보리새우의 섭이와 성장 (Studies on Feeding and Growth of the Oriental Brown Shrimp, Penaeus japonicus Bate)

  • 보리새우(Penaeus japonicus Bate)의 섭이량, 주간, 야간 섭이율과 일간 섭이율, 이료의 종류에 따른 섭이률의 차이, 보리새우의 성장과 이료의 전환효율등에 관해서 시험한 결과를 요약하면 다음과 같다. 1. 보리새우의 섭이율은 수온범위 $19\~30^{\circ}C$, 체중범위 $1.6\~14.9g$에서 수온이 높을수록, 또 새우의 크기가 작을수록 커지며, 평균 일간 섭이율은 $18\~44\%$에 달한다. 2. 항상 야간 섭이율이 주간 섭이율보다 크나, 무저질, 암상태 또는 직접광선을 피한 사육상태에서는 주간에도 일간 섭이률의 $22\~37\%$의 섭이를 이룩할 수가 있어, 그만큼 보리새우의 성장을 촉진시킬 수가 있었다. 3. 멸치와 바지락의 두가지 이료에서는 주야의 구별없이 멸치를 한층 더 많이 섭취하였으며, 일간 섭이율중에서 멸치 및 바지락육의 섭이율은 각각 $12.9\%$, $10.3\%$이었다. 4. 보리새우의 체중(W;g)과 일간 성장률 ($DGR;\%$) 사이에는 log DGR=0.7035-0.7864 logW의 관계식이 성립되고, 새우의 크기에 비예하여 일간 성장율은 작아진다. 5. 보리새우의 이료의 전환효율은 새우의 크기에 따라 큰 차이가 없이 평균 $2.8\~7.8\%$의 범위로 변동하며, 지금까지 알려진 어류 (문치가재미, 고등어, 방어 등)와 참오징어의 그것에 비교하면 매우 작은 값을 취한다.

Saccharomyces cerevisiae를 첨가한 발효사료의 급여가 한우 비거세우의 육성성적 및 도체 등급에 미치는 영향 (Effects of Fermented Feedstuff Added Saccharomyces cerevisiae on Fattening Performance and Carcass Grade in Hanwoo Bulls)

  • 본 연구는 발효사료(Fermented feedstuff added Saccharomyces cerevisiae; FFSC)의 급여가 한우 육성 비육우의 육성성적과 도체등급에 미치는 영향을 검토하기 위하여 실시하였다. 평균체중이 230$\pm$24kg인 한우 비거세우 26두를 공시하여 발효사료를 급여하는 처리구(FFSC)와 발효사료를 급여하지 않는 대조구(Control)로 나누어 14개월간 실시한 실험 결과는 다음과 같다. 육성기, 비육전기 및 비육후기 동안 일당증체량 및 사료섭취량은 대조구에 비해 처리구에서 유의적으로 높은 결과를 보였다. 비육전기 및 비육후기 동안 사료효율은 대조구에 비해 처리구에서 개선되는 것으로 나타났다. 전 시험기간동안 처리구 및 대조구의 일당 증체량은 각각 1.06 및 0.98kg으로 나타나 대조구에 비해 처리구에서 19% 개선되는 결과를 보였다(P< 0.05). 전 시험기간 동안의 사료섭취량은 처리간에 큰 차이를 보이지 않았다. 그리고 사료효율 역시 처리간에 큰 차이를 보이지는 않았으나 대조구에 비해 처리구에서 7% 정도 향상되는 것으로 나타났다. 도체중, 도체율, 등지방두께, 배최장근단면적 및 육량지수를 포함한 육량형질의 경우 처리간에 차이가 없는 것으로 나타났다. 근내지방도의 경우 대조구에 비해 처리구에서 개선되는 결과를 보였다. 처리구 및 대조구의 ‘A’ 등급 출현율은 각각 44.4 및 25.0%로 나타났다. 육질 ‘1’ 등급은 처리구에서만 출현하였다. 이상의 결과에서 한우 비거세우에 대한 발효사료의 처리는 육성기, 비육전기 및 비육후기 동안에 일당증체량, 사료섭취량 및 사료효율을 개선시키는 것으로 나타났으며, 또한 도체형질 중에서 배최장근단면적과 근내지방도를 개선시켜 최종적으로 비육우의 육량 및 육질 등급을 향상시켜 한우 비육우의 경제성을 증진시키는 효과가 있는 것으로 판단된다.

SUPPLY-DEMAND, COMMERCIAL DISTRIBUTION AND TRANSACTION OF THE CULTURED TUNA IN JAPAN - EMPHASIZING ON THE GLOBAL EXPANSION OF THE TUNA-FARMING BUSINESS -

  • The cultured tuna production which has suddenly expanded at the short time and the demand for it attract attention. Farming mode, distribution transactions, change of the market (domestic and international) and the price trend are reviewed from the Japan's position which is the biggest consuming country. This paper tries to describe the current status of the food system related to the cultured tuna. Japanese government began the development of the tuna culture technology in 1970. It was by the Fisheries Agency's project. Kinki University which is the large scale private university in Japan participated in the project. After that, 32 years have passed. Kinki University established the full farming of the bluefin tuna in August, 2002. On the other hand, in 1974, one Japanese private enterprise began its tuna farming business in Canada. Kinki University gave this company technical cooperation. Also, in the early stages of the 90s, as for the policy of the overseas fishery cooperation foundation, it supported the tuna farming business in Australia. It is very clear to understand that the long-term technological-development has supported the take-off scene of the tuna culture business not only in foreign countries but also in Japan. The total shipment scale of the cultured tuna expanded very much within about 10 recent years. However, the decrease of the wild tuna catch, the reinforcement of the fisheries regulation and the tuna body to dwarf are remarkable now. Under the condition as the mentioned above, Japan's tuna consumption, especially, in the market at the fatty meat of tuna of the cultured tuna is building up firm status. At present, the Mediterranean Sea coastal countries, Australia, Mexico and Japan have the tuna farming sites. Australia farms the southern bluefin tuna. The others do the bluefin tuna. About for 3 years, Japan farms the juvenile of the tuna. The global production areas are as follows. 8 coastal countries of the Mediterranean Sea; 18,000 tons (61 % of the cultured tuna quantity in foreign countries), Mexico; 4,500 ton (15%), Australia; 7,000 tons (24%). In 2003, Japan has 32 managements and 39 offices for tuna farming. In Japan, Kyushu and Okinawa district, the share shows itself as 80 % of the domestic production quantity. Especially, the share of Amami-oshima Island in Kagoshima Prefecture exceeds 60 %. Therefore, this island has the maximum production scale of Japan. The amount of supply of BT and SBT was 56,000 tons in 2004. In Abroad, the tuna farming business forms a fixed connection between the importer and the wholesaler which have their office in Japan. In the field of the capital composition, the payment in advance, transaction and the way of settlement, each maintains their fixed relation. The market conditions of the cultured tuna are supported by "the decline of price level" and "the expansion of the general public consumption segment". These lead a team merchandising, and it is supported by the fixed business connection of each. This makes the profit of each business which are on the cultured tuna distribution. However, they have competition on the power balance among them.

홍국쌀 첨가 소시지의 품질 특성 (Quality characteristics of sausage added red yeast rice)

  • 육류가공제품의 발색제로 사용하는 아질산염을 대체할 수 있는 천연색소 개발과 건강지향적 소시지 제품 개발을 위해Monascus purureus KFRI 1134 균주로 배양한 홍국쌀을 0, 1, 3 및 5%(w/w) 첨가하여 소시지를 제조한 후 품질특성을 조사하였다. 홍국쌀 색소는 $100^{\circ}C$ 이하에서 안정성이 유지되었으며, 홍국쌀 첨가량이 증가할 수 록 수분 함유율이 감소하였고, 색도 측정 결과 적색도인 a 값이 증가하여 소시지의 색상 개선 효과가 있었다. 홍국쌀 소시지의 물성 측정 결과, 경도는 낮았으나, 신장성, 검성, 탄력성은 모두 높은 것으로 나타났으며, 홍국쌀 1%(w/w)를 첨가하여 제조한 소시지가 전체적인 기호도 값이 제일 높았다. 홍국쌀의 적색소는 열안정성이 강하여 소시지 가공 및 냉장 보관시 변색의 염려가 없으며, 소시지의 색상 개선이 가능하고, 물성과 맛에 영향을 미치지 않으면서 전반적인 기호도를 증가시키는 범위인 1%(w/w) 첨가가 적당한 것으로 나타났다.

Identification of New Microsatellite DNAs in the Chromosomal DNA of the Korean Cattle (Hanwoo)

  • To isolate the microsatellites from the chromosomal DNA of the Korean cattle (Hanwoo) and to use those for the genetic selection, four bacteriophage genomic libraries containing the chromosomal DNA of six Hanwoo steers showing the differences in meat quality and quantity were used. Screening of the genomic libraries using $^{32}P-radiolabeled 5'-({CA})_{12}-3$nucleotide as a probe, resulted in isolation of about 3,000 positive candidate bacteriophage clones that contain $(CA)_n$-type dinucleotide microsatellites. After confirming the presence of microsatellite in each positive candidate clone by Southern blot analysis, the DNA fragments that include microsatellite and flanking sequences possessing less than 2 kb in size, were subcloned into plasmid vector. Results from the analysis of microsatellite length polymorphism, using twenty-two PCR primers designed from flanking region of each microsatellite DNA, demonstrated that 208 and 210 alleles of HW-YU-MS#3 were closely related to the economic traits such as marbling score, daily gain, backfat thickness and M. longissimus dorsi area in Hanwoo. Interestingly, HW-YU-MS#3 microsatellite was localized in bovine chromosome 17 on which QTLs related to regulation of the body fat content and muscle ypertrophy locus are previously known to exist. Taken together, the results from the present study suggest the possible use of the two alleles as a DNA marker related to economic trait to select the Hanwoo in the future.

중.고등학교 급식의 대표메뉴 선정 및 표준조리법 개발 (Selection of Representative Menu and Development of Standard Recipes in Middle & High School Meals)

  • This study was conducted to illustrate standard menu items available in the school foodservice industry, and to establish higher nutritional standards in this industry. We reviewed menu items from 125 middle and high schools from the Seoul area for three months. These menus were then classified into 12 representative menu items, as follows: beef seeweed soup, egg soup, sliced rice rod soup, spaghetti, sauted squid with hot sauce, fish cutlet, simmered pork-egg in soy sauce, sweet and sour meat, sauted pork, acorn starch jelly salad, cucumber salad. And standard recipes of these 12 representative menu items were established, based on a survey from 150 dietitians who completed a questionnaire of 97 questions. According to the survey results, 89% of the dietitians answered positively('yes') about the necessity of establishing standard recipes for the school foodservice industry. 69% of the dietitians were educated standard recipes for the school foodservice, 91% will use standard recipes for the school foodservice Moreover, we discovered there was a consensus on what type of menu items should be included on the menus; demographic factors only affected a small range of recommended items. In order to confirm real application of resulted standard recipe, it is required to conduct quantity food production at real foodservice and study on more suitable standard recipe.

생체시료 중 Octylphenol, Nonylphenol, Bis(2-ethylhexyl) phthalate의 동시정량 (Simultaneous Determinaton of Octylphenol, Nonylphenol, Bis(2-ethylhexyl) phthalate in Biological Samples)

  • 쇠고기 돼지고기 속에 포함된 nonylphenol, octylphenol, bis(2-ethyltexyl) phthalate의 동시 정량방법을 연구하였다. 이 방법에서는 밀폐된 배양시험관에서 이염화메탄을 이용하여 추출하고 용매를 이소헥산으로 바꾸고 aminopropyl 칼럼(2g)을 이용하여 분리한 후 GC/MS-SIM 방법으로 분석하였다. 다중점보정을 위한 nonylphenol(NP), octylphenol(OP), bis(2-ethylhexyl) phthalate(BEHP)의 회수율에서 NP, OP는 $0.125-12.5{\mu}g/g$, BEHP는 $0.0125-12.5{\mu}g/g$ 범위에서 좋은 회수율을 보였다. 확립된 방법을 전주시와 전주시 근교 마트와 정육점에서 구입한 16점의 쇠고기 돼지고기 시료에 적용하였다. Nonylphenol은 4점의 시료에서 검출되었으며 bis(2-ethlhexyl) phthalate는 전 시료에서 검출되었고, 그 농도범위는 $0.06-0.24{\mu}g/g$$0.36-2.35{\mu}g/g$ 이었다. Octylphenol은 어떠한 시료에서도 검출되지 않았다. 이 방법은 매우 적은량의 생체 시료에도 쉽게 적용이 가능하였다.

전북 지역 학교 급식소의 메뉴 관리 및 대량 조리기기의 활용도 연구 (A Study on Menu Management and Cooking Equipment Utilization at School Foodservices in the Chonbuk Area of Korea)

  • This study examined the menu management and utilization of cooking equipment at school foodservice operations in the Chonbuk area. Self-administered questionnaires were collected from a total of 193 school dietitians. Statistical data analysis was completed using the SPSS v. 11.5 program. The results are summarized as follows. Among the 193 schools, 58.5% were elementary schools and 41.5% were middle and high schools. Approximately 97% of the schools prepared meals in the conventional manner. Among the school, 68.4% had a menu cycle of 1${\sim}$2 weeks. The frequency of using convenience foods was significantly different between the elementary schools and middle and high schools(p<0.001). Approximately 45% of the dietitians responded that the most important details for menu planning were menu variety and consumer preference. However, 66.8% of the dietitians responded that a key problem for menu planning was limited and worn-out kitchen equipment. Although the cost of purchasing cooking equipment is high, most dietitians responded they have high needs for equipment in order to meet of the quantity demands of food production. In terms of utilized cooking equipment, most schools had mixers, vegetable cutters, choppers, dish washers, etc. Yet the amenities most often lacking were meat slicers, composting machines, ovens, and griddles. In utilizing the cooking equipment, there was no significant difference between the dietitians in the elementary(3.67) schools and those in the middle and high school foodservice systems(3.70); however, the utilization level was poor. Therefore, governmental regulatory agencies should review and finance support for purchasing cooking equipment. Finally, purchasing analysis was conducted regarding the dietitians' opinions on menu recipes and useful equipment.

암 치료 시 영양상담을 통한 식생활 개선에 관한 연구 (Study on the Improvement of Dietary Life of Cancer Patients during Treatment by Nutrition Counseling)

  • Objectives: This study investigated the improvement of food habits and eating behavior of cancer patients during treatment through the continuous nutrition counseling and monitoring. Methods: Thirty cancer patients during treatment were participated in this study, and the first nutrition counseling and the first and second monitoring were conducted after 2-3 week intervals. Results: As a result of the nutrition counseling and monitoring, all patients improved to a great extent to consume 3 meals a day. The frequency of having breakfast was significantly increased with the nutrition counseling and continuous monitoring as well. The meal fixed quantity was stabilized and the eating speed slowed down as more nutrition counseling were done. The snack intakes of patients did not show any significant difference after the nutrition counseling but showed a slight decline after the monitoring. The frequencies of eating out and a late-night meal significantly decreased after the monitoring. The intakes of fish, meat, vegetables, milk and fruits needed for a well-balanced diet significantly increased as more nutrition counseling were done. The intakes of processed food were significantly decreased after the nutrition counseling and the intakes of fast food were significantly decreased as more nutrition counseling were done. The water intake of patients also significantly increased. In the eating behavior related to health, the frequency of drinking alcohol significantly decreased after nutrition counseling consultation and no patients had dietary supplements after the first monitoring. Conclusions: These results suggested that continuous nutrition counseling is effective in improving eating habits of cancer patients.

Clostridium botulinum의 분포 및 수종 식품에서의 botulinum toxin 생성능 비교연구 (Incidence of Clostridium botulinum in Natural Reservoirs and Toxin Production in some foodservice)

  • 토양을 비롯하여 어류, 패류, 조류, 포유류의 소화기관으로부터 Clostridium botulinum 분리를 시도하였다. 총 158개 분리원을 screening한 결과 10개 시료로부터 Clostridium botulinum 분포 가능성을 확인하였으며 6개 시료로부터 Clostridium botulinum을 순수 분리하여 3.8% 분리율을 나타내었다. 분리 균주의 형태적 특징, 배양상의 특성 및 생화학적 특성 등을 표준 균주의 특성과 비교하고 항혈청에 의한 중화시험을 실시하여 분리균주를 동정하였다. Egg york agar에서의 opalescence 생성, 탄수화물 이용성, Egg york GAM 배지상에서의 pearly layer 생성 등으로부터 Clostridium botulinum으로 동정할 수 있었으며 trypsin에 의한 toxicity 활성화, type E 항혈청에 의한 opalescence 생성억제 및 mouse 방어효과가 인정되어 type E 로 동정하였다. 국내에서 시판되고 있는 수 종의 식품을 대상으로 Clostridium botulinum 의 toxin 생성능을 비교하였던 바 식품의 종류, 사용균주에 따라 toxin 생성량에 현저한 차이가 있었다. 분리균주 type E 의 경우 어패류통조림, ham 식품에서 많은 양의 toxin 이 생성되었으며 sausage, 과일통조림 식품에서는 비교적 적었다. 그러나 type A 의 경우에는 어패류, ham , sausage 식품에서 상당량의 toxin 이 생성되었으며 과일통조림에서도 비교적 맣은 양의 toxin이 생성되었다 .
