mg content was in the range higher than 1.9 wt.%.

  • A7003 alloy has characteristics of their excellent weldability, high corrosion resistance and superior plastic working however the broadening of application for the alloy has been hampered by the lower extrudability associated by Mg content. For improvement of extrudability and enhanced recovery efficiency during Al scrap recyeling, it has been generally practiced to reduce Mg content in A7003 alloy. Therefore, it is necessary to investigate the influence of Mg content on mechanical strength and extrudability of A7003 alloy. For efficient material processing which has small amounts, life cycle assessment in material processing(MLCA) is evaluated. The quantitative analysis of energy requirements and $CO_2$ emission for production of A7003 extruded bar are estimated with different Mg content and billet pre-heating process (heating source by light oil or LPG). In particular, the estimation of energy requirements was performed within shipping and gating range (except the mining and extraction stages)to investigate the influence of the variables on energy requirements and $CO_2$ emission in detail. As Mg content increased, the flow stress and the extrusion pressure for A7003 alloy increased. It has been thought that an increment in extrusion pressure with increasing Mg content is caused by the solid solution hardening of Mg atoms in the matrix and increment in volume fraction of intermetallic compound, $Mg_2Si$. The extrudability and the tensile strength are equal to, or above that of conventional A 7003 alloy even the content of Mg varied from $1.1wt.\%\;to\;0.5wt.\%$ alloy. This means that minimizing the content of Mg in A7003 alloy can enhance recovery efficiency during Al scrap recycling. It can be quoted that rather than Mg content energy source for billet heating is a prime factor to determine the atmospheric $CO_2$ emission.

Comparison of Vitamin B1, B2, and Niacin Contents According to the Cultivars of Apple, Peach and Strawberry (사과, 복숭아, 딸기 품종에 따른 비타민 B1, B2 및 나이아신 함량 비교)

  • This study analyzes the content of niacin, B1, and B2, which are among the water-soluble vitamin B group, in cultivars of the commonly consumed agricultural products of apples, peaches, nectarines and strawberries to compare content differences and to use results as base material for the Korean Food Composition Table. While the vitamin B1 content of apples according to different cultivars was found to be within the ranges of 0.063-0.208 mg/100g, and the content of vitamin B2 was found to be within the value ranges of 0.006-0.031 mg/100g, no niacin was found. The vitamin B1 content of peaches and nectarines according to different cultivars was found to be within the value ranges of 0.014-0.276 mg/100g, the content of vitamin B2 was found to be within he value ranges of 0.019-0.042 mg/100g, and niacin content was found to be within the value ranges of 0.298-1.096 mg/100g. The vitamin B1 content of strawberries according to cultivars was found to be within the value ranges of 0.112-0.394 mg/100g, the content of vitamin B2 was found to within the value ranges of 0.001-0.027 mg/100g, and niacin content was found to be within the value ranges of 0.388-0.809 mg/100g. Therefore, when nutrient composition analysis databases for the fruits of apples, peaches, and strawberries are constructed, cultivar factors must be put into consideration. In addition, differences can be found according to fruit harvest times, cultivation methods, and environmental factors, so related additional is needed.
