초음파를 이용한 한우의 도체육질 예측 (Prediction of Carcass Meat Quality Grade by Ultrasound in Hanwoo)

  • 본 시험은 초음파진단기를 이용한 한우의 도체육질 예측기법의 확립과 예측율 향상을 목적으로 실시하였다. 도체육질 등급별 초음파 표준화상과 초음파 육질 index를 활용한 decision tree 분석을 이용하여 24개월령 거세한우 66두의 도체육질 등급을 예측하였으며, 그 결과를 요약하면 다음과 같다. 초음파 육질 index를 이용한 의사결정나무 분석 결과, 초음파 화상 내 늑골의 선명도가 육질 등급에 가장 큰 영향을 미치는 것으로 나타났다. 거세한우 66두를 대상으로 초음파 육질 index에 의한 도체육질 등급의 예측율은 86.4%를 나타났으며, 도체 등급별 초음파 표준화상을 이용한 78.8%에 비해 7.6%의 예측율 향상을 보였다.

Carcass Characteristics and Profitability Analysis Based on Slaughter Age of Hanwoo Steers

  • This study analyzed optimal slaughter ages and carcass traits to investigate factors that affect farm incomes. Carcass characteristics and economical analysis of 81 Hanwoo steers previously tested (Expt. 1) and 5,826 steers from Gangwon-Do, area A (Expt. 2) were used. In Expt. 1, the strongest relationship was between the slaughter age and the carcass weight based on the $R^2$ value, and the weakest relationship was between the slaughter age and the marbling score based on the $R^2$. The slaughter age, marbling score, and rib-eye area of steers slaughtered from 26 to 31 months of age had a positive effect on income, but back fat thickness had a negative effect. In the economical analysis of Expt. 1, the optimal time for slaughter was 31 months of age. In Expt. 2, composed of steers slaughtered from 26 to 35 months of age in farms site of area A, the income was highest from steers slaughtered at 28 months of age, after which the income decreased. From the results of Expt. 1 and 2, it is evident that the optimal slaughter age of Hanwoo steers is affected by the genetic differences of calves, the feeding program and management, fattening skills, or carcass price. In order to improve the income of individual farms, the slaughter age must be precisely decided by understanding the exact relationship between the feeding cost of Hanwoo steers and slaughter results, such as carcass weight, yield grade and quality grade.

한우의 경락가격에 대한 요인별 기여도 분석 (Effects of Carcass Traits on Auction Price in Hanwoo)

  • 본 연구는 성, 도축계절 및 도축연도가 도체형질에 미치는 영향을 조사하고, 도체형질이 경락가격과 총가격에 미치는 기여도를 추정하기 위해 수행되었다. 2008년에서 2010년까지 도축된 한우4,231두의 도체등급 자료를 분석에 이용하였다. 성, 도축계절 및 도축연도는 도체형질에 유의적인 영향을 미쳤다. 준부분 상관제곱(squared semi-partial correlation) 값을 이용한 요인별 기여도 분석에서 경락가격의 R-Square는 0.55로 나타났다. 등지방두께, 배최장근단면적, 도체중 및 근내지방도의 경락가격 기여도는 각각 2.66, 0.32, 3.48 및 93.54%였다. 총가격의 R-Square가 0.82로 나타났으며, 근내지방도와 도체중의 기여도는 각각 46.25%와 52.38%였다.

Correlations among Stress Parameters, Meat and Carcass Quality Parameters in Pigs

  • Relationships among different stress parameters (lairage time and blood level of lactate and cortisol), meat quality parameters (initial and ultimate pH value, temperature, drip loss, sensory and instrumental colour, marbling) and carcass quality parameters (degree of rigor mortis and skin damages, hot carcass weight, carcass fat thickness, meatiness) were determined in pigs (n = 100) using Pearson correlations. After longer lairage, blood lactate (p<0.05) and degree of injuries (p<0.001) increased, meat became darker (p<0.001), while drip loss decreased (p<0.05). Higher lactate was associated with lower initial pH value (p<0.01), higher temperature (p<0.001) and skin blemishes score (p<0.05) and more developed rigor mortis (p<0.05), suggesting that lactate could be a predictor of both meat quality and the level of preslaughter stress. Cortisol affected carcass quality, so higher levels of cortisol were associated with increased hot carcass weight, carcass fat thickness on the back and at the sacrum and marbling, but also with decreased meatiness. The most important meat quality parameters (pH and temperature after 60 minutes) deteriorated when blood lactate concentration was above 12 mmol/L.

Feasibility of Increasing the Slaughter Weight of Finishing Pigs

  • The present review was aimed to assess the feasibility of increasing the slaughter weight (SW) of finishing pigs. Growth performance, including ADG, ADFI and gain:feed, does not change significantly with increasing SW between 110 and $135{\pm}5kg$ in lean-genotype pigs, whereas in non-lean pigs, ADG and gain:feed decrease with increasing SW within the similar range of BW. Backfat thickness (BFT) and marbling of the carcass, which are greater in barrows than in gilts, increase with the increase of SW. The SW could be increased by using a low-energy diet and thereby reducing the rate of fat deposition per weight gain. The yield of the belly increases with the increase of SW, which may be economically significant in Korea. However, yields of some other primal cuts do not change so much as to affect the carcass value. The redness and fat content of the muscle increase slightly with the increase of SW whereas moisture content is minimally influenced by SW. Muscular protein content rarely changes, but sometimes increases slightly, with increasing SW. Other physicochemical characteristics, including lightness, pH, drip loss, and cooking loss of the muscle, are barely influenced by SW. Marbling of fresh loin and ham increases with increasing SW. Sensory characteristics of fresh loin, ham, and belly, including color, aroma, off-flavor, drip, and acceptability, are not influenced significantly by SW. The eating quality of cooked pork also has almost no relation to SW. In conclusion, it is thought that the current SW for moderately lean barrows and gilts can be raised up to 125 and 135 kg, respectively, with BFT at these weights predicted to be approximately 24 mm near the last rib, without compromising the meat quality.

A Study on Expression Techniques of Nail Art: Focused on Nail Holic in 2012

  • This study examined the history of nail art in 20th century, defined characteristics of many techniques used on nails, and analyzed how those techniques have been utilized in recent nail art works. For the method of the study, books and previous studies on nail art were examined as primary sources, and newspaper articles on nail art were studied as references. Then, the case studies were conducted on photographs of nail art works published in Nail Holic in 2012. As a result of analyzing expression techniques of nail art featured on Nail Holic, there had been a total of 517 works created using a single technique. The reason why hand painting is used very frequently is because artists can draw unique images of their own to create various designs according to their tastes. Rhine stone is also very popular, because stones are easy to apply and various in their shapes and colors. There were a total of 555 works created using two or more techniques. The most important point to examine is that hand painting, rhine stone, and 3D art were most popular among all techniques. These works featured highly various effects and images by combining flat effect of hand painting with three-dimensional effects of rhine stone or 3D art. The tendency can also be found in the fact that there have been many works using techniques of flat effects such as decal or marbling combined with techniques of three-dimensional effects such as rhine stone or 3D art.

Effects of Plane of Nutrition on Growth Performance and Meat Quality Traits in Finishing Pigs

  • The present study was performed to investigate the effects of the plane of nutrition on growth performance and meat quality traits, especially marbling and PSE (pale, soft, and exudative), in finishing pigs. One hundred and four barrows and 102 gilts born to Yorkshire ${\times}$ Landrace dams and Duroc sires were randomly allocated to 16 pens at approximately 80-kg body weight, with 13 animals housed per pen except for two pens. Each eight pens received a diet containing either 3.4 Mcal ME/kg and 0.98% total lysine (high plane) or 3.1 Mcal ME/kg and 0.81% total lysine (medium plane). All animals were slaughtered at approximately 112 kg BW on an average, after which the Longissimus muscle (LM) was analyzed physicochemically. The ADG, ADFI, gain:feed as well as marbling score did not differ between the two dietary groups, whereas backfat thickness was greater in the high-plane group than in the medium-plane group (24.1 vs. 22.5 mm P<0.05). No LM exhibited PSE, i.e. $L^*$ (lightness) > 50, pH < 6.0 and drip loss > 5.0%, nor were these PSE-related variables influenced by the dietary treatment. Contents of crude protein and fat in LM did not differ between the two dietary groups. In conclusion, the present results suggest that growth performance and the occurrence of the PSE or 'watery' carcass are not influenced significantly by increasing the plane of nutrition in finishing pigs when the finisher is adequate nutritionally for supporting maximal lean growth. However, increasing the plane of nutrition is likely to result in an increase in fat deposition.

Genetic Parameters for Traits in Performance and Progeny Tests and Their Genetic Relationships in Japanese Black Cattle

  • Genetic parameters for performance traits on 409 bulls and growth and carcass traits on 591 of their steer progeny were estimated in Japanese Black cattle with Gibbs sampling. Traits of bulls included body weight at the start (BWS) and finish (BWF) of test, daily gain (DG), concentrate, roughage and TDN intake, and TDN conversion ratio. Progeny traits were BWS, BWF, DG, rib eye area, marbling score (MSR), dressing percentage and subcutaneous fat thickness (SFT). In bulls, heritabilities were high for BWS (0.50) and BWF (0.63) and moderate for concentrate (0.48) and TDN intake (0.45), while in progeny, the heritability for all the studied traits was moderate to high (ranging from 0.30 to 0.73), highlighting the potential for genetic improvement of these traits. Genetic correlations between TDN intake and growth traits (BWS, BWF and DG) in bulls were highly positive (ranging from 0.77 to 0.94). The weak but negative genetic correlation (-0.20) between MSR and SFT in progeny indicated that improvement of beef marbling without increasing subcutaneous fat deposition could be possible. The estimated genetic correlations of roughage intake of bulls with body weights (BWS and BWF) and MSR of their progeny were moderate (ranging from 0.35 to 0.52). On the basis of the selection for bulls, growth traits and TDN intake correlated positively with SFT (ranging from 0.43 to 0.53) of their progeny, suggesting the necessity of controlling the increase of SFT in selection programs.

한우의 도체 형질이 경제성에 미치는 영향 (The Effect of Carcass Traits on Economic Values in Hanwoo)

  • 본 연구는 한우 농가의 소득에 직접적인 영향을 미치는 경매단가(AP) 및 도체판매가(CP)에 영향을 미치는 도체 특성(근내지방도(MS), 배최장근단면적(LMA), 등지방 두께(BFT), 도체중(CW) 및 육량 지수(MYI))와의 상관관계를 조사하였다. AP의 경우는 근내지방도(MS)가 가장 높은 상관(r=0.73)을 나타내었으며, CP는 도체중이 0.71로 가장 높고, 다음으로 근내지방도가 영향력이 높게 나타났다. 하지만, LMA, MYI는 비교적 낮은 상관을 나타내었다. 이상의 결과 농가의 소득의 향상과 한우의 MS 및 CW 향상이 유의적인 상관도가 있었다.

Identification of a Novel SNP Associated with Meat Quality in C/EBP${\alpha}$ Gene of Korean Cattle

  • CCAAT/enhancer binding protein ${\alpha}$($C/EBP{\alpha}$) plays an important role in lipid deposition and adipocyte differentiation. In order to find genetic markers to improve the meat quality of Korean cattle, the bovine $C/EBP{\alpha}$ gene was chosen as a candidate gene to investigate its association with carcass and meat quality traits in Korean cattle. A single nucleotide polymorphism (SNP) was identified at position 271 (A/C substitution) of coding region in the $C/EBP{\alpha}$ gene. A PCR-RFLP procedure with restriction enzyme SmaI was developed for determining the marker genotypes. The frequencies of alleles C and A and were 0.374 and 0.626, respectively. The genotype frequencies for CC, AC and AA were 12.9, 49.0 and 38.1%, respectively, in Korean cattle population. The frequencies of genotype were in agreement with Hardy-Weinberg equilibrium. Association analysis indicated that the gene-specific SNP marker of $C/EBP{\alpha}$ showed a significant association with marbling score (p<0.05). The animals with AA genotype had higher marbling score than those with the AC or CC genotype. Although further studies are needed to validate our results, the $C/EBP{\alpha}$ gene could be useful as a genetic marker for carcass and meat quality traits in Korean cattle.
