Reduced-Fat Frankfurters with Varying Types of Meat and Fat

  • This study was conducted to determine sensory and chemical traits of reduced-fat frankfurters made with lean lamb or lean lamb/pork (50%/50%), fat from three different sources(pork fat, lamb fat or high-oleic sunflower oil) and added water products designated as L-P-15, LP-L-15, LP-So-15 and LP-P-15, according to lean meat type, source of added fat and target fat content and to compare such products with a similar reduced-fat product made with lean beef/pork (50%/50%) with pork fat(product designated as BP-P-15) and high-fat products made with lean beef/pork (50%/50%) or lamb/pork (50%/50%) with pork fat (BP-P-30 and LP-P-30). Actual fat contents of reduced-fat and high-fat products formulated for 15% and 30% fat were 17~18% and 28~31%, respectively, after processing. Processing yields were lower for all reduced-fat products than for the high-fat products. Trained sensory panelists rated LP-P-15 less intense in lamb flavor as compared to LP-L-15 and LP-So-15. Off-flavor intensity was positively correlated with lamb-flavor intensity (r=0.80), whereas frankfurter-flavor intensity was negatively correlated with lamb-flavor intensity (-0.88) and off-flavor intensity (r=-0.90). According to consumer panelists, LP-P-15 was as desirable in flavor as BP-P-15 or the two high-fat products (BP-P-30 and LP-P-30), while LP-So-15 and LP-L-15 were not. LP-P-15 and BP-P-15 were not notably different from their high-fat counterparts in juiciness and texture desirability and overall palatability. Regardless of fat content, meat type and fat source, there was little lipid oxidation when vacuum-packaged products were refrigerated for 12 weeks.

동일 조건에서 사육한 수컷 백세미, 브로일러 및 산란종 병아리에 있어서 도체 특성의 비교 (Comparisons of the Carcass Characteristics of Male White Mini Broilers, Ross Broilers and Hy-Line Brown Chicks under the Identical Rearing Condition)

  • 본 실험은 동일한 실험사료를 급여한 유사한 생체중의 백세미, 실용 육계와 산란종 수평아리의 도체 생산 효율 및 육질 특성을 비교하기 위해 수행하였다. 계종간의 육질 특성을 조사하기 위해 각각 100수의 백세미 수평아리, 실용 육계 수평아리, 산란종 수평아리를 펜당 25수씩 총 12개 펜에 임의 배치 하였다. 옥수수와 대두박 위주로 배합된 동일한 사료를 급여하여 사육한 후 동일한 날짜에 도계하기 위해 백세미는 35일, 실용 육계는 18일, 산란종 수평아리는 49일간 사육하였다. 계종에 따른 도체 성적과 혈액 성상, 가식성 근육의 물리적 특성을 조사하였으며, 또한 근육 내 과산화물 생성, 항산화 활성, pH 변화 및 계육의 관능적 특성에 대해 평가하였다. 도체율은 백세미와 육계가 산란종 수평아리보다 유의하게 높았고(P<0.05), 산란종 수평아리에서 날개와 다리 비율이, 백세미와 육계에서는 가슴육 비율이 유의하게 높은 결과를 나타내었다(P<0.05). 혈액 내 총 콜레스테롤, GOT 및 GPT 활성에는 처리간에 유의한 차이가 없는 것으로 나타났다. 육질 분석에서 전단력가, 보수력 및 가열 감량에서 계종간 차이가 나타나지 않았으나, 가슴 근육의 명도는 백세미가 가장 높았고, 가슴 근육의 황색도와 다리근육의 적색도에서 백세미와 육계가 산란종 수평아리보다 유의하게 높게 나타났다(P<0.05). 항산화 활성과 pH 변화에서는 백세미와 육계가 산란종 수평아리보다 다소 높았으나 유의한 차이는 아니었다. 육질의 관능적 특성에 대한 조사에서는 백세미가 산란종 수평아리보다 육색에서 유의적으로 높은 결과를 보였으나(P<0.05), 풍미, 연도 및 전체적인 선호도에서는 계종간에 유의한 차이는 인정되지 않았다. 결과적으로 유사한 체중의 세계종을 비교하였을 때 산란종 수평아리에서 계육의 물리 화학적 특성 및 관능적 특성은 백세미 및 실용 육계와 유의적으로 큰 차이는 나타나지 않았다. 그러나 도체 생산 효율, 성장 및 사료 요구율이 낮은 점을 감안한다면 산란종 수평아리의 활용 가능성은 그리 크지 않을 것으로 생각된다.

비육돈 생산단계에 따른 도체 및 부분육 생산 특성 (Characteristics of Carcass and Meat Yields of Fattening Pigs by Production Step)

  • 본 연구는 수출규격돈 생산과 고품질 돈육 생산에 필요한 기초자료를 제시하고자 도체 및 부분육 생산 특성을 조사한 것으로 도체중량에서는 듀록종이 원종, $F_1$종 및 비육돈에 비하여 적었다(p<0.05). 거래정육중량은 요크셔종과 $F_1$종이 다른 원종과 비육돈에 비하여 높은 반면 듀록종이 가장 낮았다(p<0.05). 도체길이는 랜드레이스와 $F_1$종이 다른 원종 및 비육돈에 비하여 길게 나타났고(p<0.05), 도체폭은 $F_1$종이 다른 순종 및 비육돈 보다 넓었다. 도체후도는 $F_1$종과 비육돈이 원종에 비하여 유의적으로 두꺼운 것으로 나타났다(p<0.05). 안심과 등심의 생산량은 랜드레이스와 요크셔 및 $F_1$종이 듀록 및 비육돈에 비하여 높게 나타났고 듀록이 가장 적었다(p<0.05). 목심 생산량은 요크셔와 $F_1$종이 다른 순종 및 비육돈에 비하여 높게 생산되었고(p<0.05), 듀록과 랜드레이스종이 가장 낮았다. 삼겹살 생산량은 듀록종이 낮았으며, 뒷다리는 요크셔와 $F_1$종이 다른 순종과 비육돈에 비하여 높게 생산되었고, 앞다리는 요크셔종이 생산량이 많았다(p<0.05). 일본 수출 기준에 따른 등심 합격율은 전체적으로 대단히 낮았고, 안심 합격률은 랜드레이스종이 100%로 가장 높았다. 앞다리와 뒷다리 합격률은 요크셔종이 각각 90.91%, 87.88%로 가장 높았다. 이상의 결과를 종합하면 비육돈의 부분육 및 수출규격육 생산이 미흡하므로 이를 만족시킬 수 있는 순종의 도입과 교배체계의 확립이 필요할 것으로 사료된다.

산란성계에서 사료 급이량 조절이 생산성과 계육품질에 미치는 영향 (Effects of Regulate in Feed Intakes on Performance and Meat Quality in Old Laying Hens)

  • 본 연구는 100주령 이상의 산란성계에서 사료 급이량 조절에 따른 생산성, 도체 수율 및 육질을 주령에 따라 평가하고자 실시하였다. 공시 동물은 100주령 Hy-Line Brown 200수를 선별하여 A형 2단 케이지에 대조구 포함 총 5처리구로 구성하여 처리당 4반복, 반복당 10수씩(2수 수용 케이지 10개) 난괴법으로 임의 배치하였다. 시험 기간 동안 물은 자유 섭취하게 하였으며, 일반적인 점등관리(자연일조 + 조명; 16hr)를 실시하였다. 시험구는 대조구(일일 사료 섭취량 100%), 90%, 60%, 50%, 20% 총 5처리였다. 산란율은 사양 시험 기간 동안 일일 사료 섭취량이 감소함에 따라 산란율 및 사료 요구량은 유의적으로(P<0.05) 감소하였다. 도체 수율 역시 사양시험 기간 동안 일일 사료 섭취량이 감소함에 따라 도체 수율 및 부분육(가슴, 다리, 날개) 비율이 유의적으로(P<0.05) 감소하였다. Leukocyte 함량은 일일 사료 섭취량이 50%, 20%일 때 WBC, HE, LY, MO 및 EO 함량의 비율이 유의적으로(P<0.05) 높았다. 가슴육 내 일반 성분항목, 보수력, 가열감량 및 지방산 함량에 있어서는 사양시험 기간과 일일 사료 섭취량에 따른 유의적인 차이는 나타나지 않았다. 본 실험 결과 일일 사료 섭취량이 감소할수록 생산성과 도체율이 감소하였으나, 일일사료 섭취량을 60% 수준까지 낮춰도 무방하다고 생각되며, 계육 품질에 미치는 영향은 나타나지 않았다.

Estimation of the Genetic Substitution Rate of Hanwoo and Holstein Cattle Using Whole Genome Sequencing Data

  • Despite the importance of mutation rate, some difficulties exist in estimating it. Next-generation sequencing (NGS) data yields large numbers of single-nucleotide polymorphisms, which can make it feasible to estimate substitution rates. The genetic substitution rates of Hanwoo and Holstein cattle were estimated using NGS data. Our main findings was to calculate the gene's substitution rates. Through estimation of genetic substitution rates, we found: diving region of altered substitution density exists. This region may indicate a boundary between protected and unprotected genes. The protected region is mainly associated with the gene ontology terms of regulatory genes. The genes that distinguish Hanwoo from Holstein in terms of substitution rate predominantly have gene ontology terms related to blood and circulatory system. This might imply that Hanwoo and Holstein evolved with dissimilar mutation rates and processes after domestication. The difference in meat quality between Hanwoo and Holstein could originate from differential evolution of the genes related to these blood and circulatory system ontology terms.

  • An alternating conditional expectation (ACE) algorithm, a kind of non-parametric regression method, is proposed to generate empirical correlations automatically. The ACE algorithm yields an optimal relationship between a dependent variable and multiple independent variables without any preprocessing and initial assumption on the functional forms. This algorithm is applied to a collection of 12,879 CHF data points for forced convective boiling hi vertical tubes to develop a new critical heat flux (CHF) correlation. The meat root mean square, and maximum errors of our new correlation are -0.558%, 12.5%, and 122.6%, respectively. Our CHF correlation represents the entire set of CHF data with an overall accuracy equivalent to or better than that of three existing correlations.

Recent perspectives on caseous lymphadenitis caused by Corynebacterium pseudotuberculosis in goats-A review

  • Caseous lymphadenitis, caused by Corynebacterium pseudotuberculosis has been a predominant disease among small ruminants on farms, causing significant losses for farm producer in the larger part of goat rearing nations across the world, for over a century. However, the control measures have not been very effective due to the chronic and usually subclinical nature of the infection. This has caused significant financial losses due to chronic ill-thrift, carcass condemnation, decreased meat yields and low reproduction as well as animal welfare. The current status of caseous lymphadenitis, with updated reseach information to the etiology, pathogenesis, clinical signs, identification, prevalence, prevention and vaccination are delineated in the review.

Emulsion Mapping in Pork Meat Emulsion Systems with Various Lipid Types and Brown Rice Fiber

  • This study was conducted to evaluate emulsion mapping between emulsion stability and cooking yields, apparent viscosity, and hardness of reduced-fat pork emulsion systems. The reduced-fat emulsion systems were supplemented with different lipid types and brown rice bran fiber (BRF) concentrations. Compared to the control with 30% back fat, lower emulsion stability and higher cooking yield of meat emulsion systems were observed in T1 (30% back fat+1% BRF), T2 (30% back fat+2% BRF), T3 (30% back fat+3% BRF), T4 (30% back fat+6% BRF), and T15 (10% back fat+10% canola oil+2% BRF). Lower emulsion stability and higher apparent viscosity were observed in T1, T2, T3, T4, and T8 (20% back fat+3% BRF) compared to the control. Lower emulsion stability and higher hardness was detected in all treatments compared with the control, except T5 (20% back fat), T10 (10% back fat+10% canola oil+2% BRF), T11 (10% back fat+10% olive oil+2% BRF), T12 (10% back fat+10% grape seed oil+2% BRF), and T13 (10% back fat+10% soybean oil+2% BRF). This approach has been found particularly useful for highlighting differences among the emulsified properties in emulsion meat products. Thus, the results obtained with emulsion mapping are useful in making emulsified meat products of desired quality characteristics, partially replacing pork back fat with a mix of 10% back fat, 10% canola oil and 2% BRF was most similar to the control with 30% pork back fat.

Polymorphisms in the Perilipin Gene May Affect Carcass Traits of Chinese Meat-type Chickens

  • Improved meat quality and greater muscle yield are highly sought after in high-quality chicken breeding programs. Past studies indicated that polymorphisms of the Perilipin gene (PLIN1) are highly associated with adiposity in mammals and are potential molecular markers for improving meat quality and carcass traits in chickens. In the present study, we screened single nucleotide polymorphisms (SNPs) in all exons of the PLIN1 gene with a direct sequencing method in six populations with different genetic backgrounds (total 240 individuals). We evaluated the association between the polymorphisms and carcass and meat quality traits. We identified three SNPs, located on the 5' flanking region and exon 1 of PLIN1 on chromosome 10 (rs315831750, rs313726543, and rs80724063, respectively). Eight main haplotypes were constructed based on these SNPs. We calculated the allelic and genotypic frequencies, and genetic diversity parameters of the three SNPs. The polymorphism information content (PIC) ranged from 0.2768 to 0.3750, which reflected an intermediate genetic diversity for all chickens. The CC, CT, and TT genotypes influenced the percentage of breast muscle (PBM), percentage of leg muscle (PLM) and percentage of abdominal fat at rs315831750 (p<0.05). Diplotypes (haplotype pairs) affected the percentage of eviscerated weight (PEW) and PBM (p<0.05). Compared with chickens carrying other diplotypes, H3H7 had the greatest PEW and H2H2 had the greatest PBM, and those with diplotype H7H7 had the smallest PEW and PBM. We conclude that PLIN1 gene polymorphisms may affect broiler carcass and breast muscle yields, and diplotypes H3H7 and H2H2 could be positive molecular markers to enhance PEW and PBM in chickens.

Genetic and phenotypic relationships of live body measurement traits and carcass traits in crossbred pigs of Korea

  • This study presents the estimates of heritabilities of body measurement traits and carcass traits, and genetic and phenotypic correlations of those traits for crossbred pigs in Korea. Body and ultrasound (A mode: Piglog 105) measurements in 221 pigs including body weight, length, height and width, three back fat thickness at the points of 4th, 14th rib and chine bone, eye muscle area and lean meat percent were collected at the ages of 70, 145 and 180 days and then slaughtered to measure carcass weight, back fat, belly, collar butt, spare rib, picnic shoulder, hind leg, loin, tenderloin, lean meat yield and intramuscular rough fat content in loin. Genetic analysis was done using a multi-trait animal model. Heritabilties of the body measurements were ranged from 0.331 to 0.559 and three measurements of back fat thickness were also high as range varying from 0.402 to 0.475 for the ages of 145 and 180 days. However, eye muscle area was moderate (0.296) at the age of 180 days. Heritabilities of retail cut yields were also high as ranged from 0.387 to 0.474 and of IMF content in loin was 0.499. Heritabilities of the cut percent traits were ranged from 0.249 to 0.488. Important positive genetic and phenotypic correlations were noted for all carcass yield traits (0.298 to 0.875 and 0.432 to 0.922, respectively). IMF showed low negative genetic correlations with carcass yield traits, such as carcass weight, picnic shoulder, hind leg, loin, tenderloin and lean meat yield whereas low positive genetic correlations with back fat, belly, collar butt and spare rib. Loin, tenderloin and lean meat percent showed negative genetic correlations with carcass weight, back fat thickness, collar butt, spare rib and picnic shoulder percent. The four body measurements at the ages of 70, 145 and 180 days had positive genetic correlations with belly, shoulder butt, spare rib, picnic shoulder and hind leg percent, but negative genetic correlations were shown with loin and tenderloin percent except body measurements at 70 days. The results suggest that carcass yield are negatively correlated with intramuscular fat content, which is a major factor deciding pork quality and the yield of loin and tenderloin are not increased as much as increase in body size. However, the proportions of belly and collar butt are increased with the body size. In conclusion, selection strategy should be designed according to the preference on composition of carcass in each country.
