This is an analysis of the dietary behavior, nutrient intake status and INQ(Index of nutritional quality) of 129 college women according to their residences in the Daegu area. The average height and weight were 160.0 cm and 54.5 kg respectively. Diet intake data were obtained by using the 24-hour recall method to evaluate the usual diet of the subjects. The energy intake of the group, living alone was higher than that of living a roommate and living at home. Ca, Fe, Zn and folate intakes were low in all the groups. The composition rate of carbohydrate, protein and fat for energy intake was 58.9 : 15.5 : 25.6 in living alone, 59.9 : 15.1 : 25.0 in living with a roommate and 61.2 : 15.5 : 23.3 in living at home, compared with the preferred of 65 : 15 : 20. The group living alone showed significantly better mean adequacy ratio(MAR, 0.7) than the other groups (p<0.05). The group living with a roommate showed significantly better INQ in vitamin $B_6$ (p<0.01) and Fe (p<0.05) than the other groups did In conclusion, this study indicates that nutrient intake in college women in Daegu is considerably lower than the RDA values. Furthermore the group living alone showed better dietary behavior and nutrient intake status than the other groups. A nutrition education program for college women is necessary.
This study was conducted to investigate the anthropometric data, serum profiles, nutrient intakes and diet quality of men in their 30s. The subjects were divided into a married group and an unmarried group. For the study, we obtained data for analysis from the combined 2008~2015 Korean National Health and Nutrition Examination Survey (KNHANES). Mean height and weight of study population were 173.5 cm, and 74.0 kg in the married group and 173.1 cm, and 73.6 kg in the unmarried group, respectively. Systolic blood pressure in the unmarried group was significantly higher than that of the married group (P<0.001), while circulating vitamin D levels in the married group were significantly higher than those of the unmarried group (P<0.001). The proportion of obesity in the two groups was 42.41% and 38.40%, respectively. In the unmarried group, prevalence of depression was significantly higher than that those of the married group. Intakes of energy, water, protein, fat, carbohydrate and calcium in the married group were significantly higher than those of the unmarried group. In both groups, water and fiber intakes were low and sodium intakes were extremely high based on the KDRIs (Dietary Reference Intakes for Koreans). The mean adequacy ratio (MAR) of the married group was higher than that of the unmarried group. The index of nutritional quality (INQ) in the married group was also higher than that of the unmarried group. Therefore, we propose development of dietary guidelines and education programs for improvement of food and nutrient intakes, nutrition balance and dietary quality of unmarried men in their 30s.
This study was performed to determine the effect of Takju(Korean turbid rice wine) lees on the serum glucose level in streptozotocin-induced diabetic rats. 24 Sprague-Dawley male rats were divided into three groups: normal control(NC), diabetic control(DC) and diabetic rats(DS) were fed on experimental diet and water ad libitum for 4 weeks. DS diet was containing 20% Takju lees. Body weight gain and food Efficiency Ratio(FER) were significantly lower in DC and DS than NC. DS tended to have higher weight, weight gain and FEF than DC nevertheless food intake. Therefore Takju lees could possibly complement casein as a protein source. Gastrointestianl transit time in DS significantly decreased than NC while not significantly than DC. Serum lipid profiles and AST. ALT and amylase were not significantly different between diabetic DC and DS. Blood glucose was measured at fasting state and 30, 60, 90 and 120 minute by oral glucose tolerance test, DS tended to lower the mean(${\pm}$ SE) incremental blood glucose concentrations than DC and was significantly low at 120 min. But incremental AUG(area under the curve) of postprandial glucose response was not significantly different. In conclusion, in spite of high contents of carbohydrate Takju lees perhaps have a benefit effect on the diabetes.
Purpose: Recently, high-protein diets have become highly popular, and the market for protein products has steadily increased in Korea together with the development of various types of such products. However, there is limited information on the consumption of protein supplements (PS) or protein-fortified foods (PF). Thus, this study aimed to evaluate the use of PS/PF among young adults in Jeju. Methods: A total of 350 adults (140 men and 210 women) aged 19-39 years voluntarily participated in this study from June 2022 to May 2023. PS/PF use was measured using a questionnaire. Dietary intake was assessed using a 24-hour dietary recall. Results: Approximately 31.4% of the participants (n = 110) had consumed PS/PF for more than 2 weeks during the past year and 71.8% of them (n = 79) were still consuming these products (PS/PF consumers). The PS/PF consumers tended to be male and physically active (p < 0.05 for all). The most frequent reason for PS/PF use was muscle gain (59.5%), followed by protein supplementation (19.0%) and body fat loss (13.9%), and the most frequent type of PS/PF consumed was powders (70.6%), followed by drinks (17.7%) and bars (8.8%). The PS/PF consumers tended to consume a high-protein low-carbohydrate diet compared to the non-consumers. The prevalence of consuming dietary protein less than the estimated average requirement (EAR) was significantly lower in PS/PF consumers (13.9%) compared to non-consumers (25.4%; p = 0.0316). Conclusion: These findings indicate that the necessity of protein supplementation should be determined based on the current dietary protein intake and individual requirements. The study also provides the basic information for establishing guidelines for appropriate protein intake.
It has been suggested that dietary fat increases the risk of breast cancer by elevating serum estrogen concentrations. However, studies on a relationship between fat intake and breast cancer risk have shown contradictory results, possibly because the levels of fat intake in study populations were too high to observe differences. Also, the effect of other dietary factors may present. The present study was performed to investigate the relationship between diet and estrogen metabolism in premenopausal women whose usual fat intake is relatively low compared to their western counterparts. Twenty lacto-ovo vegetarians (LOV) and twenty omnivores participated in the study. Three day food records including a Saturday or a Sunday were used to estimate nutrient intake. Serum lipids, estradiol, sex-hormone binding globulin, and urinary estradiol were measured. Study results showed $24.8\%$ and $20.9\%$ of energy intake were provided from fat in omnivorous and LOV subjects, respectively. Serum and urinary levels of estradiol were two times higher in omnivores. Fat intake was not related to either serum estradiol nor urinary estradiol when the Spearman correlation coefficient analysis was performed. Carbohydrate, total dietary fiber and soluble dietary fiber intakes were negatively related to serum estradiol concentration. Legumes, vegetables and fruit consumption showed significantly negative relationships with both serum and urinary estradiol concentrations. These results indicate lower estrogen availability may be associated with plant foodbased diets in premenopausal women whose usual diets contain less than $25\%$ of energy as fat.

Thirty-six crossbred (70% Holstein Friesian) cows in mid-lactation were assigned to one of four treatments. The dietary treatments were concentrate based, containing 13.5, 27.0, 40.5 and 54.0% of cassava in concentrate replacing ground maize (16.0% CP). There were curvilinear responses to intake of organic matter, non-structural carbohydrate and metabolisable energy. Cassava and corn fed in a ratio of 50:50 maximised organic matter, metabolisable energy intake; milk yield, milk protein and lactose yield. Milk fat yield was not affected by levels of inclusion. Dietary treatment did not influence ruminal pH, ammonia and volatile fatty acid concentrations or plasma glucose. The low market price for cassava resulted in a lower concentrate feed cost. The optimal level of cassava in a dairy cow diet is suggested as being between 20.0 and 30.0% of cassava in dry matter intake when fed with rice straw.

Background: The glycemic index (GI) indicates the rise in blood glucose caused by carbohydrate-containing foods. In Korea, there have been few studies on the understanding adults have of GI. Thus, this study investigated differences GI knowledge among the korean adults. Methods: A questionnaire on the perspective of GI and experience in GI education, participational intent to learn, general knowledge level, and dietary practice was conducted among those living in agricultural areas. Respondents were visitors to the health promotion center of a university hospital. Results: When asked about the GI familiarity, the standard of education, the relationships between diseases and GI, the diabetes group was better able to answer correctly than the other groups. However, the diabetes group showed either no difference or less correct responses for general knowledge of GI. With respect to their usual consideration and low GI dietary practice, the diabetes group provided higher responses than the other groups. On the whole, the diabetes group was better than the other groups for GI relative factor but none of the groups showed high levels for perspective, education, dietary practice of GI. Conclusions: The groups other than the diabetes group had a low perspective of GI, a lack of correct knowledge of GI, and did not follow a proper diet without considering GI. Even in the diabetes group the perspective, knowledge, and proper dietary practices were not adequate. Accordingly, further education of GI is necessary for diabetic patients, patients with chronic diseases and also people without diseases.
An experiment with completely randomized design was performed to investigate the effects of lysine and supplemented sodium on growth performance, nutrients utilization, acid-base balance and lysine arginine antagonism in broiler chicks. The experiment was carried out with 3 levels of dietary lysine (0.6, 1.2 and 1.8%) and 3 levels of sodium(0.4, 0.8 and 1.2%) for an experimental period of 7 weeks. Body weight gain of 1.2% lysine group was significantly (p<0.01) higher than that of low or high lysine group. The highest feed consumption was obtained at 1.2% lysine and 0.4% sodium supplemented level (ML-1.2) and the lowest at LL-1.2. The best feed efficiency was obtained at ML-0.8 level and the worst at LL-1.2 level. Mortalities of high (1.8%) and low (0.6%) lysine groups were significantly (p<0.05) higher than medium lysine (1.2%) group. Among the sodium levels, the mortality at 1.2% sodium supplemented level was significantly (p<0.01) different by the levels of dietary lysine. Lysine-arginine antagonism was observed in high lysine diet. Among the lysine levels, the lowest none weight and length were shown in low lysine group. Interactions between lysine and sodium were significantly (p<0.05) shown in femur weight. The levels of sodium and lysine affected significantly (p<0.01) the utilization of nitrogen, ether extract, total carbohydrate and energy.

The traditional (European) Mediterranean diet is characterized by an abundance of plant foods such as bread, pasta, vegetables, salad, legumes, fruit, nuts; olive oil as the principal source of fat; low to moderate amounts offish, poultry, dairy products and eggs; only small amounts of red meat; low to moderate amounts of wine, normally consumed with meals. This diet is low in saturated fatty acids, rich in carbohydrate and fibre, and has a high content of monounsaturated fatty acids (MUFA). These are primarily derived from olive oil. Despite a wealth of general knowledge concerning the major classes of compounds present in olives and olive oil, detailed knowledge of the phenolic antioxidant content has been lacking. Therefore the aim of the study was to evaluate the phenolic antioxidant content in a range of olive and seed oils. While seed oils were devoid, on average, the olive oils contained $196{\pm}19mg/kg$ total phenolics as judged by HPLC analysis, but the value for extravirgin ($232{\pm}15 mg/kg$) was significantly higher than that of refined virgin olive oil ($62{\pm}12mg/kg$; P<0.0001). Appreciable quantities of simple phenols (hydroxytyrosol and tyrosol) were detected in olive oils, with significant differences between extravirgin ($41.87{\pm}6.17$) and refined virgin olive oils ($4.72{\pm}2.15$; P<0.01). The major linked phenols were secoiridoids and lignans. Although extravirgin contained higher concentrations of secoiridoids ($27.72{\pm}6.84$) than refined olive oils ($9.30{\pm}3.81$) this difference was not significant. On the other hand the concentration of lignans was significantly higher (P<0.001) in extravirgin ($41.53{\pm}3.93$) compared to refined virgin olive oils ($7.29{\pm}2.56$). All classes of phenolics were shown to be potent antioxidants. In future epidemiolgic studies, both the nature and source of olive oil consumed should be differentiated in ascertaining cancer risk.
In order to investigate the utilization efficiency of dietary protein in the rat body and effects of dietary fat on its protein metabolism, 51 Sprague-Dawly rats of 6 weeks old weighing approximate)y 106g were subjected to feeding trials for 4 weeks and then subsequently to metabolic trials for 3 weeks using six different diets composed of three different levels of protein (10%, 20% and 30%) with low (20%) and high (40%) fat content for each protein level, total energy being fixed at 4000 Kcal/kg by addition of an appropriate amount of carbohydrate, and the following results were obtained. 1) The body weight gain increased in the low fat diets with increasing protein level whereas it decreased in the high fat diets. Food efficiency also increased in the low fat diets with increasing protein level, but no do deffinitive trend was observed in the high fat diets. The protein efficiency was generally higher at low protein level and tended to decrease as the protein level increased, regardless of the amount of fat intake. 2) As the protein level was increasing, digestibility of dry matters and carbohydrate were decreasing whereas that of protein was slightly increasing. On the other hand, digestibility of fat was always very high regardless of the amounts of dietary protein and fat. 3) The gross energy intake was affected both by protein and fat contents in the diets: The energy metabolism efficiency was decreasing with increasing protein level and at the same protein level the energy utilization was considerably higher in the low fat diets than in the high fat. 4) From the above-mentioned experimental results it may be concluded that the best formula of diet for growing rats is probably composed of 20% protein, 20% fat and 60% carbohydrate.
