갈색거저리(Tenebrio molitor L.) 유충의 온도발육 모형 (Temperature-dependent Development Model of Larvae of Mealworm beetle, Tenebrio molitor L. (Coleoptera: Tenebrionidae))

  • 갈색거저리의 온도에 따른 유충 발육시험을 15, 17, 20, 22, 25, 28 및 $30^{\circ}C$의 7개 항온조건, 광주기 14L:10D, 상대습도 60~70% 조건에서 수행하였다. 유충은 13령까지 경과하였고 항온 조건에서 사망률은 17, $20^{\circ}C$에서 극소수 개체만이 발견되었고, $22^{\circ}C$ 이상의 항온조건에서는 발견되지 않았다. 유충의 발육기간은 $17^{\circ}C$에서 244.3일로 가장 길었고, $30^{\circ}C$에서 110.8일로 가장 짧았다. $15^{\circ}C$는 부화되지 않아 유충 발육 조사가 불가능하였다. 온도와 발육율과의 관계를 알아보기 위하여 선형모형과 비선형모형(Logan 6)을 이용하였으며, 선형모형을 이용하여 추정한 전체유충의 발육영점온도는 $6.0^{\circ}C$, 발육 유효적산온도는 2564.1DD 였으며 선형, 비선형 모두 결정계수값($r^2$) 이 0.95로 높은 값을 보였다. 전체유충의 발육완료분포는 2-parameter Weibull 함수를 사용하였으며 전체 유충의 결정계수 값은 0.8502~0.9390의 양호한 모형 적합성을 보였다.

갈색거저리 유충 분말을 첨가한 도토리묵 품질평가 (Quality Evaluation of Acorn Mook prepared with Mealworm(Tenebrio molitor) Powder)

  • In order to improve the usability of mealworm and the nutritional quality of acorn Mook mostly composed of carbohydrates, we prepared acorn Mook using with different levels of mealworm powder, and the physico-chemical and sensory evaluation were investigated. In the content of proximate chemical composition, moisture content did not show any significant difference. But crude protein, crude ash, and crude fat contents were increased with increasing mealworm content. Carbohydrate content was reduced as mealworm content increased. Lightness showed no significant difference among treatments, redness was increased, and yellowness was decreased as the amount of mealworm powder increased. In physiological properties, hardness, gumminess, chewiness, and springiness were significantly increased as the amount of mealworm powder decreased. However, adhesiveness and cohesiveness were not significantly different. Ascorbic acid content, activities of DPPH and ABTS radical scavenging activities were decreased with increasing amount of mealworm in acorn Mook. In sensory evaluation, acorn Mook containing 0.75% of mealworm powder showed highly preference compared with the control.

Effects of Brewer's spent grain (BSG) on larval growth of mealworms, Tenebrio molitor (Coleoptera: Tenebrionidae)

  • Mealworms, Tenebrio molitor (Coleoptera: Tenebrionidae), are widely used as food sourcefor animal rearing as well as human diet. Conventionally, mealworms raised on wheat bran. In this study, we investigated the effects of brewer's spent grain (BSG) on the growth of mealworm larvae to reduce the rearing cost. We prepared five different diets with various BSG content, 0, 10, 30, 50, and 70% of heated air dried BSG with wheat bran. We compared survivorship, larval weight, developmental duration, pupation rate, and pupal weight of five different groups of T. molitor raised on these five diets. The larval survivorships were almost similar with the control group except a group with 70% of BSG. For the larval weight, groups with 30% and 50% of BSG gained more weight than that with control treatment, 0% of BSG. For the developmental period, the groups with 30% of BSG took less time compared to the control group. In all treatment groups, more than 90% of pupation rate were observed. Especially, the group with 30% of BSG showed highest pupation rate among the five groups. Wheat bran with 30~50% of BSG was the optimal diet for successive insect rearing among the five diet treatments. Based on this study, we concluded that adding BSG to wheat bran helps to improve the quality of T. molitor and to reduce the rearing period.

Saccharomyces cerevisiae M1 (KACC 93023)으로 발효한 갈색 거저리 유충이 비 알코올성 지방간 유발 흰 쥐에 미치는 영향 (Effect of Tenebrio molitor Larvae Fermented with Saccharomyces cerevisiae M1 (KACC 93023) on Non-alcoholic Fatty Liver-induced Rats)

  • 본 연구에서는 밀웜으로 잘 알려진 갈색거저리 유충(Tenebrio molitor larvae)분말을 Saccharomyces cerevisiae M1(KACC 93023)으로 발효하였다. 그 후 발효물을 orotic acid에 의해 비 알코올성 지방간이 유발된 흰쥐에 급여하여 개선 여부를 판단해보았다. Orotic acid로 인해 지질 대사에 이상이 생긴 대조군의 경우 장기 무게 및 체중이 증가한 것에 반해 발효 갈색거저리 유충 분말을 급여한 군에서는 정상군과 흡사한 중량을 나타냈다. 그리고 간 건강의 지표로 알려진 AST, ALT, ALP 및 LDH 활성 역시 가장 낮았으며, 각종 지질 관련 지표들도 긍정적으로 나타나 개선 효과가 있는 것으로 판단된다. 또한 간 조직 및 혈청 내 과산화지질, glutathione 함량 역시 정상군과 흡사하거나 더 뛰어난 수치를 띄었다. 마지막으로 H&E 염색, Oil red O 염색을 통한 간 조직의 형태학적 관찰 결과, 발효 갈색거저리를 급여한 군에서 정상군과 흡사한 간세포의 형태 및 배열과 함께 염색된 지방이 눈에 띄게 감소된 모습을 나타내었다. 위 결과를 종합해본다면, 일반 갈색거저리를 급여하였을 때 일부 실험에서 수치가 개선됨을 확인할 수 있었고, 이를 효모로 발효시켰을 경우 대부분의 지표에서 정상치에 가까울 만큼 더욱 긍정적인 개선효과를 나타내었다. 이를 통해 발효물이 비 알코올성 지방간의 개선에 도움을 주는 것으로 판단, 향후 다양한 제품의 소재로 활용될 가능성을 시사하였다.

  • This study was conducted to determine the supplemental effects of two insect meals, mealworm (MW) and black soldier fly (BSF), with high or low lipid levels in diets, on Pacific white shrimp Litopenaeus vannamei. Sardine and tuna by-product meals were used as the fish meal source in a control (Con) diet. The fish meals were replaced with MW, defatted MW (deMW), BSF or defatted BSF (deBSF), respectively. The shrimp (body weight: 0.47 g) were stocked into 20 acryl tanks (215 L) and fed the diets six times a day. After 45 days of the feeding trial, the shrimp that were fed insect meals had significantly higher phenoloxidase and superoxide dismutase activities than the shrimp fed Con diet. The gene expressions of prophenoloxidase, crustin and penaeidine-3c in shrimp hepatopancrease were also higher in shrimp that were fed the insect diets, regardless of defatting than those in shirmp that were fed Con diet. The survival against Vibrio parahaemolyticus was higher in shrimp that were fed the diets containing defatted insect meals than in shrimp that were fed Con diet. These results indicate that MW and BSF, regardless of lipid levels, could be good protein sources for the enhancement of innate immunity and anti-oxidant capacity of the shrimp.

갈색거저리(Tenebrio molitor) 유충의 산화방지 성분 및 활성 (Antioxidant Components and Antioxidant Activities of Mealworm (Tenebrio molitor Larvae))

  • 식용곤충인 갈색거저리 유충을 기능성 소재로 활용하기 위하여 갈색거저리 유충 추출물의 산화방지 성분 및 활성을 확인하였다. 동결건조한 갈색거저리 유충 분말의 일반 성분은 수분함량 0.80 ± 0.06%, 조회분 3.29 ± 0.03%, 조단백질 54.07 ± 0.24%, 조지방 36.78 ± 0.66%이었다. 갈색거저리 유충 분말의 ethanol 농도별(95%, 70%, 50%, 물) 추출물의 총 phenolic compounds 함량은 50% ethanol 추출물에서 459.23 ± 1.05 mg/100 g으로 가장 높았으며, 총 flavonoid compounds 함량은 물 추출물에서 19.86 ± 0.69 mg/100 g으로 가장 높았다. 갈색거저리 유충 분말 추출물의 DPPH radical 소거 활성은 70% ethanol 추출물에서 82.60 ± 0.00%로 가장 높았으며, 물, 50% ethanol, 95% ethanol 추출물 순으로 높았다. ABTS radical 소거 활성은 50% ethanol 및 물 추출물에서 각각 97.57 ± 0.16%와 95.33 ± 0.41%로 높게 나타났으며, 유의적 차이는 없었다. 환원력의 경우 물 추출물에서 유의적으로 가장 높았으며, 50% ethanol, 70% ethanol, 95% ethanol 추출물 순이었다. 본 연구결과 갈색거저리 유충의 산화방지 성분의 함량이 많고 산화방지 활성을 우수함을 확인하였으며, 기능성 소재로서 활용할 가치가 있는 것으로 나타났다.

조피볼락의 사료원으로 갈색거저리의 영양적 가치 및 소화율 평가 (Nutritional Value and Digestibility of Tenebrio molitor As a Feed Ingredient for Rockfish (Sebastes schlegeli))

  • Tenebrio molitor larvae, also known as yellow mealworms (MW), are rich in protein and lipid and can serve as a potential alternative protein and energy source in commercial aquafeeds. Therefore, this study attempts to evaluate the effects of different drying methods on the nutritional value of MW meal. For this, live MW were cold-anaesthetized before being subjected to three different types of drying methods, including freeze-drying, oven-drying at $60^{\circ}C$ and air-drying at room temperature for three days, and compared for proximate composition and energy content. An in-vivo digestibility test was then conducted to evaluate the nutrient digestibility of MW meal in diets for rockfish, Sebastes schlegeli. A test diet was prepared by mixing the MW meal with a reference diet (Ref) in a 30:70 ratio with chromium oxide as an inert marker at the inclusion level of 0.5%. Rockfish with mean body weight of 150 g were stocked into a fecal collection system equipped with fiberglass tanks of 400 L capacity. Each group of fish was fed one of the experimental diets to apparent satiation for 4 weeks. The results of the proximate analysis showed that drying methods had no significant effect on crude protein, crude lipid, ash and energy contents of MW. Despite being a rich source of protein and lipid, MW meal was deficient in certain amino acids, particularly methionine, and highly unsaturated fatty acids, particularly 22:6n-3 (DHA) and 20:5n-3 (EPA). MW meal showed high digestibility values for protein (93%), lipid (97%) and energy (88%). These results may indicate that MW meal is a nutritious and acceptable feed ingredient, with comparable digestibility values to conventional animal and plant feedstuffs such as fish meal and soybean meal, in practical diet for rockfish at grower stage.

Optimization of Replacing Pork Meat with Yellow Worm (Tenebrio molitor L.) for Frankfurters

  • The effects of replacing pork meat with yellow mealworms on the physicochemical properties and sensory characteristics of frankfurters were investigated in this study. The control (50% pork ham), T1 (45% pork ham + 5% yellow mealworm), T2 (40% pork ham + 10% yellow mealworm), T3 (35% pork ham + 15% yellow mealworm), T4 (30% pork ham + 20% yellow mealworm), T5 (25% pork ham + 25% yellow mealworm), and T6 (20% pork ham + 30% yellow mealworm) were prepared, replacing lean pork meat with yellow mealworm. The moisture content, lightness, sarcoplasmic protein solubility, hardness, gumminess, chewiness, and apparent viscosity of frankfurters with yellow mealworm were lower than those of the control (p<0.05), whereas the content of protein and ash, pH, and yellowness of frankfurters with yellow mealworm were higher than those of the control (p<0.05). The fat content of frankfurters in T1 (p<0.05) was the highest, and the fat content of treatments decreased with increasing yellow mealworm concentrations (p<0.05). Frankfurters with increasing yellow mealworm concentrations had lower color, flavor, off-flavor, and juiciness scores. The overall acceptability was not significantly different in the control, T1, and T2 (p>0.05). Thus, the results of this study showed that replacing lean pork meat with up to 10% yellow mealworm successfully maintained the quality of frankfurters at a level similar to that of the regular control frankfurters.
