Factors affecting beef quality and nutrigenomics of intramuscular adipose tissue deposition

  • Beef quality is characterized by marbling (marbling degree and marbling fineness), physiochemical (shear force, meat color, fat color, texture, and maturity), and sensory (tenderness, flavor, juiciness, taste, odor, and appearance) traits. This paper summarizes and addresses beef-quality characteristics and the beef-grading systems in Korea, Japan, the USA, and Australia. This paper summarizes recent research progresses on the genetic and nutritional factors that affect beef quality. Intramuscular (i.m.) adipose tissue deposition or marbling is a major determinant of beef quality. This paper addresses the mechanisms of i.m. adipose tissue deposition focused on adipogenesis and lipogenesis. We also address selected signaling pathways associated with i.m. adipose tissue deposition. Nutrients contribute to the cellular response and phenotypes through gene expression and metabolism. This paper addresses control of gene expression through several nutrients (carbohydrates, fat/fatty acids, vitamins, etc.) for i.m. adipose tissue deposition. Several transcription factors responsible for gene expression via nutrients are addressed. We introduce the concept of genome-based precision feeding in Korean cattle.

A Future Economic Model: A Study of the Impact of Food Processing Industry, Manufacturers and Distributors in a Thai Context

  • Purpose: This study attempted to analyze the impacts of the backward linkage and output multipliers, and investigate the price fluctuation and the price forecast amongst the manufacturing sectors associated with food processing industrial output of Thailand. Research design, data and methodology: The Thailand Input-Output table with a size of 180 x 180 sectors from 2005, 2010, and 2015 was utilized while the secondary data of the time series from January 2002 to December 2021 were processed via a multiplicative model and Box-Jenkins model. Results: The backward linkage analysis indicates that canning and preserving of the meat sector majorly utilized the factors of production from the slaughtering sector; canning and preservation of fish and other seafoods sector largely used those factors from the ocean and coastal fishing sector; and the sugar sector used those of the sugarcane sector. Notably, the output multiplier analysis indicated that output multipliers of those 3 manufacturing sectors were highly increased; meanwhile the price fluctuation continually existed in all forms. Besides, the price forecast suggested that prices of chicken and sugarcane tended to be higher; whereas, the price of shrimp was unstable. Conclusions: Food processing industry contains the favorable components to be one of the industries of the future of Thailand.

Isolation of Debaryomyces hansenii and selection of an optimal strain to improve the quality of low-grade beef rump (middle gluteal) during dry aging

  • Objective: The objective of this study was to evaluate the effect of Debaryomyces hansenii isolated from dry-aged beef on the tenderness and flavor attributes of low-grade beef during dry aging. Methods: Five D. hansenii strains were isolated from dry-aged beef samples. The rump of low-grade beef was inoculated with individual D. hansenii isolates and subjected to dry aging for 4 weeks at 5℃ and 75% relative humidity. Microbial contamination levels, meat quality attributes, and flavor attributes in the dry-aged beef were measured. Results: Of the five isolates, the shear force of dry-aged beef inoculated with SMFM201812-3 and SMFM201905-5 was lower than that of control samples. Meanwhile, all five isolates increased the total free amino acid, glutamic acid, serine, glycine, alanine, and leucine contents in dry-aged beef. In particular, the total fatty acid, palmitic acid, and oleic acid contents in samples inoculated with D. hansenii SMFM201905-5 were higher than those in control samples. Conclusion: These results indicate that D. hansenii SMFM201905-5 might be used to improve the quality of beef during dry aging.

Development of an index that decreases birth weight, promotes postnatal growth and yet minimizes selection intensity in beef cattle

  • Objective: The main goal of our current study was to improve the growth curve of meat animals by decreasing the birth weight while achieving a finishing weight that is the same as that before selection but at younger age. Methods: Random regression model was developed to derive various selection indices to achieve desired gains in body weight at target time points throughout the fattening process. We considered absolute and proportional gains at specific ages (in weeks) and for various stages (i.e., early, middle, late) during the fattening process. Results: The point gain index was particularly easy to use because breeders can assign a specific age (in weeks) as a time point and model either the actual weight gain desired or a scaled percentage gain in body weight. Conclusion: The point gain index we developed can achieve the desired weight gain at any given postnatal week of the growing process and is an easy-to-use and practical option for improving the growth curve.

다양한 사육 밀도에서 대형 육계 암컷의 생산성과 도체 수율 (Growth Performance and Carcass Yield of Heavy Female Broiler at Different Stocking Densities)

  • 본 시험은 세 가지 다른 사육 밀도가 대형 육계 암컷의 생산성과 도체 수율에 미치는 영향을 조사하기 위해 수행하였다. 처리구는 사육 밀도에 따라 T1(10.9 수/$m^2$), T2(12.4 수/$m^2$) 및 T3(13.9 수/$m^2$)로 하였다. 공시계는 1일령 Arbor Acre종 육계 암컷 492수를 선별하여 처리구당 4반복씩, 반복당 각각 36, 41 및 46수씩 나누어 완전임의 배치하였으며, 육계 초기(0~1주), 전기(1~3주) 및 후기(3~6주)로 나누어 총 6주 동안 사양시험을 실시하였다. 조사 항목으로 생존율, 체중, 증체량, 사료 섭취량, 사료 요구율, 생산지수, 도체 수율 그리고 부분육 비율(날개, 다리, 가슴, 등, 목)을 조사하였다. 6주 동안의 육성률은 세 처리구 모두 90% 이상으로 높게 나타났으며, 처리구 간 차이가 없었다. 육계의 체중은 3주령, 증체량, 사료 섭취량 및 사료 요구율은 2~3주령에 T3 처리구에서 가장 낮았으며(P<0.05), T1과 T2 처리구 사이에 서는 유의차가 없었다(P>0.05). T1, T2 및 T3 처리구의 생산지수는 각각 331.0, 340.8, 336.0으로 처리구 사이에 유의적인 차이는 발견되지 않았다. 4주령 육계의 도체 수율과 대부분의 부분육(날개, 가슴, 등, 목) 비율은 처리구 간 차이가 없었으나, 다리 부위의 비율은 T2에서 가장 높았다(P<0.05). 5주령 육계의 도체 수율은 T1처리구에서 76.2%로 가장 높았으나(P<0.05), 부분육 비율은 처리구 간 유의차가 없었다. 6주령 육계의 도체 수율과 부분육 비율은 처리구 간 차이가 없었다. 본 시험은 대형 육계 암컷을 위한 다양한 사육 밀도를 기초자료로 제공하였으며, 추가적인 연구가 필요하다고 사료된다.

베타인 사료의 급여시기가 폭염에 노출된 오리의 짧은 사슬지방산, 혈액 프로파일 및 생산성에 미치는 효과 (Effect of different feeding times using a diet containing betaine on production, blood profile and a short chain fatty acid in meat ducks exposed to a scorching heat wave)

  • 폭염에 노출된 육용오리에서 짧은 사슬지방산(short chain fatty acid, SCFA), 혈액 프로파일 및 생산성에 관한 베타인 800 ppm 함유사료의 급여시기 별 차이를 조사하였다. 오리 (Cherry valley, Anas platyrhynchos) 240 마리를 4처리 3반복(반복 당 20마리)으로 완전임의배치 한 후 42일 간 사육하였다. 4개의 처리구는 C(베타인 무첨가 폭염 대조군), T1(베타인 800 ppm 사료 무제한 급여군), T2(베타인 800 ppm 사료 오전 05:00-10:00, 오후 17:00-20:00 제한급여군), T3(베타인 800 ppm 사료 17:00-10:00 야간 제한급여군)로 구분하였다. 42일령 체중은 T2, T1, T3 순서로 베타인 사료 급여시기 처리구가 폭염 대조군에 비해서 증가하였으나 T1, T3 사이의 유의차는 없었다. 사료요구율은 베타인을 함유하지 않은 사료의 무제한 급여 폭염 대조군이 베타인 사료의 급여시기 처리군에 비해서 높았으나 T1, T2, T3 사이의 유의차는 없었다. PLT, MPV를 제외한 적혈구 및 혈소판의 프로파일은 베타인 함유사료를 급여하는 시기에 따라서 통계적인 유의차가 인정되었다. 혈액 $K^+$를 제외한 $Na^+$, $Cl^-$은 베타인 함유사료를 오전, 오후로 구분하여 급여해준 T2가 다른 두 개의 처리군에 비해서 유의하게 높았다. 혈액 가스는 T2가 다른 두 개의 처리군에 비해서 일반적으로 높은 경향을 보였다. 총 SCFA, 초산, 프로피온산은은 T2가 다른 두 개의 처리군에 비해서 높은 경향을 보였으나 이와 반대로 뷰티르산, 이소뷰티르산, 발레르산, 이소발레르산은 일반적으로 낮았다. 이상의 결과는 폭염에 노출된 오리에서 베타인 800 ppm을 함유하는 사료의 오전 05:00-10:00, 오후 17:00-20:00 급여가 베타인의 약리학적 기작을 통한 성장능력을 개선할 수 있음을 나타낸다.

양식 우렁쉥이(Halocynthia roretzi)의 자원 생태학적 분석 및 적정관리 방안 (Population Ecological Study of Cultured Sea Squirt (Halocynthia roretzi) and Management Implications)

  • 양식되고 있는 우렁쉥이(Halocynthia roretzi)의 생잔율과 성장률, 성장 단계에 따른 생산양과 생물학적 생산양의 변화 및 회전율 등 개체군 생태학적 연구를 수행하였으며, 이 연구 결과를 기초로하여 적정 양식 관리 방안을 수립하고자 1985년 2월부터 1986년 7월까지 한산도 장작지 양식장에서 양성실험을 실시하였다. 우렁쉥이 개체군은 지수함수적인 감소식에 적합하였으며 그의 전사망계수(Z)는 0.0614/month(Var(Z)=0.000126)로 추정되었다. 우렁쉥이 개체들의 전중(TW) 및 육중(MW)의 성장은 조사 기간 내에서 직선적인 성장으로 나타났으며 성장식은 다음과 같다. TW= -2.816+7.7071t($r^2$= 0.951) MW=-2.284+2.8450t($r^2$=0.946), 여기서 t는 월 수 우렁쉥이 성장률(G)은 G=3.012exp(-0.06552WT) ($r^2$=0.618)로 수온(WT)과 역상관의 관계를 보였다. 양식 기간중의 수하연당 평균 생체양은 첫해 3월의 2.14kg/수하연부터 이듬해 3월의 16.26kg/수하연으로 추정되었다. 한편 생물학적 생산양은 하계(6월 -7월)의 3.28kg/수하연부터 첫해 늦겨울(2월-3월)의 6.46kg/수하연으로 추정되었다. 회전율은 첫해 늦여름(7월-9월)의 0.293에서 첫해 늦겨울(2월-3월)의 3.013으로 나타났다. 자원 중양이 최대가 되는 적정 수확 시기는($t_{mb}$)는 본수하 후 16.7개월이 경과된 이듬해 6월 말로 추정되었으며 이것을 육중양을 기준으로 하였을 때는 17.1개월이 경과한 이듬해 7월 초순으로 나타났다. 최대 수획가능 전중양은 17.4kg/수하연이었고 이때 육중양은 6.3kg/수하연이었다. 양식의 과정은 본 연구를 통하여 예시된 바와 같이 자원생태학적인 지식을 바탕으로 수행되는 것이 보다 바람직 할 것으로 보인다.

SUPPLY-DEMAND, COMMERCIAL DISTRIBUTION AND TRANSACTION OF THE CULTURED TUNA IN JAPAN - EMPHASIZING ON THE GLOBAL EXPANSION OF THE TUNA-FARMING BUSINESS -

  • The cultured tuna production which has suddenly expanded at the short time and the demand for it attract attention. Farming mode, distribution transactions, change of the market (domestic and international) and the price trend are reviewed from the Japan's position which is the biggest consuming country. This paper tries to describe the current status of the food system related to the cultured tuna. Japanese government began the development of the tuna culture technology in 1970. It was by the Fisheries Agency's project. Kinki University which is the large scale private university in Japan participated in the project. After that, 32 years have passed. Kinki University established the full farming of the bluefin tuna in August, 2002. On the other hand, in 1974, one Japanese private enterprise began its tuna farming business in Canada. Kinki University gave this company technical cooperation. Also, in the early stages of the 90s, as for the policy of the overseas fishery cooperation foundation, it supported the tuna farming business in Australia. It is very clear to understand that the long-term technological-development has supported the take-off scene of the tuna culture business not only in foreign countries but also in Japan. The total shipment scale of the cultured tuna expanded very much within about 10 recent years. However, the decrease of the wild tuna catch, the reinforcement of the fisheries regulation and the tuna body to dwarf are remarkable now. Under the condition as the mentioned above, Japan's tuna consumption, especially, in the market at the fatty meat of tuna of the cultured tuna is building up firm status. At present, the Mediterranean Sea coastal countries, Australia, Mexico and Japan have the tuna farming sites. Australia farms the southern bluefin tuna. The others do the bluefin tuna. About for 3 years, Japan farms the juvenile of the tuna. The global production areas are as follows. 8 coastal countries of the Mediterranean Sea; 18,000 tons (61 % of the cultured tuna quantity in foreign countries), Mexico; 4,500 ton (15%), Australia; 7,000 tons (24%). In 2003, Japan has 32 managements and 39 offices for tuna farming. In Japan, Kyushu and Okinawa district, the share shows itself as 80 % of the domestic production quantity. Especially, the share of Amami-oshima Island in Kagoshima Prefecture exceeds 60 %. Therefore, this island has the maximum production scale of Japan. The amount of supply of BT and SBT was 56,000 tons in 2004. In Abroad, the tuna farming business forms a fixed connection between the importer and the wholesaler which have their office in Japan. In the field of the capital composition, the payment in advance, transaction and the way of settlement, each maintains their fixed relation. The market conditions of the cultured tuna are supported by "the decline of price level" and "the expansion of the general public consumption segment". These lead a team merchandising, and it is supported by the fixed business connection of each. This makes the profit of each business which are on the cultured tuna distribution. However, they have competition on the power balance among them.

Effect of γ-Aminobutyric Acid (GABA) Producing Bacteria on In vitro Rumen Fermentation, Biogenic Amine Production and Anti-oxidation Using Corn Meal as Substrate

  • The effects and significance of ${\gamma}$-amino butyric acid (GABA) producing bacteria (GPB) on in vitro rumen fermentation and reduction of biogenic amines (histamine, methylamine, ethylamine, and tyramine) using corn meal as a substrate were determined. Ruminal samples collected from ruminally fistulated Holstein cows served as inoculum and corn was used as substrate at 2% dry matter (DM). Different inclusion rates of GPB and GABA were evaluated. After incubation, addition of GPB had no significant effect on in vitro fermentation pH and total gas production, but significantly increased the ammonia nitrogen ($NH_3$-N) concentration and reduced the total biogenic amines production (p<0.05). Furthermore, antioxidation activity was improved as indicated by the significantly higher concentration of superoxide dismutase (SOD) and glutathione peroxidase (GSH-Px) among treated samples when compared to the control (p<0.05). Additionally, 0.2% GPB was established as the optimum inclusion level. Taken together, these results suggest the potential of utilizing GPB as feed additives to improve growth performance in ruminants by reducing biogenic amines and increasing anti-oxidation.

Meat quality of pork loins from Hereford×Berkshire female and intact male pigs reared in an alternative production system

  • Objective: The objective of the present study was to investigate pork quality from Hereford${\times}$Berkshire female and intact male pigs reared outdoors in an alternative production system. Methods: Berkshire purebred sows were artificially inseminated, once in the fall and again in the spring of the following year, with semen from Hereford boars and managed free of antibiotics in an outdoor hoop structure until the last month of pregnancy, after which they were moved to a pasture-based unit of 0.8 hectares with individual lots with a farrowing hut, shade, and water ad libitum. Piglets were weaned at 4 weeks of age and housed in a deep-bedded hoop structure, grouped by sex. Animals were harvested at market weight of 125 kg, approximately 200 days of age. Hot carcass weight was collected at the time of the harvest. After 24 hours of refrigeration, carcass characteristics were measured. Longissimus dorsi samples collected from the right side loin. Loins were cut into 2.54-cm thick chops and were used to measure marbling score, color score, drip loss, and ultimate pH. Sensory panel tests were conducted as well at North Carolina State University. For pork characteristics and sensory panel data, trial and sex were included in the statistical model as fixed effects. Hot carcass weight was included in the model as a covariate for backfat thickness. Results: Neither the subjective nor the objective color scores displayed any differences between the boars and the gilts. No difference was found for pH and marbling score between trials or sexes. Gilts had a thicker backfat measurement at the last lumbar and a narrower longissimus muscle area measurement when compared to the boars. The only difference in the sensory characteristics was found between the trials for texture and moisture scores. Conclusion: Consumers were not able to detect boar taint under the condition of this study, which is that the intact males were reared outdoors. Additional trials would be necessary; however, based on the results of the present study, outdoor rearing can be suggested as a solution to the issue of boar taint.
