Barley Malt Treated with Enzymes Increases Polyphenol Content and Antioxidant Activity

  • The purpose of this study was to improve the functionality of a healthy drink with examining the possibility of manufacturing different enzymes (alpha-, beta-, glucose-amylase) in barley malts (BM) produced in various malting periods. The study showed that enzyme treatment increased significantly total polyphenol content (TPC), DPPH radical scavenging activity and hydroxly radical scavenging activity in malted liquid samples (MLS) which obtained from various malting periods. The highest of TPC were found in Gluco-24M with 1.981 mgTAE/ml, followed by Beta-24M and Alpha-72M with 1.878 mgTAE/ml and 1.845 mgTAE/ml, respectively. The DPPH result revealed that percent of inhibition increased by 71-75% compared to the control. No statistical difference was found between MLS obtained by 24 hr of malting (24 M) and 72 hr of malting (72 M) after enzyme treatment. In addition, an increasing of hydroxyl radical was in the same trend to the TPC and DPPH. The hydroxyl radical scavenging activity of enzyme treated samples was 1,5 times higher than the control. These results suggest the possibility of enzyme application to barley malts obtained in various germination periods for improving quality and functionality of barley malts.

저장조건 및 품종혼합가공에 따른 맥주맥의 품질변이 (Effect of Storage Conditions and Varietal Mixture on Quality of Malting Barley)

  • 맥주맥은 품질이 대단히 중요하므로 원맥의 합리적인 품질유지 체계를 확립하기 위한 연구의 일부로서 원맥의 저장기간, 저장환경, 원맥의 등급, 원맥의 품종별 혼합가공시의 문제점들을 맥아제조면에서 실험 검토한 바 그 결과를 요약하면 다음과 같다. 1. 우리나라 기후조건에서 상온실내 저장을 1년이상하면 2% 이상, 3년차에는 8% 이상의 발아율 감소를 초래하였으며 따라서 원맥의 저장기간을 단축해야 품질이 향상될 것이다. 2. 낮은 등급일수록 저장기간에 따른 원맥의 발아율 감소가 심하였으므로 하위 등급의 저장기간을 단축해야 한다. 3. 우리나라 양곡 저장고의 1급 창고에서는 15개월간의 저장기간에는 발아율에 큰 차이가 없었으나, 등외창고에서는 13개월 저장 이후 발아율이 급격히 감소되었다. 4. 1,000입중과 정립율은 16개월간 저장기간까지에 저장고의 등급과 저장기간에 따른 큰 변이가 없었다. 5. 두 품종의 혼합가공시의 입중 변이는 단일품종의 입중변이보다 커지며, 맥주맥의 맥아율은 종실의 크기와 품종에 따른 차이가 컸으므로 혼합가공을 피해야 하고 정립율 제고를 위한 육종과 아울러 맥아 생산단계까지는 품종별로 원맥의 생산, 축장 및 맥아제조가 이루어지는 체계수립이 절실히 요구된다.

The Establishment of Optimum Conditions for Saccharification in Manufacturing Red Ginseng Sikhye

  • Red ginseng sikhye is one of Korean unique beverages with the addition of effective ingredients of ginseng. Considering economical and mechanical efficiency and quality of sikhye, the optimum conditions for saccharification is to saccharify at 90 degree celsius for 3 hours in the composition of 4% of malt, 20% of steamed rice, and 6% of red ginseng power. The red ginseng sikhye has high soluble solid content over 33% compared with conventional commercial sikhye. On the other hand, ginseng sikhye, which shows low pH, has more or less higher acidity than conventional commercial one. Especially the turbidity of the red ginseng sikhye is much higher than that of commercial sikhye, due to as high amount of rice as 20% compared with 3% in the commercial one. The use of high quantity of rice affected the level of turbidity in red ginseng sikhye. In this study, we wanted to establish optimum conditions for saccharification in manufacturing red ginseng sikhye which contains effective herbal medicinal ingredients maintaining the original taste of traditional sikhye.

제조 방법에 따른 쌀 조청의 특성 및 수율 (Characteristics and Yield of Jochung Processed by Different Preparation Methods)

  • This study was performed to increase the yield and to reduce the processing times for the preparation to improve the productivity and quality of rice jochung, a traditional food in Korea. In order to evaluate the quality characteristics and yield of jochung, the viscosity, color value, mineral contents and the sensory evaluation were measured. Jochung is prepared from steamed rice (STR), wet-milled rice flour (WRF) and dry-milled rice flour (DRF) by processing methods of rice and reacting times (6 hours or 13 hours) of liquefaction and saccharification. There is commonly added liquefying enzyme for rice liquefaction (0.4%/10 kg rice, at $85{\sim}90^{\circ}C$ for 1 hour or 4 hours) and saccharogenic enzyme with malt (2.5% or 4.5%/10 kg rice, at $56{\sim}60^{\circ}C$ for 5 hours or 9 hours). The inner structural properties of WRF showed the more distinct shape regular structure of uncombined starch particles but the DRF closely maintained particles of rice flour observed by SEM. If processing times for liquefation and saccharification were reduced from 13 hours to 6 hours, the yield of jochungs prepared with WRF increased 8%, the DRF 7%, and the STR 3% respectively and the sensory evaluation as well as color values and overall desirability received high scores. The viscosity, color a and b values of jochung processed with WRF for 6 hours were lower than that processed for 13 hours. The viscosity and color a, b value and Ca content were decreased in the jochung processed with WRF or DRF for 6 hours, but Mg, P and K were increased than that of STR. Jochung processed by 0.4% liquefying enzyme and 2.5% malt with WRF for 6 hours will increase the yield, save manufacturing times and costs and will thereby enable cost-effective techniques.

Changes in Microorganisms, Enzyme Activities, and Gas Formation by the Addition of Mustard Powder on Kochujang with Different Salt Concentration

  • Kochujang was fermented using hot red pepper, meju prepared with soybean and rice, and malt-digested syrup. To reduce salt content, mustard powder (1.2%, w/w) was added to Korean traditional kochujang with 4-10% salt, and microbial characteristics, enzyme activities, and gas formation in kochujang were evaluated during fermentation for 120 days at $25^{\circ}C$. Yeast numbers of all treatments maintained 2.43-2.86 log CFU/g up to 60 days fermentation, indicating salt concentration had no effect on yeast count. Activities of ${\alpha}$- and ${\beta}$-amylases, and neutral and acidic proteases of kochujang added with mustard powder were slightly higher than those of control group. Total accumulative volume of gas produced during fermentation of kochujang without mustard powder (control group) was 5,892 mL/pack, but decreased to 34-99 mL/pack in low-salted kochujang (4 and 6% salt) added with mustard powder. Major gas produced was carbon dioxide (79-80%) with oxygen content less than 1.25%(v/v). Results indicate salt concentration of kochujang could be lowered up to 6-8% by addition of mustard powder without gas formation and quality alteration during distribution.

한국 전통음료에 관한 문헌적 고찰 -II. 최근의 연구동향- (Literature Review on The Korean Traditional Non-Alcoholic Beverages -II. Recent Status of Research and Developments-)

  • 우리나라 음료에 관한 현재까지의 과학적 연구결과를 수집하여 고찰하였다. 음료분야에서 수집된 최근의 연구논문은 총 79편이었으며 이들을 분류해보면 순다류 관련문헌이 11편, 유사다류 38편, 숭늉류 3편, 미식류 4편, 식혜류 9편, 수정과류 1편, 화채류 관련문헌 10편,기타문헌이 5편이었다. 현재 보고되어 있는 논문의 대부분이 음료의 성분을 규명하거나 제조방법이나 가공에 대한 연구이다. 따라서 음료의 재료에 관한 품질특성과 저장수명에 대한 더 많은 연구와 한국 고유음료의 산업화를 위한 다각적인 연구가 필요하다고 사료된다.

서울시 일부 지하철 역사 내 공기 중 진균 농도에 관한 연구 (Assessment of Airborne Fungi Concentrations in Subway Stations in Seoul, Korea)

  • This study was performed to assess airborne fungi concentrations during fall in eight subway stations in Seoul, Korea. The purpose of this study was to investigate appropriate culture media and evaluate factors affecting airborne fungi concentrations. Results indicated that airborne fungi concentrations showed log-normal distribution. Thus, geometric mean (GM) and geometric standard deviation (GSD) were calculated. The GM of airborne fungi concentrations cultured on malt extract agar (MEA) media was 466 $cfu/m^3$ (GSD 3.12; Range 113~4,172 $cfu/m^3$) and the GM of concentrations cultured on DG18 media was 242 $cfu/m^3$ (GSD 4.75; Range 49~6,093 $cfu/m^3$). Both of GM values exceeded 150 $cfu/m^3$, the guideline of World Health Organization (WHO). There was no significant difference between two fungi concentrations cultured on MEA and DG18 media, respectively. Two factors, such as relative humidity and depths of subway stations were significantly related to airborne fungi concentrations. It is recommended that special consideration should be given to deeper subway stations for improvement of indoor air quality.

인삼식혜 당화공정중 성분의 변화 (Change in the Composition of Ginseng Sikhye during the Saccharification Process)

  • 식혜 고유의 시원한 맛과 인삼의 독특한 맛을 가미한 인삼식혜를 제조하기 위해 본 연구에서는 엿기름 20 g, 고두밥 400 g을 기준으로 하여 여기에 각 인삼분말을 고두밥양의 $3{\sim}12%$, teramyl효소 0.2 mL을 각각 첨가한 후 인삼식혜 제조에 있어 당화공정의 특성을 분석하였다. 인삼식혜의 당화공정은 일반 식혜의 당화공정과 같이 당화 온도 및 당화 시간이 증가할수록 당화력이 증가 하는 경향을 보였다. 하지만 본 실험에서 제조한 인삼식혜의 유리당 분석을 한 결과 식혜고유의 주성분인 말토오스 함량이 일반 식혜보다 훨씬 높은 4.3%이상의 농도를 나타내고 있어 시판식혜에 비해 우수한 품질의 특성을 보였다.

전통 제주방법인 급청주법으로 제조한 가바쌀막걸리의 품질 특성 (Characteristics of GABA Rice Makgeolli Made by Korean Traditional Rice Wine Method of Geupchungju)

  • 쌀겨층이 많아 우수한 막걸리의 제조가 용이하지 않은 가바쌀의 가공적성을 개선하기 위해 막걸리 starter를 이용하는 전통 제주방법인 급청주법을 이용하여 막걸리를 제조하고 품질 특성과 기호도 등을 조사하였다. 발효 중 전체 중량의 변화와 산도, pH, 알코올, 환원당 함량 변화 등을 조사한 결과, 엿기름을 첨가한 급청주법이 초기 당질 이용성을 높여 발효를 안정적으로 진행시키는 것을 확인하였다. 관능평가 결과 급청주법의 엿기름 최적 첨가량은 2%로 나타났으며 이를 초과하여 첨가하게 되면 최종제품의 기호도나 관능평가에 좋지 않은 결과를 가져오는 것으로 나타났다. 조미를 위한 첨가물로는 아스파탐이 가바쌀막걸리에 청량감을 부여하여 조미에 적합하였으며 가바쌀로 만들어진 막걸리의 GABA 함량이 시판 일반 막걸리에 비해 두 배 이상 높은 것으로 나타났다. 이를 통해 엿기름을 첨가하여 급청주법으로 제조 시 가바쌀의 GABA 기능성이 안정적으로 확보된 막걸리의 개발이 가능할 것으로 사료되며, 이는 쌀겨층이 많은 일반 현미를 이용한 막걸리 개발에도 중요한 정보를 제공할 것으로 기대된다.

경상도 전통 마른 명태 식해의 품질특성 (A Study on Quality Characteristics of Traditional Kyungsangdo Myungtae (Alaska pollack) sikhae)

  • The quality characteristics of traditional Kyungsangdo Myungtae (Alaska pollack) sikhae including optimal composition of the product were investigated. In the sensory evaluation, the Myungtae sikhae made from Gampo accepted to be best for traditional Kyungsangdo Myungtae sikhae and it is called standard sikhae. The standard sikhae was prepared as follows: dried-Myungtae 200g, cooked rice 230g, red pepper 92g, garlic 112g, ginger 100g, radish 1.6kg, salt 20g, and malt meal 65g. The Myungtae sikhae made from Gampo showed higher values in total sugar, free reducing sugar, and nitrogen compounds than the Myungtae sikhae made from another locations. The sugar of standard sikhae consisted of four kinds including glucose. And, the contents of free amino acid was increased in the order of glutamic acid, alanine, and methionine. The composition of free amino acid in Myungtae sikhae contained 17 kinds, and the contents was increased in order of glutamic acid, aspartic acid, and proline. The organic acid of standard Myungtae sikhae consisted of 7 kinds including lactic acid during fermentation. The contents of citric acid, succinic acid, and lactic acid gradually increased during fermentation, and especially, increasing of lactic acid remarkably increased than the different organic acid.
