Scalp toner that contains L. mesenteroides extracts 1%, and PEG-60 Hydrogenated Castor Oil 0.6% was made and also scalp lotion containing L. mesenteroides extract 3%, Glyceryl Stearate 0.7%. Through the stimulant test of each toner and lotion by patch-testing 32 and 33 participants' backs, safety was verified by the result. Considering the result of antioxidant, anti-allergic, and anti-inflammatory properties of L. mesenteroids reported in previous studies, cosmetics containing these are safe for skin at low concentrations and worth for furthur research as non-stimmulative when used at other cosmetics.
It was to test the efficiency of essence containing scalp derived Leuconostoc mesenteroides extract on relieving hair loss and the possibility of the usage as the functional cosmetic's material. 41 subjects were classified as the control and test group and for 24 weeks, from Apr. 15th 2021 to Nov. 4th 2021, they were double blindness, contrast samples, single organs, and randomized human applicating tests were performed. The amount of hair had meaningful change (p<0.001) seen through phototricogram in 8,16,24 weeks each, and could tell the difference by researcher's bare eye after 24 weeks. Since there were meaningful changes (p<0.017) in subjective evaluation of the subject on after 8,16,24 weeks time, Essence which contains 1% of L. mesenteroides has efficiency on hair loss. Therefore, L. mesenteroides is expected to be used as various cosmetics to prevent hair loss.
It was to establish the usage possibility as cosmetic material by testing stimulation of Leuconostoc mesenteroides which were cultured from human scalp's dead skin cell by patching it to the skin in the form of solubilized essence. Cultured L. mesenteroides diluted to 1% concentration and essence which contains it were patched to 31 and 32 participants' back each for 24 hours and established the stimulus figures by the specialists in 30 minutes, 24 hours, and 48 hours after they were taken off. They are both revealed as non-stimuli due to the result of 0.011 and 0 points each and therefore they are safe when used as skin products. Protoplasts of both strains were produced by lysozyme digestion at $30^{\circ}C$ for 180min. Both strains were treated with $40{\mu}g$/ml of lysozyme in 30mM Tris-HCl buffer(pH 7.5) containing 10% sucrose at the late logarithmic growth phase. It was found that the efficiency of protoplast formation was high at $30^{\circ}C$ and pH 7.5 by measuring the decrease in absorbance. The resistances to antibiotics erythromycin and chloramphenicols were chosen as the selection marker for the fusant between L. plantarum and Leu. mesenteroides. Production phase of protoplast in Leu. mesenteroides was also compared with L. plantarum in this paper.
Lactobacillus plantarum and Leuconostoc mesenteroides are crucial functional starters and predominant isolates in a wide range of fermented foods, particularly kimchi, whose constituents exhibit bioactive properties. We previously developed a methodology using anion exchange resins to purify peptidyl compounds from Lb. plantarum LBP-K10. Antibacterial cultures of Lb. plantarum LBP-K10 were obtained from the respective cultures' supernatants and filtrates. However, conclusive evidence of the efficacy of kimchi filtrates in eradicating pathogenic bacteria is lacking. We aimed to simulate the potential effects of antibacterial filtrates that contained antibacterial compounds which were derived from cultures of Lb. plantarum LBP-K10. We acquired the kimchi filtrates using a combination of centrifugation and filtration methodologies, without the requirement for inoculation. The filtered liquid from Chinese cabbage kimchi, inoculated with Lb. plantarum LBP-K10 as a starter culture, and the non-inoculated liquid from Chinese cabbage kimchi (referred to as CCK and CCKRef, respectively) were were examined. CCK demonstrated greater inhibitory activity and a more significant bactericidal effect against the bacterial indicator strains. The minimum inhibitory concentration demonstrated comparable outcomes in tests against both Gram-positive and Gram-negative bacteria. To enhance the bioavailability and bioactivities of mixed herbal medicines (RW), they were fermented with lactic-acid bacteria isolated from kimchi into postbiotics (FRW). Then, from the results of the 16s rRNA sequencing analysis, lactic acid bacteria isolated from kimchi were identified to be of two species, namely Lactobacillus sakei and Leuconostoc mesenteroides. The FRW prepared from the RW were extracted using hot water (HW) and 70% EtOH (EtOH) for comparison of their macrophage-stimulating activities. Based on a comparison of the activities of the FRW extracts, nitric oxide (NO) production of HW was significantly higher than that in EtOH. An analysis of the chemical properties of the extracts showed that HW had higher contents of neutral sugar and uronic acid than EtOH as well as contained a large amount of glucose. In addition, crude polysaccharide (CP) was prepared to enhance the macrophage-stimulating activity. The FRW-CP not only secreted immunostimulatory mediators but also increased the expression of immunostimulatory genes (iNOS, TNF-α, MCP-1, and IL-6). The fractionated FRW-CP contained about 90% neutral sugars, and these sugars were mainly composed of glucose, galacturonic acid, and arabinose. Thus, FRW prepared by fermentation of RW with kimchi lactic acid bacteria were found to be immunostimulatory modulators.

To increase industrial applicability of Astragalus membranaceus (AM) as immunostimulating materials, hot-water extract (AME) was prepared from AM and fermented with Kimchi-lactic acid bacteria (Lactobacillus sakei & Leuconostoc mesenteroides) to prepare fermented AM-postbiotics (FAME). Although FAME prepared from AM-postbiotics did not show a significant enhancement in macrophage stimulating activity compared to non-fermented AME, crude polysaccharide (FAME-CP) fractionated by EtOH precipitation from FAME showed significantly higher macrophage stimulating activity than AME-CP. Compared to AME-CP, FAME-CP showed dramatic changes in component sugar and molecular weight distribution. FAME-CP was a polysaccharide with a major molecular weight distribution of 113.4 kDa containing Man (44.2%), Glc (19.3%), Gal (10.2%), GalA (10.2%), and Ara (7.4%) as sugar components. FAME-CP with enhanced macrophage stimulatory activity not only increased expression levels of mRNA genes encoding macrophage-activated factors (iNOS, TNF-α, MCP-1, IL-6, and COX-2), but also led the nuclear translocation of activated p65 and c-Jun. In conclusion, crude polysaccharide from AM-postbiotics fermented with lactic acid bacteria could increase industrial applicability as a functional material with enhanced immunostimulating activity than AME-CP.
