연자육 분말을 첨가한 식빵 반죽의 물리적 특성 (Rheological Properties of White Pan Bread Dough Prepared with Lotus (Nelumbo nucifera) Seeds Powder)

  • 연자육 분말의 첨가량에 따른 식빵 반죽의 물리적 특성을 알아보기 위하여 연자육 분말을 첨가한 반죽의 팽창력, ferinogram, amylogram, extensogram, 반죽의 pH와 식빵의 외관 등을 조사하였다. 연자육 분말의 일반성분 함량은 수분 7.74%, 조단백질 20.15%, 조지방 2.11%, 조회분 4.34%, 조섬유소 2.78%이였다. 반죽의 팽창력 결과 대조구에 비해 연자육 분말 첨가구가 팽창력이 좋았으며, 반죽의 farinogram 특성은 연자육 분말 첨가량이 증가할 수 록 흡수율이 다소 증가하였고, 반죽도달시간은 대조구에 비해 다소 짧아졌다. 연자육 분말 첨가량의 증가에 따라 반죽형성 시간과 안정도는 짧아졌고 연화도는 커지는 경향을 보였다. Amylogram의 호화특성에서 최고점도온도의 경우 연자육 분말 첨가구와 대조구가 같았으며, 연자육 분말 첨가량이 증가함에 따라 최고점도는 증가하였다. Extensogram 특성은 연자육 분말 첨가량이 증가할 수 록 신장도는 감소하였고, 저항도는 증가하였으며 이에 따라 R/E 값이 증가하였다. 반죽 후 대조구의 pH는 6.06이었고, 연자육 분말 첨가구의 pH는 $6.19{\sim}6.21$였다. 발효시간 경과에 따른 대조구의 pH는 서서히 낮아지는 경향을 보였으며, 연자육 분말 첨가구에서는 발효시간 90분까지는 서서히 낮아졌으나 90분 이후부터 pH가 급격히 낮아졌다. 이로써 연자육 분말의 첨가량이 식빵 제조용 반죽의 리올로지에 크게 영향을 미치는 것으로 확인 되었다.

구강위생균에 대한 연(Nulumbo nucifera)의 부위별.용매별 항균활성 (Anti Oralmicrobial Activity of Various Extracts from Parts of Lotus (Nelumbo nucifera))

  • Anti oralmicrobial effects of Nulembo nucifera were determined against S.mutans, S.sobrinus S.sobrinus, F.nucleatum, and A.actinomycetemcomitans using paper disc method, minimum inhibitory concentrate (MICs). Extracts of lotus leaf showed the highest yield. MeOH extract is 21%, Chloroform fraction is 4.2%, ethylacetate fraction is 8.2%, water fraction is 19%. Different parts such as flower, leaf, seed and pod showed antimicrobial effects against S.mutans, with flower and seed extracts showing strong antimicrobial effect aganinst S.sobrinus KCCM11897. Leaf extract(1000pm concentration) showed over 50% inhibitory effect against S.mutans and S.sobrinus KCCM11897. Flower extract showed over 40% inhibitory effect against F.nucleatum and A.actinomycetemcomitans. MICs of flower extract against S.sobrinus KCCM11897,11898 and leaf extract against S.mutans, S.sobrinus KCCM11897 were $625\;{\mu}g/ml$, indicating Nulembo nucifera extract can exert antimicrobial activity even at low concentration. All extractes with heat at $120^{\circ}C$ had antimicrobial activity, which means that is a very stable substances. F.nucleatum and A.actinomycetemcomitans was stable against acid it had a trend that the more akali side was the lower acitivity.

기능성 섬유원료 개발을 위한 연잎줄기 펄프의 특성 (Characteristics of Lotus (Nelumbo nucifera G.) Leafstalk Pulp for the Development of High Performance Paper)

  • This study was carried out to investigate the pulping and papermaking characteristics of lotus (Nelumbo nucifera G.) leafstalk for the development of high performance paper. Anatomical and chemical properties of the lotus leafstalk were analyzed. The pulping and papermaking properties of the lotus leafstalk by conventional alkali and sulfomethylated pulping processes were also evaluated. The length and width of fibers were 0.06-3.32 mm (av. 1.23 mm) and 3.47-25.6 ${\mu}m$ (av. 20.7 ${\mu}m$), respectively. The length and width of vessel elements were 0.07-0.78 mm (av. 0.20 mm) and 14.1-330.0 ${\mu}m$ (av. 54.13 ${\mu}m$), respectively. The fiber length/fiber width ratio was 60.20. The extractives (cold water, hot water, 1% NaOH and ethanol-benzene) and lignin content of lotus leafstalk were higher than those of plant bast fiber. The contents of holocellulose, lignin, and ash were 73.8%, 24.3%, and 4.3%, respectively. The pulp yields based on pulping methods were sulfomethylated pulping av. 52%, and alkaline pulping av. 42%. The conventional alkaline pulping shows better pulp and sheet properties than the sulfomethylated pulping which was modified pulping processes. But the sulfomethylated pulping shows higher brightness than alkali pulping. In the consequence of FE-SEM observation, lotus leafstalk pulp consists of various kinds of thin walled fibers which have large amount of small pits.

쇠고기 스테이크 조리 시 백련 잎 추출물에 의한 Heterocyclic Amine류의 생성 및 돌연변이원성 억제 효과 (Inhibitory Effect of Nelumbo nucifera Leaf Extracts on the Formation of Heterocyclic Amines and Mutagenicity during Cooking Beef Steak)

  • 일상 생활에서 섭취하는 가열한 생선, 육류 등의 고단백질 식품에서는 돌연변이원, 발암가능성 물질인 heterocyclic amine류가 생성된다. 안전성 측면을 고려하고자 백련 잎을 이용한 마리네이드 소스를 첨가하여 쇠고기의 HCAs의 형성억제효과와 돌연변이원성 억제효과를 알아보았다. Ames assay 결과 백련 잎 butanol fraction을 2.0 g 첨가하여 가열한 쇠고기 스테이크에서 61.5%로 높은 돌연변이원성 억제효과를 나타내었지만 용매 별 fraction 첨가군 사이에서는 유의적인 차이를 나타내지 않았다. 가열 전 쇠고기 마리네이드 소스에 식용이 가능한 백련잎 water fraction(2.0, 4.0, 8.0 g)을 첨가한 후 $190^{\circ}C$에서 가열한 결과 MeIQx(2-amino-3,8 dimethylimidazo[4,5-f]-quinoxalin)는 30.9-63.5%, PhIP(2-amino-1-methyl-6-pheny-limidazo[4,5-b]-pyridine)는 31.6-60.7% 억제되었다. $225^{\circ}C$에서의 가열된 쇠고기에서는 MeIQx가 38.1-65.3%, DiMeIQx (2-amino-3,4,8 trimethylimidazo[4,5-f]-quinoxaline)는 36.8-73.9%, PhIP는 33.9- 67.6%의 억제효과를 보였다. 따라서 백련 잎 추출물은 heterocyclic amine류 형성과 돌연변이 원성을 억제하는 효과가 있는 것으로 나타나 고단백질 식품 섭취시 안전성 측면에서 긍정적인 영향을 미칠 것으로 판단된다.

Effect of Lotus (Nelumbo nucifera) Leaf Powder on the Quality Characteristics of Chicken Patties in Refrigerated Storage

  • This study was aimed at comparing the pH, color, thiobarbituric acid (TBA), volatile basic nitrogen (VBN), textural properties, and sensory evaluations of chicken meat patties containing lotus (Nelumbo nucifera) leaf powder, and assessing their shelf-life at refrigeration temperature ($4{\pm}1^{\circ}C$). In the refrigerated storage, the pH, lightness, yellowness, springiness values, and sensory properties scores of the control as well as all the treated samples decreased as the storage increased. The hardness, gumminess, chewiness, TBA, and VBN-values of control and all the samples treated with lotus leaf increased during refrigerated storage. At the end of the storage period (day 28), chicken patties containing lotus leaf powder had lower pH, redness, yellowness, TBA, VBN, hardness, gumminess, and chewiness values than those of control. The results of this study showed that a lotus leaf powder can increase storage stability in chicken meat products.

연잎 건분이 고지방식이를 먹인 흰쥐의 지질 농도에 미치는 영향 (Effects of Lotus (Nelumbo Nucifera Gaertner) Leaf Powder on Lipid Concentrations in Rats Fed High Fat Diet Rats)

  • The effects of Lotus (Nelumbo nucifera Gaertner) leaf dry powder on serum lipid concentrations were evaluated in rats. Forty-eight male Sprague-Dawley rats were divided into six groups and fed high fat diets for sis weeks. Experimental groups were following diets; Control group (CON), 40 % animal and plant high fat group (AHF and PHF) control with 2% Lotus leaf dry powder group (CLDP), animal and plant high fat diets with 2% Lotus leaf powder group (AHFLDP, PHFLDP). Tissue weights of liver, heart, kidney, spleen and lung of AHF group exposed rats were decreased by PHFLDP groups. The concentrations of serum triglyceride in rats fed the CLDP and PHFLDP group were lower than those in other groups. The concentrations of total cholesterol in CLDP and PHFLDP group the were lower than those in AHF groups. The concentrations of HDL-cholesterol in serum of the CLDP and PHFLDP groups were significantly higher than those of other groups. The levels of LDL-cholesterol in serum of the CLDP and PHFLDP groups were tended to be lower than those of other groups. GPT and GOT were decreased in CLDP and PHFLDP groups and than in the AHF group. LDHase was lower in CLDP and PHFLDP groups than in the AHF group. These results suggest that 2% Lotus leaf dry powder groups may reduce elevated levels of serum lipid concentrations in rats fed high fat.

연 및 neferine의 암세포 항 성장 및 세포사멸 활성 (Anti-proliferative and Pro-apoptotic Activities of Nelumbo nucifera and Neferine in Human Colorectal HCT116 Cells)

  • 본 연구에서는 연(Nelumbo nucifera)의 잎(leaf, NL), 자육(seed, NS), 자방(seedpod, NSP)의 에탄올 추출물을 제조하고 이들의 암세포 항 성장 활성과 세포사멸 활성을 연구하였다. 추출물 NL, NS, NSP는 농도의존적으로 세포 생존율을 감소시켰을 뿐 만 아니라 항암 유전자인 NAG-1 유전자와 단백질의 발현을 증가시켰다. 또한, NL은 NAG-1 단백질의 발현과 PARP cleavage를 시간 의존적으로 증가시켰다. PARP cleavage는 NAG-1 siRNA의 transfection에 의해 부분적으로 감소하였으며, 이러한 결과는 NAG-1이 NL에 의해 유도되는 apoptosis에 기여하는 유전자 중의 하나라는 것을 나타낸다. 그리고, 연근 유래의 순수물질인 neferine도 농도의존적으로 HCT116 세포 생존율을 감소시켰으며, NAG-1 단백질의 발현과 PARP cleavage를 농도의존적, 시간의존적으로 증가시켰다. Neferine에 의해 유도된 PARP cleavage는 NAG-1 siRNA의 transfection에 의해 부분적으로 회복되는 것을 확인하였으며, 이러한 결과는 NAG-1 단백질이 neferine에 의해 유도되는 apoptosis에도 기여하는 유전자 중의 하나라는 것을 시사한다. 종합적으로 본 연구 결과는 연근 부위별 추출물과 연근유래 순수물질인 neferine에 의한 암세포 항 성장 활성과 세포사멸 활성의 분자 생물학적 기전을 이해하는데 도움을 줄 것으로 생각된다.

고지방식이 병행섭취 시 연잎, 연 줄기, 연자방 분말가루가 흰쥐의 혈중 생화학적 인자에 미치는 영향 (The Effect of Lotus (Nelumbo nucifera) Leaf, Stem, and Yeonjabang Powder Extract on the Biochemical Factors in Serum in Mice Fed a High-Fat Diet)

  • In this study, we analyzed the biochemical factors in lotus (Nelumbo nucifera) leaf, stem, and yeonjabang and their effects on serum factor levels in mice fed a high-fat (HF) diet. The loutus leaf showed $9.47{\pm}0.30%$ moisture content, $8.25{\pm}0.39%$ ash, $21.45{\pm}1.25%$ crude protein, and $2.21{\pm}0.13%$ crude fat content; the lotus stem showed $11.84{\pm}0.43%$ moisture, $10.21{\pm}0.64%$ ash, $17.55{\pm}0.92%$ crude protein, and $4.16{\pm}0.23%$ crude fat content; and the lotus yeonjabang showed $11.86{\pm}0.50%$ moisture, $6.81{\pm}0.51%$ ash, $18.71{\pm}1.02%$ crude protein, and $3.95{\pm}0.15%$ crude fat. Blood triglyceride levels were higher in the HF group ($146.43{\pm}38.81mg/dL$), and lower in the HF+yeonjabang groups ($98.00{\pm}17.18mg/dL$). In particular, blood triglyceride levels were significantly lower in the groups that had 10% dry yeonjabang powder added to the high-fat diet. The inclusion of excessive high-fat diet increased concentrations of serum insulin and leptin. Serum leptin concentrations were highest in the HF group mice ($3.00{\pm}1.35ng/dL$), whereas they were significantly lower in the HF+yeonjabang groups by $1.34{\pm}0.52ng/dL$ (p<0.05). Thus, addition of dry yeonjabang powder to the high-fat diet was more effective in regulating the levels of serum triglycerides and leptin in mice. Additional studies would help in the development of yeonjabang as a functional food.
