Determining the Optimal Cooking Time for Cooking Loss, Shear Force, and Off-Odor Reduction of Pork Large Intestines

  • The objective of this study was to determine the optimal cooking time by considering the cooking loss, shear force, and off-odor reduction of pork large intestines. Commercial pork large intestines were purchased, quartered perpendicularly, and cooked in boiling water for 40, 120, 180, and 240 min. Cooking loss of the samples increased after 240 min of cooking (10.92, p<0.05) while shear force value was lower at 240 min (4.45) compared to that at other cooking times (p<0.001). The amount of major volatile organic compounds showed a decreasing trend with increasing cooking time. In particular, the amount of methyl pentanoate (17,528.71) and methyl isobutyrate (812.51), compounds with a relatively low odor threshold, decreased significantly after 120 min of cooking and no change was observed thereafter (p<0.05). In addition, the amount of 2-pentanol (3,785.65) and 1-propanol (622.26), possibly produced by lipid oxidation, significantly decreased at the same cooking time (p<0.001). In the principal component analysis, only the 40 min cooking time was significantly different from other cooking time by high amounts of 1-propanol, 2-pentanol, and methyl isobutyrate. In conclusion, in the present study, the optimal cooking time for pork large intestines was 120 min in terms of off-odor reduction, cooking loss, and shear force.

Effects of transport time and feeding type on weight loss, meat quality and behavior of broilers

  • Objective: The purpose of this study is to determine the optimal time of transportation of floor-feed and scatter-feed broilers. Methods: Eighty healthy Arbor Acres (AA) broilers (21-day-old, 624.4 g, male, standard error = 6.65) were selected and randomly divided into two experimental groups (floor-feed and scatter-feed), then fed for three weeks. The experiment comprised a 2×4 factorial design with 2 feed patterns (floor-feed and scatter-feed) and 4 transport periods (2, 3, 4, and 5 h), and 4 replicates of 5 broilers (54-day-old, 2243 g, standard error = 46.65) was used to compare weight loss, meat quality and behavior index of different groups. Results: It appeared that drip loss, meat color and resting behavior of experimental broilers changed as length of transportation (p<0.05), however, weight loss and pH were not significantly transformed (p>0.05). Compared with floor-feed group, broilers in scatter-feed group had lower pH at 24 hours (3 h) and different behavioral indicators (p<0.05). Especially indicators after 3 h transportation, there were obvious differences between the two feeding modes in the behavior reaction of stress events before slaughter with different transport duration (p<0.05). The fluctuation of data on resting behavior with scatter-feed was significantly higher than that of floor-feed broilers. There was no interaction between transport time and different feeding methods for index tested of our experiment (p>0.05). Conclusion: Comprehensive analysis showed that the maximum transport duration of floor-feed and scatter-feed broilers should not exceed 3 h, and scatter-feed broilers were more likely prone to fear.

  • Defects of corrugated board were limiting factors to the corrugated industry's growth. On-line detecting systems of defects are beneficial to increase profits of the corrugated board companies by reducing base paper consumption, increasing process reliability, and increasing productivity. By replacing naked eye inspection of defects to a defects detecting system, continuous inspection without fatigue may guarantee final products quality. The system was developed, which was consisted of line scan CCD camera, lens, illuminating parts, high speed image processor, software, various input parts, and output parts. First installation location of the system was at before fluting process after base paper unwinding, and surface of liner board was inspected by the system. Second installation location was after fluting process and combining process for liner board. Production loss includes ragged appearance of edge, irregular flute shape, wrong combination of flute, score cracking, defects in base paper, and flute cracking. The production loss was analyzed before and after the system installation at a commercial domestic mill. The production loss ratio was defined as a production loss weight per total production weight. The production loss ratio before the installation was decreased a lot from 1.28%(during 3 months before installation) to 0.76%(during 12 months after the first installation) and to 0.25%(during 6 months after the second installation).

  • The Revised Universal Soil Loss Equation (RUSLE) is a revision of the Universal Soil Loss Equation (USLE). However, changes for each factor of the USLE have been made in RUSLE which can be used to compute soil loss on areas only where significant overland flow occurs. RUSLE which requires standardized methods to satisfy new data requirements estimates soil movement at a particular site by utilizing the same factorial approach employed by the USLE. The rainfall erosivity in the RUSLE expressed through the R-factor to quantify the effect of raindrop impact and to reflect the amount and rate of runoff likely is associated with the rain. Calculating the R-factor value in the RUSLE equation to predict the related soil loss may be possible to analyse the variability of rainfall erosivity with long time-series of concerned rainfall data. However, daily time step models cannot return proper estimates when run on other specific rainfall patters such as storm and daily cumulative precipitation. Therefore, it is desirable that cross-checking is carried out amongst different time-aggregations typical rainfall event may cause error in estimating the potential soil loss in definite conditions.

Comparison of Chemical Composition, Quality, and Muscle Fiber Characteristics between Cull Sows and Commercial Pigs: The Relationship between Pork Quality Based on Muscle Fiber Characteristics

  • This study aims to compare the chemical composition, quality, and muscle fiber characteristics of cull sows and commercial pigs, investigating the effect of changes in muscle fiber characteristics on pork quality. The proximate composition, color, pH, water-holding capacity (drip loss and cooking loss), protein solubility, total collagen content, and muscle fiber characteristics of cull sows (n=20) and commercial pigs (n=20) pork were compared. No significant differences were found between cull sows and commercial pigs in terms of proximate composition, drip loss, protein solubility, or total collagen content of their meat (p<0.05). However, cull sow pork exhibited a red color and a higher pH (p<0.05). This appears to be the result of changes in muscle fiber number and area composition (p<0.05). Cull sow meat also displayed better water-holding capacity as evident in a smaller cooking loss (p<0.05), which may be related to an increase in muscle fiber cross-sectional area (p<0.05). In conclusion, muscle fiber composition influences the pork quality; cull sow pork retains more moisture when cooked, resulting in minimal physical loss during processing and can offer more processing suitability.

  • Hair growth cycles are mainly regulated by human dermal papilla cells (hDPCs) and human outer root sheath cells (hORSCs). Protecting hDPCs from excessive oxidative stress and hORSCs from glycogen phosphorylase (PYGL) is crucial to maintaining the hair growth phase, anagen. In this study, we developed a new PYGL inhibitor, hydroxytrimethylpyridinyl methylindolecarboxamide (HTPI) and assessed its potential to prevent hair loss. HTPI reduced oxidative damage, preventing cell death and restored decreased level of anagen marker ALP and its related genes induced by hydrogen peroxide in hDPCs. Moreover, HTPI inhibited glycogen degradation and induced cell survival under glucose starvation in hORSCs. In ex-vivo culture, HTPI significantly enhanced hair growth compared to the control with minoxidil showing comparable results. Overall, these findings suggest that HTPI has significant potential as a therapeutic agent for the prevention and treatment of hair loss.

A Study on the Hearing Disturbance Based on the Classification of Hazardous Occupation (위험직종(危險職種) 분류(分類)에 따른 난청(難聽)의 고찰(考察))

  • The basis for determining hearing disturbance adopted by the Life Insurance Industry is the loss of hearing power above 80 db on either or both sides, in accordance with the divide sixth method of audiometric test. Different types of small-to-medium-sized enterprises were chosen for the study of the extent of loss and the power of hearing. The following are the findings: 1. The disturbance percentage found among the types of occupation and different levels of age was found to be higher as the subject's ages increased. 2. The heavier the workload and the noisier the environment, the higher the percentage of disturbance. The average percentage of the subjects turned out to be 24.35%. Those engaged in sawing and wood-work showed 49%. Those engaged in machinery and equipment for transportation accounted for 42.6%. Those engaged in the metal products occupied 39.6%. The disturbance percentage among those engaged in such noisy works as press, pipe and sawing showed 32.52%. 28.46% of those workers with three to four years employment turned out to be disturbed in hearing. Of these, a high percentage of 43.9% showed disturbance in conversation or talk. 3. No hearing loss due to occupation beyond the Life Insurance standard of 80 db was found; therefore, the present status poses no problem. Constant attention, however, is needed.

This article show how the underwriting of the occupational cancers in the field of occupation are managed Generally, Occupational cancers show special characteristic features. We know the characteristics of occupational cancer under the variety of occupation. For the underwriting of occupational cancer in Korea, we also understand the epidemiology of Korean occupational cancer with the varieties of occupation This article shows the characteristics of occupational cancer and epidemiology of Korean occupational cancers.

  • In this paper, we argued the possibility of the diagnostic technique for distribution transformers using the top oil temperature rising above the ambient temperature. The proposed diagnostic technique used the reference top oil temperature rising at rated current. We determined the emergency value of the transformer using the limitation of the top oil temperature rising and calculated the loss of life. The top oil temperature rises because of the load currents. In this point, the proposed diagnostic technique was explained. The proposed system measures the load current, top oil temperature and ambient temperature. With the diagnostic device, we tested the top oil temperature rising of t재 transformers. Then the loss of life was calculated by the top oil temperature.
