  • Institutional foodservice is a type of meal provided to workers in industry and affects the health and psychological wellbeing of workers and productivity. Thus, research on customer satisfaction with institutional foodservice is important. In addition to food industry and food culture developments, the requirements of institutional foodservice customers are diversifying due to COVID-19. Therefore, the purpose of this study was to identify factors that affect customer satisfaction with institutional foodservice using a user-based approach. In this study, the quality of institutional foodservice was defined using customer satisfaction or dissatisfaction, and by using in-depth interview and open coding (a qualitative research method), we derived qualities of institutional foodservice from the user's perspective and compared these with those of previous studies. This study is meaningful as the quality of institutional foodservice was analyzed using a user-based approach, in-depth interview, and open coding and compares results with those of previous studies.

노인급식 수혜자의 가정에서 배달 도시락 취급 및 섭취 실태와 가정배달 급식서비스에 대한 인식 (Clients' Handling and Consumption of Home-delivered Meals at Home and Their Perceptions on Home-Delivered Meal Services for Older Adults)

  • The purposes of this study were to investigate recipients' handling and consumption of home-delivered meals at home and to assess their perceptions on home-delivered meal services for older adults. A total of 312 elderly people who received home-delivered foodservice were surveyed using an individual interview technique. A statistical data analysis was completed using SPSS (ver. 14.0). It was found that 90.2% (n = 166) of the lunch box recipients received services for six days per week, and 76.6% (n = 95) of the side-dish recipients got services once per week. More than half of the clients reported that they cooked meals by themselves on days when meals were not delivered. The two hundred thirty-two (75.3%) ate their meals as soon as they were delivered. It was found that 66.8% of the lunch box recipients and 7.3% of the side-dish recipients left delivered meals on the counter (at room temperatures) before eating. Only 11.4% of the lunch box recipients and 48.4% of the side-dish recipients kept delivered meals in the refrigerator before eating. Less than half of the lunch box recipients consumed all foods they were served at once. The reasons the recipients did not eat their all meals delivered at once were "saving for next meals" and "big portion size" Of those clients who left delivered meals, 19% of the lunch box recipients and 9.7% of the side-dish recipients ate leftovers without reheating. An average score of quality of delivered meal services was 3.5 out of 5 points. The results suggest that the clients of the home-delivered meal service should be provided information on proper handling and consumption practices with delivered meals at home. The findings of the study will be used to develop nutrition and food safety management guidelines for senior foodservice.

영등포구 보육시설의 급식 및 영양교육실태조사 (The Survey an the Nutrition Education and Food Service Managements system of the Early Childhood Education Institute in Yongdungpo)

  • The purpose of this study was to investigate food service management system and nutrition education of the early childhood education institute in Yongdungpo, Seoul. Self-administered questionnaires were completed by 26 public early childhood education institute and 34 private ones. A majority of the teachers were women over 40 with at least bachelor's degree. Other than the fact that food service provides food to the children, it contributed in providing the essential nutrients to the children, as well as giving them the opportunity to learn table manners. A normal food service would provide one set of lunch and two sets of snacks, which would be provided by the institute itself. In most cases, the director or teachers planned the menus instead of dietitians. Journals, cookbooks, and other information put out by mass communication, such as TV and newspapers, were used as reference to those menus. The factors considered in planning the menus were mainly nutritional balance and the children's food preference. The difficulties in meal management were about the budget and nutritional menu planning. Fifty five percent of the subjects were did nutrition education, and they focused mainly on the table manners and hygiene education but once a year. The difficulties and complaints in execution nutrition education at the institutes were lack of nutritional knowledge, personal shortage, and excessive work. The institutes were urgently requesting for menu provisions from local Public Health Clinics. As a recommendation from the results of this study, food service management and nutrition related subjects should be more enforced into the nursery teacher training curriculum. Also, it is necessary to provide nutrition education to teachers, and as a link, the need to develop a manual for nutrition education has become urgent.

중년기 여성의 영양교육이 식습관, 식행동, 영양지식 및 영양섭취에 미치는 영향 (The Effect of Nutrition Education on Food Habits, Dietary Behaviors, Nutritional Knowledges and Nutrient Intakes of Middle-aged Women)

  • This study investigated the effect of nutrition education on food habits, dietary behaviors, nutritional knowledges and nutrient intakes of middle-aged women. The subjects were 209 females aged $30{\sim}64yrs$. The subjects helped by trainers filled the questionnaire about demographic information, food habits, dietary behavior, nutritional knowledge and dietary intake before and after three months of nutrition education. All data were analyzed by chi-square test and paired t-test using the SAS program. The subjects who didn't drink alcohol significantly increased after the education(p<0.001). The largest meal of the day was lunch and the amount consumed was significantly different before and after the nutrition education(p<0.05). Dietary attitude scores significantly increased after the nutrition education(p<0.001). The percentages of subjects who didn't have processed foods, sweets and salty foods frequently significantly increased after the education(p<0.05). The subjects who answered correctly significantly increased in ten out of fifteen nutrition knowledge items related to obesity and in four out of five nutrition knowledge items related to nutrients after the education. There were significant differences in protein(p<0.01), calcium(p<0.05) and cholesterol intakes(p<0.01) before and after the nutrition education. This study suggests that nutrition education can improve dietary attitudes and nutritional knowledge.

초ㆍ중ㆍ고등학교 교사들의 학교급식에 대한 인식 조사 (Elementary, Middle and High School Teachers' Opinions of School Foodservice Programs)

  • This study investigated elementary, middle, and high school teachers' satisfaction, nutrition education, workload changes, and demands in school foodservice programs (SFPs). The subjects were 630 teachers at 12 elementary, 9 middle, and 9 high school within the nation. Ninety five percent of the teachers felt that there was a necessity for SFPs. Middle school teachers (MTs) and high school teachers (HTs) thought that it was necessary in order to reduce the students' burden of carrying lunch boxes. The teachers were relatively satisfied with their school's foodservice management types, food distribution types, meal quality, and sanitation. Elementary teachers (ETs) and HTs had a higher satisfaction than MTs. Teachers thought that SFPs had positive effects on their students' nutrition and health, enhancing desirable eating habits, and socialization. ETs had more positive opinions than MTs or HTs. ETs and MTs thought that their workload had been increased by SFPs more than HTs, but they had relatively positive opinions on the workload change. ETs taught nutrition and health through SFPs more frequently than MTs or HTs. Many teachers thought that there was a lack of appropriate teaching materials. Some teachers thought that the problems in the present SFPs were: a lack of cafeteria facilities, poor quality of meals, and management of leftovers. Their demands for SFPs were a improvement of meal quality and the establishment of cafeterias. In conclusion, MTs had more negative opinions than ETs or HTs. ETs perceived that SFPs had a function as an important educational activity as well as the supply of nutritional meals. MTs or HTs tended to consider only a meal. It is suggested that teachers, especially MTs and HTs, should modify their attitudes and recognize the educational functions of SFPs. Training programs should be developed under government auspices.

고등학생(高等學生)의 영양섭취실태(營養攝取實態)와 성장발육(成長發育)에 관(關)한 연구(硏究) (A Study on Every possible Correlation between Daily Food Intake and Growth Rate of Senior High School Students)

  • The primary purpose of this research paper is to study the nutrition intake status of high school students and their physical growth and development. Further, it made an attempt to find and define nutritional problems and assist in their growth and development through proper nutritional management. One hundred students in both sexes, first year grade in senior high school were provided with questionnaires. For six days the respondents filled out the questionnaires. They were asked to keep record of what they ate each meal. Their nutritional intake were analyzed in accordance with what they ate. Findings, conducted on percentage, CR test, t test, and F test, were as follows: 1. For the living circumstance a) Average numbers of brother and sister in sampled family were four. b) Seventy to eighty percent of the students were brought up by mother's milk at their infants and approximately 40% of students were weaned at the age of 7 to 18 months. c) Fifty percent of the respondents revealed irregulity in their meal time. d) Monthly average expenditure for daily food reached $20{\sim}40%$ out of total income. e) The most favorite foods reflect as follows: The most favorite main dish is boiled rice and side dish beaf. Fruits. juice, milk, ice cream are more popular snack among whole students. 2. Nutrition survey a) Calory sad nutrients were found to be below the recommended level, especially in calcium, vitamins A, $B_2$ and C. b) The total calory intake were composed of 73% from carbohydrate, 14% from protein and 13% from fat in the case of boys. The girls were 65%, 14%, 21% respectively. c) Both boys and girls in their animal protein intake averaged about 33% out of total protein intake. d) Meat consumption of the majority respondents were proportionate in $10{\sim}20%$ in their total food consumption. 3. The result of statistical analysis were as follows: a) Statistical significant differences in the relationship between the calory intake and physical growth index were observed at the level of p<0.05. b) Statistical significant differences in the relationship between the protein intake and physical growth index were observed at the level of p<0.05. c) Statistical significant differences in the relationship between meal time and physical growth index were observed at the level of 0.02<0.05. d) No statistical significant differences in the relationship among calory, protein intake and school records as well as intelligence were found. The experiment indicated that there is a direct relationship between nutrition and the physical growth and development, whereas There seems to be an indirect relationship between nutrition and intelligence.

재한 중국 유학 여대생들의 식습관 변화에 따른 영양 섭취 실태 (Dietary behavior and nutritional status among Chinese female college students residing in Korea)

  • 본 연구는 현재 한국의 대학에 재학 중인 중국인 여대생 114명을 대상으로 중국인 유학생들의 영양소 섭취상태를 조사하고, 중국과 한국에서의 식습관 변화 및 식습관 변화에 따른 영양소 섭취상태를 평가하고자 수행되었으며, 그 결과를 요약하면 다음과 같다. 1) 중국인 유학생의 평균 에너지 섭취량은 $1,586.9{\pm}474.2$ kcal였고, 탄수화물, 단백질, 지방의 구성비는 56 : 14 : 30으로 나타났으며, 전체 대상자의 23.7%가 단백질의 평균필요량에 미치지 못하고 있었고 43%가 권장섭취량에 미만으로 섭취하고 있었다. 엽산의 평균필요량 미만으로 섭취하는 비율은 대상자의 93%였고, 대상자의 60~70%가 칼슘, 아연, 비타민 A, 비타민 $B_2$, 비타민 C을 평균필요량 미만으로 섭취하는 것으로 나타났다. 2) 중국 유학생의 총 식습관 점수는 $64.3{\pm}9.9$점으로 유학전 $75.9{\pm}9.9$점에 비해 유의적으로 낮아졌으며 (p < 0.001), 특히 식사의 규칙성과 균형성, 아침식사 여부 및 단백질 식품, 녹황색 채소와 과일 등의 섭취빈도가 좋지 않은 방향으로 변화되었고, 가공식품의 섭취와 외식의 빈도는 더 많아진 것으로 조사되었다. 3) 한국 유학 전 후의 식습관 혹은 식행동 변화 여부에 따른 영양소 섭취 수준을 비교한 결과, 한국에 온 이후 아침 결식률이 높아진 사람들은 단백질, 지방, 칼슘, 비타민 $B_2$ 및 니아신의 섭취량이 낮았고, 또 중국에서 보다 녹황색 채소를 더 적게 먹게 된 경우는 식이섬유소와 비타민 C를, 우유 및 유제품의 경우는 단백질과 칼슘비타민 $B_2$와 비타민 $B_6$를 비롯하여 비타민 E와 엽산을 적게 섭취하는 것으로 나타났다. 본 연구 결과, 성인기 식생활과 건강을 결정하는 20대 초반 재한 중국인 여대생들의 경우 바람직하지 않은 식습관과 이로 인한 영양 섭취 상태의 불균형을 나타내는 것으로 조사되었다. 이상의 결과는 고국을 떠나 낯선 문화에 적응하여야 하는 중국인 유학생들에 대한 영양교육 프로그램의 개발과 식생활 관리가 필요하다고 하겠다. 또 올바른 식생활의 정립은 심리적, 정서적 건강상태에도 영향을 미칠 수 있으며, 대학생활의 적응과 성공적인 유학생활에도 도움이 될 것으로 생각된다.

청소년의 아침식사 여부에 따른 영양소 섭취 상태 및 식사의 다양성 평가 : 2008~2009 국민건강영양조사 자료 분석 (Evaluation of Nutrient Intake and Meal Variety with Breakfast Eating in Korean Adolescents: Analysis of Data from the 2008~2009 National Health and Nutrition Survey)

  • The purpose of this study was to evaluate nutrient intake and meal variety with breakfast eating in Korean adolescents using data from the 2008-2009 National Health and Nutrition Examination Survey. The analysis included 1245 adolescents aged 12 to 18 years. The subjects were divided into two groups according to breakfast skipping (BS: breakfast skipping, n = 235, BE: breakfast eating, n = 1110). The BS group was significantly higher in its frequency of eating soda drinks, instant noodle, and ice cream than the BE group. The BS group consumed significantly lower quantities of plant calcium and plant protein per 1,000 kcal compared to the BE group. Also the intake of cereal and vegetables in the BS group was significantly lower than those in the BE group, however, the intake of beverage in the BS group was significantly higher than that in the BE group. The average number of foods of the BE and BS groups were 29.50 and 25.85, respectively and revealed a statistical significance (p < 0.0001). The snack intake and % energy from snack intake of the BS group were significantly higher than those of the BE group. Also, the fasting blood glucose concentrations were significantly higher in the BS group compared to the BE group. In conclusion, adolescents who skip breakfast may have lower meal variety and higher blood glucose concentrations. Therefore, in support of proper dietary management, it is necessary to promote and encourage breakfast eating.

Diet and Health-Related Factors of the Middle-Aged and the Elderly in Korea

  • This study was designed to assess diet and health-related factors of older adults in Korea. Subjects females were 2,660 adults aged 50 and over living in Korea. Males were 847 persons and were 1813 persons. The mean weight and height for males and females were 63.8 $\pm$ 0.3kg / 164.0 $\pm$ 0.2cm and 57.0 $\pm$ 0.2kg /150.6 $\pm$ 0.1cm respectively. BMI (body mass index), body fat, and percent fat were significantly greater in females than in males. The muscle mass and body water were significantly greater in males than in females. Twenty-one percent of total subjects lived alone and 26% with spouse only. Most of the subject's self-reported income was in middle level (65%) or low level (24%). Proportion of subjects who answered 'very poor' or 'poor' on perceived health status was higher in older group. The 50-64 years old group was facing more stress than 65yr and over group. Among male subjects,38.4% were current-smokers and 22.0% were ex-smokers. But only 6.5% of female subjects were current-smokers. Males turned out to have better dietary habits-meal frequency per day, mealtime regularity, regular meal size and balanced eating-than females (p < 0.001). This study revealed that the diet and health-related factors affect nutritional status and chronic diseases of the elderly. For better management and evaluation of health status of the elderly, more effective nutritional assessment tools should be developed.

50세 이상 남성의 생활습관 및 식습관과 골밀도와의 관계 (Associations of Lifestyle Behaviors, Dietary Habits and Bone Mineral Density in Men Aged 50 Years and Older)

  • Lifestyle behaviors including dietary habits are well known to play key roles in bone metabolism. The purpose of this study was to investigate the relationship among the factors affecting bone mineral density (BMD) including age, anthropometric parameters, lifestyle behaviors, and dietary habits of men aged more than 50 years. Ninety-one men, who visited health promotion center at one of the university medical centers, were divided into two groups according to the BMD: normal and osteopenia. The BMD of femoral neck in the osteopenia group was significantly lower than that of the normal group ($0.77\;{\pm}\;0.28$ vs. $0.98\;{\pm}\;0.08\;g/cm^2$). The proportion of the regular exercisers was significantly lower in the osteopenia group than in the normal group (p = 0.027). In the osteopenia group, the femoral neck BMD was significantly decreased in smokers and coffee drinkers compared to no-smokers and no-coffee drinkers. The femoral neck BMD was increased among those who consume breakfast and beans and bean products more frequently and those with a greater meal regularity. In the normal group, the lumbar spine BMD was significantly increased among those with frequent consumption of beans and bean products. The lumbar spine BMD was significantly correlated with exercise (r = 0.263), and the femoral neck BMD with weight (r = 0.284), BMI (r = 0.324), relative body weight (r = 0.294), exercise (r = 0.269) and frequency of beans and bean products consumption (r = 0.216). These results indicate that lifestyle behaviors and dietary habits play important roles in maintaining optimum bone health in the middle-aged men.
