Objective: This study aimed to investigate the effects of fluoride-containing acidic tea beverages on bovine teeth surfaces. Methods: The pH values and fluoride concentrations of 11 kinds of mineral water and 23 kinds of tea were measured. The fluoride-containing Seopyenje black tea beverages with pH 3.48 were chosen for the experimental group. Distilled water that did not contain fluoride and had the same pH value as that of the Seopyenje black teas served as the positive control. The Jeju Samdasoo mineral waters with neural pH (pH 7.52) and no fluoride were chosen as the negative control. Bovine teeth in each group were submerged for 10 minutes. Thereafter, surface microhardness of each bovine teeth was measured and the results were analyzed. Results: The pH value range was 6.94-8.09 ($mean=7.37{\pm}0.08$) for the 11 kinds of mineral water and 3.48-6.74 ($5.62{\pm}0.05$) for the 23 tea beverages. Titratable acidity of the Seopyenje black tea beverages was higher than that of the distilled water mixed with citric acid, and the pH was 5.5 and 7.0, respectively. The fluoride content of the 11 kinds of mineral water was 0-1.09 ppm ($mean=0.44{\pm}0.02ppm$) that of the 23 tea beverages was and 0-0.74 ppm ($0.64{\pm}0.06ppm$). In terms of enamel microhardness reduction of the bovine teeth, the tea beverages had the largest effects. There was no significant difference in microhardness reduction between the tea beverages and distilled water mixed with citric acid (P>0.05). Conversely, a significant difference was found between the kinds of mineral water and tea beverages, and also between mineral water and distilled water mixed with citric acid (P<0.05). Conclusions: Acidic tea beverages appeared to erode the surfaces of bovine teeth. The amount of fluoride in the tea beverages was not enough to inhibit erosion. Therefore, frequent intakes of acidic tea beverage are likely to increase erosion on the surfaces of bovine teeth, by affecting the enamel microhardness of teeth.

Water soluble polysaccharides (WSP) and arabinogalactan of Portulaca oleracea L. (POL) were increased after extrusion and commercial cellulase treatment. Arabinose and galactose content increased more about 1.5 times than those of raw POL, and rhamnose also increased about 2.6 times in WSP. High molecular weight fraction (I) of POL depending on extrusion condition including Ext I, Ext II and Ext III degraded into low molecular weight fraction (II) about 37, 29, and 26%, respectively, ranged from 67,000-69,000 Da of molecular weight. Especially, the molecular weight and composition of WSP with extruded, were increased from 9 to 13% in low molecular weight fraction, compared to those of raw POL. Solubilization and degradation of polysaccharides were a directly propotional to specific mechanical energy in POL extrusion. WSP obtained by extrusion at Ext I and Ext II were found to be effective antioxidants in different in vitro assays with regards to 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity and Trolox equivalent antioxidant capacity (TEAC). However, these results suggest that WSP obtained using extrusion and subsequent enzymatic treatment may be an effective method to produce arabinogalactan from POL and be used as a functional food ingredients.
Recently river water pollution in Korea is given rise to serious problem in aspect of crop production, drinking well, water contamination and etc. Under these urgent situations, it is prime importance to protect water resources from pollutants. An environmental isotope survey of the groundwater form the shallow alluvial and the underlying crystalline rock aquifer of the Han River Basin has been undertaken, Analysis of the data has I) confirmed the hypothesis that the groundwater from the metropolitan area is recharged from the river whereas that form the non-urbanized region of the Basin is replenished by the infiltrating precipitation; ii) shown that crystalline rock aquifers are recharged by the ground water form the overlying alluvium. Old groundwater is a group of wells with tritium values in the range of 0 to 2 TU. These low values indicate that the water sampled was recharged much ealier, at least a few decades, than the other groundwater samples of higher tritium content. The low values in this region may, in fact, reflect the effect of the impermeable clay layers which impede infilteration from the surface. Stable isotope evidence confirmed that a recharge in the karst area occurs at a significantly greater elevation than that to the alluvial aquifer. An analysis of the tritium level collected over an annual cycle suggests that the residence time of groundwater is probably not more than a few months. There does not appear to be any correlation between the trace level of Zn, Mn and Pb in the groundwater and the mechanism of the recharge.

This study was conducted to develop radish as a food product for home meal replacement using superheated steam (SHS). Also, the change of quality characteristics was studied during their storage. The radish cuts were treated with SHS for 0, 3, 5, and 7 min, respectively, followed by complete drying at $80^{\circ}C$ for 6 hours. The results showed that radishes restored with mixed solution (drinking water:sugar:vinegar:salt=2:1:0.8:0.1) were harder than those restored with drinking water. All radishes were stored at 5, 10 and $15^{\circ}C$ for 56 days to investigate the changes of quality characteristics during the storage. Radishes in the control group, restored with drinking water and stored at $15^{\circ}C$, were spoiled after 7 days of storage. The radish in the experimental group did not show any change in the water content; except an increase on the first day of storage. The hardness of radish decreased with an increase in the storage period. It was found that microbial growth was inhibited due to low pH of the mixed solution, in which radishes of the experimental group were immerse.

Objectives: The present study aimed to evaluate the preventive effects of exposure to liquid fermented milk containing various concentrations of added calcium on dental erosion, and to investigate the optimal concentration of calcium effective in reducing dental erosion. Methods: The present study consisted of a total of 6 experimental groups: a mineral water group, a fermented milk with no added calcium (0%) group, and four fermented milk with various concentrations of added calcium (0.1%, 0.5%, 1%, and 2%) groups. Twelve specimens were immersed for 1, 3, 5 and 10 minutes in each experimental drink and the change in surface microhardness was measured. Additionally, the surface was observed using a scanning electron microscope. Results: The difference in surface microhardness before and after 10 minutes of immersion in the experimental drink was the highest in the Ca 0% group, followed by the Ca 0.1%, 0.5%, 1%, 2% group and the mineral water group, in that order. The groups with a calcium concentration of more than 0.5% showed statistically significant differences in surface microhardness compared to the Ca 0% group. In addition, when the surface morphology of enamel was observed under a scanning electron microscope, the results showed that the highest level of surface damage was observed in the Ca 0% group, followed by the Ca 0.1%, 0.5%, 1%, 2% group, in that order. Conclusions:The present study confirms that a higher calcium concentration in fermented milk is associated with a higher possibility of preventing dental erosion. The addition of 0.5% calcium, which is a relatively low concentration, did not completely prevent dental erosion, but significantly inhibited dental erosion compared to fermented milk without any added calcium. Therefore, it is suggested that consumers should be educated and provided with guidance to consider the calcium content when choosing fermented milk.
To reduce saft content of kochujang, various combinations of sub-materials such as ethanol mustard and chitosan were added to kochujang, and their effects on microbial characteristics, enzyme activities, and physicochemical characteristics of kochujang were investigated after 12 weeks of fermentation. Activities of ${\beta}$-amylase and pretense were low in ethanol-mustard-chitosan-added kochujang, whereas no significant difference was observed in ${\alpha$-amylase activity among all groups. Number of viable yeast cells decreased remarkably in mustard-added kochujang during late aging period, and anaerobic bacterial counts decreased in sub-material-added groups. Consistency of kochujang increased by addition of sub-materials, and oxidation-reduction potential was low in chitosan-added group. Mustard-chitosan-added kochujang showed lowest increase in total color difference(${\Dalta}E$) and decrease in water activity. PH of kochujang wns highest in mustard-chitosan-added kochujang, resulting in significantly increased titratable acidity. Addition of sub-material increased reducing sugar contents of kochujang, whereas ethanol production was significantly repressed in mustard-chitosan-added kochujang. Amino nitrogen content was Highest in mustard-chitosan-added kochujang during late aging period, whereas ammonia nitrogen content was lower in ethanol-mustard-added kochujang. Results of sensory evaluation indicated ethanol-mustard-added kochujang was more acceptable than other groups in taste and overall acceptability.
The amount of salt to make seed sorting solution of the specific gravity of 1.13 was reconsidered and determined as 3.8 kg salt in 18 L water, which is lower amount than currently used. Five rice cultivars were examined. Percent germination and seedling emergence were not similar. Seedling emergence rate of Japonica varieties, Nampyungbyeo and Daerypbyeo-1 were 87% and 95% under specific gravity of 1.13, respectively. Seedling emergence rate of Tongil type variety, Dasanbyeo was as high as 67% in specific gravity of 1.06. Seedling emergence rate of waxy rice, Hwasunchalbyeo and Aranghangchalbyeo were examined. Seedling emergence rate was 94% in both cultivars in specific gravity of 1.04. Seedling emergence rate was same in specific gravity of 1.08 which is generally used for selecting seed currently. Early growth (plant height, leaf number, and dry weight) were not significantly different by specific gravity within species. In all cultivars except waxy rice, highest seedling emergence rate was observed in specific gravity of 1.13 which is currently used for selection and decreased as specific gravity is lowed. However, considering total amount of seeds in each group of specific gravity, amount of seed in lower specific gravity group is relatively small and total seedling emergence rate within variety dose not show big difference. However, if seeds with low speicific gravity are produced due to the bad grain filling condition and consequently total seed content of low specific gravity increases, results will be differnt. Reduction in total growth and yield could occur. It will be important to comply with the seed sorting criterion of 1.13 for Japonica, 1.06 for Tongil, and 1.04 for waxy rice variety to ensure the maximum rice growth and yield.

In this study, the effect of two types of aggregates (fly ash aggregate and shale aggregate) on the density, strength, and durability of preplaced lightweight aggregate concrete (PLWAC) was studied. The results showed that the 7 - 28 days strength of concrete prepared with fly ash aggregates (high water absorption rate) significantly increased, which could attribute to the long-term water release of fly ash aggregates by the refined pore structure. In contrast, the strength increase of concrete prepared with shale aggregates (low water absorption rate) is not apparent. Although PLWAC prepared with fly ash aggregates has a lower density and higher strength (56.8 MPa @ 1600 kg/m3), the chloride diffusion coefficient is relatively high, which could attribute to the diffusion paths established by connected porous aggregates and the negative over-curing effect. Compared to the control group, the partial replacement of fly ash aggregates (30%) with asphalt emulsion (20% solid content) coated aggregates can reduce the chloride diffusion coefficient of concrete by 53.6% while increasing the peak load obtained in a three-point bending test by 107.3%, fracture energy by 30.3% and characteristic length by 103.5%. The improvement in concrete performance could be attributed to the reduction in the water absorption rate of aggregates and increased energy absorption by polymer during crack propagation.
Chlorella has been used as a very useful food for rearing rotifer which is an important live food for early stages of fish and crustancean larvae. But Chlorella does not grow well in higher or lower temperature such as during summer or winter season in this country. Therefore, cooling or heating facilities are needed for Chlorella culture during summer or winter, but it costs too much for the commercial scale fish farmers. To solve this problem, the growth rates of 34 different species of phytoplanktons were examined at the various levels of temperatures, salinites and light intensities to select suitable species as the food for rotifers for summer and that for winter. After the suitable species were selected, growth comparisons of rotifer groups which were fed the selected species of phytoplanktons against rotifer group fed Chlorella as a control were done. Fatty acid compositions of the selected phytoplanktons and rotifer groups which were fed these selected phytoplanktons were examined. It was revealed that Nannnochioris oculata was optimum for rotifers in summer season and Phaeodactylum tricornutum was suitable for that in winter season. The optimum temperature, salinity and light intensity for former phytoplankton were $28^{\circ}C$, $33\%_{\circ}$ and 5,000 lux and those for later were $10^{\circ}C$, $30\%_{\circ}$ and 8,000 lux, respectively. In the higher temperature condition, the growth of N. oculata fed rotifer group was better than Chlorella ellipsoidea fed group. In the lower temperature condition, however, the growth of Chlorella fed rotifer group was slightly better than P. tricornutum fed group. Between two selected phytoplanktons, N. oculata has the highest content of linolenic acid (18 : 3 $\omega$ - 3, $\omega$ - 6) which is essential fatty acid for marine fish larvae. A rotifer group which was fed this plankton also showed the highest linolenic acid content among the other rotifer groups.

Allium hookeri is known as a healthy food since it contains larger amounts of sulfur compounds than commonly known alliaceous plants. The antioxidant and anti-inflammatory effects of A. hookeri were compared between two types of extracts, $80^{\circ}C$ water and 95% ethanol extracts of A. hookeri roots. A. hookeri root 95% ethanol extracts displayed superior total polyphenol content, antioxidant activity [1,1-diphenyl-2-picrylhydrazyl and 2,2'-azino-bis(3-ethylbenzothiazoline-6-sulfonate) radical scavenging activity], and anti-inflammation activity than those of water extracts (P<0.05). We studied the effects of A. hookeri root 95% ethanol extracts (95% ethanol extracts group: AHE) on acute alcohol-induced intoxication in mice. AHE [250, 500, and 1,000 mg/kg body weight (BW)/d] was orally administered to the study group once a day for 1 week. On the last day of AHE treatment, 40% ethanol (10 mL/kg BW) was orally administered to induce acute liver injury. The blood alcohol concentration of mice treated with AHE was significantly lower compared to the control group (P<0.05). The levels of hepatic aspartate aminotransferase and alanine aminotransferase were lower in the AHE-treated group than the control group (P<0.05). The RT-PCR results for alcohol dehydrogenase and aldehyde dehydrogenase measured based on mRNA in liver tissues showed that enzyme activities were higher in the AHE-treated group than in the control group at a low blood alcohol concentration.
